What is the relationship between wine and weather?


Annual variations in weather explain why the wine consumer
might see higher wine prices one year or more choices of great wines
in another. Every growing season has a different number of days of
sun, rain, fog, mist, hail, frost and wind. Whats more, the timing of
any of these individual events between March and October could
mean the difference between a perfect year for wine growing or a
horrible crop of grapes. This is why a vintage the year in which
grapes were harvested is stated on most wine labels.
Poor growing-season weather, such as severe frost or hail, can
destroy or spoil crops, bringing increased prices or fewer high-quality
wines, or both, from that vintage. However, it is possible to find great
wines from not-so-great vintages, and vice versa. Its also possible,
though rare, that a single year can produce both high volume and
high quality, such as the 2012 vintage in much of California. Devoid
of damaging heat spikes or frost, it was a year with a near-perfect
combination of temperature, rain, and sunshine.
With the help of vintage charts, the growing seasons of major
regions around the world can be compared. If you buy wine at

specialty shops, vintage charts are normally available for reference.


Californias consistently good weather makes year-to-year vintage
variations less significant than appellations in, say, New York State,
where excessive rains one summer could ruin a vintage; or France,
where irrigating vineyards during dry periods is not permitted. (Thats
life in a controlled appellation of origin.) Successful wines in some
parts of the wine-making world depend heavily on favorable weather,
so the vintage year on a label carries more meaning.
A good vintage has warm days, cool nights, and a long mild
summer. A consistently cool summer ripens grapes too slowly,
creating an imbalance of high acidity with low sugar, increasing
tartness in that years wines. At the other extreme, if weather
conditions bring an avalanche of extremely hot days, sugar levels
skyrocket and acidity virtually disappears, producing flat and heavy
wines. Rain during, or nearing harvest can also upset the balance. For
some delicate, thin-skinned varieties like pinot noir, excess moisture
dilutes juice inside grapes and thins out wine. It may even form rot
on grape clusters, reducing the amount of quality wine produced
from the affected crop.

summer launches with slo Wine Countrys


roll out the barrels Celebration
Ushering in the official kickoff to the summer season, SLO Wine
Country launches its 24th-annual Roll Out the Barrels celebration
with new expanded events happening on June 19-22.
The celebration is perhaps best known for its sun-kissed Barrels
in the Plaza food and wine event on Thursday (June 19) at Mission
San Luis Obispo, which offers bites from area restaurants paired with
wine tasting from SLO Wine Countrys member wineries. The
weekend unfolds with Friday night (June 20) winemaker dinners and
continues with the Passport to SLO Wine Country Weekend (June
21-22) where event ticketholders visit area wineries all day Saturday
and Sunday and enjoy complimentary tastings, festive music, light
bites and special discounts.
New this year is our Barrel Sample Sunday (June 22) where
attendees can get a sneak peek and taste of upcoming wine releases at
our member wineries, said Heather Muran, executive director of
SLO Wine Country. She adds that throughout the weekend each
winery will also be selling a new 6-Pack Sampler that includes six
wines that best represent each winerys offerings and style at a special
price. Meanwhile, ticketholders will receive a complimentary sixpack wine tote bag in which to house their purchases.
Other news is that the weekends flavors come to a full crescendo
on Sunday evening (June 22) as Roll Out the Barrels ticketholders
enjoy a 10 percent discount to the Summer Krush concert
presented by The Krush 92.5 FM and Otter Productions at the Avila
Beach Resort. The entertainment lineup includes headliner Gavin
DeGraw with his singer songwriter soul, pop-rock rhythms; folk-rock
artist Matt Nathanson; and opener Mary Lambert, a Seattle-based
singer-songwriter and spoken word artist. While the concert begins
at 4:00 p.m., up to 250 guests will have the chance to enjoy the SLO
Wine Country Summer KRUSH Wine Tasting Lounge from 1:30 p.m.
to 3:30 p.m. before the concert begins.
Muran adds that thanks to SLO Wine Countrys partnership with
the City of San Luis Obispo and area lodging partners (SLO
Vacations), anyone who books a hotel room in San Luis Obispo city
will receive a $20 discount on their Passport to Wine Country ticket.
This represents a 40 percent savings off the regular $55 price. This

If I Could Keep Time in a Barrel


The end of Spring brings heat, and with it, lots of things start to
happen in the cellar. Over the Winter and into early Spring, with
cellars cold, wines in barrel tend to slowly blurb along, the yeasts
gently doing their thing with the last percent or two of residual
sugars or the bacteria finishing up the conversion of malic to lactic
acid, both of which are good for aroma and mouthfeel, but come
the warmth of late Spring, the wines in barrel come alive again
because heat speeds up reactions, just like in your high school
chem lab from ages ago, which means its decision time once again.
For whites, generally Chardonnay but occasionally Sauvignon
Blanc or another oaked variety, this is when the secondary
malolactic fermentation finishes if it has not already, and with the
exception of those who are going for a long time in barrel, this is
when the previous Falls white wines are bottled. Some bottlings,
like Sauvignon Blanc or Riesling, generally made in steel the whole
time, would be released immediately, the freshness and vibrancy
preserved for exactly how appealing these wines are when young.
Most producers, however, would bottle oaked whites and then

allow them to age under glass for at least a few months, if not
longer. This is not just about bottle shock from bottling, which
does tend to mute or cause otherwise great wines to taste a bit off
for a month or two. No, the anaerobic conditions actually allow
the wines to again undergo a slow maturation, bringing out more
mouthfeel and complexity through the lack of oxygen. This is why
the wines wake up when opened they have returned to aerobic
conditions, activating bouquet and flavors through the
reintroduction of a lot of oxygen all at once.
Red wines, on the other hand, take a parallel but different
trajectory than the whites. Just about all reds spend time in oak,
and Spring will mean time to transfer, or rack, again as every few
months barrels need to be topped up to reduce the oxygen of
headspace created by the angels share, and the best way to
address this is to conslidate into fewer barrels. This causes a
gradual reduction of the overall wine in the cellar as barreled wines
are racked out of their homes and then into either a new barrel or a
tank, some folks deciding to maintain the integrity of each wine lot
while others allowing for a general mixing in a larger tank before
going back to individual barrels again.
Any given red spends eighteen to twenty-four months in this
cycle, and along the way, each racking creates a natural fining effect
as particles fall out of solution and end up in the belly of each
barrel. These lees provide for complexity but also possible
microbial contamination, which is why the monitoring of each
wine in barrel and as it is racked is most important of allwe can
taste and smell problems far quicker through sensory monitoring,
and knowing that Spring brings warmth, and warmth speeds
things up, simply means paying closer attention rather than
necessarily doing anything at all.
Regardless of which decisions are made, or not, each time the
winegrower chooses to tweak or not, to rack or not, how often, the
logistics of the racking, etc., all leave an impact on the final wine.
While the processes are scientific, measurable, and generally
predictable, the application is where experience and creativity come
to the fore. There is no one right answer, which is what makes
winegrowing so much fun. If we knew all the answers ahead of
time, thered be no point in doing it since wines tend to have minds
of their own. Consider that when you pop the next bottle and
enjoy!

solvang kicks off Music-Filled summer season


On Wednesday, June 18, wine-centric Central Coast getaway spot,
Solvang, will host the Midsommer Musik version of their monthly
Third Wednesday celebrations, to kick off the summer vacation or
staycation season. The days varied activities will include deals at local
merchants including boutiques of all sorts, restaurants and gourmet
food purveyors; the weekly Santa Barbara Certified Farmers Market; the
popular Solvang Third Wednesday Wine & Beer Walk; discounts at local
hotels; and free, live music from blues to 80s and classic rock, to folk,
Americana and country, to steel drums and roots rock 12 noon to 12
midnight, all over town.
The Gazebo in Solvang Park (Mission Drive and First Street) will see
the first bit of free musical action on June 18, which is also International
Picnic Day, as Blues Bob & The Kabuki Blues Band play from 12 noon to
2:00 p.m. Guests are encouraged to bring blankets, chairs and fullyoutfitted picnics including their favorite beverages for the
picnic-friendly afternoon performance.
Additional artists scheduled to perform on June 18, are Nataly Lola
(Contemporary/Folk/Country), playing from 1:00 to 2:00 p.m. in
Atterdag Square (448 Atterdag Road); Nesta (Steel Drum Band), at the
corner of Copenhagen and First Street from 2:30 to 4:00 p.m.; Los
Spindleros (Folk/Americana), 3:00 to 4:00 p.m. in front of The Book Loft
(1680 Mission Drive); Spun Honey, (Country/Americana/Rock), stationed
in front of the Cali Love Wine tasting room (1651 Copenhagen Drive)
from 4:00 to 5:00 p.m.; and Brad "Cash" Cooper (Country/Rock) at
Wandering Dog Wine Bar (1539-C Mission Drive), from 4:00 to 5:00
p.m.
Solvang Park will serve as a foodie, picnic pit-stop between 5:00 and
7:30 p.m., where guests may purchase Cecco Ristorantes famous pizzas,
as well as gourmet hotdogs from Good2go! Wine Country Food Cart,
while enjoying the days main concert event: The Mark Roberts Band,
California-inspired and roots rock, will play the Park from 5:00 to 8:00
p.m.
The June 18 edition of Solvang Third Wednesday culminates with a

Midsummers Eve Traditional Danish Fire Ring ceremony (think,


bonfire) at 9:00 p.m. in front of the Solvang Brewing Company (1547
Mission Drive), where the fun runs through 12 midnight, as another band
performs for the duration of the night.
One of the best ways for guests to catch the multiple performers
throughout the day, is to embark on the afore-mentioned Solvang Third
Wednesday Wine & Beer Walk, a monthly, ticketed activity ($20 per
person) which entails wine or beer tastings at five venues of participants
choice, a logo glass, and a map to guide tasters to crowd-pleasing Solvang
watering holes like Wandering Dog Wine Bar; Sort This Out Cellars; The
Good Life, Craft Beer & Wine Cellar; Carivints Winerys Tasting Room;
Randys Taproom; the Olive House; Casa Cassara Winery & Vineyards

One of the largest tribute concerts on the West Coast returns in full swing in
2014 as "A Tribute to the Music of Johnny Cash" takes over the grassy fields at
the beachfront Ventura County Fairgrounds on Father's Day weekend. The 6th
annual event will feature popular outlaw country, rockabilly, bluegrass and
Johnny Cash tribute bands, plus a pin-up girl pageant, hot rods, custom cars
and motorcycles, Johnny Cash memorabilia, food & beverage, a kid's corral
and scores of vendors with unique offerings and collectibles. Confirmed
musical acts include Dale Watson, The Paladins, The Americans, James Intveld

Up-and-coming estate producer, Burbank Ranch Winery, recently
released a selection of wines ideally matched to the fresh, plein air
cuisine of spring and summer.

2013 Little Rascal Arneis (163 cases produced, 13.4% abv)


Translated from the PIemontese dialect as rascal for its
reputation as a tough variety to grow, Arneis grows beautifully in the
Paso Robles AVA. The 2013 Burbank Ranch Arneis was harvested
early and fermented in stainless steel, producing a dry, full-bodied
white wine redolent with bright pear, apple, honeysuckle, mineral
and white peach flavors, followed by a structured finish. Pair with
hard cheeses like Grana Padano or simple pasta tossed with butter
and topped with white truffle shavings.

2013 Summertime Grenache Blanc (105 cases produced, 13.7% abv)


The 2013 Grenache Blancs seductive aroma of orange blossoms is
a preamble to flavors of ripe pears and peaches. This refreshing wine
boasts a crisp acidity ideal for pairing with food; try the Grenache
Blanc with a lunch of scallops or oysters.

2013 Picnic Meadow Grenache Ros (191 cases produced, 12.9% abv)
The Grenache variety ripens late, requiring just the sort of hot, dry
summers to fully mature that Paso Robles offers. 2013 produced a
brilliantly-colored ros with aromas and flavors of sweet cherry and
strawberry, as well as a luxurious mouthfeel. A classic Mediterranean
pairing for ros is simple roast chicken, but herbed grilled chicken or
fish would also fit the bill.

Robert Hall Winery is known for producing a family of wine that is food-friendly, ageworthy and extremely well priced. The core product line has been crafted in a consistent
style, using grapes from the same vineyards for over 13 years. The majority of the fruit is
sourced from the estate vineyards where 21 different grape varietals are grown and
certified Sustainability in Practice (SIP).
The winery produces all of the traditional California varietals and blends that thrive in
Paso Robles including Chardonnay, Sauvignon Blanc, Merlot, Cabernet Sauvignon, Syrah
and Zinfandel. Additional varietals produced include Viognier, Grenache Blanc, Orange
Muscat and Vintage Port made from the traditional Portuguese grapes. Bordeaux and
Rhne blends are also offered each vintage.
Knowing that visitors to the tasting room like to discover something unique, the
winery launched a Cavern Select line. The Cavern Select wines are bottled with a silvergray label, have a very limited case production and are offered exclusively to club
members, tasting room guests and Robert Hall on-line storefront visitors. The winemaker
will select the best wines from the cavern to showcase wines that are considered
exceptional each vintage. The current offering includes Roussanne, Grenache, Malbec,
Cabernet Sauvignon and a Rhone-style blend known as Pape de Robles. These wines are

all available for tasting on the reserve tasting list.


The spacious tasting room is open daily 10am-6pm. Tasters may
select five wines from either the house list ($5) or the reserve list
($10) tasting fees are fully refundable with the purchase of one
bottle or more per tasting fee. The tasting room staff is very
knowledgeable and delighted to help make the tasting experience a
memorable one. Every day the winery offers a guided, educational
tour of the large caverns, winery and hospitality center. The tour is
included with the tasting fee and is a great way to learn more about
how the wines are made. Everything from the vineyard to the bottle
is discussed with a barrel tasting offered in the caverns. The tour lasts
approximately 30 minutes.
June 28th and 29th Robert Hall will be offering Vineyard Walks.
This will be an opportunity for an educational walk through the
vineyards. The tour guide will provide details of how grapes are
grown and many of the sustainable farming practices followed at Hall
Ranch. After the walk, attendees will enjoy a lunch paired with wine
overlooking the vines. The price is $20 per person ($16 for club

For guests who are seeking a leisurely visit, the hospitality center
offers several settings to enjoy a picnic. Guest may purchase wine by
the glass or bottle to enjoy with their picnic and a deli station is

overlooking the vineyards provides caf seating, the amphitheater
offers bench seating with a water feature to enjoy, and the grassy
knoll beside the winery has several picnic tables under the trees. The
two regulation Bocce ball courts, created old world style with
crushed oyster shells, are available for guests to enjoy. The winery
does recommend making a reservation if you are planning a group

Nestled under California pepper trees and overlooking the


Alamo Pintado Vineyard between Solvang and Los Olivos, Lincourt
Winery retains the rural charm and simplicity of an earlier era; its
one of the reasons people flock to this region. This was once a dairy
property and the old farmhouse - an original 1926 Sears Craftsman
kit home which sold for around $400 at the time - serves as one of
the most unique and historic tasting rooms in all of Santa Barbara.
The Lincourt picnic grounds, lawns and gardens are the perfect spot
to spend a leisurely day with family and friends and a bottle of
wine.
Lincourt was founded by Bill Foley in 1996 and he has four
estate vineyards located within the Santa Rita Hills and Santa Ynez
Valley regions of Santa Barbara. Lincourt began when Bill Foley fell
in love with the rugged coastline, picturesque towns, oak studded
hills and the casual graciousness of Santa Barbara wine country.
Named for his two daughters, Lindsay and Courtney, the Lincourt
wines express the complexity and diversity of their estate vineyards.
But when Foley first planted grapes in the Santa Rita Hills region, it
was largely undiscovered. Today of course it is one of Californias
most coveted, cool-climate, viticultural regions and the Lincourt
wines are produced entirely from their two estate vineyards within
that AVA. They are rolling hillside sites that offer diurnal
temperature swings and long growing seasons making the wines
rich, structured, fruit forward and regionally exact.

yellow exterior and white trim remains the same. Inside, the tasting
room has refinished wood floors, a new tasting bar, and lighting
fixtures, all still reminiscent of its 1920s origins, and they still have a
good selection of wine country gifts. Best of all are the new releases,
like their 2012 Lindsays Pinot Noir a hard harvested beauty which
spent 14 months in barrel to give it additional complexity, and 2010
Courtneys Chardonnay. Courtneys Vineyard is one of Santa
Barbaras most historic properties, originally part of the Spanish
Land Grant. Its a beautiful south-facing hillside which climbs from
500 to 1000 feet above sea level and features 59 individual microblocks delineated by soil type, elevation, grade and exposure to the
maritime winds off the Pacific Ocean. That means you need to try
this Chardonnay! Theres also their 2012 Steel Chardonnay named
for the fact that there was no barrel time, but instead fermented in
stainless steel giving it more crisp citrus flavors, and old favorites
like their Syrah and Cabernet Sauvignon.
Since summer is fast approaching Lincourt offers a free wine
unplugged series of acoustic music every Sunday from Noon to
3:00 p.m. with wood fired pizzas on site for sale, or you can bring a
picnic and relish a classic wine country afternoon.
Every winery has a wine club but Lincourts is unique. In
addition to the five shipments annually, and the generous 30%

After New Zealand native Fintan Fin du Fresne earned his


undergraduate degrees in geology and geography and realized he
was about to enter the real world, he decided the easiest thing to
do would be to go back to school. With the encouragement of his
father a journalist in New Zealand who writes about wine Fin
pursued a post-graduate degree in Viticulture and Enology at
Lincoln University, which is one of the top three schools in the
southern hemisphere.
Fin spent the first two years of his career as a viticulturist,
pursuing the science-side of wine at Martinborough Vineyards, one
of New Zealands most respected Pinot Noir producers. In 2003 Fin
came to California to work a harvest at Adelaide Cellars in Paso
Robles, and later began to move into the more artistic-side of wine,
as he became their assistant winemaker. Over the next three years
he worked harvests and consulted for wineries in California and
New Zealand as well as traveled throughout Europes wine regions,
and in 2006 he was named winemaker for Chamisal.
As the first vineyard planted in the heart of the Central Coasts
esteemed Edna Valley in 1973, over the years Chamisal Vineyards
reputation has been built on its longstanding link to the land. As a
SIP (Sustainability In Practice) Certified vineyard, great care is taken
to tend to the vines by taking a hands-on approach to winemaking
as well as practicing environmentally friendly farming techniques.
The 80 acres surrounding the tasting room are planted mainly with
several different clones of Pinot Noir and Chardonnay, which
flourish in the cool, temperate climate and dry, rocky terrain; there
are also a few acres of Syrah, Grenache and Pinot Gris. With over 25
different clones of these estate varietals, the resulting wines exhibit
extraordinary complexity and flavor.
My winemaking style is non-interventionalist, said Fin. I like
to accentuate the characteristics of the land and the area in my
wines to achieve intense varietal purity. Our vineyard defines the
wines we make and my role is really just to capture what the
vineyard gives me.
Chamisal is known as a leader in the un-oaked style of
winemaking on the Central Coast, and Fins use of stainless steel to
create the Stainless Pinot is unequivocally unique. The industry has
noticed as the 2012 Chamisal Stainless Pinot Noir was awarded a
Double Gold medal, and the 2012 Chamisal Stainless Chardonnay
received a Gold medal at the recent 2014 San Francisco Chronicle
Wine Competition.
What I love most about being a winemaker is that at the end of
the day I have a tangible product that I can see people enjoying,
said Fin.

With its foundation dating back over a century, 1908 specifically,


Rotta Winery has deep roots on the Westside of Paso Robles. With its
recent change of ownership, Rottas history is being honored with a
few exciting upgrades. Jason Shorrock, owner, is the former general
manager for Justin Wine and has previously worked with LVMH. He
and his partner hired Jeff Branco, also formerly with Justin Wine
achieving Robert Parkers first 95 point score of a Paso Robles wine
during his tenure with the company. Jeff is excited by the
opportunity to work with such an important piece of Pasos history
and hopes to produce effortlessly elegant wines from the Rotta estate
and neighboring vineyards. Rotta has now released wines from the
2013 vintage, featuring a new label, which is classic and hip,
simultaneously. The new releases include the 2013 White, 2013
Ros & the 2013 Red Wine. The White is a blend of Sauvignon
Blanc & Chardonnay, a surprising match up of varieties, producing a
delectable and crisp white, reminiscent of a northern Italian white
wine. The 2013 Ros is a saigne of all the wines, and was perfectly
described by Rottas manager, Mike Giese, as reminiscent of
watermelon jolly rancher, with notes of roses and cherry blossoms.
The 2013 Red a steal of a deal at $20 per bottle is a blend of
Merlot, Cabernet Sauvignon and Petite Sirah. The wine is well
balanced and delicately nuanced especially for an everyday price

Vibrant describes Estrella Restaurant. The color palette of its


surrounds reflects the rich cultures within the food. Tastes of Sante
Fe, NM, Spain and Argentina are prepared to excite and intrigue in
such a way that a first-time guest cant help but want to savor
another one of their creations.
And what a selection there is at Estrella. The Latin Rivera
cuisine combines flavors to make for a distinctive and memorable
meal.
Among Chef Travis Borbas offerings, the Tapas menu includes
Grilled Scallop Ceviche, in which a citrus marinade with red
onions, oranges and mango commands the taste buds. Crispy Masa
Cakes topped with servings of shredded chicken, chipotle-tomatillo
sauce, sour cream and a spicy cabbage salad is fun to share. For
lunch, a Cuban Sandwich of Mojo marinated pork loin and ham
and the Braised Chicken and Chorizo Taquitos are especially
popular as well as the new Southwest Green Chile Burger.
For dinner, the Chile Relleno entre features roasted Anaheim
chilies with a choice of fillings including roasted corn and crab,
queso fresco or carnitas and two varieties of salsa. Seafood entrees
include a Plantain Crusted Halibut served with mango-habenero
salsa and coconut-green chili sauce. The Lobster Tacos are finished
with smoked paprika-lime garlic sauce. A consistent favorite is the
Argentinean Style Grilled Ribeye, complemented with a deliciously
addictive chimichurri sauce. Fresh house made tamales and
enchiladas are made daily.
A refreshing counterpart to any meal are specially selected
brews. For Estrellas Beer Dinners, a featured brewery presented
every month to provide for a tasty and clever way to go beer tasting

Old world inspired. Surpassing new world standards. Sustainably grown. Those nine
words sum up with philosophy behind the wines of Baileyana, which are offered at the
historic Independence schoolhouse alongside its sister wineries: True Myth, Tangent,
Trenza, Cadre, Zocker and True Myth. Owners Jack and Catharine Niven were pioneers of
winegrape planting in the Edna Valley of San Luis Obispo in the 1970s with Paragon
Vineyards, and founded Baileyana Winery over 25 years ago. Baileyana Winery is
dedicated to creating handcrafted Pinot Noir, Chardonnay, and Syrah from the Niven
familys estate Firepeak Vineyard.
Adjacent to Baileyanas state-of-the-art winery, Firepeak Vineyard is located at the base
of Islay Mountain, the last in a chain of extinct volcanoes known as the Seven Sisters. The
volcanic soils and close proximity to the Pacific Ocean make this vineyard a perfect
location for winemaker Christian Roguenant to create exceptional Burgundy-style wines
and cool-climate Syrahs.
The tasting room is located in the historic Independence Schoolhouse, which was built
in 1909 and remained a schoolhouse until it closed in 1956 to be converted into a private
residence. In 1998 the Niven family renovated it and converted it into a lovely tasting
room where visitors can enjoy breathtaking views while tasting on the patio, or partake in
a game of bocce ball on one of two nearby courts.
Visitors can taste the unique Baileyana wines alongside the wines from True Myth,
Tangent, Trenza, Cadre and Zocker. The True Myth label features Chardonnay and soon a
Cabernet Sauvignon as well; the Tangent label offers crisp, refreshing white wines made in
stainless steel; Trenza (which means braid in Spanish) showcases blends; Zocker is a
German-style winery that offers Reisling and Grener Veltliner; and Cadre is known for a
high-end Pinot Noir from four different AVAs. For a limited time visitors can also enjoy
some library wine releases including older vintages of Syrah, Pinot Noir and Chardonnay,

which are still showing great aging capabilities.


In addition to wine, there are also specialty
selections of gourmet foods giftware, apparel and
home decor.
Visitors will often have the chance to meet
members of the Niven family or Roguenant, and
at times on a Friday eve, the tasting room may
extend its hours for customers to wine down and
enjoy local music. Visitors can purchase wines
by the glass or bottle, and there is often live
music to enjoy during the warm summer

Clautiere may very well be one of the most whimsical wine


experiences in Paso Robles, with a gorgeous property and tasting room
that include several experience it for yourself elements. Created by the
equally talented Claudine Blackwell and Terry Brady, both owners skills
and creativity can be found around every corner of Clautiere, from
Blackwells unique metal sculpturing, fencing and mosaics, to Bradys
expertise in winemaking; in fact the very name of the winery is also a
melding of both owners first names. Drawing from their collectively
diverse backgrounds in fashion design, welding, landscape design, and
restaurants, Claudine and Terry have created a fun-filled and delicious
haven for wine tasters in Paso Robles.
Located on a beautiful 145-acre ranch on the eastside of Paso Robles,
visitors to Clautiere will be welcomed to the property by a 230-foot entry
fence and metal sculptures, all designed and crafted by Blackwell. The
tasting room is located in a farmhouse that has been converted into a
vibrant and colorful room that has been likened to something that
filmmaker Tim Burton might create, if he too owned a winery. Even the
dump buckets have been touched by Blackwells mosaic artwork. Visitors
are encouraged to join the fun by checking out the fanciful gift shop and
famous Playroom or selecting a brightly colored wig or hat while
experiencing the bold wines of Clautiere. Nearby the barn has been
turned into a theatre with a built in stage and sound system used by
bands and entertainers to perform during special events. Visitors can also
enjoy meandering along winding garden paths complete with rock circles,
metal sculptures and magical, Gaudi-esque mosaic cubes and spheres
hanging from the trees along the way. Make sure to stop by the giant
mosaic sphere standing guard under the majestic oak tree.
The upbeat atmosphere that accompanies the tasting experience of
Clautieres Estate Rhne, Bordeaux and Port-style wines, is further
enhances by the food prepared to pair with the wines. The Clautiere team
has a passion for the perfect pair, and using their onsite commercial
kitchen, they are able to prepare specialty cheeses from Vivant Fine
Cheese, as well as appetizers for their wine pairings.
The edible artwork at Clautiere comes in the form of their wines,
which are 100% Estate grown on the 57 acres surrounding the tasting
room. Summer must-tastes include the 2012 Estate Ros, Roussanne and
Viognier. For bolder reds, be sure to taste the 2011 Estate Cabernet
Sauvignon and the 2011 Estate BDX blend of Cabernet Sauvignon,
Counoise, Petite Verdot, Cabernet Franc and Mourvedre. We are excited
to have added two Reserve wines to our line up this year, said Susan
West, Operations Manager at Clautiere, 2012 Reserve Grenache and
2012 Reserve Malbec plus added another varietal, Tempranillo.
Groups can also plan a truly unique event at Club Clautiere, which
seats over 50 people and includes a fun house of mirrors as well as wigs
and hats and other fun accessories.

Deeply rooted in shallow soils


Villa San-Juliette Vineyard & Winery enjoys unique pocket of Paso Robles AVA
As terroir goes, Matt Ortman couldnt be happier with his lot.
The Villa San-Juliette Vineyard & Winery Winemaker and COO
opened up about what makes his corner of the Paso Robles AVA so
ideal for the production of concentrated, place-driven wines. I think
the single most important attribute to our vineyard is the steep rolling
hills, which have various impacts on wine quality.
The vineyards, located at 6385 Cross Canyons Road in San
Miguel, boast shallow soils over a base layer of sand and gravel,
created over time as layers of topsoil shed off the slopes. These
shallow soils, said Ortman, decrease the vigor of VSJs vines, creating
smaller clusters and berries that result in greater concentrations of
color and flavor in the final wines.
Our topography also serves to divide the property into different
microclimates, thanks to the various aspects. This gives some blocks
more morning sun exposure and others more afternoon exposure,
which translates to varied fruit expression from red fruit-driven to
dark fruit-driven.
Ortman also mentions the benefit of elevation, as well as VSJs
distinctive position at the base of the Monterey Valley. Our lowest
elevation perched on the base of the foothills is about one thousand

feet, he said, creating a draw for cool afternoon breezes to roll down
from Monterey or straight from the coast. When they come from
Monterey, this cools our site earlier than some of the lower elevation
or southern locations.

Stephen Ross Dooley has been making wine on the Central Coast since 1987. His
winemaking career began when he graduated from UC Davis in 1977 and worked with
Louis Martini winery. After traveling the world gaining wine experience and advancing to
Assistant Winemaker at Martini, Chalone Wine Group enticed Steve to take the
winemaker position at Edna Valley Vineyard. During his tenure at Edna Valley, Steve
honed in on producing Burgundian style Chardonnay and Pinot Noir, leaving a lasting
legacy, as these wines put the Edna Valley wine region on the map. In 1994, Stephen Ross
winery was founded and has grown from its first 19-barrel vintage to the highly
acclaimed winery it is today.
Today, Steve and his wife Paula own and run Stephen Ross winery and tasting room in
San Luis Obispo; located in the industrial part of town at 178 Suburban Road. The
location is quite convenient because after folks work out at the local gym, and shop at the
local grocery store, the tasting room is open for wine tasting and sales, making it the
perfect after errand stop! The most exciting aspect of the tasting room is that the wine is
made right there, guests will likely sneak a peak at winemaking activities, and the grapes
are brought in from the vineyards just down the road. Stephen Ross features the true to
the roots Chardonnay and Pinot Noir from various Edna Valley vineyards, including
Stone Corral the Stephen Ross estate vineyard which is currently celebrating its 10th
vintage. Also notable is the Dante Dusi Zinfandel, the most well regarded old vine, headtrained Zinfandel from Paso Robles.

California Wine Festival expands with 5 events over 3 Days


After over a decade of celebrating wine, food and music, the
popular California Wine Festival (CWF) is scheduled for July 17-18 19, in their home base of Santa Barbara.
Over the years, weve taken the CWF from San Diego to
Monterey, President and Founder Don Fritzen said. Santa Barbara is
where we started and weve always enjoyed tremendous support
here.

California to pour at our prestigious three days of events, plus weve
added regional microbreweries, and several new features this year.
Were adding special wine-experience seminars to the line-up this
year, said Kaufmann. Guests can enjoy either the Cabernet Clinic
and Tasting or the Experience a World of Wine in One AVA: Lodi
seminar conducted by winemakers and other industry experts.
These new events precede the Sunset Rare & Reserve Tasting at the
beautiful Fess Parker Resort on Friday, July 18.
Were very excited about the great chefs and delicious gourmet
appetizers they bring from the finest local and regional restaurants
and gourmet food purveyors from around the country, Fritzen said.
Of course, live musical entertainment has been lined up at all three
main events to provide an exciting sound track to this outdoor
extravaganza.
Kaufmann, who runs the day-to-day operation of the growing
company, agrees with Fritzens vision of a bright future, Our

Spanish roots. The historic De La Guerra Adobe Courtyard, site of

the original Spanish fiestas in downtown Santa Barbara, provides the


perfect setting for this exciting evening of wine and food festivities. A
large contingent of wineries will showcase their world-class wines
accompanied by a spicy array of appetizers from top local
restaurants. Colorful Flamenco dancers, accompanied by blazing

Friday, July 19, 5-6 pm. Cab Collective Cabernet Sauvignon Tasting
The elegant and friendly confines of Fess Parkers DoubleTree

Gourmet burgers are all the rage and this recipe is a great example
of how simple ingredients can make an excellent meal any night of
the week. We have grilled burgers once a week and are always
seeking out new ways to transform this American classic into a
culinary delight. These burgers dont disappoint and pairing rustic
comfort food with an elegant wine means you can serve it family
style or as a starter for your next gathering.
The 2011 Firestone Estate Malbec is the perfect companion for
these Blue Cheese Bison Burgers. The burgers are delicious and the
blue cheese and bacon filling creates a juicy burger that you wont
want to put down. I topped my burgers with fresh arugula and the
Malbec still shined. This medium bodied wine is well balanced with
aromas of cocoa, black pepper and subtle bits of sweet pipe tobacco.
Concentrated flavors of pomegranate and plum are balanced by a
hint of vanilla from its time in barrel.
Malbec is a thick-skinned grape variety that
thrives in warm, sunny conditions at the
Firestone estate in the Santa Ynez Valley. The
2011 is comprised of 75% Malbec, 15% Merlot,
6% Cabernet Sauvignon and 4% Petit Verdot.
Their Santa Ynez Valley winery tasting room, in
Los Olivos, offers one of the Central Coasts most
comfortable and comprehensive visitor
experiences, including daily winery tours
and extensive picnic facilities. The tasting
room features an island bar and picture
windows that overlook the estate
vineyards.

Grilled Blue Cheese Bison Burger with Bacon


Serves 2

Ingredients:
3 slices of thick, Applewood smoked bacon cut in half
1 oz of crumbled blue cheese
1 medium yellow onion, sliced
Fresh ground sea salt and black pepper to taste
lb. ground bison
2 hamburger buns, style of your preference
Condiments of your choice
Directions:
1. In a skillet, cook bacon over medium heat until thoroughly cooked. Place
cooked bacon on a paper towel to absorb excess grease, leaving about
teaspoon grease in the skillet.
2. Put onion, salt & pepper to taste in the remaining bacon grease and cook
until soft and caramelized, about 15-20 minutes.
3. Preheat the grill to a medium-high heat. Form the meat into four, 1/8 lb
patties and top two of the patties with half the blue cheese and half the
bacon slices, respectively. Put the two remaining meat patties on top and
pinch the edges so as to secure the ingredients between the patties. Place
the burgers on the grill and cook until desired level of doneness.
4. Prepare hamburger buns with desired condiments, burger patty and
prepared onions. Enjoy!

buttonwood Winery a Farm-to-table experience

Buttonwood Winery is the perfect place to experience the farm-totable concept. It is both a vineyard and a farm that produces a variety
of crops, including olives, pomegranates and peaches. Visitors can sit
in the garden sipping wine, while sampling the produce in season.
This is exactly how visitors are meant to explore Buttonwood. As a
family-run winery and working farm, it offers people a unique
opportunity in the Santa Ynez Valley. People can take a walk around
the gardens and orchards, and turn a wine tasting visit into a farm
tour. While there, they can also try some of the farms produce, such
as the heirloom tomatoes, tomatillos, peppers, onions or squash. If
you visit when the peaches are in season, youll have a treat in store.
It will inspire you to come back year after year just to get a taste of
the succulent fruit.
Good food, paired with good wine, is what Buttonwood is all
about. Winemaker Karen Steinwachs said, What we really enjoy is
time around the table. Wine, food and companionship is the ultimate,
down-to-earth luxury. As part of the Buttonwood experience, visitors
are offered an opportunity to get an intimate view of the winery and
farm. They can participate in cooking demos using farm produce, go
on tours with the winemaker, or participate in seasonal farm-to-table
dinners and wine pairings.
One of the farm-to-table events is the All Farm Dinner. Every year,
visitors gather around the Buttonwood pond for an evening of food
and wine. The dinner is served family-style and the food paired with
different estate wines. All of the produce comes from the farm and

While the farm produce is a draw, its the wines that have made
Buttonwood famous. The fruit for Buttonwoods wines are grown on a
39-acre vineyard that sits on a riverbank high above the Alamo
Pintado creek bed. As with everything at Buttonwood, the harvesting
tradition is distinctive. The grapes are harvested at dawn and brought
to the on-site winery where a crew, with music blaring, presses,
crushes, de-stems, cold soaks, punches down, racks off, pumps over
and barrels down the vintage.
Buttonwoods flagship white wine is the Sauvignon Blanc. The
winery produces three different styles, two of which include Semillon.
Some of Buttonwoods whites available now include Sauvignon Blanc
Signature, Sauvignon Blanc Zingy and Grenache Blanc.
The winery also produces Ross. At this time, the Syrah Ros is
available. It is made in the traditional methode Provencal, and is
described as a vibrant and crisp wine. The aroma of strawberry and
rose petals are said to emanate from the glass when you sip it.
The winery also produces a variety of reds, which are barrel aged,
and includes their flagship Bordeaux blend Trevin. Other red wines
include Cabernet Franc, Cabernet Sauvignon, Merlot, Malbec and
Syrah.
Dessert wouldnt be the same without the right wine. Buttonwood
has something to offer in this arena as well. They have a dessert wine
available called the P
.O.S.H. It is made from late harvest Syrah and
fortified port style. It has a deep garnet color and gives off an aroma
of espresso bean, Bakers bittersweet chocolate and dried plums.

Kimberly Smith, owner of LaMontagne Winery, loves what she


does and it shows. In the past few years, she has made awardwinning Pinot Noirs with the goal of making each sip bring joy to
others.
Smith is the type of person who decides what she wants and
makes it happen. When she started to wonder what made the $50
bottles of Pinot Noirs that she loved so appealing, she didnt want to
rely on others to tell her, instead, she wanted to find out for herself.
She enrolled in college to learn more about winemaking. While
there, she went to a presentation in which Wes Hagen, winemaker at
Clos Pepe Vineyard, spoke about his craft. Smith immediately asked
him to give her a hands-on education in winemaking, and the rest is
history.
Her first vintage went into barrel in 2010. Her philosophy is that
wines should be allowed to develop at their own rates until they
truly sing. Smiths 2010 Pinot Noir won gold at the Pinot ShootOut,
a blind taste test of wines from all over the world. In addition to
Pinot Noirs, Smith produces a Pinot Blanc and a Tempranillo.
The fruit for Smiths wines come from the Santa Rita Hills and are
produced in small lots. Smith said the area is perfect for making the
types of wines she loves. The coastal fog and ocean breezes are a
perfect compliment to the soil, allowing Smith to produce the types
of wines she likes best.
Lucy La Montagne was Kimberlys husbands grandmother. Their
family name, La Montagne, means the mountain in French. She said
this name is an appropriate way to describe her wines. She wants to
create exceptional wines that represent the place the fruit was grown.

For Angela Soleno, winemaking is not just a job, its a calling. She
had a glass of Chianti in Carmel that inspired her to change her life.
She decided then and there to embark on a new career path and find
a job in the wine industry.
Soleno started out working as a project manager for a winery in
Los Olivos, but soon decided that she wanted to produce her own
wines. Five years ago, she carefully chose the fruit to make her first
blend, and waited for her wines to mature. Just last April she released
her first wines:
2008 Perpetual Bliss a Syrah and Cabernet Sauvignon blend
2008 Syrah, Camp 4 Vineyard
2008 Cabernet Sauvignon, Camp 4 Vineyard
Soleno only produces red wines. If Im going to end up with any
wine left over, I want to drink it, and I like red. In addition, it was a
red wine that set her on her current path. I had a glass of wine that
changed my life, she said.
As a winemaker at a one-person venture she has complete
autonomy over production. She said, I like to be creative with my
blends, combining grapes that are not traditionally blended together.
Once the wines are put into barrels, the waiting begins. Soleno
said she ages her wines for about three years. I personally like wines
that have been aged and are ready for customers. She said she
checks the wines after the two-year mark, but doesnt rush the
process. I want to create a product thats perfect. Its ready when its
ready.
Soleno only produces her wines in small batches. For her first
release, she bottled 46 cases of the Perpetual Bliss, her red blend, and
20 cases of Syrah and Cabernet Sauvignon. While she only produces

wines I create are for special occasions, she said. She said her wines
as food-friendly, elegant, nuanced and feminine.

by appointment at her location at 316 North F Street in Lompoc.

Mark Cargasacchi has been making wine since 2004, while he
was the oenologist for Fess Parkers winery. After moving on to
Rideau Vineyard, demand went far beyond what he could make on
the side, so he settled on a spot close to home and started Jalama
Wines in the Lompoc Wine Ghetto around four years ago.
Mark opened the tasting room for his second label, Joseph Blair
Wines, at the beginning of 2012. This second label draws upon
some of his estate vineyard wines, but also goes further east to
warmer vineyards, sourcing varietals you wont find at Jalama.
Joseph Blair Wines produces small lots, with a focus on vineyard
designated wines. The individual lots are generally around 100 cases
or less, so when you have one of these, youll know it is something
special and unique.
Current releases include a variety of whites; from Chenin Blanc,
to Sta. Rita Hills Chardonnay. Reds include estate grown Pinot Noir,
Cabernet Sauvignon from Santa Ynez Valley and a couple of
delicious blends.
While tasting here, youll be surrounded by beautiful works from
local artists. Our exhibit changes every few months, so be sure to get
on our mailing list or stop in often to see what is new.
I make what I love, and I am continually inspired by our
vineyards, and those we are surrounded by. Such a palate of varietals
and terroir that I can't choose to make just one or two. The result is
many different local wines, all produced by hand, in small amounts.

Laura and John Wright visited Santa Ynez shortly after moving to
California from the East Coast in 2005. It seemed as though it was
love at first sight and they decided that this was where they wanted to
land. Laura has been in daytime television for over 20 years and now
commutes to LA for her role in General Hospital. John has gone from
restoring 200-year-old farmhouses on the East Coast to managing the
winemaking and art collaborations at Standing Sun Wines. Not only
do the Wrights focus on producing high quality wines from some of
the areas best vineyards, they also deliver a complete wine country
experience of the arts by hosting artists and musicians at the winery,
dubbed LIVE in the Winery. The art gallery rotates artists every few
months, and the pieces remain on display daily. The concert series
occurs throughout the year and features shows one to two nights
each weekend. Tickets start at $10 each and food and wine is
available for purchase. Even with these extra curricular activities,
Standing Sun keeps the focus on the wine. In fact, the entire winery
production occurs in the same location as the tasting room! Guests
can catch John working on blends, driving a forklift, and bottling at

Costa de Oro Tasting Room & Marketplace is located right off of


Highway 101 in Santa Maria. This site pays tribute to the history
behind Costa De Oro - it was the strawberry stand for Gold Coast
Farms, the parent company of Costa De Oro, which has been farming
Santa Maria since 1978. Gold Coast Vineyard was planted to 20
acres of Pinot Noir and 10 acres of Chardonnay in 1989, and these
grapes were sold to the areas best wineries including Au Bon
Climate. Gary Burk, Costa de Oro co-owner & winemaker, was
fortunate to work in the winery with Jim Clendenen, from 19942002, and during this time he began to make is own wine. Gary
started with just one barrel of Chardonnay and one barrel of Pinot.
Today, Costa de Oro produces over 6000 cases featuring Chardonnay
& Pinot Noir from the estate Gold Coast Vineyard. The best place
to experience the wines is at the Tasting Room and Marketplace,
where guests can taste 5 wines for only $10. In addition to regular
tasting room hours (normally 11:00 a.m. to 6:00 p.m. daily), each
Friday evening, Costa de Oro hosts Friday Night Wine Downs
featuring live music from local musicians and $12 dinner plates

their Wine on Tap. Kegged wine, wine stored and shipped inside

Few wineries can boast a four-decade history in Santa Barbara


wine country. As a fledgling winery planted in 1973 Zaca Mesa
experimented with more than a dozen different grape varieties, and
was the first to plant Syrah in the area in 1978. Those early pioneer
grape growing and winemaking efforts set the stage for much of Santa
Barbaras current wine industry. Zaca Mesa, a loose translation
meaning peaceful table, became the first Central Coast winery to
appear in Wine Spectators Top 10 list, and their Syrah was served by
President Clinton at a White House State Dinner, and also served at
President Reagans 80th birthday party at the Beverly Hilton.
As a way to honor the past and celebrate the future, Zaca Mesa is
launching their Homage Collection of wines; its their way of tipping
our hat to the vineyards that have taken them to a new level. The
May release of their 2013 McGinley Vineyard Sauvignon Blanc will
be the first of four wines for the Homage Collection, and each one
will be small production and very exclusive. The Sauvignon Blanc
will be followed by 2013 Bien Nacido Vineyard Pinot Blanc, 2013
Bien Nacido Vineyard Pinot Noir, and 2013 Vogelzang Vineyard

Our wines are driven by the soil they are derived from, says
winemaker Michael Larner. As a geologist I feel that our soils speak
louder than what I could craft in the winery, however as a winemaker
my influence is more European having worked in both France and
Italy, I strive for balance and harmony coupled with age-worthy
quality wines.
Every wine made locally inspires all of us to greatness, says
Larner. As a founder of the new Ballard Canyon AVA in Santa Barbara
County, Larner and his family-run winery is home to their 34-acre
estate planted to Syrah, Grenache, Mourvdre and Viognier. As a
small tribute to their Italian heritage, the Larners also have one block
of Malvasia Bianca. But it is Syrah where Larner shines. We feel
Syrah is our champion as it is best suited on our estate and represents
the AVA as the strongest varietal, he says. We are special because of
our natural acidity at harvest, promoting longevity and balance. By
selling their grapes before they ever made wine they helped establish
the vineyards reputation for quality. In a sense we did things
backwards, Larner admits but he strongly believes that what sets
them apart is his strict growers philosophy that distinguishes wines
made from those grapes. We have farmed grapes for dozens of
excellent, boutique winemakers over the past decade, many of whom
use the Larner Vineyard designation on their wines, Michael says.

And though he uses much of the fruit for his own wines, his grapes
are still in high demand.
Larner is a small lot producer and their tasting room is open

Alta Maria winery is owned and operated by two individuals with


exceptional pedigrees in their field. Paul Wilkins got his start in the
Edna Valley working with Pacific Vineyards and Edna Valley
vineyards, in the field and in the cellar, while he was studying fruit
science at Cal Poly. After seven harvests with Alban Estate, he decided
to spring out on his own and in 2005 he partnered with his buddy,
James Ontiveros to produce Alta Maria wines. James has an
incredible family history of California farmers and ranchers, and
gained his viticultural experience through the industrys biggest
players, Kendall-Jackson and Gallo. James honed his Central Coast
expertise through the Miller Family, over-seeing the areas most well
regarded vineyards, including Bien Nacido and French Camp.
In 2011, Paul and James opened their first tasting room in Los
Olivos. Now released are the 2013 Rose, 2011 Pinot Noir and the
2012 Chardonnay, all of which the guys are extremely excited about.
Paul and James each make their own separate labels, Pauls is
Autonom, focusing on Rhone varieties. James produces high end
Pinot Noir through his Native9 brand. These wines are also available
for tasting! Paul and James work hard to educate the staff on all
aspects of the enology and viticulture; guests can expect to gain some
knowledge from these industry greats when visiting. Joining the

disenos wine club guarantees further education. This month,


members can join Paul and James for an excursion. A Santa Maria
Valley Bus Tour will tour guests through their vineyards in the area
while sipping on the actual wines made from each property. More

Coquelicot, pronounced ko-klee-ko, Estate Vineyard resides in

Sevtap Winery has wines in which the name on the label says it
all. If you stop by Sevtaps tasting room, you can try a Chardonnay
named Precious, a Cabernet/Merlot blend called Summer Love, a
Sangiovese with the name Wish You Were Here, or a Sangiovese Ros
called Awesome. Wine critics agreed that that Sevtaps 2012 Awesome
was special. It received 87 points from Wine Enthusiast magazine.
Sevtap winery owner, Ertugrul Art Sevtap, opened the doors of
his business in 2010. Before launching Sevtap Winery, he had
explored a variety of different professions. He had been involved in
marine technology, had cooked with Emeril Lagassi in New Orleans,
offered guided wine tours through the Santa Ynez Valley, and learned
about the wine business from the ground up by working for several
wineries. Sevtap Winery was established in 2008 and opened its
tasting room to visitors in 2010.
With such a diverse background, Sevtap provides something a
little different to a wine tasting experience. Every week Art Sevtap
holds a Thursday night movie from 6:00 p.m. to 8:00 p.m., there are
trivia nights on Fridays from 7:30 p.m. to 9:00 p.m., winners get a
free bottle of their choice, and live music on Saturdays from 6:00 to
9:00 p.m.
Movie lovers will find that Sevtap Winery offers an eclectic
assortment of viewing choices. The owner picks his favorites. Recent
movies have included Wedding Crashers, The Lord of the Rings
trilogy, Casablanca and Old School. The trivia nights are unique as
well. A host comes up from Los Angeles each week and creates
original questions. For example, one category might be songs by the

When you visit Casa Cassaras tasting room in downtown Solvang,


you should feel at home. And that is exactly how Dan and Bridget
Cassara want it to be. They serve up their stellar wines, including a
Pinot Noir, Syrah and Pinot Grigio, in a tasting room outfitted with a
couch from their house, games like Yahtzee, and a piano from the
1920s that people can sing along to.
Bridget said that she wants their tasting room to be a place people
want to stay and linger. She, and her husband Dan, chat with visitors,
encourage wine club members to bring a picnic when they come for
their weekly visits, and serve popcorn every Friday. The sign in the
window alerts people the fact that Casa Cassara is kid and dog
friendly.
A visit to Casa Cassara wouldnt be complete without trying some
of the specialty food items youll find at the counter. Ask Bridget to
let you taste the Frog Balls, which are actually pickled brussel
sprouts, the marinated garlic, or a variety of flavored olive oils that
taste like chocolate, blood orange and fig. You might go home with a
bottle of wine and your favorite La Bella olive oil as well.
Casa Cassara is a family affair. Dan took over the winery for his
father, who followed in his fathers footsteps, who used to make wine
in the basement of his Chicago home. One of his next projects
involves making red wine similar to the kind his grandfather, a
Sicilian, used to make.
While Casa Cassara is well known for its Pinot Noirs, the winery
also produces a Tempranillo, Cabernet Sauvignon and a Sangiovese.
According to owner Dan Cassara, he and winemaker Kyle Knapp,
share a similar philosophy bold is better. I like a big bold wine,

that is in your face,

As obsessed foodies, Shannon Casey and her husband John


Copeland were initially considering breaking into the wine industry,
but after hours of research they realized that they were far more
interested in growing a complimentary crop. So in 2000, Casey and
Copeland planted several acres of their ranch in Santa Ynez to a few

different varietals of olive trees, and thus Rancho Olivos was born.
In 2006 Casey and Copeland began offering tastings at their farm
Stand on weekends, and in 2010 they began to offer olive oil tastings
daily. The olive trees on their property include the Arbequina, a
Spanish variety; five Italian varieties; and Mission, a Californian variety.
All of the Rancho Olivos olive oils are grown, harvested, milled and
bottled in Santa Ynez, and are also extra virgin, which is the highest
quality olive oil classification. The award-winning olive oils they
produce include an Italian Blend, Garlic, Meyer Lemon-Basil, Garlic
Rosemary and also an Aged Balsamic Vinegar imported from Italy. Not
only are the olive oils delicious, there are also several health advantages
to note.
Extra virgin olive oil reduces the risk of heart attacks and strokes
by 40%, said Casey. Theres also a compound called Oleocanthal that
helps reduce the build up of Amyloid Plaques in the brain, which are
thought to cause Alzheimers disease.

A Walk Around Tasting is a


combination of a tour and a tasting.
Your host brings along several
bottles of wine on your tour, and
may take you to a garden area of
the winery to pour the first round.
Then you move to another place
within the winery to sample the
next wine. This experience
continues until all the wines are
tasted.

Barrel Tasting

A Sit Down Tasting usually


requires an appointment, and there
may be a slightly higher fee than a
wine bar fee. Seated in an elegant
room, you are poured several wines
by your winery host. Expect your
host to describe the unique characteristics of each wine and how it
was made.

Walk Around Tasting







The most common tasting experience is a Wine Bar Tasting. You


step up to the bar where typically a
list of wines being poured is
displayed. Expect to pay a tasting
fee between $10-$40. Some tasting
bars will offer you the option to
taste a library or reserve wine.
Exercising this option increases the
fee, but will allow you to taste very
unique, old or rare wines.

the top of a barrel to extract tasting

coming so someone will be there
to greet you. Others have sit-down
tastings that start and end at
specific times. Its always a good
