Kurkuri Bhindi .. In Hindi, Kurkuri means Crisp and Bhindi is Okra.

This recipe is an easy snack like recipe made with Bhindi or Okra (Lady Finger). It is great a s a side dish with the combination of dal-rice, sambar-rice, curd-rice or even with plain chapatis or parathas. I do not make this recipe often as my hubby does not like it. But sometimes I do want to indulge in food that I like and have grown up with. My mom used to make the crispy bhindi like this and we used to relish it with soft chapatis. I remember, I had made this bhindi recipe soon after our marriage. I called up m om and asked her for the recipe. I exactly followed her instructions and made th e kurkuri bhindi. Little did I know that my husband would not eat it. What a rud e shock for me? He just had one piece of bhindi and thats it!!!!! The bhindi had turned out exactly the way mom makes. It was so good, but it did not synchronize with hubby dear s taste and food habits.

Such is life my hubby has a completely different taste and food habits. He does l ike bhindi, but it has to be soft, mushy and well cooked .. not crisp or spicy. My mom would add all the spice powders that I have added in this recipe, except chaat masala. She would also add jeera powder. I have not added jeera powder. Th e rest of the bhindi recipe is same.

Crispy Fry Bhindi Recipe: Serves 2 Preparation Time: 45- 50 minutes Cooking Time: 15-20 minutes Ingredients for Kurkuri Bhindi Recipe: 1.200 gms Okra/Bhindi 2.1/2 tsp red chili powder 3.1/2 tsp turmeric powder 4.1/4 tsp amchur powder 5.1/4 tsp chaat masala 6.1/4 tsp garam masala powder 7.3 tbsp besan/gram flour 8.salt or black salt 9.oil for frying the bhindis Method to make Kurkuri Bhindi/Okra: Rinse the bhindi in water for 3-4 times. Wipe them dry with a kitchen napkin. Sli ce the bhindi/okra vertically into 4 pieces. If you have small sized bhindi, the n slice into 2 pieces. Take all your sliced bhindi in a big thali or a big bowl. Now sprinkle all the spice powders one by one on the sliced bhindi. With a spoon or spatula, gently mix the spice powders with the bhindi. Sprinkle the besan on the bhindi. Again, gently mix the besan with the bhindi . no .. bhindi with the besan . I am confus ed . just mix everything. The besan must evenly coat the bhindi.

Marinate the bhindi in this mixture for 25-30 minutes. You could also keep it for an hour. This is how they look after marination. In your kadai, heat up the oil. Add a batch of marinated bhindi and fry. Since I had 200 gms of bhindi, I fried 100 gms first and the next 100 gms later. So the frying was in two batches. Fry the bhindis till golden brown and crisp on a medi um flame. Take care and keep on turning the bhindi/okra so that they get fried e venly. If the oil becomes too hot, you could lower the flame and fry. This is how they looked after I removed them from the kadai and before they were kept on the serving dish. By the way, I forgot to keep the kitchen tissues on th e plate. But if you do want to soak the excess oil from bhindi, keep the fried b hindis on a crumpled kitchen tissue so that the extra oil gets drained. Serve kurkuri d garnish them f you like you You could also di. bhindi directly as they are (the way I did) or if you want you coul with coriander leaves, julienned ginger or sliced green chilis. I could also sprinkle some lime juice on top of the crispy bhindi. sprinkle some kala namak or chaat masala on the crispy fried bhin

Enjoy the kurkuri bhindi plain or with rotis and a bowl of curd. Few points for the fried bhindi recipe: The oil should be hot, otherwise the bhindi/okra will absorb oil and become soggy and not even look good on the plate. In case, the oil gets over before frying the second batch, add some more oil. You can alter the spice powders as per your taste. Since I have a homemade punjab i garam masala and its very strong, I have added 1/4 tsp of it. But you can adju st the garam masala as per its quality and freshness. I have shallow fried the bhindis. I won t suggest deep frying as later your kadai o r pan will have all the besan, spices and the bhindi seeds leftovers. It looks a mess. Take as much oil as is needed for the bhindi (okra) so that all the oil gets used up. Thus, you don t have a messy oil to strain or throw later. if you are looking for more bhindi recipes then do check bhindi bhaji, bhindi do pyaza, bharwan bhindi, aloo bhindi and bhindi masala. If the oil becomes too hot, you could lower the flame and fry. 8.keep the fried bhindis on a crumpled kitchen tissue so that the extra oil gets drained. 9.Serve them directly as they are (the way I did) or if you want you could garni sh them with coriander leaves, julienned ginger or sliced green chilis. If you l ike you could also sprinkle some lime juice on top of the crispy bhindi. You cou ld also sprinkle some kala namak or chaat masala on the crispy fried bhindi. 10.Enjoy the kurkuri bhindi plain or with rotis and a bowl of curd.
