10-MINUTE FAJITAS

Epicures Silicone Steamer Recipes


Delicious fajitas your whole family will love in just minutes!
Makes 2servings
Prep Time: 5 - 8minutes Cook Time: 5minutes
2 Tbsp. (30 ml) Epicures Fajita Seasoning
2 5 oz. (142 g) boneless, skinless chicken breasts, cut into strips
1/4 onion, thinly sliced
1 bell pepper, cut into strips
1/4 cup (60 ml) canned black beans, rinsed and drained optional
Combine Fajita Seasoning, chicken, vegetables, and beans in Epicure's
Silicone Rectangular Steamer. Cover and microwave on HIGH for 5
minutes. Serve wrapped in warm tortillas with prepared guacamole,
salsa, shredded cheese and sour cream!

CHICKEN & MUSHROOM RICE


1 cup rice
200ml chicken broth
1tbsp butter
Mushrooms, chopped/into small pieces (shiitake, eringii, shimeji, etc.)
Boneless chicken thigh, cut into small pieces
2 cloves of garlic, chopped
tbsp. soy sauce
Pinch of salt and pepper
Green onions, sliced
Splash of sesame oil
In the steamer, rinse rice and drain. Combine the rest of the ingredients
into the steamer. Place lid on steamer and stick it in the microwave. At
800W, microwave on high for approximately 13 minutes. Let sit
covered for another minute.

Microwaves have different wattages and require different cooking


times. For every 100W difference, +/- approximately one minute.
Different ingredients may also have different time requirements-experiment for the best results!

SOUVLAKI WRAPS

Combine onion, peppers, chicken, and Souvlaki seasoning in


steamer. Cook for 5 minutes put it in a pita with lettuce and
Tzatziki.

LEMON DILLY CHICKEN & BROCCOLI


Steam the fresh flavours of lemon and dill into this quick chicken dish.
No added oil or fat!
Makes 4servings

Ingredients
3 cups (750 ml) broccoli florets
2 carrots, peeled and sliced
2 Tbsp. (30 ml) Epicures Lemon Dilly Dip Mix divided
4 5 oz. (142 g) boneless, skinless chicken breasts

Place vegetables in Epicures Square Silicone Steamer and


sprinkle with 1 Tbsp. (15ml) Lemon Dilly Dip Mix.
Rub chicken with remaining Lemon Dilly Dip Mix and place
on top of vegetables.
Cover and microwave on high for 68 minutes.

STEAMED SALMON & ASPARAGUS

1 bunch asparagus, trimmed
2 tsp. (10 ml) Epicures Lemon Pepper Sansel
2 4 oz. (110 g) salmon fillets, skin removed
Sprinkle asparagus with 1 tsp. (5 ml) Lemon Pepper Sansel.Place
asparagus in Epicures Rectangular Silicone Steamer and lay salmon
on top. Sprinkle remaining Lemon Pepper Sansel over salmon.
Cover and microwave on high for 45 minutes.

COCONUT CHICKEN CURRY


2-3 servings
Prep Time: 10 minutes
Cook Time: 8 - 10 minutes
1 skinless, boneless chicken breast or 4 skinless, boneless thighs
2 Tbsp. (30 ml) Epicures Mango Curry Dip Mix
Epicures Sea Salt and Black Pepper, to taste
1/2 cup (125 ml) light coconut milk
2 Epicures Kaffir Lime Leaves (optional)
1 small bell pepper, thinly sliced
1 cup (250 ml) finely chopped broccoli florets
Slice chicken into thin strips. Place in bottom of Epicures
Square Silicone Steamer. Sprinkle with Mango Curry Dip Mix,
Sea Salt and Black Pepper. Toss to mix.
Pour in coconut milk and add Kaffir Lime Leaves, bell pepper,
and broccoli. Cover and microwave, on high, until chicken is

ASIAN SALMON, POTATOES & ASPARAUGS


On the bottom of the steamer layer sliced potatoes (with skins on),
asparagus spears, salmon, & green onion (sliced on the diagonal on top
of salmon). Mix together 1 tsp. teriyaki seasoning, 1 tsp Asian stir-fry
seasoning, 1 tsp. sesame oil, & 1 tsp. soya sauce & pour over. Cook
approx. 6 1/2 minutes.

CHICKEN MARINARA
2 servings
Prep Time: 5 minutes
Cook Time: 5 10 minutes
2 skinless, boneless chicken breasts
2 tsp. Rosemary garlic seasoning or Herb & Garlic dip mix
One tomato (or part of a can of diced tomatoes)
1 tbsp. Marinara seasoning
Grated cheese (use either moz or cheddar with parmesan)

Place chicken breasts in steamer. Season with rosemary garlic


seasoning (or a spice of your choice).
Mash tomato with potato masher and add marinara seasoning.
Put on top of chicken breasts. Cover with parmesan cheese and
grated cheese. Cover and cook for 5 minutes (if chicken
defrosted) or 10 minutes (if frozen). Check periodically until
you get comfortable with your own microwave.

CREAMY SCALLOPED POTATOES

Slice potatoes thinly with ceramic slicer (can leave skin on). Add
thinly sliced onions. Toss with Onion & Bacon Cheeseball seasoning
or French onion seasoning. Add a couple of tablespoons of each- milk,
butter. Microwave for 5 10 minutes checking periodically.

SKINNY SCALLOPED POTATOES

* Green Beans (trimmed) 4 cups 35 min French Onion Dip Mix,


Roasted Red Pepper Dip Mix
* Mixed Vegetables (frozen) 4 cups 68 min. stir once. Spinach Dip
Seasoning, Pesto Herb Mix

Layer 56 sliced potatoes, season with 12 Tbsp. (1530 ml) 3 Onion


Dip Mix, drizzle with 1 cup (250 ml) beef bouillon and heat for 810
minutes.

* Butternut squash in the steamer is FABULOUS! I peeled & cubed


the squash then cooked in the steamer for 8 minutes with a little
cracked pepper, garlic & herb sea salt and a sprinkle of Classic
Dressing.

Spaghetti Squash 5 minutes Maple Bacon Sea Salt or any Sea Salt

Seasoning, Lemon Dilly Dip Mix, Herbed Garlic Sea Salt, prepared

Stir once.

Sausages precook in steamer before BBQing!!!
Bacon 2-3 minutes depending on how you like it

2 cups boiling water

Microwave for 10-12 minutes.


You can use whatever flavor of dip mix you prefer.

POULTRY
12 Tbsp. (1530 ml) of your favourite blend, or try:
* Chicken Breast (boneless, skinless) 4 5 oz. (150g) portions 68
min Lemon Dilly Dip Mix, Taco Seasoning, Bruschetta Herbs
* chicken breasts in a zip lock bag with some Epicure chicken
bouillon, Epicure Greek seasoning and a little water and a little olive
oil and let them sit in the bag for about 5 min. Took them out of the
bag placed them in the steamer for 8 min and voila!

CORN ON THE COB


5 small cobs in the square steamer for 5 minutes then turned them over
in the steamer and did 5 more minutes
Can rub with butter and Smoky Bacon Topper

EASY BREAZY RICE


I tbsp. Herb and garlic dip mix
2 tsp. Epicures Chicken bouillon
I cup rice
I tbsp. Butter

HOMEMADE POPCORN
Put 3 Tbsp. (45 ml) of popcorn kernels in large steamer, cook for about
3 minutes (listen for it to stop popping until you know your
microwave). No need for oil or butter but you can season with popcorn
seasonings once finished.
For a real popcorn treat, melt a small amount of butter in a pan, add a
spoonful of Epicures Hot Buttered Rum to it, mix together and pour
over popcorn. You will be in heaven!

CORN BREAD
It is incredibly moist and yummy.
1 1/4 cup all-purpose flour
3/4 cup corn meal
1/4 cup sugar
2 teaspoons E.S. baking powder
1/2 teaspoon salt 1 cup milk
1/4 cup vegetable oil
1 egg, beaten

Combine dry ingredients. Stir in milk, oil and egg and mix just
until dry ingredients are moistened.
Pour batter into large steamer.

Microwave at HIGH 5-8 minutes depending on your


microwave. Start to finish 15mins!!

1. Place sliced apples in bottom square steamer and sprinkle on the 1/2
tsp. of Epicure's Apple Pie Spice.
2. Mix together cinnamon, flour, oatmeal, brown sugar, and margarine
(or butter) in a separate bowl until crumbly.
3. Spread over apples to cover.
4. Cover and put in microwave. Cook on high power for 8 minutes.
5. Serve warm with ice cream.

LEMON CHIFFON STEAMER CAKE


4 tbsp. flour
3 tbsp. Epicure Lemon Chiffon Dip Mix
2 tbsp. sugar
1 tsp. baking powder
3 tbsp. milk
3 tbsp. apple sauce
Optional: add about 1 cup fresh blueberries
Mix ingredients in a bowl. Put in square steamer. Cook 3 minutes
(times vary between microwaves).

APPLE CRUMBLE
4 apples peeled, cored and sliced
1/2 tsp. Epicure's Apple Pie Spice
tsp. Epicures Cinnamon
2/3 cups flour
2/3 cup oatmeal
3/4 cup brown sugar
1/3 cup soft margarine (or butter)

DANGEROUS MINUTE CHOCOLATE CAKE


cup flour (that's plain flour, not self-rising)
cup sugar
cup Epicure cocoa
2 eggs 1/3 cup milk
1/3 cup vegetable oil (or unsweetened applesauce)
1/3 cup Epicures Belgian chocolate chips
Small splash of VE vanilla
Nuts (optional)
Add dry ingredients to steamer and mix well.
Add the egg and mix thoroughly. Pour in the milk and oil or
applesauce and mix well. Add the chocolate chips, vanilla and nuts if
using them, and mix again. Microwave (uncovered) for 3 minutes on
high.

CHOCOLATE CAKE IN STEAMER


1/4 Cup Flour
1/3 Cup Sugar
3Tbsp Cocoa
1/4 tsp. Salt
1/2 tsp. Baking Powder

1 Egg
3 Tbsp. milk
3 Tbsp. Apple Sauce
1 tsp. Vanilla Extract
Mix all items together and put into Epicure's Rectangular Steamer;
Microwave for 3-4 minutes. Triple this recipe for Square Steamer and
microwave for 7-8 minutes.

Add in 1 egg, 1/2 cup milk, 1 cup flour and 2 teaspoons of Epicure's
cinnamon. Peel one apple and slice thinly (the ceramic slicer works
great for this!)
Place the sliced apples on the bottom of the steamer,
Spread the dough on top and microwave uncovered for 4 minutes.
Top with a dollop of whipped cream and a sprinkling of the cinnamon
or gingerbread spice. Enjoy!

MICROWAVE CHOCOLATE CAKE


1/4c butter, softened
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1/2 cup milk
1 cup all-purpose flour
1/4c VE cocoa powder
1/2 teaspoon baking powder
Pinch of salt
In a mixing bowl, cream butter, sugar, eggs, vanilla extract. Add milk
and blend together. Combine the flour, cocoa powder, baking powder
and salt; mix into the mixture until smooth. Pour into the square
steamer. Cover and cook in the microwave on high for 4 - 5 minutes,
or until cake springs back when touched. Since all microwaves cook
differently, adjust the cooking time to accommodate yours. To serve,
let the cake cool a few minutes before popping out of the steamer.

UPSIDE DOWN APPLE CINNAMON CAKE


Cream 3 tablespoons butter or margarine with 1/3 cup white sugar.

SUMMER BERRY GLAZED CRANBERRY CAKE


1 can Cranberry Ginger ale
1 box White Cake mix
1/4 cup Melted Butter
2 cups Icing Sugar
2 tablespoons Milk
2 teaspoons Summer Berry Mix

Combine 3/4 (or a little more) of the can of pop to the cake
mix.
Pour into steamer. Microwave for 9 minutes.

Meanwhile combine melted butter and icing sugar and mix. Slowly
add milk until you reach desired thickness. Add Summer Berry Mix
and stir until blended. Set aside (make ahead if possibly to allow
flavors to blend.) Remove cake from microwave and pop out of
steamer onto a plate. Allow 2-3 min. to slightly cool and then pour
glaze on top.

SUMMER BERRY-LEMON CAKE

One boxed cake mix (Betty Crocker French Vanilla)
3/4 can of 7-Up
2 tsp. summer berry
3 tsp. lemon chiffon
Mix well and microwave in square steamer for approx. 8-10 minutes.
Lid on - depending on microwave might be more or less.

APPLESAUCE
Peel, core and dice 2 apples. Add 1 tsp. of cinnamon, gingerbread,
chai, or apple pie spice. Mix together in rectangular steamer. Cook on
high for 2 minutes. Voila home-made applesauce. You can make it
really creamy by putting it in your mini chopper for 30 seconds. Serve
warm or cold.

CHOCOLATE BARK
Melt a handful of Epicures dark chocolate in the steamer for one
minute. Place the steamer in the freezer for a minute, then sprinkle
maple bacon sea salt on top, place back in the freezer until frozen
(approx, 2 minutes) and break into pieces. Yummy!

FRUIT CRUMBLE
Core, skin and slice apples.
Mix with brown sugar, Epicure apple pie spice and Epicure Cinnamon.
Put into steamer. Mix rolled oats, butter, brown sugar, Epicures
Poudre Douce and flour. Sprinkle over apple mixture.
Heat for 5 minutes and top with vanilla ice cream, caramel drizzle, and
cinnamon sugar! Yumm!

HERB & GARLIC POTATOES & GREEN BEANS


1 cup (250 ml) sliced sweet potatoes
1 cup (250 ml) sliced potato
1 cup (250 ml) green beans
1 tsp. (5 ml) Epicures Herb & Garlic Dip Mix
Toss vegetables with Herb & Garlic Dip Mix and place in
Epicures Rectangular Silicone Steamer.
Cover and microwave on high for 6 minutes.

7 MINUTE BANANA BERRY BREAD


1 1/2 cups (375 ml) all-purpose flour
1/4 cup (60 ml) lightly packed brown sugar
1 Tbsp. (15 ml) Epicures Summer Berry Dip Mix
1 tsp. (5 ml) baking soda
1/2 tsp. (2.5 ml) salt
1 tsp. (5 ml) Epicures Pure Cocoa, optional
2 eggs
1/3 cup (80 ml) milk
1/4 cup (60 ml) oil
2 medium bananas, mashed or sliced
1/4 cup (60 ml) blueberries
1/2 cup (125 ml) nuts, your choice, optional

In a bowl, stir flour with sugar, Summer Berry Dip Mix, baking
soda, salt, and Pure Cocoa, if you wish.
In another bowl, whisk eggs, then whisk in milk and oil.
Pour egg mixture over flour mixture and stir to mix.
Fold in bananas, blueberries, and nuts, if you wish.

Pour into Epicures Rectangular Steamer and smooth out


evenly.
Cover with lid and microwave on high for 7 minutes, or until
fully cooked in the center.
Let stand 5 minutes before turning out.

PEANUT BUTTER & CHOCOLATE POPCORN BARS


3 Tbsp. (45 g) popcorn kernels
1/2 3/4 cup (125180 ml) almond, peanut, or cashew butter
2 Tbsp (30 ml) Epicures Pure Cocoa
Place popcorn to Epicures Rectangular Silicone Steamer,
cover with lid, and microwave on high for 23 minutes.
In a bowl, combine nut butter with Pure Cocoa. Microwave
until melted, 3050 seconds, stirring halfway through.
Turn popcorn into a bowl and drizzle melted nut butter mixture
over top. Scrape into Steamer and press to flatten. Cool
completely, then flip out and cut into popcorn bars.

5 MINUTE PEACH & RASPBERRY COMPOTE


This is a versatile recipe, so use your favourite summer fruit
combinations. Dish up with ice cream or spoon over pancakes, French
toast, or waffles.
4 peaches, peeled and chopped
2 cups (500 ml) raspberries

2 Tbsp. (30 ml) sugar


1 tsp. (5 ml) Epicures Poudre Douce
1 tsp. (5 ml) grated lemon, lime, or orange peel
4 scoops vanilla frozen yogurt optional
Place all ingredients in Epicures Square Silicone Steamer.
Cover and microwave on high until fruit is tender, 35 minutes.
Spoon into bowls and top with scoops of frozen yogurt, or ice
cream or spoon over French toast, pancakes or waffles.

10 MINUTE SALSA CHICKEN


Absolutely easy, quick, nutritious, and delectable! Super versatile too:
add your favourite fresh vegetables to give it a nutritious boost. For
added crunch, top with a few tortilla chips.
1 boneless, skinless chicken breast, cut into strips.
1 medium tomato, diced, or cup canned diced tomato
1/2 cup (125 ml) canned black beans, drained and rinsed
12 Tbsp. (1530 ml) Epicures Poco Picante Salsa Mix
Whole-wheat tortilla wraps optional
In a bowl, toss all ingredients together. Place in Epicures
Silicone Rectangular Steamer.
Cover with lid and microwave on high for 5 minutes, or until
chicken is cooked through.
Dish up with warm tortillas, if you wish.

10 MIN RATATOUILLE BLACK BEAN VEG CHILI


1 small yam, coarsely chopped
1 small zucchini, coarsely chopped

12 Tbsp. (1530 ml) Epicures Poco Picante Salsa Mix
1 tsp. (5 ml) Epicures 3 Onion Dip Mix
114 oz. (398 ml) can diced tomatoes
1/214 oz. (398 ml) can black beans, drained and rinsed
In a bowl or directly in Epicures Rectangular Steamer,
combine all ingredients.
Cover with lid and microwave on high for 810 minutes.
Eat all by its lonesome, or serve on rice or quinoa.

5 MINUTE NICOISE POTATO SALAD


2 medium potatoes, coarsely diced
1/8 tsp. (0.625 ml) freshly ground Epicures Sea Salt, or to taste
1/8 tsp. (0.625 ml) freshly ground Epicures Black Pepper, or to taste
1 cup (250 ml) green beans, washed and trimmed
12 small tomatoes, cut into wedges
12 cups (250500 ml) chopped Romaine or butter lettuce
2 Tbsp. (60 ml) Nioise olives optional
24 Tbsp. (3060 ml) prepared Lemon Dilly Vinaigrette

Place potatoes in Epicures Rectangular Steamer and season


with Sea Salt and Black Pepper.
Cover with lid and microwave on high for 3 minutes.
Remove lid, then top with green beans.
Cover and microwave for 2 more minutes, until beans are
tender.
Arrange potatoes, green beans, tomatoes, lettuce, and olives on
a plate or in a bowl. Drizzle with Lemon Dilly Vinaigrette.

10-MINUTE TURKEY CLUBHOUSE MEATLOAF

1 large egg, beaten


1 Tbsp. (15 ml) water
1 lb. (450 g) lean ground turkey
1 Tbsp. (15 ml) Epicures 3 Onion Dip Mix
1 Tbsp. (15 ml) Epicures Seasoning for Cheese, Chives & Bacon
1 tsp. (5 ml) Epicures Chicken Bouillon Base
1/8 tsp. (0.625 ml) freshly ground Epicures Sea Salt
1/8 tsp (0.625 ml) freshly ground Epicures Black Pepper
In a bowl, combine egg and water.
Add all remaining ingredients and mix to combine. Place in
Epicures Rectangular Steamer and press down to pack lightly.
Cover with lid and microwave on high for 910 minutes. Let
rest for 5 minutes, and then turn out of steamer and slice.

5 MINUTE ASIAN-STYLE FISH


1 cup (250 ml) chopped kale or spinach leaves
Epicures Sea Salt, to taste
2 4 oz. (125 g) halibut, sablefish or thick white fish fillets
2 tsp. (10 ml) Epicures Asian Stir-fry Seasoning
1 Tbsp (15 ml) Epicures Red Pepper Jelly
Place kale in bottom of Epicures Rectangular Steamer and
sprinkle with Sea Salt and 1 Tbsp (15 ml) water.
Place fish on kale and sprinkle with Asian Stir-Fry Seasoning.
Spoon Red Pepper Jelly over top.
Cover and microwave on high until fish is cooked through,
about 5 minutes. Let stand, covered, for 1 minute.
Uncover and dish up with brown rice. Scrape any juices in
bottom of Steamer over fish.

CHEESE, CHIVE & BACON EGGS
Whisk 6 eggs with 1 Tbsp (15 ml) Cheese Chives and Bacon Dip Mix.
Pour into Steamer and cover with lid. Microwave on medium, stirring
occasionally, until eggs are set, approx 2 3 minutes. You can also
add veggies to make an omelet. The possibilities are endless!

2 MINUTE RISE & SHINE!


Quick and easy, all in one, and delicious! Assemble the night before,
and just pop in the microwave in the morning
2 eggs
1/4 cup (60 ml) milk
1 tsp (5 ml) Epicures Seasoning for Cheese, Chives & Bacon
1/2 tsp (2.5 ml) Epicures 3 Onion Dip Mix
2 slices whole-grain bread, cubed
1/4 cup (60 ml) grated, low-fat cheddar cheese
1 small tomato, sliced
In a bowl, whisk together eggs, milk, Seasoning for Cheese,
Chives & Bacon, and 3 Onion Dip Mix.
Place bread and tomato in Epicures Rectangular Steamer. Pour
egg mixture over top, then evenly sprinkle with cheese.
Cover with lid and microwave on high for 12 minutes, or until
eggs are set.

MANGO CURRY SAUCE


This sauce is great for pouring over chicken and rice. It is also
wonderful over shrimp. Just prepare the sauce, then add your shrimp
and cook for 1 or 2 mins until they are pink, using the steamer.
2 Tbsp Epicure Mango Curry Mix
2 Kaffir lime leaves
1 onion cut into 1/8ths
I apple cored and cut into 1/8ths
cup coconut milk low fat
Cut onion and apple. Pour coconut milk over fruit and onion in
steamer. Sprinkle mango curry mix over top. Place the t Kaffir lime
leaves in. Cover and cook for 3 minutes. Apples will be soft but not
mushy. This will be a thin sauce to be served over rice.

LENTIL DAHL
1 cup of lentils (canned), drained and washed
to cup water, depends upon how thick you want

Epicures Silicone Steamer Recipes


1 tsp butter
Epicure Madras curry to taste
tsp Epicure Cayenne Pepper

Place washed lentils into Epicure Steamer. Pour water into


steamer.
Add butter, madras curry and cayenne pepper.
Stir and cook for 4 minutes, remove from the microwave and
leave covered to retain the heat.
