JOB TITLE: Sous Chef

GAMING LICENSE REQUIRED: Class III B


GRADE: 13
STATUS: Salaried
POSITION REPORTS TO: Room Chef / Assistant Executive Chef

JOB SUMMARY: Responsible for controlling labor, production, cleanliness, quality and presentation of food and safety of staff on scheduled shift. Ensure that all work is
completed efficiently and is coordinated with other workers. May assist the Executive Chef, Assistant Executive Chef and Room Chef with additional tasks as requested.

MAJOR TASKS AND RESPONSIBILITIES:


1. Assist or conducts daily pre-shift meetings
2. Responsible for the planning and directing of the food preparation in the kitchen of assigned outlet/s
3. Supervise line production, including all cooks (prep and line)
4. Assist in setting schedule for kitchen staff associated with assigned outlet to maintain set labor budgets
5. Develop and train all kitchen personnel assigned to outlet/s
6. Participate in the interview process of all new cooks for assigned outlet/s
7. Maintain menu knowledge and attention to detail plate presentation
8. Contribute to the development and costing of recipes
9. Contribute to the development and design of menus
10. Assist in conducting inventory on a regular basis to ensure proper par levels
11. Ensure all products are rotating on a first in first out philosophy
12. Responsible for the safekeeping and sanitation of all products, by ensuring they are properly labeled and dated
13. Ensure the temperature logs, waste sheets and station sheets are completed and updated on a regular / daily basis
14. Ensure kitchen and restaurant personnel are informed of menu specials throughout the day
15. Ensure kitchen equipment is properly maintained and functioning
16. Ensure the kitchen work area is stocked with specified tools, supplies and equipment to meet the business demand
17. Minimize waste and maintain controls to attain forecasted food and labor costs
18. Ensure that sanitation standards as set forth by Muckleshoot, local, state, and federal regulations are in compliance as well as the cleanliness and organization of the
kitchen
19. Ensure proper procedures are adhered to while handling emergency situations
20. Instruct team members in the correct usage and care of all machinery in the kitchen operations, stressing safety
21. Ensure excess items are utilized efficiently
22. Ensure the quality and consistency of product by implementing and following recipes
23. May need to assist team members with production as needed during high volume periods as well as monitoring food flow, presentation and timing on occasion
24. Performs other duties as assigned

LICENSES OR CERTIFICATIONS (required / preferred):


• Must maintain a valid WA State Health Card/Food Handlers permit

MINIMUM EDUCATION AND EXPERIENCE REQUIRED FOR POSITION (required / preferred):


• High school diploma or GED equivalent required
• Five (5) years kitchen experience required
• Two (2) years kitchen management required
• One (1) year food ordering required

SPECIFIC SKILLS/KNOWLEDGE/ABILITIES REQUIRED FOR POSITION:


• Extensive knowledge of kitchen equipment
• Strong knowledge of the various ingredients and presentations
• Strong understanding of federal, state, and local food sanitation regulations
• Solid knowledge of food with the ability skillfully apply culinary techniques
• Working knowledge of weights and measurements for recipes
• Working knowledge of computers and basic software
• Ability to motive and incent kitchen staff to go beyond the expectations of their particular roles
• Ability to effectively discipline underperforming kitchen staff members
• Ability to quickly and authoritatively delegate job tasks to a large staff
• Ability to identify and seize control of a problem in the kitchen at a moment’s notice
• Ability to use and maintain knives
• Ability to work with others and multi-task
• Ability to effectively communicate ideas and information both in written and verbal form
• Ability to read and understand information and ideas presented in writing
• Ability to maintain professional appearance and demeanor at all times
• Ability to work in a high-pressure environment
• Ability to work with and maintain confidential information and materials

PHYSICAL REQUIREMENTS:
• Ability to lift forty pounds (40lbs), occasionally higher with assistance
• Manual and finger dexterity to use all kitchen equipment
• Stamina to stand and walk for extended periods of time
• Mobility to bend and stoop frequently
• Mobility to reach overhead to retrieve items

WORK ENVIRONMENT:
• May need to perform all duties in extreme temperature ranges
• The noise level in the work environment is usually moderate
• Some essential functions of the job performed within a smoking environment.
• Monitored by surveillance cameras
Use of portable radio or cellular telephone to be in constant contact with department
