Strawberry muffins

Light olive oil spray 225g (1 1/2 cups) self-rising flour 1/2 cup Splenda sweetener 1 x 250g punnet strawberries, washed, hulled, coarsely chopped 200g (3/4 cup) low-fat natural yoghurt 60ml (1/4 cup) light olive oil 1 egg, lightly whisked

All nutrition values are per serve. 1. Step 1 Preheat oven to 200C. Spray ten 80ml (1/3-cup) capacity muffin pans with olive oil spray to lightly grease. 2. Step 2 Sift the flour into a large bowl. Stir in the sweetener and strawberry. Make a well in the centre. 3. Step 3 4. Combine the yoghurt, oil and egg in a large jug. Pour into the centre of the flour mixture. Stir until just combined. 5. Step 4 Divide the mixture evenly among the prepared pans. Bake for 25 minutes or until a skewer inserted into the centres comes out clean. Turn onto a wire rack to cool.

Strawberry muffins

Positive-

This muffin is very quick and easy to make so we will have enough time to clean up. The preparation time does not take long so we would have it in the oven in no time and then it would give the muffins a chance to cool down when you take the muffins out.

Minus I dont know how flavorsome it will be because it only has one big ingredient which is strawberries Interesting It is a small interesting shape. I think it is interesting how quick it is to make. It is my first time making a different flavoured muffin

Oat Date honey muffins : Ingredients:


1 1/2 cups self-rising flour 1 teaspoon baking powder 1 1/4 cups UNCLE TOBYS Traditional Oats 1/3 cup castor sugar 1 cup dried dates, roughly chopped 150ml vegetable oil 1 egg, lightly beaten 1/2 cup milk 3 tablespoons honey

Method: 1. Preheat oven to 180C (350F). 2. Lightly grease and base line with nonstick baking paper a 12 hole (1/3 cup capacity) muffin tin. 3. Sift together flour and baking powder; add sugar, oats and dates. 4. In a medium bowl whisk together oil, egg, milk and honey. 5. Fold flour into the liquid, mix until combined. 6. Spoon into the prepared tin. 7. Sprinkle evenly with the reserved oats. 8. Bake 15-18 mins or until golden and firm to touch.

Positive Minus

Very healthy with oats dates and honey so it meets the design brief. It is quick to make so we have some spare time to clean up. Many people might not like that flavour combination and may not try it. The flavour combination is different from what people are used to eating. I think the flavours are very different and it is something I have not seen before. So it is nice to taste new things and let you taste buds say you dont like it or you do.

Apple muffins recipe Apple muffins are an incredibly healthy snack young children will love. Using natural yoghurt and grated apple and dates, this muffin recipe is deliciously scented with cinnamon and is just as good served hot or cold. Serving Size: Makes 12-18

2 cups self-raising flour 1 tsp cinnamon cup caster sugar 1/3 cup (80ml) olive or vegetable oil 1 cup low fat natural yoghurt 2 eggs 1 red apple, grated cup pecans, chopped (or walnuts or almonds) cup dates, chopped

Method: Preheat oven to 180C and place paper cases in muffin tray (12 large or 18 cupcake size). Sift flour and cinnamon into large mixing bowl. Add caster sugar. In a glass jug, measure out oil and yoghurt and add eggs. Whisk to combine. Pour liquid into dry ingredients and mix until just combined. Stir in apple, pecans and dates. Spoon mixture into paper cases. Bake for 20-25 minutes until a skewer inserted into the muffin comes out clean.

Positive

It is healthy because of the apple and all the ingredients that is no overload of sugar or anything like that and it will meet the design brief It might taste a bit plain and bland because I have never tasted it and I dont know how it will turn out if we do choose this. I have never heard of or seen of an apple recipe muffin so it is something different and many people have not tasted before.
