MEAL#: Side dishes are in ITALICS

Meal 1

10 oz can cream of celery soup


(1 c mayonnaise)
1 lb boneless chicken breast, cooked & chopped
1 box long grain & wild rice, prepared by pkg directns
14 oz can French cut green beans, drained
c sweet onion, chopped
8 oz can sliced water chestnuts, drained
4 oz jar diced pimentos, drained
2 oz sliced or slivered almonds
1 bag salad greens
1 tomato (Thousand Isle dressing)
2 - 3 lbs lean ground beef/chuck *
(1 c milk, 2 c Italian breadcrumbs, 2 t salt,
2 t pepper)
Sauce: c chopped onion, c green pepper,
( c vinegar, c water, 3 T sugar,
1 t Worcestershire, c ketchup)
1 box cheese mashed potato mix
4 to 6 ears corn on the cob
(Butter)
12 oz diced ham, chop in smaller pieces
1 c chopped celery
c chopped onion
(1 T bottled minced garlic)
2 14 oz cans beef broth
( t red pepper flakes, c uncooked long-grain rice)
14 oz can black eyed peas, rinsed
1.5 lbs yellow squash, sliced thin
c chopped onions
2 ripe tomatoes, sliced
1 box cornbread mix (Milk, egg, butter)
(1 c mayo, 2 T cider vinegar, t salt, dash pepper)
6 oz pasta, cooked & drained
2 - 5 oz cans white tuna, drained & flaked
1 c sliced celery
c chopped onion
1 c green peas, thawed
1 lb grapes
1 box crackers
8 oz tub garden vegetable cream cheese
1 lb sandwich ham, sliced wafer thin
1 pkg flour tortillas
1 bag chips
Celery sticks
(Ranch dressing)
(2 T soy sauce, 1 T corn starch, t salt,
t ginger, t garlic powder, t oil)
1 c chicken broth
1 lb boneless chicken breasts, slice in strips
2 c small broccoli florets
c chopped salted peanuts
(Steamed white rice, butter)
1 pkg sour dough dinner rolls
Cooked meatballs from Meal # 2
26 oz jar pasta sauce
8 oz spaghetti noodles, cooked
(Parmesan cheese)
Caesar salad kit
1 frozen garlic bread
(Staples are in parenthesis)

Blend celery soup & mayo in small bowl. In


large bowl, combine remaining ingredients then
stir in soup mixture until well blended. Spread
into sprayed 10x7 baking dish. Bake @ 350 for
25-30 minutes.
Serve with salad, tossed with chopped tomato
and dressing.

Spaghetti &
Meatballs
Caesar Salad
Garlic Bread

Mix ground beef, milk, breadcrumbs, salt, &


pepper. Shape into balls. Put meatballs in
square baking dish. Combine sauce ingred
and pour over meatballs. Cover / bake @350, 1
hour.
Prepare potatoes as pkg directs. Microwave
or boil corn and serve w/ butter.
*Bake remaining meatballs in separate dish at
same time. Reserve / freeze for meal #7.

In large skillet, brown chopped ham in small


amount of oil. Add celery, onion, and garlic.
Cook 5 min. Add broth and red pepper. Bring
to a boil. Add rice. Cover; simmer 20 min. Add
black eyed peas. Cover and cook 10 more min
or until liquid is absorbed.
Microwave squash w/ c water in covered
dish for 4 min. Drain squash then skillet saut w/
onion in 2 T butter until lightly browned.
Serve sliced tomatoes on side.
Prepare cornbread muffins as pkg directs.
Combine first 4 ingredients for dressing. Toss
w/ remaining salad ingredients to coat. Serve
immediately or chill if desired.
Serve with grapes and crackers.

Spread thin even layer of cream cheese on


each tortilla. Lay ham slices on top of cream
cheese then roll and place seam side down.
Slice in half or into 1 slices. Great for brown bag
lunches!
Serve w/ chips and celery w/ ranch dressing.
Combine 1 cup of broth, soy sauce, corn
starch, salt, ginger, & garlic powder. In no-stick
skillet, stir fry chicken in heated oil, 2 min.
Remove. Add c broth to skillet; bring to boil.
Add broccoli. Reduce heat; cover & simmer 2
min until crisp-tender. Increase to high. Add
chicken & sauce; stir to thicken. Stir in peanuts.
Serve over steamed rice. Serve w/ hot rolls.
Combine spaghetti sauce and meatballs in a
covered baking dish. Bake @350 for 30 min.
Serve over cooked noodles. Sprinkle with
parmesan.
Serve w/ salad and hot garlic bread.
