Sodium alginate solution 2.5% (w/v) + invertase solution 1.33% (w/v) were mix in te ratio 1:1 (v/v) to homogenization.

After The mixture is passed drop wise into 2% (w/v) CaCl2 solution.

The formed beads were retained in the stirred CaCl2 solution (using a magnetic stirrer) at least for 2 hours for gel hardening.

The invertase-alginate beads had 3-4mm in diameter, after the beads separated washed it with distilled water 3 times.

Before using the beads, immersed it in 0.1M acetate buffer of pH 4.5
