T
equila has been around since the
16th century, but ultra-premium
tequila wasnt available until 1989,
when Jean Paul Dejoria and Martin Crowley
founded the Patrn Spirits Company.
It was then that Jean Paul and Martin set
themselves the task of creating the worlds
frst and fnest ultra-premium tequila. The
result Patrn Tequila.
Under the guidance of Master Distiller
Francisco Alcaraz and a team of dedicated
workers, Patrn has continued to uphold Jean
Paul and Martins aspirations for the brand,
right through from harvesting to bottling.
Patrn has also redefned and perfected
the traditional art of making tequila, taking
only the fnest 100 per cent pure blue Weber
agave from the hills of Jalisco, Mexico and
using hand crafted and traditional processes
to produce an ultra-premium tequila.
Selection & Harvesting
The production of Patrn begins with the
selection of the fnest blue Weber agave.
Relationships with multiple growers in
Los Altos, Mexico, ensures Patrns long-
term supply and allows the company to
pick from the best agave available.
Patrn also employs a team of
Agronomists, who collaborate with the
growers to ensure 25-35 per cent (the
highest range) of sugar content is achieved
at harvest, which contributes to Patrns
favour and aroma.
The harvester, or Jimador uses a tool
called a coa to extract the pia the heart
of the agave plant used to produce tequila.
In order to make one litre of tequila
approximately seven kilograms of agave
pia is needed, which on average takes six
to eight years to mature and develop, to
produce the natural sugar levels required to
make Patrn.
Roasting the Pia
Once the agave is selected and the pia
extracted they are taken to the Patrn
distillery located in the highlands of Jalisco,
where they are quartered, trimmed and
roasted using Patrns unique ovens.
Most tequila manufacturers use automated
high-speed steamers called autoclaves in
production, whereas Patrn uses small brick
ovens that roast the pia in small batches to
maximise favour.
In total, the pia is roasted for 79 hours,
giving the starch or inulin enough time to
release the sugars, which are the basis of
tequila. Sweet, fructose-laden syrup from the
agave is collected and stored in holding tanks
for the fermentation process.
Crushing the Agave
After cooking the pia the agave is crushed
using two methods, which is uncommon in
the tequila industry, to release an additional
juice that is combined with the agave syrup.
The frst method crushes the pia in roller
mills and washes the pia in purifed well
water to create the frst type of base juice for
fermentation.
In the second method the agave is crushed
using a Tahona wheel, which is a traditional
crushing tool and is a large hand-made
volcanic stone weighing two tonnes.
Patrn combines two methods because it
adds to the unique favour of the tequila.
Fermentation
Juice extracted from the roller mill is put into
a large wooden fermentation vat, where pure
water and special yeast is added to combine
to a mixture known as fresh mosto.
The juice and pulp released from
the Tahona wheel method is separately
fermented in wooden vats to create a
second, fruitier mosto.
Patrn is unique in its use of wooden
fermenters, which provide the best
temperature and environment for
fermentation in comparison to commonly
used steel vats.
Fermentation takes about three to four days.
Distillation
Before the process is complete, the mostos
are put through another unique process that
most tequila distilleries dont use.
The mostos are distilled separately in
proprietary hand-made copper pot stills, which
add aroma and favour to the distillates.
After two distillations, the fruitier mosto is
blended with the mosto from the roller mill to
create Patrn Silver the #1 selling ultra-

premium tequila in the world.
The combination of the two mostos is what
gives Patrn Silver its unique smoothness, body
and complex fruity favour.
Ageing & Blending
Finally, Patrn tequila is blended and left to age.
Francisco blends Patrn tequila in a variety of
different barrels and for different ageing periods
depending on the type of tequila in production.
Patrn Silver is the only tequila that is
bottled without any age to retain its crystal
clear colour and clean, refreshing favour.
Bottling
To ensure quality, Patrn is bottled entirely
by hand.
Every bottle is inspected carefully for
clarity and quality during production, and if a
bottle isnt perfect it is rejected.
During bottling over 60 hands touch and
inspect each bottle as it moves from person to
person, each labeling, numbering, wrapping
and boxing the bottles.
PATRN SILVER
COLOUR: Crystal clear
AROMA: Fresh agave with fruit
and citrus
TASTE: Smooth and sweet. Fruit
forward favour with fresh agave
and hints of citrus.
FINISH: Light pepper
FACT: Hand made in small batches to ensure
Patrn Silver is of the fnest quality.
PATRN REPOSADO
AGEING: Aged in oak barrels
for between two and twelve
months
COLOUR: Clear, bright, with light
amber tint
AROMA: Oak wood, light fresh
agave and a hint of citrus
TASTE: Smooth and sweet. Balance of fresh agave
and oak wood, with notes of fruit, citrus and honey
FINISH: Light foral and vanilla
FACT: Aged in bothAmerican and French oak barrels
for added complexity.
PATRN AEJO
AGEING: French oak barrels for
at least 12 months
COLOUR: Clear, warm amber
AROMA: Medium oak wood,
vanilla and raisins with a faint
hint of citrus
TASTE: Smooth and sweet.
Distinct oak wood complemented by vanilla,
raisins and honey, with a hint of melon
FINISH: Caramel and smoky notes
FACT: The literal translation of Aejo is aged.
GRAN PATRN PLATINUM
AGEING: Triple distilled and
rested in oak barrels.
COLOUR: Crystal clear and bright
AROMA: Light fresh agave, citrus
and fruit. Very faint oak wood
TASTE: Exceptionally smooth,
sweet and full-bodied. Light
notes of citrus and fruit
FINISH: Long-lasting with black pepper
FACT: Produced fromonly the fnest, hand selected
blue Weber agave.
GRAN PATRN BURDEOS
AGEING: Aged in American
oak for 12 months and French
oak barrels for 10, fnished in
Bordeaux barrels for 2 months
COLOUR: Dark amber
AROMA: Rich Bordeaux wine
to start. Ablend of oak wood,
very light agave, vanilla and fruit
TASTE: Smooth and sweet with great body.
Noticeable oak wood, very light agave, vanilla
and raisins
FINISH: Long-lasting, velvety smooth
FACT: Gran Patrn Burdeos comes in an unleaded
crystal bottle and is presented inside a handsome,
rounded dark leather display case that accentuates
the dark colour of the aejo tequila.
GRAN PATRN PIEDRA
AGEING: Aged in newoak
barrels for at least three years, the
requirement for an extra aejo.
COLOUR: Dark amber
AROMA: Smooth aroma of fruit,
fresh mushroom, light citrus and
toasted French oak.
TASTE: Sweet yet rich and complex combining
an herbaceous agave favour with light vanilla and
fresh mushroom.
FINISH: Long lasting and remarkably smooth.
FACT: The name Piedra means stone in Spanish
making reference to the Tahona stone that crushes
the agave, which this spirit is made entirely from.
The bottle is also inspired by the Tahona stone.
