Spiced Poached Pears


with Salted Caramel
INGREDIENTS:

4 large pears peeled and cored,


keeping the stem in tact

2 cups of soft brown sugar

4 cinnamon sticks

200gms unsalted butter, at room


temperature, cut into pieces

4 cardamom pods
2 vanilla pods

1 cup thickened cream, at room


temperature

1 teaspoon of dry cloves

1 tablespoon salt flakes

youre left desperately racking your
brain (and the department store
shelves) for the perfect gift.
Enter, stage left: sweet treats. The
star of the show.
Salted caramel is the flavour de jour
right now, and for good reason - its
delicious! Michel Cluizel, one of my
favourite chocolatiers from France,
is the creator of this sumptuously
sweet and salty block, and its one
of our bestsellers. Its the ideal treat

to complement a little after-dinner


espresso or dessert wine.
Weiss, the inventors of haut chocolat,
also hail from France (like all good
things, really champagne, perfume,
fine wines!). Can you guess why I love
them? Its because of their unique
and unrivalled flavours, like white
chocolate and crisp red fruits, vanilla
and coconut milk, dark chocolate
roasted hazelnuts and milk chocolate
with crunchy roasted sesame seeds.
If youre having trouble deciding
which bar to get for your sweettoothed friend, we package up
all nine bars together in a fancy
chocolate library.

METHOD:

Pears
1. Place 4 cups of cold water, vanilla, cinnamon, nutmeg, cardamom and
sugar in a saucepan over medium-high heat.
2. Bring to the boil and then reduce heat to medium-low.
3. Add pears and cook, partially covered and turning occasionally, for
18 to 20 minutes or until pears are just tender.
4. Remove pears from the stove and allow to cool in syrup, turning occasionally.
5. Using a slotted spoon, transfer pears to a plate.
Caramel
1. Heat the sugar over medium-high heat in the bottom of a saucepan.
2. Whisk the sugar until completely melted.
3. Continue cooking the sugar until it reaches a deep, golden colour
(ensure you watch the saucepan closely as the caramel burns easily).
4. Once the sugar is a dark golden colour carefully add the butter and
whisk until melted.
5. Remove the saucepan from the heat and slowly pour in the heavy cream
whisking until it is mixed in.
6. Whisk in the sea salt flakes.
7. Let the caramel sauce cool for 10 minutes in the pan.
8. Serve both the pear and caramel warm with your
favourite ice-cream or double cream.
9. Pour the caramel into a large jar and leave to cool
to room temperature.

and find who they once were in order to put
Storybrooke right again. It is a charming
series if youre a fan of magic and stories.

House of Cards
has been receiving
international applause,
offering some remarkable
performances by the
likes of Kevin Spacey
and Robin Wright. It is
a political drama that
follows the sinister plot
of an ambitious and evil
senator (and his equally
malevolent wife) to become president of the
United States. Think Macbeth and Richard III in
a modern context: ominous, dark and twisted!

If you havent seen Homeland yet, then you


are missing out on one fast-paced, exquisitely
acted drama. The main character Carrie
Mathison who has bipolar disorder, believes
there is an American prisoner of war, Nicholas
Brody, who has been turned by the enemy. As
Brody is released and is gaining rewards and
attention, Mathison becomes convinced that
Brodys release now threatens the safety of the
country. Think suspicion and intrigue aplenty

Breaking Bad follows the cancer journey of

Serves 4
INGREDIENTS:
320g of bananas, sliced thickly
2 scoops of
vanilla
ice-cream
60g butter
40ml caramel
60ml banana liqueur
20g toasted flaked almonds
100ml honey
METHOD:
1. Melt the butter is a non-stick pan.
2. Add sliced bananas and cook on one side until
caramelized.
3. Add the honey and liquor, making sure
to flame off the alcohol as its poured
into the pan.
4. Spoon out the bananas into a
bowl with the caramelized side up.
5. Pour the sauce over the
bananas.
6. Spoon the ice-cream into the bowl
and drizzle with caramel.
7. Garnish with flaked almonds.

Note: bananas are best firm and


just ripe. If bananas go soft and
mushy in the pan then start again.

PLTANOS MACHOS CRONUT

have the difficult job of having


to try any new crazes, and
the cronut is a new craze that
has definitely taken Sydney by
storm. Originating in New York
and created by Dominique Ansel at
his popular Soho Bakery, New Yorkers
were lining up around the block to
get a taste of the cronut when it first
emerged on the food scene.

This prompted the question who first


made the first Australian version, so I
went on the hunt to find out. This little
investigation led me to the very talented
Robert Pirina at Glenorie Bakery.
When probing Mr Pirina on how he
managed to nab the title of being the
first Australian to bring the cronut
craze down under, he admits it was a
case of right place, right time.
I was in my shop last year when a
regular customer asked if I had heard
about this new craze that had hit the
states. No sooner had I answered no and
the customer had whipped out his phone
and was thumbing through images of the

cronut craze, explained Mr Pirina.


I was blown away, and got baking as
soon as I could. I saw that The Today
Show was featuring the cronut in one of
their segments. I decided to call in and
tell them I could make cronuts and within
24 hours I was on national television.
After bringing the cronut to Australia,
Mr Pirina has been through a whirlwind
of publicity, with rapid acceleration into
the lime light of Australian baking and
even meeting original Cronut creator
Dominique Ansell.
He inspired me to think even further
outside the box and deliver fresh
ideas mixed with the latest baking
techniques, said Mr Pirina.
Mr Pirinas version of the cronut
is different from its American
counterpart, with the reduced sugar
content and rich, vanilla custard
making it a staple Australian dessert
and an overwhelming success at
his Glenorie Bakery and Outback
Bakehouse store in Windsor.

popping up weekly, and more venues

Rocks Brewing Co. has been riding the wave of
this movement since establishing in 2008, taking
over Harts Pub in 2010, and opening their brewery
in Alexandria at the start of the year. Patrons can
now see all the action of the working brewery, whilst
sampling fresh brews that are all produced on site.
Open seven days a week, the brewery bar provides an
industrial yet cosy space to enjoy breakfast, lunch or
dinner with your brew of choice. Head outside to the
courtyard filled with rustic timber garden beds and plenty
of seating for small or large groups its the perfect place
for a beer in the sun and the kids to run around.

given to wine that has been
made from grapes that are late
picked or affected by a mould called
botrytis. Essentially it is a wine that is
made from raisin-like grapes that produce a
luscious, sweet drinking wine.
