Ingredients
Serves: 10 125g butter 150g caster sugar 1 tsp vanilla extract 1 egg, beaten 2 very ripe bananas, mashed 190g self raising flour 60ml milk

Preparation method
Prep: 10 mins | C ook: 35 mins 1. Grease and line a 2lb loaf tin. Melt butter, sugar and vanilla in a saucepan over a medium heat. 2. Remove from heat and add the mashed bananas, mix well. 3. Add the egg, mix well. 4. Stir in the flour and the milk. 5. Pour into the prepared tin, sprinkle with a tablespoon of demerara sugar to give a crunch topping if liked. 6. Bake at 150 C fan oven (or 170 C regular, Gas mark 3) for 35 mins, until a skewer comes out clean. Leave to cool and enjoy! [YES] 0 user(s) found this review helpful Easy Had some ripe bananas and needed a good recepy to make a cake for my lovely wife. It was easy and the result was excellent. However, my wife is on a diet and didn't want to taste it, and so I had to eat it all by myself. Yes, I gave my daughter some too and she liked it. Banana is a nice fruit often used in Uganda and I wonder if they also have such a wonderful cake. I agree that it needs some more time in the oven, but I guess it depends on which oven you use. [YES] 3 user(s) found this review helpful Easy I made the recipe exactly as stated, however when cooking it I put the mix into muffin cases (made about 10 good sized muffins per batch) instead of a bread tin, and baked for about 25 mins. The result was wonderful moist muffins, with a naturally sweet banana taste. I ate one while it was still quite warm (I couldn't resist!) and it was just perfect. I later served them as a dessert at a dinner party with a little custard and a drizzle of home made toffee sauce, and every person there went for 2nds. Thanks so much for sharing this recipe! Easy I added 1tsp cinnamon and split the mixture in half. I left one half plain and added 2 handfuls of sultanas to the other half and baked each in a 1lb loaf tin. The plain cake took 45 mins to cook and the sultana one took 60 mins. I've only tried the sultana one so far and it was delicious and moist and only lasted 2 days as I couldn't stop eating it!
