Carrot Chips We want to launch a new type of chips in the market.

It will be totally different from the traditional chips. It will be a high quality chips which is healthier than other chips products. In this product, we will have some special ingredients which will provide nutrition and will work as digester. So definitely, this product will be an exclusive product in the market. The ingredients are- Carrot, Olive oil, kosher salt, pepper, Chocolate/ Pickles, (for sweet flavor), Cumin/Mustard/Garlic (Spicy Flavor). Carrots are packed with vitamin A. Vitamin A is great for healthy eyes. They are also fairly high in vitamin k, and of course fiber. Carrots are very common veggie, and dehydrating is just another way to keep the veggies interesting! Since Carrot Chips are dehydrated, you are getting more nutrients for then volume! Fermented Foods like Chocolate, Pickles give our digestion a leg-up because these are pre-digested to an extent. Spices increase salivation, which is the first step to digestion. Spices in food also increase bile production to some extent, which helps the body break down and absorb fats. Bangladesh: Carrot cultivation sees good profit

Carrot cultivation is getting popular in Joypurhat. Farmers have become inclined because sustainable cost and good production, transpiring positive profit Farmer Zahedul Alam spent taka 40,000 to cultivate carrot in his 10 bighas of land and employed 20 labourers.

It takes 90 to 100 days to get the product and 90 to 100 maunds are grown per bigha. Each carrot becomes 11 to 20 centimetres tall and is of deep orange colour. He earned a net profit of taka three hundred thousand.

Mozammel Haque, deputy director of DAE said that carrot is such a vegetables that could be grown in short time and does not require pesticide and hard labour. Farmers can get good harvest of they sow high quality of seeds and undergo necessary training. Carrot has high food value and multiple uses.

Processing
Carrot slices were blanched, immersed in fructose solution prior to frozen and vacuum fried to prepare carrot chips. The effects of immersing sugar concentration, vacuum frying temperature and time on the quality of fried carrot chips were studied with the central composite rotatable design (CCRD). Results showed that the moisture content, oil content, color quality, and breaking force of fried carrot chips were significantly related to immersing fructose concentration, frying temperature and time. The moisture content and breaking force of fried carrot chips were positively correlated with immersing fructose concentration, whereas the oil content and color quality of fried carrot chips were negatively correlated with immersing fructose concentration. Based on CCRD and contour plots, optimal processing conditions of vacuum fried carrot chips were: vacuum frying temperature of 100 - 105C. vacuum frying time of 16 - 20 min, and immersing fructose concentration of 30 - 40%. The high R<sup>2</sup> correlation coefficients (above 0.90 except moisture content and E value) indicated that the variables were adequately fitted to the regression equation which could highly predict the quality of vacuum fried carrot chips prepared from the frying conditions.

Slice the desired number of carrots into rounds that are 1/4 inch (0.64 cm) thick. Place the slices on the baking sheet without overlapping them. Season to taste with salt and pepper. University of Nebraska Scientists Ahmad Sulaeman and Judy Driskell have been working with carrot chip recipes because they believe that the chips might help to combat vitamin deficiencies in children who are growing up in impoverished circumstances. These scientists are working with deep fried carrot chips. People in developing countries often have a hard time getting enough calories as well as vitamins, so the fat content in deep fried chips is not a concern. In fact, the extra calories can be quite important to their diet.
