Cilantro Pork with Sweet Potato Rice

Recipe Serves: 4 | Preparation Time: 15 min | Cooking Time: 40 min

INGREDIENTS
1. 4 bone-in pork chops, 1-inch
thick (about 2 lbs.)
2. 3 Tbsp. Knorr Chicken flavor
Bouillon, divided
3. 4 Tbsp. Country Crock Spread
4. 1 large onion, thinly sliced

peeled and cubed
6. 1 clove garlic, finely chopped
7. 3 1/2 cups water
8. 1 1/2 cups uncooked long grain
rice
9. 1 can (15.5 oz.) black beans,
drained

DIRECTIONS
1. Sprinkle pork chops evenly with 1 tablespoon Knorr Chicken flavor Bouillon
and rub into meat. Melt tablespoons Country Crock Spread in large deep
nonstick skillet over high heat and brown chops. Remove chops and set aside.
2. Melt remaining 2 tablespoon Spread in same skillet over medium-high heat
and cook onion, sweet potato and garlic, stirring occasionally, until starting to
brown, about 8 minutes. Stir in water, rice and remaining Bouillon. Bring to a
boil over high heat. Reduce heat to low and simmer covered 15 minutes.
3. Stir in beans and cilantro, then top with chops. Cover and cook until chops
are done and rice is tender, about 10 minutes.

juice
3. 1/2 tsp. ground cumin,
divided1/2 tsp. dried oregano
leaves, crushed and divided
4. 1 clove garlic, finely chopped

DIRECTIONS
1. Combine 1/4 cup lime juice, 1/2 cup orange juice, 1/4 teaspoon cumin, 1/4
teaspoon oregano and garlic in glass baking dish or resealable plastic bag.
Add chops; turn to coat. Cover, or close bag and marinate in refrigerator 1
hour, turning once. Combine remaining 1/4 teaspoon cumin, 1/4 teaspoon
oregano, salt and pepper in small bowl; set aside.
2. Remove chops from marinade, reserving marinade. Evenly sprinkle both sides
with spice mixture.
3. Heat 1 tablespoon oil in large deep skillet over medium-high heat and brown
chops. Remove chops from skillet and set aside.
4. Heat remaining 2 tablespoons oil in same skillet and cook onion, stirring
frequently, until tender, about 3 minutes. Reduce heat to medium and stir in
rice. Cook, stirring frequently, 4 minutes. Stir in water and Knorr Mi Arroz
Red Rice Seasoning Mix. Bring to a boil over high heat. Reduce heat to low
and simmer covered 10 minutes.
5. Arrange chops on rice and cook covered until rice has absorbed most of the
liquid and chops are done, about 8 minutes. Let stand 10 minutes. Rice will
be slightly wet.
6. Meanwhile, bring reserved marinade and remaining juices to a boil over high
heat in small skillet and cook, stirring occasionally, until sauce is thickend,
about 10 minutes. Serve sauce with chops and rice.

1. For marinade, combine Lipton Recipe Secrets Savory Herb with Garlic
Soup Mix, soy sauce, honey, lime juice and ginger. Pour 1/2 cup marinade
over chops in large, shallow nonaluminum baking dish or plastic bag; turn to
coat. Cover, or close bag, and marinate in refrigerator, turning occasionally, 3
to 24 hours. Refrigerate remaining marinade.
2. Remove chops from marinade, discarding marinade. Grill or broil chops,
turning once and brushing with refrigerated marinade, until chops are done.
Serve with Knorr Rice Sides - Rice Pilaf.

DIRECTIONS

1. Pour boiling water over ancho chili pepper; let stand covered 10 minutes.
Process pepper with water in blender or mini food processor; set aside.
2. Heat 1 tablespoon Country Crock Spread in deep large skillet and cook 1/2 of
the pork over medium high heat, stirring occasionally, until browned, about 4
minutes. Remove pork from skillet and repeat with remaining Spread and pork;
set aside.
3. Stir onion into same skillet and cook, stirring occasionally, until onion is tender,
about 5 minutes. Stir in cumin and garlic and cook, stirring occasionally, 1
minute. Stir in ancho puree and cook, stirring occasionally 2 minutes. Stir in
tamarind nectar, pineapple juice, Knorr Chicken flavor Bouillon Cubes, and
pork. Simmer covered, stirring occasionally, 1 hour. Partially remove cover and
simmer, stirring occasionally, until pork is tender, about 1 hour. Garnish, if
desired, with chopped cilantro.

DIRECTIONS

1. Arrange pork on sheet of plastic wrap, season, if desired, with salt, pepper and
poultry seasoning. Top with another sheet plastic wrap, then flatten slightly with
palm of hand.
2. Melt Spread in 12-inch nonstick skillet over medium high heat, cook pork, in
batches, turning once, until pork is done, about 5 minutes. Remove pork from
skillet and keep warm.
3. Stir cranberry sauce and water into same skillet until cranberry sauce is melted.
Stir in half and half and cook 2 minutes. Return pork to skillet; turn to coat.
Arrange hot Knorr Rice Sides - Mushroom on serving platter, then top with
pork and drizzle with cranberry sauce.
