Honke Tsuruki Soba
Until 1989, people at court used to eat Honke
Tsuruki Soba to mark the transition to a new year.
Also, the monks at Mt. Hiei used to eat it after their
fasting since so-ba noodles are easily digested.

Omi Chanpon
Omi Chanpon was invented to promote Shi-gas
local vegetables. Drawing from Nagasaki Chanpon,
the homemade noodles are soft yet resilient and
the soup stock is an umami made of of vegetables.
After 50 years, Hikone-born Omi Chanpon, with
its special way of stew-ing, has become a much-
loved comfort food for the people of Shiga.

Yaki-Saba Somen
Yaki-Saba Somen (mackerel on Japanese
vermicelli) is Nagahamas local speciality. Being
easy to cook, people eat it daily as well as on
special occasions. First, grill mackerel on a
skewer and cook it in sugar and soy sauce, then,
boil Somen noodles in the same sauce. You can
eat Saba Somen at a number of restaurants in
Nagahama.
