PHILLY CHEESESTEAK MELT Frozen wafer-thin beef steaks, such as Steak-Umm or Philly Gourmet Red and green bell

Chicken and broccoli soup


1/8 cup of Minced Onion (or as much as you want) 3 Cups of frozen Broccoli 3 cups of chicken broth 1/2 cup of sour cream 1/4 cup of cream 12oz (1 1/2 cups) of shredded cheddar 1-2 cooked chicken breastscut up (the more chicken, the thicker the soup)

2 oz cream cheese 2 tblspn butter sprinkle of thickener or carbquick salt and pepper to taste
How To Prepare:

In a large pot, throw all ingredients in except the chicken and thickener. Heat on medium. While pot is simmering, dice and cook chicken in frying pan. Add chicken to pot and bring to boil, stirring occasionally. Sprinkle thickener if necessary.

JUST LIKE STUFFED BAKED POTATOES 16 ounce package frozen cauliflower 8 ounce cream cheese, softened 8 ounce cheddar cheese, shredded 4 green onions, chopped 1/4 teaspoon salt or to taste 1/4 teaspoon pepper 3 pieces bacon, chopped and fried until crisp Paprika, optional Cook the cauliflower until soft, about 8-10 minutes; drain very well and break up the florets a bit with a spoon. You can use up to 2 pounds of cauliflower and there will still be plenty of sauce and cheese to go around. With 2 pounds of cauliflower the count would be: Per 1/8 recipe: 256 Calories; 21g Fat; 12g Protein; 7g Carbohydrate; 3g Dietary Fiber; 4g Net Carbs Per 1/12 recipe: 171 Calories; 14g Fat; 8g Protein; 5g Carbohydrate; 2g Dietary Fiber; 3g Net Carbs

SWISS MUSHROOM CHICKEN 4 boneless chicken breasts, pounded flat if desired Salt, pepper and your choice of seasonings 1/2 pound mushrooms, sliced 2 tablespoons butter 4 thin slices deli ham 4 slices Swiss cheese, about 1 ounce each Season the chicken as desired; grill or saut till just done. Place the chicken in a large baking dish. Saut the mushrooms in the butter until tender. Top each piece of chicken with a slice of ham, 1/4 of the mushrooms, then a slice of cheese. Bake at 350 for 15-20 minutes until everything is hot and the cheese is melted. This is a very easy recipe and tastes very good. The original recipe said to coat the chicken with parmesan and pan fry, but I decided to simplify it a bit.

Mushroom Swiss Pork Chops

4 boneless pork chops, 1 1/2-inches thick 1 tablespoon vegetable oil, divided 2 teaspoons butter 2 cups sliced mushrooms 3/4 cup chicken broth 2 tablespoons dry white wine 4 teaspoons cornstarch 1/2 teaspoon dried tarragon, crushed 1/2 cup grated swiss cheese Directions: 1 Heat 1 teaspoon oil in large heavy skillet over medium-high heat. 2 Season chops to taste with salt and pepper and brown on one side, about 8 minutes; turn and brown other side, about 7 minutes. 3 Remove chops from pan and keep warm. 4 Add remaining 2 teaspoons oil and butter to skillet; saute mushrooms for 7-8 minutes, stirring occasionally, until mushrooms are tender and liquid has evaporated. 5 In small bowl stir together broth, wine and cornstarch; add to skillet. 6 Cook and stir until thickened; stir in tarragon and cheese, stir to melt cheese.
