We know oysters.
As Bostons first and only shellfish company specializing in oysters, we take great pride in our oyster
selection. Our vast network of harvesters spans both coasts of the United States and Canada.
Over the years, we have built a huge library of oyster knowledge. In 2010, we pioneered the Oysterology
Program, an oyster profiling program designed to educate food preparers and consumers. We make all
of our resources available to our customers to help you promote your oyster program.

in shape.
As a New England shellfish
company, high quality clams are a
must. Most of our hard shell clams
are wild and locally sourced. And
when it comes to steamers, we
built our own wet storage system
just to keep them Perfectly
Purged clean.
STEAMER CLAMS
Available Perfectly Purged or Rinsed
We buy high quality Maine steamer clams, pick out any broken or
oversized product, and rinse them clean with very gentle care. Most
of our customers prefer our Perfectly Purged steamers, but we do
set aside rinsed steamers for customers looking for a less expensive
option. As the name implies, these clams are usually steamed open and
taste especially delicious steamed in white wine.
Our signature Perfectly Purged Steamers are wet-stored for a few
days to purge out any sand or grit. After wet-storage, we rinse them
again and do another quality check before packing them. We bubble
wrap the bottom, middle, and top, and keep it cool with a gel pack.
Packing is the most important step because it results in a 100% yield of
the most tender and flavorful steamers shipped to you.

As much as we like our shellfish raw on a
half shell, we also enjoy them deep fried,
baked, and stewed. Thats why we carry
shucked shellfish year-round because we
know were not the only ones who love
them cooked.

Our manila clams hail from the Pacific Northwest,
and after a long flight from Seattle, Washington, they
can get a bit tired. We wet-store them in our HACCP
certified seawater system to rejuvenate them and
increase their shelf-life for you and your customers.
Expect a petite, tender, and sweet clam.

COCKLES

Our cockles are harvested from the wild beds of
southern New Zealand. Southern cockles are our
cockle of choice because of their superior quality
due to the colder waters in the southern latitudes.
Cockles have similar applications as Manila Clams
and are great in pastas and appetizers.

LIVE SEA SCALLOPS
Available in Medium and Jumbo
Live sea scallops are specially ordered because our fishermen harvest them on day-boats in Cape
Cod waters. They are live when we ship them, so they arrive to you fresh.
