Married on Aug. 30 at Sts. Peter and Paul Catholic Church in Elrosa, they have no desire or intention on leaving the Felling Dairy Farm, where they both work and live less than a mile away. Just how fond are they of the farm? Fond enough

here, so having our reception here just made sense. Its hard to leave our animals, said Tessie. Brandon explained the draw of the farm life, Its great being on our farm because I dont have to go to Pioneer Days or Rollag or be a member of a club to have a taste of country life. Its all here. Tessie summed up the desire to remain on the farm, Why would you want to leave this area? We love the farm and all our friends are here. We have it all.

Butterhead dream becomes reality


Overman has head sculpted in butter during state fair
State Fair. As a young girl, Ashley watched her two older sisters wear a crown and sash representing the dairy farmers of Stearns County and knew it was something she was going to do too. Being a dairy princess is what I have always wanted, Ashley said. This year was the second time Ashley had run for Stearns County Dairy Princess. The first time was in 2009, when she was a senior in high school. After graduating from Minnesota State University in Moorhead, with a degree in social work, and almost four years away from the By MISSY MUSSMAN Staff writer Freeport Sitting in a rotating cooler and having your likeness carved in butter is something many young dairy farmers daughters dream of. For Ashley Overman, that dream has become a reality. I have been to the state fair many times and always see the butterheads, Ashley said. Getting my head carved in butter was something I always thought would be exciting. Ashley Overman is a Princess Kay of the Milky Way finalist and had her likeness sculpted in butter on Aug. 26 during the Minnesota

dairy princess program, Ashley decided to try one more time for the crown and sash. After being away at college, it helped me appreciate the dairy farm and where I come from more, Ashley said. I wanted to be a part of the dairy industry more and share what my family has done their whole lives. That desire to convey the dairy industrys story led her to compete for one of the 12 Princess Kay of the Milky Way finalist spots during the statewide judging in May. OVERMAN continued on page 6

Rachels boyfriend, Cole Woehler, also works on their honey and bee farm while also a student at St. Johns University. Rittenhouse Bee Farms was started by Tims grandfather, Ardis Thurmond, in Kansas during a period when corn and wheat fields had yet to take over. Grandpa Art had a nice farm operation going in Kansas, but then the corn fields began to take over and pasture land became scarce, said Rittenhouse. Bee hives set up in special wooden crates need open fields and grassland areas to thrive, making the availability of untilled rural land important. Honeybees create honey from flower nectar. Tim Rittenhouse considers himself a lucky business owner. He and his wife, Julie, are the third generation in a four-generation bee and honey farm in Hawick. It really is great to be involved in an industry where you set your own hours and make your own way. To have family involved in it makes it that much better, said Rittenhouse. Tim and Julies son, Sam, 21, is the fourth generation involved in

Grandpa lived in this very shed while they built the farm house, said Rittenhouse, while pointing to one area of their honey factories in Hawick that was the original building and the former Hawick Creamery. Tims father and mother, Art and Diane, were next in line as the second-generation owners and operators. Rittenhouse Bee Farms have 72 locations for bee hives all around northern Kandiyohi and Meeker counties as well as southern Stearns County. Many hives have had the same locations for many years. tion of the honeycombs, generally around 18 percent, according to Rittenhouse. The raw honey is heated to between 97 and 100 degrees and then sent through a wax separator to remove wax and bee particles. In this machine, rotating knives spin and send the honey to the outer edge via centrifugal force. We can sell the wax for other uses, which is nice to get some value out of that byproduct, said Rittenhouse. Such uses include the wax coating on pencils, makeup and pharmaceutical products. On a good day of work at the factory, the Rittenhouse operation can harvest 20 to 25 barrels of raw honey per day. Each barrel holds roughly 650 pounds of honey. The barrels are sent from Hawick to the Sioux Honey Association, a honey cooperative founded in 1921. There, raw honey is used to create dozens of varieties of honey products as well as barbecue sauces. Not all of the raw

honey is sent to Sioux City, as the Rittenhouse family has many local friends and customers who buy it direct. Some people like to eat the local honey for their allergies, said Rittenhouse. It contains their local pollen and helps fight it. Continuing a thriving bee and honey farm requires a grand effort, especially in recent years with the threat of Colony Collapse Disorder, a phenomenon in which worker bees from a beehive or colony suddenly disappear. Its cause has never been determined, although studies have shown it may appear from man-made activity as well as natural causes such as mites and parasites. Rittenhouse said that in 2012, they lost close to 40 percent of their bees. While the growing season through the spring, summer and fall months keeps his family busy, they get down time in the winter. I keep busy with shop work in the winter, said Rittenhouse. We always have plenty to

fix on, either machinery or repairing the beehive boxes. Some boxes still in use date back to the 1950s. Through the years, work in their honey factory and with the bee hives across the prairie has given the Rittenhouse family a special appreciation for hard work. Days can get long and problems can pile up, but so far its gone well enough that we look for the business to stick around for at least another generation in the family, concluded Rittenhouse.

A native of Becker County and a 2010 graduate of Mahnomen High School who grew up near Omega, a town of 184 people, Tessies home farm had 80 cows. Her parents milked in a herring-bone, double-four milking parlor and raised all their feed and hay and did all the harvesting themselves. I milked, worked with the calves, chopped corn and haylage with our two-row chopper and ran the skid loader, said Tessie, who admitted that was the short list of her duties while growing up with her two sisters. Brandon, a 2010 Belgrade-Brooten-Elrosa graduate, works with Tessie on the home farm he grew up on west of Elrosa. His parents, Bruce and Kelly, are still very actively involved in the farming operations and welcome the energy and contributions to the farm by the newlywed couple. I remember when I was little, mom and dad milked in tiestalls. I helped by sitting on the B John Deere that ran the unloader with dad hauling up the silage wagons, said Brandon. The Felling Dairy still uses that same barn, but it has major renovations with the addition of a double-16 pit parlor with utilities, bathroom, shower, milk pumps, break rooms, office rooms and a washer and dryer in the hayloft. I want to develop the back part of the loft into a gymnasium, said Brandon. Brandon and Tessie met in the fall of 2010, when both enrolled in the Dairy Management program at Ridgewater College in Willmar. They shared every class throughout their two years in Willmar. The first day we had to pick a partner, ask them their hobbies and interests and get up

in class and explain them, said Tessie, who picked Brandon and explained his farming background. I got up and talked about what Tessie told me, but I couldnt pronounce her name. I didnt even try, said Brandon. Classes started Aug. 23, and they started dating on Sept. 24. They vividly remember how it started soon after they traded cell phone numbers in Soils class. We were putting up hay until 5 a.m. that morning. I went to school but fell asleep in class. We (Bryce Goodenbour and Brandons father, Bruce) went all night. Tessie was texting me all night to help me stay awake and keep me going, recalled Brandon. I remember the first text message that I got from her. I was sitting in our New Holland skid loader moving wrapped

round bales to the trailers. She asked what I was up to, and of course, I was farming, he said. Brandon proposed to Tessie the day before Valentines Day of this year, Feb. 13. The ring for Tessie was in a unique wooden box. Its like a jig-saw puzzle where you have to go through it to get to the jewelry. I bought it on one of our college ag trips touring dairy farms by Denver, he explained. Job duties on the dairy farm are numerous for Brandon and Tessie. I work with the calves and general herd help while managing vaccinations of the calves. I haul corn and manure and move bales with the tractors, said Tessie. Brandon watches over the TMR and grain and hay rations as well as milking work in the parlor, general fixing, tillage

and harvest. Like any dairy farmer, we jump in wherever we have to on any given day, he said. With a Friday wedding, it would seem fair that a newlywed couple would have a weekend getaway if not a fullfledged honeymoon, but that wasnt possible for the Fellings. Our honeymoon will come a few months from now in the dead of winter, Brandon said. Then we dont have to worry about hay laying on the ground or cows in stress from heat. Right now were as happy as anyone being able to stay with our animals and our farm work. Tessie concluded, The wedding and reception were very special to us. How lucky are we? Our animals got to be sort of a part of the whole wedding. It made memories well never forget.

ing a ladder to help his dad fix something. He looked at me as I passed, almost as if seeing a car was something that didnt happen very often. I saw cows roaming the pasture, chickens approaching the roadway, and a sky full of those cool puffy clouds that looked like frayed

cotton balls. Most importantly, I saw a glimpse of the past, of the time before we started building skyscrapers, strip malls and mini-mansions. The time when this country truly lived off the land, off their own blood, sweat and tears and not

on the backs of others. This is the kind of life I yearn for. A simple one. Some land, some love, some kids, some food. Isnt that all everyone needs? Yet where I come from the rats constantly chase the cheese, not realizing they are running in circles. Sometimes I get caught up in that way of thinking. That I have to have it all. Sometimes I have to shake my head hard enough to rattle those thoughts away. Sometimes I just need a drive out in the country where the dirt roads always remind me that the simple life is the better life. I like to turn the music down and listen to the crunch of the gravel beneath my tires. Instead of seeing a hundred cars in my rear view mirror I only see a cloud of dust. Nothing behind me. Nobody chasing me. Just the road in front me. I eventually found my way back to tar roads, and back to Lazy Days Campground, filled with city folks getting away for a weekend to drink beer, eat red meat and sit around campfires. Which makes me wonder, if everyone drives to the country every weekend to have fun, why dont we all just live there in the first place? I guess its because we have to work, to make money, to afford campers, so we can go to the country and live simply, even for a day or two. For me, all I need to do is head down a lonely dirt road. Its okay if I get lost, because its usually on these trips I find what truly matters.

I knew I did the best I could, put it all on the table and gave it my best shot, Ashley said. I hoped I would be named a finalist, but I knew that being a county dairy princess is a great honor too. As they started introducing the finalists, Ashley was the sixth one called on stage. The first sentence they said, I felt it was me, Ashley said. They were describing the can-

didate and it sounded like what I had written about what growing up on the farm had taught me. We all thought it was her, said Dana Overman, Ashleys 18-year-old sister. Once it was announced that it was Ashley, she was awestruck. The reality of it hadnt sunk in, Ashley said. Everyone was looking at me, and it hit me all at once. I was really excited.

The first thing Ashley wanted to do was thank and hug her parents. They are a big piece of why I made it to this point, Ashley said. Ashleys mom and dad, Lucy and Keith, were very excited for their daughter. It was an honor to see her walk across that stage as a finalist, Lucy said. She mustve learned something all these years at home. I

am glad to see she understands how viable the dairy industry is. To be one of the 12, it makes for a proud moment, Keith said. You farm, you teach your kids, but you dont know if you have left an impact. Accomplishing something like this, there must have been something she cherished. Ashley has been overwhelmed with the support from the county and local community.

said. Visiting with the runners and handing out milk at the end of the race was one of my favorite things during the fair. Of course, one of the highlights of the fair was getting her likeness sculpted in a 90-pound block of butter on Aug. 26, when the outside temperature was at 100 degrees. I definitely had the best seat at the fair that day, Ashley said. During the six hours in the rotating cooler, Ashley conducted question-and-answer sessions with the public outside the booth.

_ It is fun to see how much Stearns County and the community support me, Ashley said. To have the passionate dairy farmers excited for me to have this experience has been the best part. On top of her local appearances, Ashley was busy with her duties as a finalist with the Butterhead Blast in Sauk Centre, filming the coronation video and the My Farm My Story videos, the 60th Princess Kay of the Milky Way celebration at the History Center in St. Paul and the Minnesota State Fair. Ashley helps on her familys 50-cow dairy farm near Freeport. When she can, she helps milk and feed the cows and calves. Even though her schedule has been busy, she wouldnt have it any other way. I am able to spend time with girls my age and have the same interest and knowledge about dairy as I do, Ashley said. It has been a oncein-a-lifetime opportunity and something I have enjoyed immensely. It has been amazing. During the state fair, Ashley participated in numerous events as a finalist, including the 5K Milk Run. It was a lot of fun since I enjoy running 5Ks myself, Ashley

Stearns County Corn Growers promote advocacy for agriculture

By RANDY OLSON Staff writer Sauk Centre For organizations such as the Stearns County Corn Growers, members work hard at promoting the even harder work of being a farmer and feeding the world. The Stearns County Corn Growers sponsors multiple events throughout the year, and according to member Sonja Miller, none of it could be done without a strong base of membership. Our membership is crucial in terms of having strength in numbers for our lobbying efforts in St. Paul and also in Washington, D.C., said Miller, who reported Stearns County Corn Growers membership at about 100 and 6,755 for the state organization, the Minnesota Corn Growers Association (MCGA). More recently, members have been working hard in lobbying at the federal level to pass a new Farm Bill.

The current Farm Bill is nearing the end of an extension enacted last January. Some of its provisions expired with the extension, and the bill itself expires as a whole on Sept. 30 if Congress does not act on it. Our members give strong and important support to the production of and the use of

ethanol, Miller added. We also work hard at giving back to the community. At the 14th Annual Stearns County Corn Growers fundraiser golf tournament at the Lynx National Golf Course in Sauk Centre, funds were raised for use for a variety of purposes.

We give out three $1,000 scholarships each year for students in agriculture-related classes and careers, said Miller. Events that promote ethanol use at local gas stations are also funded from the golf tournament. Money is also raised and

matched by our group and given to a local Stearns County farm family who has suffered a farm accident of some sort to help with their medical bills, said Miller. The Aug. 16 tournament at the Lynx raised $541 with matching funds bringing the amount given to a local family to $1,082. Sean McClanahan, who was injured in a rock picking accident, was the recipient of the funds raised. Past recipients of the golf fundraiser were also on hand to help at the fundraising hole during the tournament. They include Harold Marthaler, who was pinned by a bull on his dairy farm, and Tom and Sandra Herdering, whose son, Kurt, was injured in an auger accident. A total of 38 teams participated in the Aug. 16 tournament, with a total of 152 players involved. Andrew Neupert of St. Rosa achieved an extremely rare feat when he shot a hole in one on hole number two at the Lynx. He was presented a $1,000 check for the impressive achievement. Growers events throughout the year include having a booth and a strong presence at the St. Cloud Farm Show in February, holding Breakfast on the Farm events during the summer months and Jam the Stands nights at several area raceways. The Breakfast on the Farm event, open to the public, has been a large draw in Stearns County since the first one was held in 2007. It includes guided tours of a family farm, an obstacle course for children, a petting zoo full of baby farm animals, horse-drawn wagon rides and, most importantly, a great opportunity for visitors of all ages to learn more about where their food comes from. Building is more fun than buying for Meyer and Zink


By CAROL MOORMAN Staff writer Meire Grove Chris Meyer and Zach Zink dont need blueprints to build things. Its all in their headsor by trial and error. That is evident with the go-cart Chris and Zach, both Melrose High School seniors, built from scratch, using items they found in the rural Meire Grove farm woods of Chris parents, Karl and Geri, in their attic and in junkyards. Its not expensive, but its time consuming, Chris said one evening as the two talked about their go-cart, parked in the Meyers farmyard where the building was

done. It doesnt surprise Chris parents that hes a builder or Zachs parents, Tom and Mary, that he helped. Growing up, Chris was always putzing around with something, said Geri, with Karl nodding his head yes. The project started the summer of 2012, when Chris decided he wanted to build another go-cart. He had experience to build on. About five years earlier, he and his dad built their first go-cart, a smaller version of their current go-cart. That one was stripped down to start the second

go-cart. Chris enlisted the help of Zach, who figured it would be fun and also a learning experience. It was a learning experience for both of them. They thought about how they wanted the go-cart to look and built it accordingly. Things that looked simple, took time and thought. We put it together as we went along. We knew what we wanted to do, so we just tried it. If something didnt work, thats when we had to problem solve, said Chris. His experience fixing things on the farm helped. Chris learned how to weld from his dad, and Chris taught Zach. An old traveling gun irrigator, sitting in the woods for close to 20 years and once used to irrigate crops, became their go-cart frame and front hood. They even used the original tires. An old snowmobile engine, found in a junkyard near Blackduck, fit under the five-foot yellow irrigator hood. It worked. I just had to have someone go through the carburetor, said Chris, adding with smile, I really dont know how to do that yet. A gas tank from a junkyard car was positioned under the hood, and an old boat seat in the Meyers attic became the go-cart seat, surrounded by a roll cage from an old hayrack. Our only rule was it had to have a seatbelt and roll cage, said Geri. Even the two exhaust pipes, on the front end of the hood, are used. It took 20 minutes to saw the exhaust pipes off an old Dodge, said Chris. A garage door track from a shed on the Meyer farm was used as the chain guard. Dad said anything that we could find here, we could have. The rest we had to buy, said Chris. He spent around $300 for tire tubes, rear axles, bearings, a battery, a chain and other small parts, purchased locally from the Greenwald Farm Center and Thull Repair. Karl smiles when talking about their donation to the project of welding wire, gas and other shop supplies. Thats okay, because they are having fun with it, said Karl. Parts that make their go-cart unique are horns from a junkyard vehicle and an old chain from the irrigator, which they rolled up and positioned on the front grill of the go-cart; a grill which they welded. Challenges came up when building the gocart. With a rear axle, the hardest part was how to get the power to the back wheels because the motor is in the front, said Chris. At times, they still deal with issues, like the chain coming off, especially when they are doing doughnuts in the farmyard, but they put the chain right back on and off they go. They need to shorten the chain, said Karl. Built solid and with mainly used parts, Chris and Zach said their gocart turned out better than expected. Thats what makes it ours, said Chris. Its the cheapest education they will ever get, said Karl. Zach said there is another plus to building their own go-cart. You know how to fix something if it breaks. You dont need a computer to tell you, he said. Of course, its really not done yet. Its finished until you want to make it better. We always add and change things, said Chris. In other words, its never going to be finished. Since its a homemade go-cart, it doesnt leave the farm much. Well, except when Chris and Zach drove it in the Greenwald Barley Days Parade. They are content to drive it down the dirt farm road, now surrounded by cornstalks. All it takes is the pull of a chord to get the engine going and it can be heard roaring for miles; smoke coming out of the exhaust pipes. My dad, (Red Meyer) and Geris dad, Joe Rueter, have even driven it, said Karl. So have a few of Chris and Zachs

friends. Chris already has his next project almost ready to be put together. From the back of the shop he carries collected parts an engine, tires, a seat and handle barssetting up what will eventually

be a mini-bike. Its the fun of doing it; the challenge, said Chris, who will attend Alex Tech next year for diesel mechanics. Building is more fun than buying.

Be vigilant about safety

If you live on a farm, chances are you could think of numerous close calls youve had, when, in the blink of an eye, a tragedy could have occurred. Unfortunately, many of you have experienced tragedy in your life, and life will never be the same. I spent the first 46 years of my life on farms, and I shudder to think how many close calls there have been, some of which I probably dont even know about. How many times were we as kids spared, or were our own children spared? Well never know. Ive told the story before, but one such close call that comes to mind is when my youngest daughter was about five. I was up in the hayloft of the barn getting ready to throw bales of hay down to feed the cows. I was maybe 10 or more feet away from the hay hole. I picked up a bale and was beginning the motion to throw it when I heard a voice in my head, plain as day, saying dont throw that bale. I firmly believe it was either her (or my) guardian

ple, but potentially so deadly. This past week, Sept. 15-21, was National Farm Safety and Health Week. Chances are youve been too busy to worry about safety as much as you should. But its when were extra busy that things happenand if only we could slow down a bit, maybe we could prevent some of these unthinkable things from happening. Accidents are just that. Sometimes you exercise as much caution as humanly possible and

they still happen. But my hope is that people will slow down a bit during these next busy months, and think about how quickly things can change. Along with experiencing all the good things of farm living, dangers are an everyday reality when working with livestock and equipment. Ryan Anderson knows that firsthand. When speaking to groups about farm safety, he encourages everyone to be vigilant about safety.

The excitement for helping with harvest is something Ill probably never get out of my system. Today I am lucky that I still have this ability. It can be too easy during the rush of harvest to lose sight of your surroundings or have a lapse in judgment, although you always think youre being safe. As traumatic as my farm accident was, I am fortunate enough to be able to still tell my story. I wish all of you a very good and safe harvest.

Vern and Doreen Frericks Melrose Why do you attend the State Fair? Its a family tradition. How many years have you attended the State Fair? Doreen: I started at the age of 7. My family always took a day off to go to the fair. I was the youngest of seven kids, and the rule was always that you had to be ten. I had always thought it was a State Fair rule, so when I got down there the first year, (they must not have been able to get a babysitter, so I got to go early) I thought, Theres little kids here! What the heck! I found out then it was a family rule! Wed pack a lunch in the trunk and stay the entire day, and watch the show at the grand stand at night. I went to the fair for about 10 years as a kid, and now for the last 25 years, since our kids started showing in 4-H. Vern: Growing up, our family went somewhere special every year, and sometimes that was the State Fair. And now since our kids started 4-H 25 years ago. Whats your favorite State Fair food? Doreen: Gyros with cu-

Alise Sjostrom Brooten Why do you attend the State Fair? The Minnesota State Fair is the event I look most forward to every single year. Even when we lived in Vermont and Wisconsin, we came back for the state fair. Its tradition and its a showcase for Minnesota agriculture that cant be beat. How many years have you attended the State Fair? At least 22 Whats your favorite State Fair food? This is tough. I always get a shake at the Gopher Dairy Bar that is half chocolate and half strawberry and then make my

way through the deep fried pickles with ranch dressing, deep fried Oreos, the All You Can Drink Milk stand, cheese curds and then a blackberry malt at the Dairy Bar. I suppose there is a theme here... What is your favorite exhibit and why? My heart always falls to the Dairy Building to see all of the butter heads of the Princess Kay of the Milky Way finalists. I was one myself back in 2006, but I tend to tear up a little every time I see a new girl in the rotating cooler with a huge smile on her face. The State 4-H Arts-In is also a must-see, as well as all of the livestock and the

Most would guess that my favorite memory was either serving as a Princess Kay finalist or the coordinator of the All You Can Drink Milk stand, but what I loved the most was walking my four-year-old cow down to the milking parlor as a 4-Her and stopping to let people pet her and ask questions. Theres nothing more special than to be able to provide a life-changing experience for people who have never seen a full-grown cow up close and personal.

We started taking our kids, then we started taking our nieces and now we take our kids and granddaughters. The kids are fun to take to the fair because they are amazed with everything. How many years have you attended the State Fair? We only missed one time in 30 years. Whats your favorite State Fair food? Theres a few. The cream puffs, pronto puffs and cheese curds. The kids love the macaroni and cheese on a stick and we also enjoy getting a malt at the dairy building. What is your favorite exhibit and why? We have many favorites. The grandkids love the giant singalong screen; they could sit and play with that for hours. They also like the AgStar animal building and the Purina dog building, where they have different dogs doing tricks. We also like to go to the bandshell to listen to new acts. Kraemers keep their connection to the farm for over 120 years

By HERMAN LENSING Staff writer OSAKIS Ron Kraemer solidified his familys 120-plus-year connection to land north of Osakis, this year placing his 460 acres on the Minnesota Century Farm list. It goes back to the 1890s, said Ron. My grandfather was nine or so when they came over from Belgium. Rons great-grandfather, Mathias Kraemer, purchased the land from the railroad or land speculators late in the 19th century. His grandfather, John M.; his father, Theodore M.; and he worked, expanded and developed the holdings. With Rons son, Theodore, the farm now has a fifth generation of Kraemers living on the land. Nobody has lived here but us, said Ron. We now rent most of the acres. The Kraemer farm

could stand as a model for farming changes in central Minnesota. It advanced from being a pioneer family farm, to a sustaining dairy farm, to a place that now serves

as home to both Ron and Theodore, a local auctioneer. We raised cows, said Ron. That is how I raised my family. I had dairy cows.

At its peak, he estimates he had about 140 head, including calves and young stock. That dairy, plus their crops, helped him and his wife, Pauline, raise four children: Theodore, Brenda, Beth and Andrea. All have graduated and are married. The farm started

with 120 acres, said Ron. My father added on some. I added on some. It is now about 460 acres. As part of earning the Century Farm designation, he had to check through abstracts and records to provide a paper trail of ownership. Some of the past he knew from

family history. The original house was over there, he said pointing to a spot north of the current house, which Ron built. Dad gave me the logs in 1957, said Ron. I had them cut down and built the house. Ron married Pauline that same year. The house has wood floors, which Kraemer also put in. It is a solid oak floor, said Ron. At that time, wood was going out of style. People were going to plywood and carpet. They were giving away wood floors. It took a long time to nail all of them in. That house still stands and, for a time, so did the house where Ron grew up. At one time there was a path that went from his house to his parents house. The path remained there across two generations. When Theodore married Liz, they moved to the site of his grandparents house. KRAEMERS continued on page 20

can contract rabies, there are no documented cases of these animals transmitting rabies to people and they are generally not tested when a bite occurs unless the circumstances are very unusual. The rabies virus travels via local nerves near the site of the bite wound to the brain. The amount of virus deposited in the wound and the distance from the brain determine how long before symptoms appear. This can be as soon as 20 days or as long as a year. Once symptoms appear, however, death will occur within 10 days and once symptoms appear, rabies is untreatable. Symptoms in animals start with personality changes, changes in the sound of their voice, and licking/biting at the wound. This can progress to an aggressive stage or paralytic dumb stage, with eventual profound neurologic signs with inability to swallow, drooling, paralysis and

death. The best prevention for your pets and you is to vaccinate your pets and keep their vaccination status up to date. If your pet has a current rabies vaccination and gets bit by a potentially rabid animal, have your pets vaccine boosted within 48 hours. If you pet is bit and has not been vaccinated against rabies or is overdue for revaccination, try to safely kill any wild animal that has bit them and have it tested to see if it was rabid. Do not damage the brain when killing the suspect animal. There is no definitive way to test a live animal for rabies. Brain tissue must be submitted to an appropriate laboratory. Keep any carcass cool but not frozen and take it ASAP to your veterinarian who can assist you in getting it tested and advise you about any follow-up for your pet. If your pet is not vaccinated or overdue for re-vaccination and you are unable to

test the suspect animal, a veterinarian representing the state of Minnesota will advise you on necessary quarantines. If you are bitten by an un-vaccinated animal or one of unknown vaccination status; wash the bite for 15 minutes, apply antiseptic and see your doctor. They will advise you on the need for any post-exposure treatment. Many times the animal can be observed for 10 days before treatment needs to be started. This is due to the fact mentioned above that once an animal shows signs of rabies, it will be dead within 10 days. If the pet develops neurological symptoms or dies within the observation period, it should be tested for rabies to determine if the person was exposed. If the animal is fine after 10 days, it could not have been shedding virus in its saliva at the time of the bite. If the biting animal cant be found or the bite wound is on the head or neck, your doctor may recommend immediate post exposure treatment. Rabies is 99.9 percent fatal once symptoms occur. Please keep your pets vaccinated against rabies for their sake and yours.

Notes from Judy: The pickle recipe is from my aunt; it was my favorite food when I was pregnant. The Green Relish from a magazine; Ive used it many yearsits great on hot dogs and sausage. The Pasta with Fresh Herbs I love because it is a quick side dish, uses my way too many cherry tomatoes and I use all kinds; plus I now freeze cherry tomatoes in 2-cup quantities (just put in a freezer bag and freeze) and I process the herbs in the oil and freeze in small containers. How simple to take out the herb oil mix and bag of tomatoes and a quick side dish is on the way. Green Relish 4 cups chopped, cored green tomatoes 3 cups chopped cabbage 2 1/4 cups chopped sweet green peppers 1 1/2 cups chopped sweet red peppers 1 cup chopped onion 2 Tbsp. pickling salt 1 1/4 cups sugar 2 tsp. mustard seed 1 tsp. celery seed 1/2 tsp. ground turmeric 1 1/4 cups vinegar 1/2 cup cold water Use food processor to finely chop tomatoes, cabbage, peppers and onion. Place vegetables in a large bowl. Sprinkle with pickling salt; stir well. Cover and chill overnight. Rinse well in colander under running water; drain. In large pot, mix sugar, mustard seed, celery seed and turmeric. Stir in vinegar and water. Bring to a boil, stirring to dissolve sugar. Stir in vegetables. Return mixture to boiling, stirring frequently. Remove from heat. Ladle relish in sterilized 1/2 to 1 pint jars. Process in boiling water bath for 1/2 pint, 5 minutes and for pints, 10 minutes. Pasta with Fresh Herbs 16 oz. vermicelli or spaghetti 1/4 cup olive or vegetable oil 1 Tbsp. fresh chopped parsley 2 tsp. fresh rosemary 2 tsp. fresh chopped sage 1 tsp. fresh chopped basil 1 pint (2 cups) cherry tomatoes, cut in halves or quarters Cook pasta as directed. In medium skillet, heat oil with herbs, add tomatoes and saut until hot. Add tomato-herb mixture to pasta and mix gently.

Recipes submitted by Gilda Gieske, Sauk Centre Salsa 5 lbs. tomatoes, chopped - its best to use Roma, or paste-type tomatoes 1/2 lb. jalapeo peppers, chopped 1 lb. onions, chopped - any kind works 6 cloves garlic, minced 1 cup vinegar, apple cider or white 1 Tbsp. canning salt 1 Tbsp. cumin 2-3 Tbsp. lime juice Combine all ingredients into an 8-qt. stainless steel pot and simmer until thoroughly hot. Fill clean pint jars to 1/2 inch from the top. Seal with lids and rings. Process in boiling water bath for 20 minutes. Makes about 7 pints. Bread and Butter Pickles 6 lbs. medium cucumbers, sliced 1/4 inch thick. Do not peel. 1 1/2 cups smaller onions, sliced 1/4 inch thick 4 garlic cloves, sliced thin Mix together in large bowl with 1/3 cup canning salt. Put 2 trays of ice cubes over the top, and let stand for 3 hours. Drain off water and rinse. Brine: 4 cups sugar 1 1/2 tsp. turmeric 1 1/2 tsp. celery salt 2 Tbsp. mustard seed 3 cups white vinegar Combine in 8-qt. stainless steel pot. Stir and heat just to a boil. Add vegetables and simmer together for 10 minutes. Pack into clean pint jars to 1/2 inch from top. Seal with lids and rings, and process in boiling water bath canner for 10 minutes. Beet Pickles 3 quarts small beets, cooked, peeled and cut into desired size 3-4 small onions, sliced Brine: 2 cups sugar 3 1/2 cups vinegar 1 1/2 tsp. canning salt 1 1/2 cups water, or saved beet juice 2 sticks cinnamon (to be removed later) 1 Tbsp. whole allspice 1 Tbsp. mustard seed 1/2 tsp. whole cloves Combine all brine ingredients and simmer 15 minutes. Remove cinnamon sticks. Pack beets and onions to 1/4 inch from top of clean pint jars. Pour boiling liquid, keeping 1/4 inch head space. Cover with lids and rings and process in boiling water bath for 30 minutes. Makes 6-7 pints. Recipe submitted by Stacy Kalthoff Rarely do I follow a recipe exactly. Its usually a conglomeration of whatever I have in my garden and spice rack. Most years I only use Garden Salsa peppers instead of the chiles and jalapeos because they are my favorite and are the most reliable to grow in my garden.The amounts of each item depends on the summer. The flavor of tomatoes can change from year to year and also the heat of the peppers rely greatly on the summer temperatures and soil type. So, with that in mind; here is a guideline salsa recipe that I use: Salsa 7 quarts peeled, chopped tomatoes 4 cups seeded, chopped long green chiles (I use Garden Salsa Peppers instead) 5 cups chopped onion 1/2 cup seeded, finely-chopped jalapeo peppers 6 cloves of garlic, finely chopped 2 cups bottled lemon juice 2 Tbsp. salt 1 Tbsp. black pepper 2 Tbsp. ground cumin 3 Tbsp. oregano leaves 2 Tbsp. fresh cilantro Combine all ingredients except cumin, oregano and cilantro in a large pot and bring to a boil, stirring frequently, then reduce heat and simmer 10 minutes. Add the spices and simmer for another 20 minutes, stirring occasionally. Ladle into jars, leaving 1/2 inch headspace. Process in a boiling water canner for 15-20 minutes. Enjoy!! If the first batch isnt quite what youre looking for, label the lid so you can use it for a spaghetti or chili base, then try again. Happy canning!

Boiling in a kettle on the stove are jar lids, so the rubber softens and it (jars) seals, said Shirley. Meanwhile, using a funnel, Lenny pours brine into each cucumber-filled jar, after which they are covered with lids, Shirley ensuring the covers are on tight. Jars are placed in a large basket, taken out into the garage and placed into one of two old boilers, once used to wash clothes, now sitting on a propane-fed burner. Seventeen jars fit in one boiler and 15 in the other and the cucumbers become pickles. Lenny said this pickle-making process reminds him of years ago when farmers got together to do farm jobs like threshing. Its fun, Lenny said, as he placed another jar into a boiler. Little more than four hours after the first cucumber jar was packed, Shirley removed the last pickle jar from the boiler, placing it on a table in the garage, with the other 112 jars. Later that afternoon, mom, my niece, Krista, and I canned

the half bushel of cucumbers that I picked up at Karen and Lennys. It sure beats canning a quart or two of cucumbers from our garden, like mom usually does. The 17 jars of pickles we ended up with will, no doubt, get us through the winter, much like it will Karen, Lenny, Shirley, Mitchell, Emily, Adam, Megan and Kayla.
