Hospitality Industry
Introduction to leisure
The industry in figures and the economy
Leisurejobs, the longest standing dedicated online resource for careers in leisure, has created this pack to
help guide you through the wealth of serious career opportunities that the leisure industry has to offer. As a
sector it has seen enormous growth and expansion into new areas. Job categories range from fitness, spa,
and cheffing to travel, tourism, recreation and hospitality. These types of jobs have both short and long-term
prospects with very competitive salaries as well as a host of additional benefits. The average salary for man-
agers is circa 30,000 however the top managers can make upwards of 100,000/pa.
This truly international industry offers opportunities to work in the UK or abroad. Temporary or permanent,
with or without specific qualifications, you will find casual jobs or those with true potential to climb the
career ladder. The industry is becoming increasingly business minded. People who can demonstrate man-
agement and business skills are highly sought after. The new generation of leisure facilities increasingly
have a variety of offerings on one site sometimes teaming up with other companies/contracts to run areas
outside of their core business. For example Costa Coffee running cafes in hotels or fitness centres. This
clustering of leisure facilities generates multiple revenue streams targeting an active and engaged user
base. Any single leisure site may combine bars, caf, restaurant, cinema, fitness facilities, spa, accommoda-
tion, conference and banqueting facilities. This means managers have to be capable of running many differ-
ent types of departments simultaneously.
The unique aspect about this particular industry, and one that makes it so popular, is that you work in fun
and social environments. Even better is that you could be securing a job that turns your favourite hobby
into cash. You could be sailing the seas, working in the latest health club or hotel, running a casino, specialis-
ing in foreign travel, working with sumptuous beauty products, mixing cocktails, coaching the rich and
famous or enjoying ski seasons all whilst earning money and in the case of cruise ships, earning tax free
money!

The Industry in Figures
As a high growth area, the UK leisure industry is becoming increasingly important to our
economy, contributing 10% of UK gross domestic product (GDP). It employs 13.5% of all
workers, equating to more than three million people.

If you are unsure as to which sector of the leisure industry would best suit you then read the
following summaries. Bear in mind that skill sets and experience are transferable between
10% UK GDP employing 13.5% of the population
Health Fitness and Recreation
In the last year (2006-7) the UK health and fitness market has grown in value by 4% to almost 2.5 billion. It
is also reported that the UK market now has more members than at any time in its 20-year history. With
nearly 90% of the UK population now living within reach of a private or public health club, UK consumers
now have a choice, on average, of seven private health clubs and two public health and fitness facilities
within in two miles of where they live. What does this mean to you? Jobs, and lots of them. There are oppor-
tunities in management, reception, administration, marketing, sales, retail, cheffing or coaching physical
activities.
An interesting trend in the health & fitness sector is that new clubs are often multi-purpose facilities mean-
ing that they might include cinema, salon, restaurants and other recreational facilities as well as swimming,
tennis, fitness, and spa. This represents an array of amazing challenges for managers of these new types of
clubs who will need experience across many areas. If you are particularly career driven then getting a foot in
the door of one of these facilities would be a smart move.
There are also a host of opportunities to use fitness and management skills to work abroad in destinations
including the Caribbean, Greece, Turkey, Egypt or cruising over the globe as demand for professionals has
grown in line with the international expansion of the health, fitness and recreation market.
Leisurejobs.co.uk offers free career advice on its website and holds thousands of jobs nationwide including
positions in leading chains like David Lloyd Leisure, Next Generation, Esporta, Cannons, Virgin Active, and
Fitness First, Mega Bowl, Hollywood Bowl, Camp America and top tourist attractions such as Alton Towers,
Madame Tussauds and the London Eye.

Pubs and Bars - Licensed Retail
As a student this is an area that may already be of great interest to you. There are a multitude of jobs avail-
able for students and travellers to earn cash in the licensed retail sector with well over 60,000 pubs and bars
alone in the UK to choose from. However aside from a means to sustain you whilst you study or travel,
proactively choosing to work in this sector can lead to a professional career with area managers of larger
commercial brands earning over 100,000 per year. Career development can be quick and rewarding with
many bar managers going on to lease or even open their own premises. Licensed retail contributes 5% of
the country's GDP and pays 22 billion pa to the Exchequer.
Employees in this field must be able to communicate well, be willing to work hours outside the normal 9-5
and be very sociable.
Leisurejobs has developed a dedicated job board for the licensed retail sector called www.barzone.co.uk,
which advertises hundreds of opportunities with organisations including JD Wetherspoon, Yates, Bar Med,
Whitbread, Slug & Lettuce, Hilton as well as many of the industry's leading high-end bars and clubs like the
Mint Group. The site is run in conjunction with the BII, the professional body
for the licensed retail sector who have included a host of useful information
and contacts on the sector.

Spa and Beauty industry
With the increased pace of modern day life and peoples eternal quest to make themselves look as good as
possible, this industry is growing at an exceptional pace. There are over 14,000 salon businesses in the UK at
present with the industry employing over 35,000 people and receiving 92 million clients each year. As a
sector, the turnover is estimated at 500 million pounds per year and there is room for expansion on this.
Whether you prefer the idea of working in a small informal environment or a large slickly run 5* spa & health
retreat there are a wide range of vocationally trained and skills specific roles to choose from, all of which
offer the development of either employed or self employed careers such as nail technicians, hair stylists and
spa therapists vocationally trained in a huge range of treatments and products. However, in addition to
these roles which require a recognised industry qualification, there are a wealth of other career opportuni-
ties including spa receptionists, sales and account managers, retail management, spa management and
marketing.
As a truly international sector of the leisure industry, you could work in the UK or across the world on cruise
ships, in health clubs, holiday resorts, hotels or spa retreats with starting salaries ranging from 12,000 -
20,000 depending on location but with senior managers earning in excess of 60,000.
A prerequisite for this industry is good communications skills and flexibility to work weekends and evenings.
You must be well turned out and confident at selling products and treatments.
Leisurejobs.co.uk currently hold positions with big brand businesses including Clarins, Elizabeth Arden,
Aveda, Champneys and Regis Health & Beauty along with signature spas The Grove and The Retreat at
Harrods.

Travel & Tourism Industry
The Travel and Tourism industry is still one of the largest single businesses in world commerce and its impor-
tance is widely recognised. One of the consequences of its growth is the ever-increasing range of job oppor-
tunities and career prospects for well-qualified and motivated people.
Travel and tourism is a very significant industry regionally, nationally, within the EU and on a global scale.
Together, the travel and tourism industry generates about 11% of world GDP and 200 million jobs across the
global economy.Tourism is an important component of the UK economy - total employment in tourism-
related industries in the UK is estimated at 1.8-2 million people (6-7% of the workforce), most of which are in
SMEs (the government estimates that 80% have a turnover of less than 250,000 per annum). Britain has the
fifth largest tourism industry in the world, with export and foreign exchange earnings amounting to 15
billion in 1997, equivalent in scale to motor vehicles and components and larger than North Sea oil. Employ-
ment growth was above average in the sector during the 1990s at 30%, and is expected to carry on growing.
By 2006 one in five of all new jobs are in tourism, leisure and related areas, with an estimated 300,000 new
jobs by 2009.
Job opportunities include working as a Reservations/Booking Agent, Cruise Consultant, Customer Services
Manager, Account Manager, Administration, Cabin Crew, Conference Co-ordinator, Travel Rep, Travel
Consultant or Management.

Flexibility, a sociable personality, knowledge of the world and a passion for travelling is a must should you
see travel & tourism as your destination industry.
Leisurejobs.co.uk holds jobs with leading employers such as Mark Warner, The Flight Centre, Centre Parks
and Easy Jet.
The Travel & Tourism Sector is so wide that we have divided it into 3 travel categories:
1. Travel Agencies
2. Cruise Ships
3. Seasonal Work
Larger than North Sea Oil as an industry
Positions in travel agencies from booking agents to managers are very popular. Especially popular is being
able to specialise in different areas such as the Far East or Adventure Holidays or Family Packages. Incredible
careers in this industry can be forged. You might even take the role of running business travel accounts
where you may be responsible for looking after the travel and accommodation for major clients, which
could even include bookings like chartering private jets. But jets aside, to work in this sector you must above
all have a passion for travel and be happy to wave off your clients whilst often staying behind! Although you
dont need specific qualifications it is to your advantage to have an understanding of the computer booking
systems and common packages
From coach to learjet, huts to hotels.
Travel Agencies
If you dont have family commitments at home and welcome the opportunity to travel the world whilst
earning tax-free money, than a career at sea might be just the ticket for you. With over one million Brits
setting sail each year Britons are spending 1.24 billion on cruise ship breaks. By 2010 it is estimated that 1.5
million UK citizens will be taking ocean cruises each year. With figures on the up this is a career will excellent
short and long-term prospects. Whether you want six months or a lifetime at sea jobs vary and include sales,
admin, cruise consultants, cabin crew, spa and beauty therapists, fitness instructors and managers. Top name
industry players like Steiner Leisure and Harding Brothers luxury liners are constantly seeking new staff to
travel around locations including California, Hong Kong, Alaska, South America and the Caribbean.
1.8 millions Brits alone will cruise this year.

Ski Season and Summer Season Work
If turning your hobby into a career for periods of the year sounds up your street then you should seriously
consider seasonal work in the ski and summer seasons. Although in order to be a ski coach you will require
qualifications there are a host of jobs available from chalet hosts and drivers to resort managers. Seasonal
jobs tend to recruit well in advance so you need to think about applying from March for next winter and
from January for the summer hot spots. These jobs suit those without too many family commitments as you
need to be away for long periods of time. They are ideal for those on gap years or those wanting to take a
temporary job before settling into a career. However, as the jobs are profitable you may well be tempted to
work for just six months of the year!

Hospitality Industry
The Hospitality Industry is the interaction between the customer (guest) and the service provider (host) and
is a 3.5 trillion dollar service sector within the global economy. The hospitality industry in the UK has
expanded in the past five years and this growth is reflected in the increased amount of opportunities for
graduates.
Hospitality is found in all areas of business including the provision of food, beverages, and/or accommoda-
tion services. This includes restaurants; pubs, bars and clubs; hotels; contract catering; hospitality services. It
is an industry which is strongly linked to travel and tourism and is thought to employ in peak seasons up to
2 million people in the UK alone.
Salaries vary and depend on the size of the company, the amount of responsibility involved and the type of
organisation. Sometimes, packages can include profit-related pay, subsidised accommodation or meals,
pension schemes or health insurance. If you wish to work in hospitality you will find starting salaries
between 12k and 24k although there are plenty of part time positions available starting at a low hourly
rates working for one of the 127 ,000 businesses thought to be working in this sector.
3.5 trillion dollar global industry
The next section highlights the potential career opportunities available as well as the skills
required for the most common roles available in the leisure industry. Where we refer to
'requires training', this generally means that a vocational qualifcation is required for the role.
Salaries are only a guide and can vary due to location as well as other factors including whether
accommodation is provided for example. When applying for jobs read the job description care-
fully to ensure that you match the required skills and experience. Your CV should demonstrate
that you can apply skills gained from part time jobs, hobbies or extra curricular interests.
The larger the company the more likely they are to have a graduate training scheme. That does not mean
that smaller companies do not want to attract graduates as well, it is just less likely they will have a formal
process designed to attract and train recent graduates. As the leisure industry continues to grow it recogn-
ises the value of graduate training schemes and so there are now more and more opportunities to get on
one. Most schemes are aimed at developing the next generation of manager however other routes such as
sales, duty management and operations have all proved successful routes to the top !
Leadership and Management are crucial to organisations of all scales in today's challenging global environ-
ment. Managers implement strategies in day-to-day operations. They establish processes and systems and
monitor performance to ensure efficient use of company resources including materials, products, employees
and capital. Managers ensure that employees have the education, direction and resources needed to
perform their tasks.
All leisure sectors hold management positions, however the job and importance of a manager can vary from
company to company. For example a manager of an independent travel agent has less responsibility than a
manager of a holiday hypermarket who may have to manage dozens of staff as opposed to 3 staff. The great
thing about management is the scope to grow moving and transferring your skills to more senior positions
or bigger sites. Salaries for full managers vary considerably with a starting salary of around 25k. Those
interested in management positions should have strong communications skills, the ability to multi task and
prioritise as well as the ability to deal with heavy workloads and the confidence to lead a team.

From holiday resorts to hotels, gyms to bars, there are duty management positions available across a wide
spectrum of leisure sectors. If you already have some relevant experience from any area of leisure, hospitality
or retail then this is a good entry-level position for you to work your way up from. The need to cover depart-
ments with staff shortages and take control of day management responsibilities often presents itself. In the
absence of senior management you may need to deal with anything from complaints, customer enquiries or
even emergency situations such as fire alarms, all of which allow you to take advantage of developing your
skills on the job.
Whether abroad or in the UK, some city financial companies pay up to 40,000 for good admin or reception
staff, however these roles are rare. This does illustrate that some organisations recognise that reception is
one of the most important functions of a modern day business. Consequently reception staff are amongst
the most valued being the first point of contact between the company and its clients and customers as well
as often acting as a hub of information and communication. Most sectors within leisure and the broader
economy recruit for reception and administration staff so depending on which field you choose, the oppor-
tunities are wide and varied.

The sales function is one of the most vital components of any business and one that affords excellent returns
to those who show an aptitude for it. Starting your career in sales can give you great short term financial
returns even at the entry level and is traditionally one of the fastest routes into management. Typically this
is a very fast paced environment and you should enjoy working in a team, not be afraid of approaching
people, be tenacious and a good listener. As a sales manager you will be required to lead from the front,
have developed good team skills and will most likely be in charge of your own sales team or department.
Integral to your success will be a constant focus on working in a target driven environment as well as devel-
oping your skill set on a micro and macro level, which may also involve a marketing element. Whichever
sector of the leisure industry you are interested in, good sales staff are always in high demand.
Success in retail management requires a broad range of operational management skills, from sales and
market analysis to inventory and store management to customer relationship management. From retail to
wholesale, from department stores to internet sales, the channels of distribution are more varied than ever
before. Pricing strategies, supplier collaboration, market, customer and competitor analysis - all these are
critical to the retail success. So whether it be a small or large retail outlet, the opportunities are vast and can
lead to very good financial returns.

If your pleasure is taking to the seas there are plenty of positions each year at sea. You can earn money whilst
soaking up the sun and sailing through exotic locations. You must be personable, able to work in close
proximity to your employer, be patient and aware that you are often on 24-hour call to meet the clients every
demand. Roles as a member of crew include cheffing, cleaning, beauty therapy, general assistant, personal
trainer, entertainer, bar tending and retail. Some roles incorporate a mix of all. Your accommodation and
meals are usually included and earnings are often tax-free.
To be cabin crew there are a few basic but essential requirements. These are being patient, having the ability
to deal with difficult clients and being of a friendly and outgoing disposition. You will also need to work well
as a team. Hours are often long and in shifts and you may have to be away for long periods of time from 2
days on flights to 6 months on cruises, so it is not a job for those with family commitments or who like a
regular 9-5pm role.

Chefs are responsible for preparing food using a variety of cooking techniques. In large kitchens they will
normally work as part of a team responsible for one particular area such as bread and pastries or vegetables.
The head Chef, who may also be known as the 'Executive Chef' or the 'Maitre de Cuisine', is responsible for
running the entire kitchen. You could work in hotels, pubs, bars, kids camps or health clubs.
Your main duties would include:
- planning menus
- dealing with suppliers
- managing the budget
- organising staff
- monitoring and maintaining the quality of food the kitchen produces
- making sure the kitchen works within relevant hygiene, health & safety guidelines.
You would usually start as a trainee chef (or 'commis chef') and be in charge of running an area of the
kitchen. The next step would be 'sous chef' (or under chef ), which would involve using the experience you
had gained in every section of the kitchen and running the entire kitchen on behalf of the head chef when
necessary. In smaller kitchens you could also be responsible for cleaning the kitchen and serving customers.
You may not need any formal academic qualifications to start work as a trainee (commis) chef, however some
employers will prefer you to have a good standard of education, possible including some GCSE's (A-E) in
English and Maths.
Conference and Banqueting involves the promotion of a venue for private or corporate functions. The job
may require you to see an event through from beginning to end and can be very satisfying. To be successful
in this job you will need the ability to communicate well, be extremely organised, efficient and personable.
You find these roles in a variety of venues and hotels mainly. Operations is responsible for the planning and

Activity leader positions can be UK based or abroad, full or part time. Resorts and organisations like Camp
America look for staff during the busy summer months. You must be a team player, active, a people person
and be able to communicate clearly. Love of the outdoors also helps. Jobs vary from kids club leaders, sports
instructors and mountain cycling guides, sometimes working with young offenders or special groups.
Sports coaches and activity instructors need a vocational qualification recognised by the appropriate gov-
erning body as well as having criminal records bureau clearance if you want to work with young people.
A large proportion of these roles are voluntary or part time and the aim is to help people meet their full
potential and engage safely in the activity. Coaching is often working in sports development at a local or
national level.
Social skills are a must in this role as you are first and foremost customer facing. You need to be aware that
pay is low and hours of work are often long and unsociable. However, jobs behind the bar can also be very
enjoyable and a great way to meet new people. Bar jobs are ideal for temporary work, shift work or those
who want a step up the ladder in the pub and bar industry which can lead to a professional career either as
an experienced Bartender serving the rich and famous and inventing signature cocktails or as a bar or pub
manager or even owner. Bartenders often will have received extensive training and gained a broad experi-
ence.

Lifeguards make sure that swimmers are safe in swimming pools, or in the sea or inland waterways. They
help to prevent accidents by being constantly alert to identify dangerous situations. You could be employed
as a pool lifeguard by local authorities, leisure centres, private clubs, hotels and resorts. You could also find
opportunities overseas. With experience, you could progress to supervisor or assistant management posi-
tions at leisure centres. Some pool lifeguards gain coaching qualifications and give swimming lessons. As a
beach lifeguard you could be employed by the RNLI or by local authorities. Candidates for lifeguard posi-
tions require excellent observation skills, a good level of concentration, the ability to remain calm and inspire
confidence, the ability to communicate clearly, precisely and with authority especially in an emergency and
a tactful but firm approach.
As well as observation from the pool edge or observation chair you would be required to stop behaviour
which could be dangerous, use life-saving techniques such as resuscitation in emergencies, give general first
aid, check water temperature, pH and chlorine levels, set up equipment and advise swimmers on the use of
the diving boards and slides. To work as a lifeguard you must be aged 16 or over (18 or over for beach
lifeguard), physically fit and a strong swimmer and would require a qualification. See

All roles require an element of training and there are roles available with both operators and training compa-
nies. You will in most roles be required to have a recognised training award that is usually taken through a
training body working with a national awarding body. The training can be expensive to get to this stage but
is often gained through employment. Training Officers organise training for staff that can involve delivering
training personally or by arranging training events through external providers or training centres.

A beauty therapists job can be far reaching and you can opt to specialise in varying modules including
facials, reiki, reflexology, lash and brow tinting, eyebrow shaping, waxing of most areas of the body (male and
female), self tanning and cosmetic applications. You may also offer other specialist treatments such as mas-
sage, aromatherapy and hydrotherapy. As well as opportunities in salons and spas this is a great job for
those who wish to be self-employed and therefore their own boss. You have the option of either working
from your home or travelling to clients houses. Like in many roles requiring vocational qualifications the
more courses you take the more you can offer and potentially earn. For course information see

Massage is a job that definitely requires you to like the touch of 'strangers' and to enjoy being able to help
others through the art of massage. Massages vary greatly from traditional Swedish, aromatherapy and stone
massage through to deep sports massage and rehabilitation for those with injuries. As a massage therapist,
you could use your massage skills to help clients with both physical and emotional healing.
You could treat a range of clients, including:
- people recovering from a period of sickness
- individuals who need support when they are ill
- adults who want to manage stress more effectively
- people who want to develop their level of physical relaxation.
To be a masseur requires in-depth training including an examination in anatomy, which is no easy ride. In
addition to vocational skills you must be good with people and sensitive to those who find it difficult to
literally 'be laid bare'. As well as opportunities in salons, clinics, hospitals and spas this is a great job for those
who wish to be self-employed and therefore their own boss. You have the option of either working from your
home or travelling to clients houses.

Not one for the faint hearted, as you will be at the feet of some rather gruesome toes and gnarled nails. Nail
technicians use their creativity and skill to improve the appearance and condition of clients nails. As well as
offering basic treatments, such as manicures and pedicures, they apply false nails and nail extensions, and
decorate the nails using a variety of techniques. There are many aspects to manicures and pedicures which
require training and you can choose your preferred nail company to train with and get your qualification.
Popular companies include Nails Inc, NY Nails, Jessica, OPI, Essie and Creative Nails. This is another great
beauty job that you can do either in employment in a salon or spa or freelance working for yourself by
building your own client portfolio. Candidates must have good social skills as good chat is essential!

salon, for once you have experience you can be part of your salons creative team working on hairdressing
collections for hairdressing awards which are often used in magazines and doing shows and demonstrations
at industry events. To become a hairdresser the best way to start is by obtaining a basic qualification and

Applying
C.V.
In any industry when applying for a job, it is important to ensure you meet the requirements the employer is
asking for and illustrate these clearly in your C.V, even if it means tweaking your C.V. to suit each job you
apply for. Unless you are a mature student the chances are you will not be able to demonstrate a wealth of
work experience. What you can demonstrate is the relevance of your course and a summary of any experi-
ence you have had from work, membership of groups and hobbies.
In a graduate C.V. you are trying to keep all the relevant experience and training from work, study and
hobbies in one place near the top of the C.V., and avoid the recruiter having to search to find suitable quali-
ties. You will need to find out exactly what experience is expected and demonstrate your ability in these
areas.
For example, shop floor experience can demonstrate a number of abilities, including working with cash,
security, customer care, first aid, recognition of seasonal variations, mails shot and data base control, team
work, awareness of targets and accepting responsibility for the opening and closing of the premises.
Helpful hints:
Keep it short - no recruiter has time to go through a five page CV, a concise CV shows good communication
skills and understanding.
The job of a CV is to get you an interview, not to get you the job. Try to plan your interview through what is
written in your CV, recruiters will use it as a basis for your interview.
Preparation for interview. Think of three answers to your best achievements which can be applied in relation
to work it is also good to have prepared a good example of how you have coped when things have gone
wrong. Think about what relevant skills you have and think about why you want the job. Research the com-
pany thoroughly and memorise the names of anyone who may be in the interview.
Dress up not down, do not drink or take drugs prior to the interview. Funny stories about you may best be
avoided along with party tricks and email addresses containing anything unprofessional in it e.g.
sexy1@hotmail.com.
Always research the company before applying
