Abstract
Preparation of concentrated banana oil extract from acetic anhydride and isoamyl alcohol through heating the relux setup in an 80 water pack. Concentratred banana oil separation through the addition of saturated bicarbonate, sodium bicarbonate, and sodium chloride. A percent yield of 72.53% through the synthesis of Fischer reaction.

Introduction Esters are found everywhere in nature, they occur naturally in nature most often in plants and animals. Small esters produce a pleasant aroma of fruits. Esters are chemical compounds consisting of a carbonyl group attached to ether. Esters are organic compounds in which an organic group replaces a hydrogen atom in an oxygen acid; an oxygen acid is an acid whose molecule has an -OH group from which the hydrogen (H) can dissociate as an H+ ion. An ester can be a product of a condensation reaction of an acid and an alcohol. Condensation is a type of chemical reaction in which two molecules are joined together and eliminate a smaller molecule.

Figure 2. The general form of an ether A condensation reaction to form an ester is called esterification. Esterification can be catalysed by the presence of H+ ions. The position of the equilibrium in esterification depends on the nature and amount of the acid and alcohol used.
