STRAWBERRYSWIRL CHIFFON CAKE

Ingredients:
2- cup Cake Flour
1 tbsp Baking Powder
1 tsp Salt
cup Sugar
cup Water
8 pcs Egg Yolks
cup Marca Leon Corn Oil
1 tsp Strawberry Extract
1 tsp Vanilla Extract

1- cup Egg Whites
1 tsp Cream of Tartar
cup Sugar

Buttercream icing:
1/2 cup Marca Leon Margarina
1/2 cup Marca Leon Premium Shortening
1tsp Vanilla
4 cups Confectioners Sugar
3 tbsp Whole Milk
Fresh Strawberries for garnish

Direction:
1. Line baking pan with parchment paper ungreased. Set aside.
2. In a large mixing bowl, sift flour, measure and sift again twice together with baking powder and salt. Make a well in
the center and add the rest of the first mixture. Set aside.
3. In a mixer bowl, beat egg whites with cream of tartar and beat until foamy. Gradually add sugar and beat until stiff
but not dry. Fold beaten egg whites onto the first mixture just to blend.
4. Pour in prepared pan. Bake in preheated oven set to 350F for 55 minutes. Remove cake from the oven and transfer
to wire rack to cool completely.
5. Frost cake as desired.

For the Buttercream Icing:
1. Cream Marca Leon Margarina and Marca Leon Premum Shortening at medium speed.
2. Add vanilla.
3. At low speed, slowly add confectioners sugar, making sure to scrape the sides.
4. Add whole milk. If the icing appears dry, you may add more milk to make icing thinner.

CORN MUFFINS

Ingredients:
3 cups all-purpose flour
1 cup sugar
1 cup Marca Leon Polenta #18
2 tbsp baking powder
1 1/2 tsp salt
1 1/2 cups whole milk
1/2 pound unsalted butter, melted and cooled
2 pcs extra-large eggs

Directions:
Preheat the oven to 350 degrees F.
1. Line muffin cups with paper liners.
2. In the bowl of an electric mixer, mix the flour, sugar, Marca Leon Polenta, baking powder, and salt.
3. In a separate bowl, combine the milk, melted butter, and eggs.
4. Pour the wet ingredients into the dry ones and stir until they are just blended.
5. Spoon the batter into the paper liners, filling each one to the top.
6. Bake for 20-30 minutes, until the tops are crisp and a toothpick comes out clean.
