Applied Speech: Audience Assessment
Specific Goal: My audience will learn what it is like to decorate a cake using fondant.
Application: To other bakers such as myself
Ethos: Primary Ethos: I have just started using fondant in my cake decorating, however I have been
decorating cakes for many years.
Secondary Ethos: I will cite __3__ references aloud in my speech
Audience Assessment: Everyone that I know of has either seen a cake with fondant or eaten a cake with
fondant.
Adaptation to Audience: I will explain what fondant is, what types of things if can be used for, and why
cake decorators choose to use fondant rather than frosting.
Pattern of Organization: I will use a topical organizational pattern

How to choose if you want to decorate a cake with frosting or fondant.
Introduction: Good afternoon, class. Hello my name is Kat Brown and today I would like to talk to you
about cake decorating.

Hook: Did you know that the average person consumes 156 lbs of sugar every year? John Casey form
medicine.net tells us this, but what he doesnt tell us is how much of that sugar comes from the tons of
cake we eat every year. Let me pose this question, How many of you have eaten cake in the last 6
months? In America, we find many occasions to eat cake. We eat cake for birthdays, weddings, or big
celebrations. There is always an occasion to provide cake as a center piece of a party. Today I am going
to inform you on how to choose the way you decorate your cake at your next special occasion.

Thesis: Inform you on how to choose the way you want to decorate your cake.

Transition: As I previously mentioned, there are two predominate methods used to decorate a cake. I
have been decorating cakes form the time I was 15 and have employed both methods.

Body:
1. Fondant
a. Rolled fondant, Rolled fondants are like sweet dough. They are made with sugar, water
and corn syrup like poured fondants. This type of fondants is rolled out into sheets, and
then you can color them and use them for decorating your cakes.

b. Powdered Fondant, Poured fondant is a sweet paste which is used as an icing or a
filling for confections and pastries. Sugar, water, and corn syrup are the three
ingredients you will use to make poured fondant. TheCookDuke.com


2. Frosting
a. Unfathomable amount of types frosting.
i. Color, taste, texture
b. Traditionally speaking,
i. Powdered sugar, milk, vanilla (or other flavoring extract), butter or
Crisco


Transition: Now that we understand what the two most commonly used methods of decorating a cake
are; we can now examine how we choose which method best suits our needs.
1. Time and Money
1. Time
a. How much do we have?
i. Fondant = a lot of time
- Decorating, molding, time to refrigerate, application
ii. Frosting = little time
- Application, homemade, store bought
b. Scheduling to make time
2. Money
a. Again, how much do we have?
i. Fondant: homemade vs store bought
ii. Frosting: homemade vs store bought
3. Narrative story about making Sams birthday cake

Transition: Making a cake takes both time and money, but you also need to consider what look you are
going for and if you have the ability to make it.

a. Fondant: clean cut lines, smooth edges, realistic
b. Frosting: soft look, easily piped flowers, whimsical

a. Fondant
i. Play dough
ii. Quick hands
iii. Fondant dries quickly, so while working with it, always keep excess well-wrapped in

1. Some decorators like to use fondant rather than frosting.
Conclusion:
In conclusion, we now all have the tools to make an informed decision on what type of cake we will
decorated for our next special occasion. Fondant or frosting, what will you choose?
