People joke about the Jewish holidays that they are never on time. They are either coming early or falling late. This year, by anyones standards, however, they are right around the corner, arriving while it is still officially the summer season. Everything is pushed up on our calendar, including the start of the new school year and, for those who work in education, the resuming of work. While normally, at this writing, there would still be a good five to six weeks to enjoy the summer and not have to think about autumn and its many obligations, this time around the mood is different. Even while on the beach and definitely while on the Avenues, the pace has quickened and the talk has changed. For those parents sending children off to Israel for a year of studying, summer is pretty much over.
Shopping and packing are already underway. For those of us who get a break from food shopping and preparation during the slow summer months with fewer family members at home scrounging for meals, it is time to hit the markets again. For all of us the holidays loom large and close and, this year, there are more of them. Not, of course, more holidays but more holy days where menu planning, preparation and presenting will take a substantial part of our time and effort. In the past decade the publishing market has changed substantially regarding Kosher cookbook options. We have seen the publication of dozens of impressive titles, featuring gourmet menus with glorious photography. Beautiful books have been

written featuring not only original and creative cooking ideas but table-setting suggestions and party-planning directions. While years ago most womens kitchen featured an index card file with hand-written and stained, barely readable recipes from relatives and friends, these days many cooks and bakers have shelves of attractive cookbooks in their homes whose pages offer dishes ranging from the simple to the elaborate, the traditional to the nouveau. There are the five-minute dishes requiring little time and few ingredients as well as more challenging culinary creations, taking up several pages of instruction, not to mention hours of devoted preparation. There is something for everyone - the new cook as well as the seasoned one; the working woman and the stay-at-home mom. Some of my friends get very excited when a new Kosher cookbook hits the stores. They rush to get a first copy and peruse its pages like a best-selling novel. I have friends who will study the new tome and experiment in their kitchens with new-found recipes, do taste-tests and family panels. They will not introduce a new dish to their repertoire unless it passes muster. I am not one of those. I enjoy the new cookbooks for their beautiful artwork and creative design. I look through the pages but rarely attempt to follow a new recipe on my own. I usually wait to see what others decide or make my own judgement after Ive tasted a new dish at someone elses dining room table. And I look for simple. Any dish that requires multiple pots, too many hours or the separating of eggs loses my attention fast. I know. I am clearly not a gourmand. People do like good food but not necessarily fancy food. And they like good company and an easy, relaxed atmosphere as well. Today, for example, I enjoyed being a guest at an old friends home. Its been over a year since Ive been officially entertained so it was so nice getting out and sharing a meal with friends. She could have served anything or nothing and we still would have enjoyed the experience. But my friend served beautifully and the food was plentiful. She did, however, do something I have not yet seen, if only

Entertaining: The Survival Edition

WARNING: THERE IS NOTHING GLAMOROUS OR DAZZLING IN THIS COLUMN DEDICATED TO ENTERTAINING. WHAT YOU ARE ABOUT TO READ IS A RAW, HONEST LOOK INTO THE UNDERBELLY OF PREPARING FOR THE HOLIDAYS, I.E., YOUR TEENAGED DAUGHTER FORGOT TO TELL YOU SHE IS VEGAN. IF YOU CANNOT STOMACH THIS, TURN BACK NOW. YOU HAVE BEEN WARNED. Youve worked your fingers to the bone in preparation for the Jewish holidays. Let me imagine for a moment what you have accomplished. You sat down with your cookbooks, studied the pages, counted the steps in the recipes. You made your menu. Then you made your shopping list. Oh right, first you looked through your cabinets to see the ingredients that you already have. You have gone food shopping twelve times (the first ten were planned, the eleventh was for the chrain you forgot, and the twelfth was for more napkins). You have been cooking and freezing for days (maybe weeks). After each time you cooked, you cleaned up the kitchen. You took your children shoe shopping and went shopping for the kids. And if you have a teen, pre-teen or a sassy kindergartner she came along with you, vetoing every outfit choice. You polished the silver, vacuumed, scrubbed the floors, made the beds for family and set the table. And the list goes on and on. You managed this second life as a work horse all while maintaining your regular schedule of work, kids and errands. In went days and days of preparation and here you are in the final countdown. You lit candles and here it comes... the inevitable. Were having chicken soup? Seriously? Strike one. Ill take out the
garbage in five minutes. Whats the big deal? Strike two. Uncle Chaim just teased Yitzy about his weight. Strike three!!! YOURE OUT! You know what?, you tell yourself, Im not going to let anything get me down. I have worked too hard. Im going to focus on this beautiful meal together. There, thats better. Wait a minute, is that your sister-in- law commenting in quiet disbelief that you forgot the lemons she so enjoys squeezing into her diet coke? THATS IT. STICK A FORK IN ME, IM DONE!! For many, the yomim tovim is a time filled with feelings of hope and a desire to renew ourselves and our relationships. We are so busy preparing, but we know it is worth it. We want to sit around the yuntif table with our family and friends, share stories, laugh and create meaningful memories that will bring us closer to our loved ones. At our core, that is what we as human beings desire. We want to love, trust and connect. Some would argue that we are biologically wired to connect. And yet, some of us carry this tremendous burden to be the perfect hostess that derails us from what our hearts and souls yearn for. So when the complaint comes, or the family drama settles in it is really hurtful on two levels. The first is that it may feel like a direct affront to all of our hard work. And the second, perhaps even more powerful disappointment, is feeling rejected by those with whom we are trying to love and connect. To entertain is to keep others amused, interested and distracted. Its nature is quite theatrical. Talk about pressure! What if we extracted the word entertain from the equation, and replaced it with be. Instead of entertaining the family for yuntif, you are now going to simply be with the family for yuntif. Their amusement and distraction has been removed from the equation and removed from your shoulders. Whether or not they like the food or their sleeping arrangements, is no longer any of your business! You prepared, now you are going to be. Being frees you up to focus on what really matters. Some suggestions: Prepare for the inevitable. You will probably forget something. Can you be OK with that? Would you consider

taking yourself off the hook for the forgotten lemons? (remember your sister-in-law likes lemons!) If you grant yourself permission to mess up, then nothing she can say has the power to upset you. So stop punishing yourself! If your family, like so many, has deep seeded conflict, and you are together for the holidays, consider a game plan. You can call involved members beforehand, and tell them how much it means to you that they are joining you for the holidays even though it is not easy to be in the presence of the other family member. Ask of both members to keep it simple and easy and stay away from hot topics. Be real and tell them how much it would mean to you to have peace at any price. Ask, for your sake, and the sake of any children involved, that tongues be bitten. Wishing you a shana tova umetukah! The Heart Of The Plate
Mollie Katzen changed the way a generation cooked with the publication of the Moosewood Cookbook in the 1970s. This September, Houghton Mifflin Harcourt is excited to unveil THE HEART OF THE PLATE: Vegetarian Recipes for a New Generation a sparkling new repertoire of 250 ultra-flavorful, unfussy vegetarian dishes that exemplify the way Katzen cooks today. Her new cuisine is lighter, sharper, spicier, more relaxed, and more vibrant than ever. The recipes present contrasts in color, flavors, and textures. They are, in a word, crave-able. Katzens delight in vegetables is as contagious as ever. Optional enhancements to each recipe allow cooks to take dishes in many different directions according to their own tastes. In assembling this collection, Katzen has included only her most loved recipes. MINTY MELON-LIME SOUP MAKES 4 OR 5 SERVINGS * VEGAN The soup is all about the melon, so hold off on the project until you find a perfect specimen (warm hues on the skin; a telltale fragrance when you sniff the ends). It will be well worth the quest. Serve this on a warm day for any mealeven breakfast (my favorite)or make it into a granita (along the lines of an upscale s n o w cone). To make the soup into a granita, transfer 54 the soup to a shallow dish and freeze for several hours, stirring it every 30 minutes or so to prevent it from becoming completely solid. Just before serving, chop it up with a fork, so it turns into ice crystals. Serve as an appetizer, a between-course palate cleanser, or even a light dessert. You will thank yourself for zesting the lime before juicing it. 1 large, perfectly ripe honeydew (orange or green), cantaloupe, or another sweet muskmelon, peeled, seeded, and cut into chunks (8 cups) 1/2 teaspoon lime zest 1/2 cup fresh lime juice, or more to taste About 20 large fresh mint leaves 1/8 teaspoon salt About 1/2 cup fresh blueberries (optional) 1. Place everything except the blueberries in a food processor or blender and puree until smooth. You will probably need to do this in several batches if you are using a stand blender. Alternatively, place everything in a deep bowl and puree with an immersion blender. 2. Refrigerate in a container with a tightfitting lid until very cold. 3. Serve in bowls or in glasses, dotted with the blueberries, if desired.

Traditional Andalusian gazpacho is a puree of salad ingredients and, sometimes, bread. In this interpretation, the vegetables are left chunky and the bread is brushed with olive oil and grilled into large croutons, thirsty for the delicious juices that will
invariably collect on the bottom of everyones plates. Thereafter, simply pick up the dish and drink what remains. Its like a farmers market cocktailas intoxicating as any, in its own glorious little way. The first three steps have you making a quick, customized version of pickled red onions. Get them going at least 30 minutes ahead, as they need time to sit. You can also make the onions up to 2 days in advance. Cover and refrigerate. Sherry vinegar has a distinct taste, leaving no ambiguity as to its origin, and makes a big difference. If you dont have any, its OK to substitute red wine vinegar. Taste the cucumber before it goes in, to be sure it is very sweet. The bread gets grilled shortly before you put together the salad. And once the salad is made, its ready to serve. No chilling is involved. 1 1/4 cups chopped red onion (1/2-inch pieces; 1 medium onion) 3 tablespoons sherry or red wine vinegar 1 tablespoon agave nectar or light-colored honey 1/2 teaspoon salt 2 small (6-inch) cucumbers (peeled if the skin is bitter), diced (about 1/2 pound) 1/2 pound perfectly ripe tomatoes, cut into 1-inch chunks 1 medium sweet bell pepper (any color), diced 1/4 cup extra-virgin olive oil 1/2 teaspoon cumin seeds 1/2 teaspoon minced or crushed garlic 4-6 average slices ciabatta or another artisan bread (about 1/2 pound), fresh or day-old Black pepper 1. Put on a kettle of water to boil. Place the onion in a colander in the sink. 2. Meanwhile, combine the vinegar, agave or honey, and salt in a medium bowl and whisk to blend. 3. When the water boils, pour it over the onion. Rinse it in cold water, shake off the
excess (not necessary to dry them), and add them to the vinegar mixture. Stir to coat, cover, and let sit for a minimum of 15 minutes, and ideally up to 1 hour or longer. 4. Combine the cucumbers, tomatoes, and bell pepper in a medium bowl. 5. Heat 1 tablespoon of the olive oil in a small skillet over medium-low heat and add the cumin seeds. Toss for a minute or two, until the seeds become fragrant. (Watch carefully, as they can burn in a matter of seconds.) Remove from the heat and stir in the garlic. Let it sit for about 30 seconds to absorb, then scrape all this mixture into the salad and mix well. 6. Shortly before serving, either toast the bread, brushing the warm pieces with about 1 tablespoon of the olive oil, or brush the bread slices with the oil first and grill them lightly on both sides in an un-oiled skillet over medium heat. (Watch them carefully, so they dont burn.) 7. After the bread is grilled or toasted, cut it into bite-sized pieces and toss them into the salad, along with the onion and all its liquid. Drizzle in the remaining 2 tablespoons olive oil, season to taste with black pepper, and serve right away.

y favorite entertaining ideas include food, and are often themed by cuisines around the world. One of the most difficult cuisines to perfect, but always a crowd pleaser, includes my French dishes of risotto and crispy duck frise salad. Every now and then though, it is nice to get together with couples from my neighborhood without having to spend time in the kitchen. At Chagall Bistro, an adorable French bistro in Park Slope, Paris meets Brooklyn. The owners of Chagall, Sonia and Dan, are a young Orthodox couple who moved from Paris to Park Slope and converted a nonkosher establishment to a kosher meat French bistro. Chagall looks like a classic French bistro with small tables and wooden chairs scattered throughout with a bar and kitchen in the back. While the vibe is nice, the restaurant could have used some background music to mute the buzz of the neighboring tables conversation. The pricey menu includes a large selection of fresh vegetarian and fish dishes along with a smattering of French meat dishes such as roasted duckling and chicken fricasse. The bronzino carpaccio was the best appetizer I tried. The fish was fresh and tangy with lime flavor. The plate was bright with olive oil and the fish was scattered with pine nuts and purple and green lettuce. The crispy duck pastille was delicious and pleasantly filled with a significant amount of duck meat unlike most duck spring rolls. The accompanying spicy cilantro dipping sauce was nice but lacked spice.
The warm beef tongue was not impressive. It was a thick slice of pale colored tongue lacking any spice or sauce. It was served with a green vegetable relish which could not overcome the blandness of the meat. The smoked salmon and avocado salad was surprising because I expected a raw smoked salmon like lox but it was actually cooked salmon that was smoked and piled on top of creamy avocado salad. The dish, like most of this French chefs food, was tasty but salty. The waiter was very attentive and friendly and willing to advise on what to order. The owner, Sonia, stopped at our table numerous times to ensure we were okay and enquire as to whether we were enjoying the food. When we complimented some of the dishes, she gave us a warm open smile and promised to relay the message to the chef. It is clear this is a family owned restaurant and customer service is important to them. For my main course, I had the watercress risotto and veal sausage. The bright green risotto was very hardy and a bit too much for a main course. To quote my friend, the watercress gave it a flavor that was bitter on the back end. It was streaked with a mustard sabayon which had a faux cheese effect adding to the heaviness of the course. The risotto had no meat in it but was topped with a few slices of veal sausage which was wonderfully spiced. My husband had the crockpot of sweetbreads en croute which was perfect, albeit, again, too salty. One of my friends ordered the single steak on the menu and for a non-steakhouse, the prime rib eye was spoton. It was thick, juicy and cooked to a perfect medium as ordered. The roasted crispy organic Cornish hen was moist with a flavorful skin. While we were all full after our mains, we felt obligated to try the desserts, as who knew when we would next make the trek back to Brooklyn. The souffl Grand Marnier was beautiful and this chef certainly takes risks with this extra high souffl. It was accompanied with a warm shot of orange brandy which our waiter instructed was to be Continued on page 80

The souffl was fluffy and light, but personally I would have preferred less Grand Marnier. The caramelized apple tart did not have a crust but was a domino of sweetly flavored sliced apples with a caramel dipping sauce. It was a great light dessert for when you just cant eat another bite, but.. Our bill was high but included 18% gratuity. Chagall does not accept American Express, one of my pet peeves in an upscale pricey restaurant, but this could be to defray some of the initial losses associated with a new restaurant. Chagall is a welcome addition to this part of Brooklyn and I cant wait to return.

FLOWER CARE TIPS Choose the healthiest blooms Always look for tight to halfway open buds and avoid leaves and foliage that are limp. Gently touch the petals: they should have a firm feeling. If flowers are stored in buckets, they should be out of direct sunlight. Measure stems before cutting them Determine how your stems will sit in the vase before making any cuts. Place the vase at the edge of your work surface and hold the stem in front of it to gauge the length, then gently remove excess leaves and trim the stem to fit. Cut fresh flowers at a sharp angle Cutting stems at a sharp angle increases their surface area, which improves water absorption. Trim the stems right before you add them to your vase: the cut stem should be exposed to the air for as little time as possible. Change the water every day Place flowers in cool, clean water in a vase filled three-quarters of the way. Change the water daily to keep bacteria from growing in the water and clogging the flowers stems. Although this month we will be spending plenty of time in the kitchen preparing holiday meals, sometimes we need to fall back on our familiar and safe comfort foods to see us through the day. What are yours? Noodles and cheese, all the way. Im surprised none of my kids came out a bowl of noodles and cheese since I think I ate that for breakfast, lunch, and dinner, throughout all my pregnancies. E.S. Popcorn and dark chocolate. S.B.

because Ive been out of circulation for a while. My friend set up a beautiful salad bar in her kitchen nook area. She laid out a large selection of cut up vegetables, assorted toppings - both sweet and crunchy - several choices of dressings and huge bowls. She also put out slivered beef, cubed turkey and pastrami and strips of chicken cutlets. What a wonderful idea. We were all so excited. While there were many more options to choose from for lunch, the salad bar was a huge hit and was definitely a meal unto its own. Now heres what Im thinking: Instead of having to come up with menus for over a dozen holiday meals why cant I follow my friends trend and offer a scrumptious fully-loaded salad bar at each meal and forget the complicated mains and the calorie-laden sides? Easy, healthy and delicious! I admit it is 3 AM at the moment and I might be feeling a bit punchy. Tomorrow I may pull down one of my own cookbooks and fondly remember a favorite dish I want to serve. Or I may stop at a local bookstore and get pulled in by the latest cookbook with a mouth-watering glossy photo on the cover. I guess the point is that entertaining should not be daunting. Good food comes in many forms and preparing it should not make you panic. With so many meals to address this coming holiday season a chilled attitude will go a long way. Im so chilled I probably wont even think about my menus until, well, past a reasonable time. But it will come together It always does. Hmmmm. Im considering the salad bar again. I really think its a great idea. What about you?
