THE EVOLUTION OF BALINESE MUSIC


HOW POPULAR MUSIC HAS DEVELOPED HERE ON THE ISLAND (IN A NUTSHELL).

had reached the island of Bali, bringing with it mekidung, or the singing of songs as part of religious activities. By the early 1900s, wars and the political situation caused the development of Balinese music for entertainment purposes to stagnate, but by the 1960s Balinese popular music had experienced a revival.

THE 60S & 70S: A REVIVAL ERA


The 1960s were a great time for Balinese pop music. The song Kaden Saja composed by Mr. A.A. Wedasmara was a hit during

everything. Music allows us to express our feelings when there are no words that can accurately

that decade and many people in Bali were familiar with it. Unfortunately, record sales were not too signicant. Soon after, a Balinese pop band called Putra Dewata (led by A.A. Made Cakra) released a single called Kusir Dokar that was a huge success. The record sales were fantastic, and the band was able to make numerous appearances around the island. Their success inspired a number of Balinese musicians who contributed to the glory days of the Balinese pop music industry. In 1975, Putra Dewata composed a major hit called Bungan Sandat,

which is now one of the most legendary Balinese pop songs in existence.

THE 80S: UPS AND DOWNS


During this decade, the Balinese pop music industry faced a downturn. Indonesian pop music and Western hits reigned supreme, knocking the Balinese pop music industry off its feet. However, Balinese musicians learned to change with the times and studied the wants of the market. By 1983 a new form of Balinese pop music emerged with less traditional

elements and a more modern sound. Yong Sagita, Alit Adiari and Yan Bero are some notable Balinese pop singers from this era.

THE 90S: EVERYTHING AND THE KITCHEN SINK


Another downturn happened in the early 1990s, when RnB, dance music, and songs on the Top 40

Indonesian and Western charts invaded Bali. Again, Balinese pop music artists had to adjust to market wants. By the mid-90s, a number of singers emerged who are considered

to be the rescuers of Balinese pop music. Those singers are Widi Widiana, Ari Kencana, Tut Asmara and Agung Wirasutha, along with a handful of others. The 1990s also saw the birth of Balinese rock, with the most notable group being the Lolot Band. Also emerging in this era were Balinese rap musicians and Balinese reggae, as well as music inspired by Chinese traditional music and dangdut (Indonesias music of the masses).

MODERN-DAY MUSICIAN
These days, perhaps the most wellknown Balinese artist is I Wayan Balawan, recognized internationally for his exquisite blend of Balinese music and world sounds. He is better known by the name Balawan and is

famous for his 8 ngers touch style guitar technique. Musicians around the world call him The Magic Finger guitarist. Teaching himself to play the guitar at the age of eight, he joined his rst band when he was 14 years old. He studied jazz at the Australian Institute of Music in Sydney, and after obtaining a Diploma of Music, returned to Bali in 1997 to form a band called Batuan Ethnic Fusion. This musical outt combined traditional Balinese gamelan music with jazz/fusion.

His rst solo album Balawan was released in 1997 by the Acoustic Music Label (Germany). His rst band album GloBALIsm was a Chico&Ira Production (Indonesia) released in 1999. Balawans second solo album Magic Fingers was launched under the Sony-BMG Music Indonesia label. This album really showcases Balawans arrangement and composing capabilities, as well as the seamless manner with which he blends modern music with traditional Balinese gamelan.

public transportation, its bafing to imagine how many tires the country must go through on a yearly basis. Tires will never become one with the Earth, which poses the question: What is to be done with them all? In the case of the Californian company Indosole, they are taking Indonesias

discarded tires and repurposing them into soles for footwear (and stylish footwear, at that!). As of Earth Day 2014 (April 22), Indosole had repurposed a total of 21,678 waste tires. If you visit their website, youll nd a tire ticker in the top right-hand corner. This

number continues to grow with every passing minute, slowly but surely bringing Indosole closer to reaching their goal of saving 1 million tires from Indonesias landlls.

different story. Indosole has been honing their process for ve years, so by now they have got it down pat. According to the VP of Indosole, one motorbike tire can be made into about two pairs of sandals, while car tires provide enough material for roughly six to eight pairs. The process starts with the collection of tires, purchased from recycling centers around the island. Indosole does not purchase in bulk, but instead pays per tire. This is

REPURPOSING TIRES
The use of tires for shoe soles is not an entirely new idea. In fact, it is common practice in many developing countries around the world. However, transforming the material into a lightweight and comfortable product is a much

Alleviating the waste problem isnt the only thing Indosole is dedicated to. Education of the countrys youth is another passion of theirs, and theyve acted on this by funding the college tuition of Bali-born surfer Made Mariasa Karbit. Indosole has sponsored Karbits surng since 2010 and the budding entrepreneur dreams of contributing further to the Indosole business upon his graduation. In the future, Indosole hopes to sponsor the education of as many students as possible. Soles

what they have done since the very beginning and still do to this day, despite the fact that prices have risen considerably since they rst started. The tires are then repurposed, meaning they are turned into something new without any reprocessing. No fuel-powered machinery is required, which makes repurposing greener than recycling. All that is needed is a strong pair of hands to cut the tires and inner tubes to shape. The process of cutting rubber by hand is more expensive than using a plastic injection mold, but at the end of the day, minimizing environmental impact it is worth the extra cost. Vegan leather and suede, organic cotton canvas, and traditional Indonesian batik fabrics (all handdyed) are used to complete the product. Some sandal styles even incorporate pieces of repurposed burlap bags as a nishing touch. with soul isnt just a tagline; it is something that their team lives and breathes, and we salute them for that! Indosole has come a long way, starting back in 2004 with a surf trip to Bali (where the Indosole founder came across his rst pair of tire sole sandals), followed by several years of experimentation, all the way up to their latest collection, which is

not a surfer youll still be able to appreciate their sandals, which run from between $25 to $48 and their shoes that go for $55 to $60. Its practically guilt-free shopping. The Klasik Beans Cooperative is led by Pak Eko, who has been an Indonesian volunteer rescuer for 15 years. During his service, he and his team traveled to remote areas in Indonesia and came across farmers who treated coffee as just a normal commodity. They rushed the production, which resulted in inconsistent quality, and some even

CELEBRITY PASTRY CHEF ADRIANO ZUMBO HAS HIS SIGNATURE CREATIONS ON THE W BALIS NEW AFTERNOON TEA MENU. DURING A RECENT VISIT WE MANAGED TO PULL HIM AWAY FROM HIS ADORING FANS TO CHAT ABOUT HOW BEING INNOVATIVE HAS LED HIM TO WHERE HE IS TODAY.

Bali & Beyond (BB): Do you have any childhood experiences that inuenced your decision to become a pastry chef? Adriano Zumbo (AZ): Yeah, totally. My parents owned a supermarket, so I grew up around free lollies, free snack foods, free confections. It was denitely a big inuence. I didnt eat much savory I pretty much only ate chicken, pasta with no sauce I ate so many sweets. Every day before school Id ll my bag up and share with my friends.

BB: Thats a good way to make friends! AZ: Yeah, theyd always be around. It was denitely a big part of my life. BB: Youre known for coming up with unique names for your creations. What are some of your personal favorites? AZ: I love them all. There have been so many names over the years Currently, my favorite is probably the Dirty Danny.

BB: Do you have a friend named Danny that its named after? Is he a dirty kind of guy? AZ: What I love to get out of a name is that its up to you what to think of it. I know why I named it, but you dont need to know that. You sort of make what you want of it. Thats what I love! People come in and have a giggle... Its important that you make a connection mentally. Its all about making the brain think about it. BB: Of all the things I sampled today, the Popcorn Macaroon was my favorite. It tastes just like movie theater popcorn drenched in butter. AZ: Thats probably my best-selling macaroon in Australia. I saw it really t in with the theme here. BB: Whats the most exotic or peculiar ingredient you like to use? AZ: I like things like vinegar and olives because theyre salty. When making a cake, its all about balance sweet, acid, salty, bitter. I like all those different elements. A lot of things come sweet in this industry, so I like the things I can use to cut that back. Salty, acidic or neutrals like vanillas or nuts. It might not have a big avor impact but it will have an effect on the nished product. BB: What did you put in the Babi Guling Macaroon the one that tastes like suckling pig? AZ: Babi guling! Its pureed up; we used that as a base and made a lling with it. The best way to get a avor is to get the real thing.We BB: I love how visual everything you make is. Aside from that, youre linking things to peoples memories and really providing an experience for your customers. Very cool! BB: What are some other best sellers and must tries at your shop? AZ: The V8 Cake its eight layers of vanilla. There are a lot of macho men in Australia that like V8 cars, so it was a bit of a mind twist and has a couple meanings. Aside from that, passion fruit tarts, macaroons and zonuts make the top four things in the store. My favorite thing at the moment is probably the Milo Can. Its a cake that looks like a can of Milo. Its Milo-raspberry-mint. have pancake macaroons, so we make pancakes. Some people will say thats a waste of time, but the avor The memory and nostalgic feel you get from that is priceless. So lastly, what are some words of wisdom you have for those who want to enter the pastry industry? AZ: Youve got to have an open mind. Be passionate, have thick skin. You have to see the world as inspiration. Look at everything around you and absorb everything. People will be honest, but it doesnt mean youre not right. Its constructive criticism and should be taken in. Accept people for who they are and situations for what they are and youll go a long way. The key is to adapt. There are no mistakes in life. Theyre experiences, so learn from them. Dont look at a book and go, Thats what a pastry chef is. A pastry chef is you, your creativity, what you see the world as, what you see pastry as. Remember the tradition but dont stick by it. Make it your own thats what creativity is. Have a dream and chase it.

What had brought me there that day was the fact that for the umpteenth time, someone with a chic cut had replied Rob Peetoom when I inquired about where they had gotten their hair done. But besides that, I really wanted to learn about their signature hair treatments since they have established themselves as a hair spa and not just a salon.

HAIR CARE
Its best to commence with a test to learn about the current condition of your hair and scalp. The staff uses a special camera to check your roots, ends and several areas of your scalp to decide on which hair products will work best for you. There are several hair massage treatments to choose from, and all use Krastase products. The crme

Walking the hotels hallways is akin to an art tour or a visit to a chic gallery. The hotel is located in the heart of Jimbaran, a traditional shing community along the southern coastline of Bali. Because of the hotels proximity to the sh market, all 118 rooms have air puriers and fans on the balconies.

LAGOON ACCESS
We stayed in the Lagoon Access room, which features an addictive king-sized bed. A small terrace leads out to a curved pool that winds its way over to the main saltwater lagoon pool in the center of the 1.6 hectare property. The room is reminiscent of a contemporary New York Hamptons getaway with slate grey stripes and cornower blue accents. The rooms have the latest in cutting edge

leaves chop the air with dizzying effect. The open space lobby has an eclectic art collection including a pointillism installation of the Beatles crossing Abbey Road. The ambiance is very artistic

ENERGY SAVERS
Natural light pours into the room during the daytime and theres more than ample in-room lighting at night with the curtains closed. If you like it completely dark at bedtime, make sure to close the closet door all the way to deactivate the strip lighting. The rooms are energy efcient as well, as guests need to insert their keycard in a slot that activates the lights and air conditioning. When leaving the room, the keycard is removed from the slot and all the power is turned off. When the

THE TRIALS AND TRIBULATIONS OF LEARNING A NEW LANGUAGE

SPEAKING IN TONGUES

have just nished my rst Indonesian lesson at a wellregarded language school here in Bali, and quite frankly, I found it mentally exhausting!

necessary to try and learn to speak the language. This will prove to be a long, winding and oftimes bumpy road. In recent years I have re-invented myself not only as a novelist but also as a travel writer, so this career change takes me to places where

spoken English is extremely rare. Having a translator is not an option, therefore I have had to bite the bullet and knuckle down in the attempt to become even a little procient. My class is small just four of us and an ever-so-patient teacher. I am a little awed by my

fellow classmates, as they radiate condence and intelligence and gobble up the class notes in a ash while I hold up proceedings by plodding through the most basic of sentences. We have a Greek gentleman as a student. Greek is his mother tongue and on top of that the fellow speaks English, Spanish, German and enough Arabic to get by. And here he is adding another tongue to his already bulging cabinet of languages! A shy Russian woman who has just recently learned English now embarks on learning another tongue, stoically working away at pronunciation and diction. I wonder, does she see the word, work it back into Russian, then into English, and then into Indonesian? I really should ask her! Indonesian (Bahasa Indonesia) is the ofcial language of Indonesia and is used as the lingua franca in the Indonesian archipelago. Bahasa Indonesia was elevated to the status of ofcial language after independence in 1945, designed by academics rather than natural evolution as a unifying communication platform for its millions of inhabitants. So how hard could it be, this language that borrows much from other tongues and supersedes the over 300 native languages that abound in this incredible country of 17,000 islands?

Actually it is very hard! Growing up in countries where English is the only language spoken, my brain has gotten lazy and especially stubborn when I attempt to think and speak in a tongue alien to the one Im accustomed to. Pronunciation, nuances, spelling and a different sounding alphabet does everything in its power to confuse me. I learn to ask a basic question and do so with gusto, feeling mighty pleased with myself. Suddenly, a rapid-re answer comes back at me from my teacher laced with a corresponding question. I simply stare open mouthed as, to be quite honest, I havent a clue as to what the gentleman has just said. So now I adorn my house here in Bali with Post-it notes in Indonesian stuck to all manner of objects around the home. I laboriously try to increase my vocabulary each day by saying the same words over and over again. And my condence is building! This morning I set off for the market rehearsing over and over the basic phrase, Good Morning. Could I please have a carton of milk and a dozen eggs? Thank you. The lady at the market looked askance before handing me a packet of condoms and a brand new bucket. I think I have a ways to go! By Paul V. Walters

Bubble tea has become an international sensation, including here in Indonesia. As a big fan of bubble tea I was excited to hear that a new brand was about to open in Bali (after opening outlets in Jakarta and Bandung). However, I wondered what they would do to differentiate themselves from the others that exist.

Presotea originates in Taiwan, where they have about 250 outlets serving thirsty customers all across the country. As it turns out, their concept of Fresh Tea, Fresh Made is what sets them apart from the rest. I love the fact that their tea doesnt sit around all day it is made only when ordered. On top of that, each drink is made from one fresh tea bag, so theres no chance of you getting a watered-down version of the drink that was served to the customer before you. After savoring the pastries and fruit salad, there was a brief period where we got to interact with the gentle giants. As we waited for our main breakfast to arrive, we fed the elephants theirs. This consisted of sugarcane. You have nothing to fear, as the mahouts (the people who work with and tend to the elephants) are there to guide you on how to interact with the elephants. It was wonderful to

person who rarely sees the morning lightmore of a night owl than a morning roosterbut for this special occasion I was willing to change my usual pattern. From Kuta we headed towards Gianyar, and after about an hours drive we arrived at the zoo and were greeted by a pretty noisy atmosphere. It was not the visitors who were being raucous but rather the zoo residents themselves! This only added to our feelings of anticipation. Waiting at the entrance was one of the zoos staff, and in all honesty,

I had never seen such a warm smile so early in the morning. She led us past the lion enclosure to our breakfast spot, and on the way I noticed a lioness sleepily having her breakfast. It was amazing to see the wild beasts starting their day in pretty much the same fashion as we do. At the Elephant View Restaurant, three Sumatran elephants and a cute baby gibbon (clinging to a member of the staff) were ready to welcome us.

TAKE A RIDE
By the time dessert was served, it meant only one thing: it was almost time to ride the magnicent creatures! Just to the side of our breakfast spot was a platform from where we hopped onto the elephants for a 30-minute ride around the area. I must say that riding on the largest mammal on land is a pretty unforgettable experience. The package also allows you to explore a side of the zoo that other visitors dont get to see. You can peek into the elephants quarters to see where they sleep, rest and have their baths. After the tour, we were taken back to the starting point and given a memento to take home to remind us of our experience. Then we got to interact with the elephants a bit more, petting them and giving them more treats. The only other thing I

he sun was shining overhead in the clear blue sky and I could see just a handful of small clouds in the distance.

Beside me, a man who donned an unbuttoned shirt and a gold necklace looked on as Tamil women rushed by on their way to temple, the sunlight illuminating the vibrant colors of their saris. Ahh, it looks like Ive nally arrived at Kampung Keling, I thought to myself. I then met with Abdul, a Tamil man with a protruding belly and a thick mustache that covered almost half of his mouth. Abdul is a native of Kampung Keling (also known as

Amid the surging demand, a Surabayan of Arab origin jumped at the opportunity. He invited the involvement of three Dutch traders from Java, a strategy that was quite political at the time. The word Keling itself comes from the word

In 1884 a Hindu temple called Shri Maryamman was established, and three years later came the construction of a mosque, Ghaudiyah, which is only 500 meters away from the temple. Both are still standing strong to this day. The heyday of Deli tobacco ended as soon as the Japanese occupied Abduls family was not the only one hit by hard times. After the 1950s, many Tamils had to sell their land due to economic woes. And slowly but surely, the number of Tamils in the Kampung Keling area has now dwindled. The golden age of Kampung Keling is long gone, a time when the Tamils lived and settled in large colonies in Little Madras. Klings, which is what Dutch ofcials used to call the Tamils who worked in the tobacco plantations. Judging by the numbers, it can be said that the Tamil workers dominated when compared to the workers from Java. My father said that Tamil people are born as a hardworking men. Thats why our elders were brought here, Abdul said. This was the basis for the emergence of small Tamil villages around the tobacco plantations. Kampung Keling is the manifestation of the unication of these small villages. the archipelago. Some workers sold their land to indigenous people or to the Chinese in order to return to their country of origin, while others chose to stay due to marriage ties or the development of commerce. Aside from the Tamil, there were also Punjabi workers hailing from North India. Some literature claims they were employed in Kampung Keling as warehouse guards or housekeepers for the Dutch ofcials, while other sources say that their arrival in Kampung Keling was intended for supplying weapons

to the Dutch army, but later they turned and helped Indonesia gain its independence.

If thats true, then how come I was not disturbed at all? In fact, I received a warm smile from every pair of eyes I encountered. What are you doing in the village? greeted Salma, a relative of the proprietor of a small shop where I sipped iced tea as an

antidote to the afternoon heat. This was the beginning of our conversation about Tamil culture. Seventy-year-old Salma still uses the Tamil language, so without hesitation I handed her my earphones to play her a song called Pis Lullaby from the soundtrack of the movie Life of Pi. The woman closed her eyes as she listened. This is Tamil language, but the music is too modern, she said. Only a small fraction of todays generation can speak Tamil. Kampung Keling is facing a major storm in maintaining its identity. What is especially worrying is the news I heard that Kampung Kubur is under threat of eviction. In its existence might be replaced by concrete foundations for apartment buildings that will tower over Zainul Arin Street. By Yoppy Pieter

ANDRIAN ISHAK (THE PROGRESSIVE)


Some people are quite skeptical about molecular gastronomy, viewing it as a trend that will soon fade away. Andrian Ishak has a different view.

l Bulli in Spain was one of the most controversial, experimental and inuential molecular gastronomy restaurants

father of molecular gastronomy and in Indonesia there are many chefs who have partially adopted his techniques. But if were to talk about those who are serious about molecular gastronomy, there are only two people who can be considered Ferrans sons Andrian Ishak of Namaaz Dining and Ronald Prasanto of Rons Laboratory.

According to Andrian, molecular gastronomy is a scientic way of thinking, so he disagrees when people label Namaaz Dining as a molecular gastronomy restaurant. I prefer to call it progressive Indonesian cooking, he said. When Andrian, formerly the electro-acoustic guitarist of a band, came to a point in his music career where he felt they werent going to make it, he decided to take over his fathers catering business. In 2007, he started his own Indonesian restaurant called Suguhan Magali. One day, Andrian typed the best restaurant in the world into the Google search engine and found El Bulli on the top of the list. His curiousity led him to buy a molecular gastronomy book from Amazon. He found the content to be quite complicated, but what was most discouraging was the fact that the tools and equipment were not yet available in Indonesia. The rst thing he was able to procure (again, from Amazon) was a sous vide, or a water oven, which

said. The new Namaaz can be considered a ne dining restaurant, but you wont nd any excessive decorations. To be honest, I see that the ne dining competition in Indonesia is not about the food but more about the interior design, perhaps to provide customers with a certain atmosphere, he explained. But I dont have to follow them. Of course the place has got to be nice, but I dont want my food to hide behind the beauty of the interior design. Another thing about Namaaz is that you wont nd fancy ingredients such as foie gras, caviar, trufes, etc. Fine dining restaurants feel obliged to serve those ingredients to add value. Me, I add the value by creativity. What we offer is a unique dining experience, Andrian concluded.

he used to make poached eggs. If we are to boil an egg, usually the heat is not evenly distributed, he explained. With sous vide, I can make a perfect poached egg, the egg yolk still intact. It tastes wonderful! In 2012, Andrian decided to pour his whole heart and creativity into Namaaz Dining, located on the second oor of Suguhan Magali. The creative process always starts with crazy ideas, and Andrian uses molecular gastronomy to transform the craziness in his mind into

something on a plate. An example of this is the idea he got from purchasing a beverage on the street from a kaki lima vendor. I was thinking it might be a good idea to have it as an edible dessert, from the plastic bag, the straw and the rubber band, he said. Namaaz has recently moved to a more strategic location in Gunawarman, Jakarta. Its a statement to those who see Namaaz as some sort of underground project. Its like saying this is the real thing, this makes money! Andrian

creativity molecular gastronomy. Previously known as an Indonesian coffee artist, Ronalds introduction to molecular gastronomy was basically due to his big mouth. During the Indonesia Barista Competition 2011, he had a conversation with Toni Wahid (of cikopi.com), who commented on how boring he found baristas signature drinks to be. Give me a month and Ill come up with something different, Ronald responded. At the time he had been experimenting with transformation, so he dug deeper and found molecular gastronomy. Ronalds case is a proof that sometimes a big mouth can be benecial. In fact, he is the rst person in the world to apply molecular gastronomy to coffee. Among his creations are the Espresso Raviolli (jelly espresso made of alginate and calcic) and the Dragon Breath, which causes the drinkers mouth to spout smoke.

Indonesias educational system unfortunately does not put much value on creativity, so it is easy for schools to label an active child who is lacking outlets for creativity like Ronald Prasanto, a bad boy. Though the labeling was not completely innacurate (young Ronald used to love adding laxatives to his friends drinks!), Ronald has now found an outlet to channel his

be doing something else. In the end, youll never copy someone one hundred percent, said Ronald, founder of Avantie Can Cook. Anne Avantie, the kebaya designer, is Ronalds aunt. By the end of 2013 Ronald had opened his own place in Grand Indonesia called Rons Laboratory, a molecular gastronomy gelato shop. Most ice cream bars dont create unique avors because the minimum capacity of their ice cream machine is 5 kg or 10 kg too risky for business, he explained. With liquid nitrogen I can make very small quantities, made to order. I can experiment more with avors. The liquid nitrogen (over -190 C) acts as a freezing agent and evaporates into the air within seconds. Within months, the word of Rons Laboratorys success spread through the Internet and social media outlets. However, Ronald sees it as a revenge project. When I was a little kid, people told me not to play with food. Its payback time! he exclaimed triumphantly. In the end, youre called two names for being different unique if you succeed, or weird if you fail. Andrian and Ronald agree that molecular gastronomy can be applied to any kind of food to create something previously unimaginable. For us customers, it means that good things are on the way. Call an ambulance by dialing 118, but it is a lot more practical and quicker to hire a taxi. Most hotels have on-call doctors on standby. For Bali Belly, Lomotil and Imodium eliminate symptoms, but not gastro-related infections. A fever along with symptoms requires doctor-prescribed antibiotics. Drink as much liquid as possible. Isotonic drinks under various brand names are widely available and are known to replenish body hydration and replace uids. For discomfort, diarrhea and cramping, drink strong, hot tea; avoid fruits and spicy foods. Some day-biting mosquitoes carry dengue fever, but this is not a problem in tourist areas. Bali is non-malarial and prophylaxis is not required. Mosquito bites, cuts or abrasions easily become infected in the tropics. Treat them immediately. Drink only bottled or boiled water. Peel fruit before eating; avoid raw vegetables except at reputable restaurants. Ice in restaurants is safe. Protect yourself from the intense equatorial sun. Use high SPF sunblock and a hat. AIDS and sexually transmitted diseases are increasing in Indonesia. Local sex workers have multiple partners from around the world. They are not checked for sexually transmitted diseases. Act responsibly and use condoms, available over the counter at pharmacies.
