Happy New Year! Without sounding grumpy, Im not really a big fan of January. After the excesses of Christmas, I resent the changes, feeling guilty for not instantly switching from mulled wine to cranberry juice, or pyjamas to gym kit. Taking the tree down is always a bitter moment (was that corner always that bare? Do we really have to take it down?). Everything looks plainer, and dark nights without fairy lights are all the longer. But, on the positive side, we have a fantastic January issue packed full of lovely food that just happens to be healthier. Flavoursome, satisfying and easy on the eye, our warm salads on page 37 promise to be healthier but not too goody two shoes! Weve also chosen the nations favourite meals and created lower-calorie and lower-fat versions (page 29). I make the turkey burgers at least once a week but have to admit that mine comes with a dollop of low-fat crme frache at the very least and a cheeky glass of wine. You only live once!

Asdas free-range egg noodles are produced by Kanes Foods in Worcestershire. The unique thing about these noodles is theyre made fresh in our factory every single day of the year apart from Christmas Day, says Production Director, Mark Harris (left). This means theyre much better quality than dried egg noodles, which are manufactured, dried and rehydrated when cooked.

WORDS: CARLY RIGLEY. PHOTOGRAPHS: WILLIAM SHAW

Our process is completed daily and our noodles are truly fresh. Theyre a great meal solution with stir-fry vegetables and sauces. Mark Harris
To make these noodles, we use an authentic recipe of our, free-range eggs, water, salt and turmeric, says Mark. Each week, Kanes Foods supplies Asda with 86,000 bags (42 tonnes) of fresh egg noodles. Theyre super quick to prepare and you can create delicious Asian dishes, including stir-fries, soups and cold salads.

My favourite way to eat these noodles is to stir-fry fresh prawns with an Asda Hot & Spicy Stir-fry vegetable pack, add a handful of fresh egg noodles and nish off with some Asda Sweet Chilli Sauce, says Mark. There are many types of noodles available (see panel, above), but Kanes Foods focuses on fresh egg noodles, as well as dehydrated rice noodles.

Damon Johnson Head of Produce Quality

All Asdas tender spring greens are grown in the UK, and theyre one of our best-selling cabbages at this time of year. To make sure they are as fresh as they can be, we get them from the eld to the store in 24-48 hours. Not bad, eh?
SPRING GREENS
This versatile cabbage arrives early in the year and its bright green leaves are sweet, tender and packed with avour. Spring greens are easy to prepare: simply remove and wash the leaves, then slice or chop. You can use them in stir-fries and soups or, for a tasty side dish, lightly steam the leaves and toss with a little butter and black pepper.

Potato cakes with spring greens

Peel and dice 400g Maris Piper potatoes. Put in a pan, cover with water and bring to the boil. Simmer for 10-13 minutes until tender. Drain the potatoes and return to the pan with a knob of butter. Season and mash. Lightly steam 150g sliced spring greens for 2-3 minutes. Drain and add to the potatoes, with 1 sliced spring onion and some chopped parsley. Mix well and leave to cool. Shape into 4 cakes. Dust in a little flour and put in the fridge for 15 minutes. Fry the cakes in a little oil over a medium heat for 2-3 minutes on each side until golden. MUSHROOMS
Use as the star ingredient in dishes such as casseroles, risottos, salads, sauces and pies. Mushrooms are also great for bulking out meals, so you can use less meat but still get a tasty, lling result. To prepare, wipe mushrooms gently with kitchen paper and slice, chop or leave whole, as required. Store fresh mushrooms in a paper bag in the fridge, where they will keep for 3-4 days.

FRESH TAKE ON

Parsley

Whether its the traditional curly kind or the stronger avoured at-leaf variety, parsley is the most widely used of all the herbs. Finely chopped fresh parsley leaves are great in soups, stews and dressings; the stalks can be added to stock; or use a sprig of parsley for a classic attractive garnish.

HOW TO PERFECTLY SEGMENT

Grapefruit

1 Slice off the top and bottom of the grapefruit with a sharp paring knife.

2 Cut away the peel and pith from top to bottom, following the contours of the fruit.

3 Carefully slice down either side of the membranes to release segments one by one.

Homemade soda bread tastes delicious and has a gorgeous crust thats so satisfying. The secret to making this yeast-free loaf is to handle the dough as little as possible the exact opposite of making ordinary bread and bake it as soon as its made. Plain our is used instead of breadmaking our and the raising agent is bicarbonate of soda combined with a slightly acidic liquid. Traditionally, buttermilk is used as an aid to rising the dough, but here weve combined natural yogurt with milk to get the same result.

1
Preheat the oven to 220C/200C Fan/Gas 7. Line a baking tray with baking paper. Sift the our, bicarbonate of soda, salt and caster sugar into a large bowl. Sifting ensures the bicarbonate of soda is distributed well in the our, which means the loaf will rise evenly.

2
Mix the yogurt with 150ml of the milk. Add to the our mixture in the bowl and mix with a large spoon until the mixture comes together you may need to add a little more milk to make a soft but not sticky dough.

3
Flour your hands and bring the mixture together. The bicarbonate of soda starts to work as soon as it mixes with the liquid, so you need to work quickly and handle the dough as little as possible. Gather the dough into a ball and put on a oured work surface. Shape into a round loaf about 20-22cm across.

4
Transfer to the baking tray and, using a sharp knife, cut a deep cross in the top. Bake in the oven for 30 minutes. If the loaf starts to brown too much, cover the top with a loose piece of foil shiny side up for the last 5 minutes. To test if the loaf is cooked, tap the bottom if it sounds hollow, its ready.

Asdas Fish Pie Mix, 3.20 (325g), features succulent pieces of haddock, Scottish salmon and smoked haddock and all these delicious avours together make one great pie the family will enjoy!
Preheat the oven to 190C/ 170C Fan/Gas 5. Put the potatoes in a pan, cover with cold water and bring to the boil. Simmer for about 15-20 minutes until tender. Drain and return to the pan. Stand over a very low heat for a minute to drive off excess moisture. Mash the potatoes with 25g butter and 4tbsp milk. Season well, cover and set aside. Meanwhile, put all the sh in a large, wide-based pan. Add the shallot, bay leaf and 300ml milk. Cover and heat gently until the milk is just simmering. Simmer gently for 10 minutes or until the sh akes easily. Strain off the milk and discard the bay leaf and shallot. Break the sh into large akes and put in a fairly shallow, oven-proof dish. Set aside. Melt the rest of the butter in a pan. Remove from the heat and stir in the our. Stir over a low heat for a minute. Gradually whisk in the milk, using a wire whisk, and then bring to the boil, whisking all the time until the sauce is creamy. Stir in the parsley. Season to taste you may not need salt because the smoked haddock will be salty. Pour over the sh and mix gently. Cover the sh with the mash the easiest way is to put large spoonfuls over the top, then gently spread and level with the spoon. Sprinkle over the cheese and bake for 25-30 minutes. Alternatively, allow the nished pie to cool at the end of step 6 and freeze. You can also chill the pie for up to 24 hours. It will take about 40 minutes to cook straight from the fridge. If frozen, defrost in the fridge for 8 hours and then cook for 40 minutes.

Theres easy ways to make fresh food last longer follow our storage tips then turn over for recipe and freezing ideas for leftovers
None of us likes seeing good food go to waste, but every year 12 billion worth is binned in the UK says Love Food Hate Waste. The good news is there are things we can do to make our food and money go further. Storing it the right way is a great place to start. Try the ideas below to help keep it fresher and tastier for longer.

Waste not...

PHOTOGRAPHS: HOWARD SHOOTER, KIA OSBORNE. STYLING: JENNY IGGLEDEN. FOOD STYLING: DENISE SMART, PENNY STEPHENS

Storage tips
Bread
Store bread in a cupboard. Once opened, fold the wrapper under the loaf or re-tie to keep it air-tight.

Potatoes
Remove from their plastic bag as this tends to make them sweat. And store them in a cool, dark place.

Tomatoes
For optimum taste, tomatoes should be stored and served at room temperature rather than the fridge.

Fruit
Ripe fruit will last longer in the fridge, except bananas and pineapples keep them in the fruit bowl.

Meat and sh
Cooked meat and sh will keep in the fridge for up to three days (cool and leave no longer than 90 minutes, then wrap it well). Raw and cooked meat should be kept separate at all times. Store raw meat in a sealed container on the bottom shelf of the fridge so it cant touch or drip onto other food.

Keep your fridge temperature below 5C. If its too warm, food wont last as long as it could

The big freeze

Bread winners
You can blitz crusts and slices into breadcrumbs and freeze to use in stufngs or to make a crispy coating for strips of chicken or sh dip in beaten egg, breadcrumbs, then bake or fry. Alternatively, you can use breadcrumbs for home-made meatballs or burgers they act as a good binder for meat. Theyre also great for adding to the top of lasagne and cauliower cheese. And its always handy to keep a sliced loaf in the freezer. Pop a frozen slice into the toaster it just takes a little longer to toast.

Using your freezer more can help save time, money and effort. Just think of it as a colder cupboard. As well as freezing leftovers, use it to store reduced items or multi-buy offers on bread, meat, sh and fruit.

Make chicken stock

This is a real family favourite. When youve used the meat, simmer the carcass in water with some celery, carrots, onion and herbs for 2-3 hours to make a stock. Measure into pint portions and freeze so youll have a tasty base for soups, risottos and stews. If you dont have time to make the stock immediately, freeze the bones so you can do it later.

Freeze fruit

Divide meat portions

Buying larger quantities of meat and sh can often work out cheaper. Simply divide up the packs into smaller portions and freeze. If you defrost raw meat and cook it thoroughly, you can freeze it again. Always defrost meat properly before cooking. Look out for our 3 for 10 offer currently in store on selected packs of meat and sh.

Keep some frozen fruit in your freezer so that you can make a healthy drink anytime. Fruit such as raspberries, strawberries, blueberries and kiwi fruit are ideal for smoothies and juices. Slice or cut larger fruit into chunks before freezing. Kick start your day by whizzing mango or summer berries with 300ml fruit juice in a liquidiser apple juice works well.

What could be better on a chilly evening than this hearty beef Bourguignon? The Extra Special range is the perfect choice when you want a treat but dont have the time to make it yourself. Together, weve done the hard work for you so you can serve restaurant-style food without spending hours in the kitchen. Our version is made using full-avour British beef cheeks, currently celebrated by leading chefs. Its cooked sous-vide (in a water bath) at very low temperatures, with red wine, mushrooms, shallots and bacon lardons, resulting in an incredibly tender dish with a rich, indulgent sauce. SERVING SUGGESTIONS The Extra Special range also includes great-tasting side dishes. Weve served our beef Bourguignon with Dauphinoise Potatoes and a Green Vegetable Medley (right), but you could also go for our Lightly Crushed Carrot & Butternut Squash. Hollies story

When Hollie Majthenyi, 21, from Derbyshire, joined Slimming World in the hope shed drop a couple of dress sizes, she never realised it would give her a whole new attitude to food and life! Initially, I blamed my increasing weight on exam stress, although deep down I knew I was making the wrong eating choices, from my chocolaty breakfast cereal to my favourite supper a homemade crisp sandwich. Everything I ate was processed, wrapped in plastic or bought from a vending machine. I went along to Slimming World with my mum at my side for moral support. After avoiding the scales for eight months, I could have cried when I saw how much I weighed I was almost a stone heavier than I thought. No wonder I couldnt fasten my baggy size 14 jeans any more! During my rst group meeting, I kept my head down, embarrassed at the state I felt Id got into. But the next week, I couldnt help but smile. Even though Id eaten huge portions of healthy, lling food all week, Id lost 4lbs! Week by week, the ideas, recipes, motivation and support I shared at Slimming World changed my life. The positive feedback I got from

NUTRITIONAL LABELLING
At Asda were committed to helping our customers lead a healthier lifestyle, says nutritionist Hayley. The nutritional information provided on our products helps them make more informed, healthy choices. And Asdas nutritional trafc light system on packaging makes it even easier when we shop. Look for foods that are low in total fat and saturated fat this will show as green on the label, while red indicates that the food is high in fat. Hayley explains, A claim that a food is low in fat may only be made when the product has no more than 3g of fat per 100g for solids or 1.5g of fat per 100ml for liquids. As a guide, 'high in fat' means more than 20g of fat per 100g. As well as using the trafc light system on packaging, we also use it on recipes in the magazine so you can keep track with the meals you make.

BASED ON GUIDELINE DAILY AMOUNT PER SERVING

We all need some fat in our diet to enable our bodies to function, but some fats are healthier than others. Heres our guide to the good, the bad and the ugly...
Thirty-three per cent of us avoid foods that contain fat* but its about knowing the difference between the good and bad types. Good fat helps our bodies absorb certain nutrients its a source of energy and essential fatty acids, and is crucial for a healthy metabolism and cell renewal. DIFFERENT TYPES OF FAT There are two main types of fat: saturated and unsaturated. Although both contain the same amount of calories, only unsaturated fats are considered better for you. EFFECTS OF SATURATED FAT The liver turns saturated fat into cholesterol too much can increase your risk of heart disease and raise your blood pressure. Asda nutrionist Hayley Marson says, In the UK, the problem is that, on average, we already eat more than the recommended dietary amount for saturated fats. To help decrease cardiovascular disease the leading cause of death in the UK we should reduce bad fats in our diet. If youre worried about cholesterol or blood pressure, visit your doctor or Asda Pharmacy.

WHAT DOES REDUCED FAT LABELLING MEAN? If a food is described as reduced fat, it doesnt necessarily mean its low in fat just that the food is at least 30 per cent lower in fat than the standard equivalent. So if the food is high in fat in the rst place, the reduced-fat version may still be high in fat. For example, a reduced-fat mayonnaise could still have an amber trafc light. Also bear in mind that food marked as reduced fat can often be high in calories, because the fat is replaced with sugar. So check your labels to get savvy on the fat and calorie content.

KNOWING THE GOOD FROM THE BAD

UNSATURATED FATS can help reduce the harmful cholesterol-producing effects of saturated fats. The maximum daily amount of fat we should eat is 70g for adults. Of this, only 20g should be saturated. ate ed. Unsaturated fats can be split into two types, polyunsaturated and monounsaturated.

TOP 5 GOOD FAT FOODS ODS

THE GOOD FATS

POLYUNSATURATED FATS are found in sunower and nd rapeseed oil, nuts, seeds and spreads. Omega 3 is s also a a type e of polyunsaturated fat good sources include oily sh, h, such as salmon and fresh (but not canned) tuna. Omega 3 oils are also found f d in i walnuts. l t Th These fats have been shown to lower blood cholesterol levels.

Mackerel Try grilled or in salads to get your recommended one portion of oily sh a week. . Plant oils s Use oils, such as olive, sunower or rapeseed sparingly in place of butter and animal fats. ats. Nuts Swap biscuits uits for a handful l of almonds or cashews. . Avocado cad do Delicious in salads, spread on toast or use to make guacamole for a tasty dip. Pumpkin seeds Sprinkle them onto cereal, yogurt or salads.

MONOUNSATURATED FATS can also help lower cholesterol. They are a signicant component of the Mediterranean diet, primarily in the form of olive oil, says Hayley. Other sources include olives, avocados and certain nuts and seeds. Monounsaturated fats have been credited with lowering levels of heart disease. Both polyunsaturated and monounsaturated fats are good for the heart and circulation. SATURATED FATS are found in animal-derived sources, such as meat, high-fat dairy items and eggs so limit your intake of butter, cheese, cakes, biscuits and pastries. Saturated fats can also be found in some vegetable fats such as palm and coconut oils.

THE BAD FATS

4 5

TRANS FATS fall into two types: the naturally occurring type, pe, found in small amounts in dairy products and meat; and d the t kind that is created when liquid oils are hardened into partially artially y hydrogenated y g fats. Its this articial type that is of greater concern in the UK diet, although Asda has removed hydrogenated vegetable oil from its own-brand goods.

HOW TO CUT DOWN ON SATURATED FAT

Try these simple changes to your diet:
Choose lean cuts of meat, trim excess fat and remove poultry skin. Opt for semi-skimmed, skimmed or low-fat dairy products rather than full-fat versions. Swap butter, ghee and lard with unsaturated fats, such as olive or sunower oils and spreads. Grill, bake, poach or steam food instead of frying or roasting. Try light and reduced-fat salad dressings or replace with vinegar, mustard and lemon juice.

Phones and electricals

Instead of stufng them in a drawer, cash in your old mobiles, MP3 players, digital cameras, sat-navs and games consoles via ASDA.com/techtradein. Go online and follow the instructions, then pop your gadgets in the post and well give you up to 250. Online auction sites are another way of selling unwanted stuff.

Of the 10 million pieces of furniture thrown away each year in the UK, three million could easily be reused*. So think before taking unwanted stuff to the tip. As long as an item is in a saleable condition and meets safety standards, many charities will take it away for you go to frn.org.uk to nd details of organisations in your area. Local councils also offer a collection service for old furniture. When buying new furniture, think about hidden storage. Look for coffee tables with shelves and drawers, sofas with under-seat storage and benches that double as storage boxes. This Asda walnut storage box, 30 (right), will look good in a room or hallway, and the Asda Camden ottoman, 49 (above), is ideal for bed linen or clothes.

Storage for kids

Encourage your little ones to be tidy with storage designed with kids in mind. We have a great selection in store, including pop-up room tidies, 5 each (left), also available in Hello Kitty and Spiderman designs. Persuade older kids that these tidies are a great alternative to the oor for their laundry, and invest in other neat solutions such as this three-drawer storage unit, 11 (right). Also look out for the Asda three-drawer tower storage sets in blue or pink, 15.

Photographs
If youve got boxes of old photos from the days before digital, why not scan them onto your computer (with a back-up copy just to be safe) and send the originals to friends and family? Youre sure to make the recipients happy with all those shared memories and youll have one less box to worry about!

The one-year box You know those things you should chuck out but you hang on to just in case? Put them in a box. Seal it and date it. If its still sealed after 365 days, donate the box to charity without opening it. You probably wont even remember what was inside!

Have a ruthless clear-out of your wardrobe. Anything that doesnt t, doesnt make you feel great or you havent worn in a year, can go. Youll nd textile banks in Asda car parks for the Salvation Army and Tickled Pink. For shoes and bags, use boxes such as this Minky folding storage box, 9 (above). Out-of-season clothes can be packed away in vacuum-seal bags and stored on top of the wardrobe or under the bed. HOMES MAKING SPACE

Filing
You dont need to keep all your paperwork forever. Cash machine slips and credit/debit card receipts can be shredded once theyve appeared on your statement, and payslips can go once youve checked them against your P60. Bills and statements more than two years old can be shredded unless youre self-employed, in which case you need to hang on to them for at least six years. For the rest of your ling, 10 folders should be enough, with labels such as Family, Medical, Property, Household Bills, Car, Work, Statements, Warranties, and Receipts, Tax, and Miscellaneous. Then take the in-and-out approach when a new policy goes in, the old one goes out. But if you really want to cut down on the ling and help the environment, too, you could always go paperless and get all your utility bills and bank statements online. For all your ling solutions, visit ASDA.com/direct or see in store.

Instant clutter xes

Beautiful boxes Whether you put them on display or keep under the bed, boxes are a godsend for storing clothes, shoes and bags. As well as keeping things tidy, they protect from sunlight, moths and dust. A two-box striped storage set, 15 (left), or these pretty striped boxes, 8 for 2-pack (right), are handy and smart. For no-extra-cost storage, your empty suitcases are ideal, especially if you keep your holiday gear in them! Hooks and rails Put these up inside cupboards, under the stairs and wherever youve got dead space theyre great for storing coats, scarves, bags and anything else you can hang up. This will help to keep your hallway clear of clutter. Kitchen store-alls Dont just bung your pasta and pulses in the cupboard decant them into plastic or glass containers and theyll make an attractive display. Look out for the huge selection of kitchen storage at Asda. Put spices in a deep drawer and label the caps so you dont have to root around each time you need them. Pots, jars and tins Use old glass jars and rattan pots in the bathroom or bedroom for cotton wool and cotton buds, make-up brushes, nail varnish and other beauty paraphernalia. Dont forget tins old biscuit tins, for example, can be perfect for storing things such as stationery supplies, sewing kits, shoe polish and buttons. If your tins are decorative, show them off. All wrapped up If youve got a drawer thats full of junk, empty it and use to store rolls of wrapping paper. This will keep your paper in pristine condition and youll be able to see which one you want in seconds. Kitchen drawer divider Use an old kitchen drawer divider or cutlery tray to stash stationery, till receipts, jewellery and all your odds and ends. Itll make everything so easy to nd. Charity box Keep a box or crate in your garage, shed or under the stairs and put all your unwanted items into it. When its full, pop along to your local charity shop and donate the contents. Baskets They come in so many shapes, sizes, colours and styles that youre bound to nd a basket just right for all your storage needs. See our great range at ASDA.com/ direct, which includes this canvas tote storage basket, 4 (right).

Make-up and toiletries Check your make-up: bin anything thats over a year old as it may have gone off or be harbouring bacteria. Store everyday cosmetics and toiletries separately so you have them to hand. A set of two nesting baskets, 9 (above), is ideal. Or keep toiletries tidy in an organiser hanging on the bathroom door.

The wild, windswept moors are wonderfully dramatic, with the high moorland plateau covered with a vast expanse of heather that turns a glorious purple e in late summer. Dramatic landscapes, seaside towns, plus fantastic sh and chips! this region has plenty to explore
sheer cliffs, sheltered bays and sandy beaches. Tiny shing villages, such as Staithes and Robin Hoods Bay, wind down steep ravines to the water, while the larger coastal resorts of Whitby and Scarborough are blessed with long stretches of golden sand and an all the other ingredients for a traditional trad seaside day out.

With more than 1,400 miles of paths and tracks crossing the moors, valleys and coast, th walkers are spoilt for choice, wa from leisurely strolls along disused railway tracks tra to deep forest trails through gorges and exhilarating cliff-top pathways. Mountain biking, horse riding and watersports are also popular, and less energetic pursuits include bird watching, shing and scenic drives. Whichever way you to decide to explore the region, there are plenty of places to sample some Northern hospitality along the way. Pop into a traditional tearoom for a cuppa and home-made cake or visit a cosy country pub for a pint of locally brewed real ale and a roast dinner complete with Yorkshire pudding!
