Taste of Home Cooking School brings the Taste of Fall to Auburn


Specialist Adds Culinary Kick to the Season, Sharing Delicious Recipes with Local Home Cooks
AUBURN, CA (October 17, 2013) - The perfect recipe for creating new memories with loved ones includes good friends, good conversation and, of course, great food. As home cooks across the country head back to the kitchen to cook up falls comforting favorites, the Taste of Home Cooking School is preparing to share seasonal recipes that are certain to delight. Taste of Homes local culinary specialist Kristi Larson will be at the Gold Country Fairgrounds on Thursday, October 17 to share her home cooking tips and tricks while demonstrating step-by-step recipes for the seasons best dishes. This seasons event is brought to Auburn by The Footpath, Ropers Jewelers and Sears. The Taste of Home Cooking School is Americas leading cooking school program, inspiring more than 300,000 passionate home chefs at approximately 300 events nationwide. Attendees experience exciting recipe demonstrations using ingredients that are easily found at the local grocery store and best of all, the dishes are submitted by home cooks from across the country. From experienced home chefs to beginners learning their way around the kitchen, the Taste of Home Cooking School offers something for everyone - putting a fresh spin on old favorites and adding new recipes to your seasonal repertoire, said Kristi Larson, Taste of Home Culinary Specialist. Spinach Stuffed Chicken Pockets is one of the recipes that will be demonstrated at the show. With their creamy lling and delightful crispy crust, these elegant entrees are easy enough for weeknights, yet special enough for company, too. Ingredients for Baking Mixture 1/2 cup Original Bisquick mix 1/2 cup milk 2 eggs

Directions 1. Heat oven to 375F. Spray 12 regular-size mufn cups with cooking spray. 2. In 10-inch nonstick skillet, heat oil over medium-high heat. Cook chicken in oil 5 to 7 minutes, stirring occasionally, until chicken is no longer pink in center. Add onion and chicken broth; heat to simmering. Add frozen vegetables and seasonings. Heat until hot, stirring occasionally until almost all liquid is absorbed. Cool 5 minutes; stir in cheese. 3. In medium bowl, stir baking mixture ingredients with whisk or fork until blended. Spoon 1 scant tablespoon baking mixture into each mufn cup. Top with about 1/4 cup chicken mixture. Spoon 1 tablespoon baking mixture onto chicken mixture in each mufn cup. 4. Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes. With thin knife, loosen sides of pies from pan; remove from pan and place top sides up on cooling rack. Cool 10 minutes longer, and serve.

Start to Finish: 45 min Yield: 6-8 servings Ingredients 12 lasagna noodles, uncooked2 tablespoons olive oil 1 package (16 oz.) JOHNSONVILLE Italian Ground Sausage (your choice of Sweet, Hot or Mild) 1 medium onion 2 cloves garlic, chopped 1 jar (24 oz.) marinara sauce 4 cups ricotta cheese 1 large egg 1/2 cup grated parmesan cheese 2 cups fresh spinach, lightly packed and chopped 2 cups mozzarella cheese, shredded 1 teaspoon dried oregano Directions 1. Preheat oven to 350F 2. Bring a large pot of salted water to a boil. Cook pasta until al dente. Drain,

lightly oil and set aside. 3. In a medium saucepan, saut the sausage in olive oil, crumbling with a wooden spoon, until no longer pink. 4. Add onion and garlic, and continue sauting for another four minutes until the sausage is cooked through. 5. Add marinara sauce to the sausage mixture and set aside. 6. In a medium bowl, blend ricotta cheese, egg, 1/4 cup of the grated parmesan cheese and the chopped spinach; set aside. Coat a 9x13 inch baking dish with olive oil and spread 1 cup of the sauce mixture on the bottom. 7. Top with 3 lasagna noodles. Spread 1/4 of the ricotta cheese mixture on the noodles and layer on 1 cup of the sauce mixture. Sprinkle 1/2 cup mozzarella cheese over this. Repeat this process three more times, starting with the noodles and nish with the remaining 1/4 cup of grated parmesan cheese. Sprinkle with oregano. 8. Bake for 45 minutes until hot and bubbly. Let stand 10 minutes before cutting.

Pour eggs over potato and turkey mixture, stirring until eggs just begin to set on the bottom, but are slightly uncooked on top. 4. Turn on oven broiler, and place pan in oven. Cook for 3-4 minutes or until eggs are completely set and top of frittata is lightly golden brown. 5. Cool for 5 minutes before serving.

Enchiladas Ingredients 1 pound ground beef 1 package taco seasoning mix 2 cups chopped canned tomatoes 1 package our tortillas 1 can jalapeno peppers, diced Cheddar cheese, to taste 1 can enchilada sauce Directions 1. Brown ground beef in a large skillet. Add taco seasoning and tomatoes. Spoon beef mixture into a tortilla, add a few diced jalapeno peppers and some cheese, roll up and place in glass 9-in. x 13-in baking dish. Repeat until all shells are lled. Cover with enchilada sauce and top with cheese.
