cup tapioca flour
cup plain flour (fry in low heat till
aroma and light)

1 cup margarine
1 teasp baking powder
1 coconut (grate only the white part and
fry till golden brown
and blend finely)
coconut (grated & fry for decoration)
Beat egg and sugar till well blend add in
margerine and beat till fluffy.
Add tapioca flour, plain flour and bk powder
into the beaten margerine & mix well.
Add fried coconut and form into a soft dough.
Roll out and cut into desired shape and bake.

Method
Line and grease a 20cm square or round cake pan. Preheat
oven to 180-190C. Beat margarine, sugar and essence till
light and fluffy. Stir in lime juice. Fold in sifted flour.
Sift:
250g self-raising flour
1/2 tsp baking powder
1/2 tsp bicarbonate of soda

375 gm butter/margarine/ ( 1 cup )
375 gm/ 1 cups castorsugar

1 teasp vanilla
3 tbsp condensed milk (dilute with water)
Food colouring red,green & yellow
Beat butter & sugar till light & fluffy, add egg one by one and beat well. Add in sieved
flour bit by bit alternately with diluted condensed milk and mix well , finish with flour. Add
vanilla essence. Divide flour into three bowls, add colour to each cake mixture.
In a baking tray scoop a spoonful of ( No.1) yellow flour into the tray, then scoop in a
spoonful of (No.2) green flour on top of the yellow flour and finally scoop a spoonful of
(No.3) red flour on top of the green flour. Repeat this step till all the flour is layed into
the baking tray.
