We the French, have something that the world envies. The entire
planet has tried to work out the formula, some have even been tempted to copy
it, but no, no one has managed to quite decipher the mystery so far.
French style is the Holy Grail. Its a state of mind, a way of life,
its this je-ne-sais-quoi that renders Parisian women more elegant than
New Yorkers, the capitals terraces more charming than Londons pubs, and the
Cote dAzur and its blue skies a unique part of the world.
Sorry, but a school where you can learn French style doesnt exist
any more than you can clone the Eiffel Tower or Ins de la Fressange!
But the French know how to be generous (yes, its true) and thats
why were bringing you this special edition dedicated to French Inspiration. A
compendium of elegance with images of unrivalled French fashion, highlights
of the best cultural events (because for us style is synonymous with culture),
beauty tips for understanding how Parisian women manage to stay relaxed
chic all at once. And because the French are snobs (a little quirk thats part of
our charm), weve also created a little guide to the forms of snobbery to adopt very useful for meals out. You will also find a selection of unusual tourist sites.

n fashion studios and workshops, the present means


nothing more than the forthcoming collection.
Autumn walks on summer catwalks, spring in
winter. The current year only makes sense in the year
to come which is to be built. The number of clothing
designs having spread under the influence of an arrogant
economic system, the phenomenon of inspiration thriving
on vintage fashion has become widespread. However, that
sort of nostalgic claim of recent, half recent or long gone
periods has not been quite accepted yet. Everywhere the
word past, the imperfect tense frightens us. It keeps at
bay a clientele keen on this innovation syndrome which
has won other disciplinary fields such as design, art,
architecture, literature, and so on. Everywhere throughout
exhibitions or shows, where they are too rarely forbidden,
screens, devices and phones take pictures, plunder and
vandalise the present time. That excess of simultaneity,
which is motivated by a sense of immediate sharing made
tactile surfaces judges. Oddly enough, for it wants so much
to seize the moment, the screen alienates all our skills to
appreciate it. The eye can never rest without an interface on
the subject. Hard drives and memories are weighed down
under the digitalised stocks of a stillborn present. Blogs
chatter and jabber, but do not tell anything. Some long
telescopic rods have flooded the public space.

Theyre used as a mirror by those


who live and watch themselves live. Erasure, ageing,
disappearance are scary terms. Archive is a word taken
on in our language and daily practice. The past is abstract,
hidden under the digital formats of our computers. The
hard copies and silver films have once and for all fled from
the shoeboxes in which we used to keep our lives with
lavender-scented bags. The fax paper, which was invented
in the last century, grows pale. The ink disappears. Theyre
turning blank again. The past is now decorative wallpaper
put on a sandy partition.
In interviews, the word modern has never been used
so much to describe an era, which suffers from not being
modern enough. A flamboyant seamstress whose work
was essential in the history of contemporary fashion once
casually said to a younger yet more arrogant seamstress: I
am a creator, youre creative. This era is creative. Extremely
inventive. Art (taking all sources together, be it artistic,
choreographic or literary) is an object, which is submitted
to its own combustion, for it is way too requested and
stimulated. The aesthetic economy of thought is overridden
by the one of ideas. The reason being that the tools of
communication dedicated to an excessive production of
goods that were once artistic but have now been domesticated
and consumed while being looked at, have multiplied. Lets
switch off the present and invent the future.

In the field, Elisabeth is known for


her stylish writing. A free and critical
spirit who masters impertinence and
pertinence like no one else, shes
interested in everything except
stuck up people and those who
have nothing to say. A novelist, her
works include the Livre des Vanits
(ditions du Regard, 2008) and the
much-talked-about Detail qui tue
(ditions Flammarion, 2013). As
well as her writing, every night at
8.05pm, Elisabeth presents 28 Minutes,
a French and international news
show on Arte (the Franco-German
television channel). For Madame Figaro,
our contributor pens the portrait of
Caroline de Maigret, a Parisian whose
talent goes beyond our confines.

BENOIT PEVERELLI

A charmer, an artist and a sceptic,


the photographer loves to stand under
the black cloth behind a 4x5 view
camera. At the Cannes Film Festival,
his camera fascinates the Croisette and
its actors. When he snaps them, they
suddenly stop and stand completely
still among the cafuffle and the
tension that builds before walking
the red carpet. Born in Switzerland,
Benot has lived in New York for 10
years where he collaborated with Life
and George. In 2001, he settled in Paris
where the bohemian dandy revealed
himself to be a creative fashion
photographer. His style has led him to
working with Vogue, The New York Times,
W and he has also collaborated with
Chanel. In his portraits of Cannes
biggest international film stars, taken
especially for Madame Figaro, time
suddenly stands still.

CASSANDRE MONTORIOL

Her illustrations, synonymous with


her personality, are full of life, colour,
and subtlety. Cassandre Montoriol
devours the world that surrounds
her with an unrivalled passion.
Prestigious publications like Vanity
Fair, Vogue, Marie-Claire, and Glamour as
well as brands like Herms, Buccellati
and Diane von Furstenberg, have all
called upon her for her inimitable
style. In illustrating the Riviera Guide
in this issue, the parisenne let herself
be carried by the South of Frances
luxuriant coastline as well as
by its unique light.

VALRIE DE SAINT-PIERRE

Funny, punchy and cutting, her tone


might have plenty of bite, but its never
harmful. In her articles, Valrie de
Saint-Pierre scrutinises our living
habits with scientific precision. She
started her career at Elle before taking
up a role as editor-in-chief at Biba
for 10 years, after which she became
editorial consultant for Isa. Since, she
has contributed regularly to Madame
Figaro and Marianne. In this issue, she
reveals the French snobbisms and
mannerisms to adopt this summer.

Nico is a fashion and advertising
photographer whose work brims with
personality and glamour. Ltitia

to concerts, Lyon tops the charts. Selah Sue, Florence

the ts de la Danse (summers of dance) festival will welcome
the Alvin Ailey American Dance Theater at the Chtelet

With its baroque aixois faade, gates made


for horse-drawn carriages, majestic staircase
and gypsery touches, the superb listed
eighteenth-century htel de Caumont calls

presented a collection coined
Liberation or Quarante (forties),
but the short dresses, platform
shoes and square shoulders were

Visiting the Fondation Maeght is an immense pleasure that will be

grew up in China where the


world is made up of Chinese
and foreigners. To the Chinese,
all foreigners are either first-world or
third-world, either rich or poor. Thats
about it.
Then I met a Frenchman and married
him. The first thing he taught me was
joie de vivre. He pointed out very clearly
that, as a Chinese-American, I worked
too hard. I was missing out on life.
Life, he would say, is for living, not
for working. I was very impressed, I
realised the French are very different

will all continue to speak French.


Its the same in China; the Chinese,
even when they can, hate to speak
another language. Unfortunately,
this shared characteristic did not
do wonders for a Franco-Chinese
marriage. Another common trait is
that both the French and the Chinese love to complain. When I was in
France, I listened to hours of criticism about cheap Chinese truffles
and garlic. When I returned to
China, I would hear about French
attitudes, passport control, the
passport checks at Louis Vuitton,
or even the Air France stewardesses
who ask to check boarding pass if
youre Chinese when you try to return
to your business-class seat from the
back of the plane. French and Chinese
cultures are both very domineering,
which did not make for marital bliss
in my case. Neither of us would ever
give in to the other.
Sometimes, when the smog is very

without a French husband by my side,
I often say to my fellow Chinese: life is
for living, not for working.

e Americans joke that


when 9/11 happened, we
lacked words to describe
it: wed used up horrific and tragic
talking about scenes on reality television; the French dont have that problem. One of the things I like most about
living here (Ive been in Paris for about a
decade) is the talent for noticing and describing things. For instance, ordinary,
educated Frenchmen often talk about

emotions and sensations with a precision


that where Im from is usually reserved for novelists. Its not great pronouncements about life that impress
me; its everyday observations, often on
ones own emotional state: the mother
who says she wont have another child
because Im at the limit of my competence, the doctor who tells me hes
going through a process of internal
negotiation over his girlfriends death.
Other such moments are aesthetic.

F FRENCH INSPIRATION

Also, when I emerge from a fitting room


in Paris, the salesperson can explain
precisely why I look terrible. Those
sandals clash with your skin tone,
one saleswoman told me recently; another informed me that the glasses I
was trying on mange votre visage
(swallows up your face).
Im usua l ly too i mpressed by
these remarks to be insulted. An

typically just shake her head no
at my outfit, or say I love it, leaving
me to wonder how she feels about her
husband.
Im not su re where t h i s F rench
talent originates. Maybe its acquired
at school. Maybe it comes from centuries of parsing the qualities of wines
and sauces. Or maybe its the Frenchs
romantic nature; Im told Frenchmen
can name the varieties of love with the
precision that Eskimos describe snow,
although it certainly doesnt make
them happier than the rest of us. The
French are also exquisitely skilled
at describing failing marriages and
midlife crises. Je confondais le plaisir et le bonheur (I confused pleasure
with happiness), a man in his fifties
said in Psychologies magazine. But I think
that being able to name even difficult
experiences makes life more of a narrative, and less of a mess. It means you
can elevate small moments, and maybe
even remember to repeat them. At the
very least, it leads to what we Americans call mindfulness the simple
pleasure of knowing whats going on.

arion Cotillard is like a


myth but shes very much
in touch with reality.
Shes like a meteorite, crossing the star-studded cinematic sky, without satellites
obstructing her path. The
French actress and Hollywood stars international career
is unique. This morning, she welcomes us into her home on
Pariss Left Bank. I dont live in Los Angeles, she says wrily.
In the lounge, Marcel, her four-year-old son, asks his mother
for a kiss then dashes off to play with his toy elephants. It is
not the glamorous Dior muse we have before us, but Marion
Cotillard, both the film star and mother. She takes off her Vejas
(environmentally friendly trainers) and sits down on the grey
sofa. Her face is so expressive that it captivated James Gray and
Christopher Nolan due to its melancholic beauty, opalescent
complexion, and eyes that turn navy blue in the light.
Today, the actresss diary is fuller than an ambassadors.
Since she won an Oscar (for La Vie en Rose she was also recently nominated for the Dardennes Two Days, One Night), her
career has gone from strength to strength. In the US, she is
cherished which isnt too strong a word and is looked
upon as the spirit of France incarnate, although she has
achieved the impossible: obtaining roles usually reserved
for American A-listers. Today she doesnt seem to be scared
of anything. She plays Lady Macbeth alongside Michael
Fassbender (in Justin Kurzels Macbeth), has been cast in Assassins Creed the cinema adaptation of the cult video game
and will soon start filming Nicole Garcias Mal de Pierres.
In the meantime, she will play the lead in Joan of Arc at the
Stake, an oratorio by Arthur Honegger, at the Lincoln Center
in New York in June. Heres our encounter with the prodigy.
MADAME FIGARO Jan Welters photos in this issue again, reveal your extraordinarily photogenic looks. How do you
feel about Marion Cotillard, the beauty symbol?
MARION COTILLARD I have a very mobile face, very variable
and shifting. Its perfect for film, but I am not the epitome of
beauty; its not that difficult to make me look ugly. I really
dont know how to talk about beauty, or the beauty that people attribute to me. When people meet me, no one thinks,
Shes gorgeous. Im not defined by my appearance. Im
not Monica Bellucci, whos so spellbinding that its probably
influenced her life and her relationships with others. With
actresses, I like particular, radiant appearances. Like Ana
Girardot. Or Meryl Streep. I think Penelope Cruz is sublime, Jessica Chastain too; I love redheads. Angelina Jolie,
whom Ive met a few times, is stunning but her beautys a

bit too dazzling. Do you know who I think is mind-blowing?
Charlotte Casiraghi. The first time I had dinner with her, I
couldnt take my eyes off her. Of course you need the intelligence, simplicity, vivacity and kindness to go with it. These
transcend and enhance a persons beauty.
Americans say that you radiate the photogenic quality of the stars from Hollywoods golden age. It would be
truer to say that they havent yet offered me a role where
Im stripped of anything unnatural; perhaps in The Immigrant
by James Gray, where I wore very little makeup, but thats
a bit different, it was a period drama. However, in Two Days,
One Night, my character, Sandra, confronts life bare-faced.
That was one of my most beautiful and unique experiences. With the Dardenne brothers, it went beyond trust; it
was harmonious, even fusional. In another genre, I really
enjoyed being in Rust and Bone by Jacques Audiard. That was
my sexiest, most sensual role. A radiant girl, the kind I like.
Do you have any regrets about your exceptional career?
That I didnt get to film with Patrice Chreau. His death
broke my actress heart, I felt enormous grief. I thought
about the experience, which I had so often dreamed about
and would never have. His film Intimacy is my favourite, a
true masterpiece.
How do you manage the whirlwind success that has
swept you up since La Vie en Rose, and all the constraints it
imposes? I try to do the best that I can. I lead quite an unusual life, but in this unusualness, Im lucky enough to experience a lot of joy. I have nothing to complain about.
As a woman, have you achieved a sense of fulfilment?
Not yet. An actress is a very peculiar animal! When I started
out, I couldnt live with this need for recognition and the
desire to be liked. I deal with it better now, but Im still far
from no longer wanting it, and from wisdom.
But isnt it natural to want to be liked? To be liked, yes
of course, but the need for recognition is pathological, impossible to satisfy completely. And Im always scared of
disappointing. This insecurity, which all actresses have,
sometimes creates tension. Ive had a lot of recognition,
more than I could ever imagine. But no award can really
satisfy that need; lets say it gives fleeting confidence. Only
by working on yourself to find the origins of that need, can
you finally overcome it.
What soothes you? My nearest and dearest. And people
like writer and environmentalist Pierre Rabhi, an altruist
and one of the most beautiful people in my life.

guide book she wrote with three girlfriends, is already a hit, to be released
worldwide this year. As the books ambassador, shes either in and out of meetings, on the road for Chanels Mtiers dArt
collection, posing in womens magazines,
or giving interviews with a relentless
nonchalance - afterall, the Parisienne is
an oxymoron.
The lean Parisenne with her strong-willed
chin and long tousled hair evoke a drawing by Kiraz or a photograph by Hedi
Slimane. Shes classy, a little quirky and
anxious, with a wild look in her shy eyes.
Her charming flaws are, for her career,

the same as Lauren Huttons diastema or


Violetta Sanchezs haughty nose; its like
an unforgettable signature. However, the
cherry on top, is her warm and friendly
manner. In fact, be it in fashion, music,
cinema, or chick-lit, everybody loves her
- fairly rare for a Parisienne worthy of the
name. Portrait of a girl who knows how to
stand out.
Her clear-headedness is refreshing and
is reflected by those in her entourage. I
know Im not that easy on the eyes, my
face is a bit too much; big mouth, big
nose, big teeth, its an unusual face. One
of my ancestors was a Native American,
an Iroquois...For a few years, I lived with a
boy who used to call me My endangered
beauty. He would say, By a couple of
centimetres, youd be screwed! I found
that very poetic and I fell in love with it...
Shes got aristocratic blood, but doesnt
make a fuss about it. On my fathers side,
my family goes back to the fourteenth

that out. She shrugs off the subject with
an evasive reply, I prefer Chekhov! Her
upbringing has allowed her to this day, to
sail through life rather smoothly. Either
way, shes more of a peacekeeper than
a troublemaker and knows how to keep
tiresome people at bay, Manners make
life sweeter. They foster a sense of sociability and give one this tremendous ability
to put a protective distance between oneself and the others if need be.

HER MODELLING CAREER


IS DOUGHNUT SHAPED
Shes a rocker, a mod and above all, a
mocker (to parody Ringo Starr). At 15,
I was angry at bourgeois conformism.
I started going to concerts, listening to
music that shook the walls! I loved hard
rock, punk; bands like Alice in Chains. I
used to mosh to death. When I arrived in
New York, hung up about being a model
the dregs of the Earth I started to hang
out with musicians, learned how to play
music and, when I returned to France, I
launched a small indie record label, Bonus Tracks Records, with my man, Yarol.
Today, Yarol Poupaud writes for the moving French septuagenarian rockstar Johnny Hallyday - and Miss de Maigret no
longer moshes, although she sometimes
DJs at VIP parties. So rock chick, so cool.
Her modelling career is doughnut shaped,
round with a hole in the middle, and
is no longer the focus of her life. At 20,
a student at the Sorbonne, I was eager to
be financially independant, and becoming a model was the fastest way to getting
there, though I had never read a fashion
magazine before. I arrived at the end of
the supermodel era and at the beginning
of the waifs, those pale kittens with big
watery eyes. I wasnt pretty enough to be
a top model and too healthy to be a waif. I
didnt do drugs and I wasnt crazy enough
to be a cover girl. It worked fine, but I was
ashamed of what I was doing. Being assessed and scrutinised infuriated me, so
one day I ditched it. Hence, the doughnut. Today, striking a pose for Chanel or
Lancme doesnt give me a complex anymore, on the contrary, its light-hearted
and relaxed; they take my picture, I work
for brands. Her eyebrow-skimming
fringe is becoming as iconic as Betty Ca-

trouxs platinum blond fringe. When I


started in the fashion industry, 20 years
ago, people told me I would look more
interesting that way. I refused to get my
nose done but I gave in to the fringe. It has
become my camouflage! Very useful for
covering frown lines!
She also has something in common with
Winston Churchill: she absolutely hates
sports. No sports then, even if she is
aware of the physical and mental benefits.
Ill get back into sports next year. In the
meantime, I walk a lot, I went organic for
my son, and I quit smoking five months
ago for the same reason.

RAISE A CHILD WHO WILL


DO GOOD TO PEOPLE,
NOT A LITTLE MONSTER
For her, passing on moral values to her
seven-year-old son Anton (named after
the author of The Cherry Orchard) is important. He is growing up in a world that I
find more and more difficult to live in; its
competitive, selfish, terrible. It is my responsibility to raise him as someone who
will be good to people, not a little monster
who only cares about his own success. I
reckon hes off to a good start. For now,
hes sweet and generous. She worships
her mother-in-law, Chantal Poupaud,
who was Marguerite Duras film press
agent and documentary producer. She
gave birth to two amazing artists, namely
Melvil, the actor, and Yarol, my man. Our
relationship goes further than a simple
daughter-in-law/mother-in-law relationship. She is a fascinating and independent woman who taught me a few
essential things about maternity and the
importance of encouraging curiosity in
children. Yarol is interested in everything

and is naturally in tune with his feminine side - hes even more of a feminist
than I am! My mother-in-law has an exemplary connection to her own age and
femininity, and decided she would never
give up. Giving up means getting old. She
doesnt want to be left behind, so she does
the rounds of gigs and exhibitions, she s
enthusiastic, and looks 15 years younger
than she is - without Botox!
Caroline likes to admire women, despises female rivalry and advocates
benevolence. In our book, theres an
ode to Simone de Beauvoir, Veil, Signoret; strong-minded and active women
who changed womens lives or simply
were the epitome of a woman in love,
like Signoret, but I also love Charlotte
Rampling; she has a smart beauty, its
impressive. On a different note, I like
the avant-gardists such as Misia Sert,
Dora Maar, Gabrielle Chanel, Lou Andreas-Salom. She succeeds by caring.
Im part of the NGO Care (2). At 20, one
tries to find oneself. At 30, one works for
oneself. At 40, one can start being altruistic. In fact, at the beginning of the year,
she went to India to film a documentary
about the education of young girls from a
rural area. Digging a well at a school allows girls to bring water home and learn
how to write. It can change lives. Has
she ever held a camera? Never, but Im
hard-working, I have an obsessive fear of
deception, and Im too respectful of people who trust me, not to work. All in all,
what is a Parisienne? A girl who always
has the last word, but makes you think
that she doesnt, a girl whose motto is:
how to be yourself, but better! Afterall,
who would know better?

Create a slicked-back style on straight or straightened hair


with a wet-look base. To get the look, apply a sun protection
oil or an antioxidant mask with a golden shimmer (like

to the roots and comb through. This creates an ultra-hip
contrast between glossy roots and more matte lengths.
For a designer touch, add a thin patent or metal headband
to make a horizontal parting (try H&M or Topshop).

To protect dyed hair from UV rays drying effects,


try the Nina Ricci look by wearing your hair in
a small tight bun at the nape of your neck. Mini-bun:
twist your hair into a ponytail and then wind it into a
bun. Knot: make a side parting, divide your hair
into two sections, then tie them into a double knot.
Tuck in any loose ends and fasten with hairpins.

BOHEMIAN BRAIDS

A braid is the perfect style for longer hair. Im betting


on the loose braid making a comeback, says hairstylist
David Mallett. Try a classic three-strand or an eight-strand
fishtail braid, worn to one side or in a crown around the
head.To give the hair texture, I suggest spraying a little
saltwater all over before styling. Once youve finished the
braid, pull out a few strands to avoid it looking too severe.
As its summer, dress it up with an accessory, David
recommends. Why not slip in a splash of colour coloured
thread, ribbon, silk scarf or dyed streak or something
by hair artist Marisol, who has a range of hand-braided
accessories (including slides, headbands and clips) in acid
colours especially great for the summer, available from

SALT SPRAYS: these clear sprays contain saltwater to
give hair texture and volume, like youve just stepped out of
the surf! Theyre great for making straight hair more tousled,
taming curls and giving limp hair more volume without

The trend for wet-look hair is practical and easy to follow


in summer, when our hair doesnt have time to dry
between dips. For a tousled look, use a sun protection
oil to enhance and prolong the glossy effect. These oils
contain UV filters, protect hair from chlorine and salt,
and give it shine. Theyre simple to use just spray on
generously right through to the tips (the dullest and most
fragile part of your hair), then comb through.

EVENING TREAT

SMOOTH AND REPAIR

Get rid of any sand or salt with a restorative shampoo, then apply
a leave-in treatment to towel-dried hair. This will protect your hair
and allow the active ingredients to work overnight, leaving hair
silky smooth. For dry or dyed hair, go for a nourishing day mask.
If its curly or brittle, apply an intensive leave-in mask. Using a
fine-tooth comb, make a central parting and smooth your hair back
behind your ears. If needed, add some mask cream to the lengths
and tips these are the areas that get most dehydrated.
TAMING MASKS: La Crme, Opalis: we love its almond
fragrance and the fact that it hydrates hair immediately,
so theres no need to wait. Moroccanoil masks contain argan oil,

take off their shoes. Whether theyre


Greek or Egyptian shaped, or big or
small, we can all keep our feet sweet
by paying them a little more attention.

When it comes to strutting your stuff


in five-inch heels without twisting an
ankle or feeling like a klutz, we swear

An elegant gait should be fluid; when
you walk, dont contract your pelvis;
instead, tense up your toes or compensate with your knees.
Shoes shouldnt be worn in. They

fit the arch of your foot. If it doesnt,

Barefoot king Bastien Gonzalez, the founder of the foot and hand care brand
Rvrence de Bastien, has persuaded celebrities and princesses to kick off their
shoes. This foot hygienist says we should care for our feet just as we look after
our teeth. Heres some of his advice for women who cant live without their heels.
In the evening, spend at least 10 minutes walking barefoot and take a few steps
on your heels to stretch out your calves.
Every evening, stretch and separate your toes, pushing them down before massaging the fat pads with a moisturising lotion to keep the cushion soft.
You dont need to be a chiropodist to give yourself a great foot massage. Using
a cream, knead the heels and pads of your feet with your thumbs, pressing in
the centre of the arch to stimulate circulation and around the nail matrix, then
stroke upwards from the ankle to the calf, always towards the heart.

real declaration
of love and veritable ode to Ancient Greece, Villa Kerylos is a dream carved in stone and an invitation to travel.
Located on the tip of the Baie des Fourmis, Beaulieu-sur-Mer, the villa looks
like the bow of a ship. Surrounded by

mountains punctuated by the Eze cliffs,


the villa, a port of call between Nice and
Monaco, sits right on the Mediterranean
Sea. A harmonious and fragrant garden
that smells of the South: its olive tree is a
gift from Athena, its myrtle is consecrated
to Aphrodite, its laurels were created by
Apollo, its cypresses reach up into the
sky, and the scent of jasmine fills the air
at dusk. Xaipe! (Rejoice!), is the first expression that springs to mind upon crossing the gardens threshold. As for Kerylos, or sea swallow, its a good omen in
Greek mythology, and a haven for happiness, tranquility, and meditation.

Commissioned by Thodore Reinach, a


learned Hellenist and a rich patron (from
a savvy banking family), to Emmanuel
Pontremoli, an architect and archaeologist winner of the Prix de Rome, Villa
Kerylos is a replica of a Greek pocket.
Built between 1902 and 1908, the large
structure with its pergolas and acroteria seems Neoclassical at first glance,
however its more of a cross between
a noble Delos Island house and Belle
poque extravagance. The patterns of
the frescoes and mosaics and the fur-

niture and upholstery designs are inspired by antique texts of iconic scenes
and famous tales of Gods and classical
heroes. The villa also boasts a central
gallery of 12 Carrara marble columns,
which opens on to a patio, kept cool
by a water basin, and leads to another
four rooms. The library, located in the
east wing, with three French windows
to make the most of the morning light
when working, is the villas most impressive room. Sunlight streams in while
the sea stretches out below. The Bettenfeld furniture is made from exotic woods
(Australian plum tree, Japanese angelica-tree, American walnut tree), the
highlight being the Pleyel piano, hidden
in a chest inlaid with lemon tree wood
(a purist, Thodore Reinach would never
have had random pieces of furniture).
Oikos, Triklinos, Amphityros, every room
has a Greek name. Upstairs, the bedrooms are separated by two luxurious
bathrooms, that of Theodore, with its
Pompeian red walls and small Erotes,
and his wifes, Fanny, which looks out
to the Cap Ferrat and its cake-shaped
dwellings (an architectural peculiarity
from the Rivieras 1900s aristocratic
heyday), like the Villa Ephrussi de Rothschild. In fact, the two families are

tied Fanny is Charles Ephrussis niece however, their houses are radically different. One, more showy, appeals
to Russian tycoons who like to rent it
out for marriage proposals, while the
other is a paragon of refinement that
can be privatised for a simple tte-tte on the terrace, which blends with
the seas azure blues. And as Rimbaud
once said, Eternity is the sea together
with the sun.

Why does the villa appeal to you?


I admire the idealised replica
of ancient Greece day-to-day life.
Its my dream house.
Do you identify with the small folly?
Absolutely. Ive done shoots here
many times and I feel at home
here. Since I wrote a preface for a book
on the Villa Kerylos*, it has
become more than familiar to me.
What memories link you to that
house? A chamber music concert
at nightfall; its my best memory.
If you owned it, what would you
do with it? The same thing as Thodore
Reinach did, Id live in it! In Goethes
words, for days I would stand
on the shore, searching within my soul
for the Greek lands (Iphigenia in Tauris).
A book, a playlist or a guest list?
Books on ancient Greece and
mythology. Schubert, Elektra and
Ariadne auf Naxos by Richard Strauss,
and Athys by Lully. I would invite
people who share the same passion for
that period, but no name-dropping!

chef Paolo Sari is at the helm (although


he insists on not being called the Italian chef). His cuisine is inspired by
the countries he has cooked in: the UK
(Londons Four Seasons, The Dorchester, etc.), the US, China, Korea and
Japan. Three months spent in a monastery on Jeju-do Island growing vegetables and rice sealed his commitment
to organic food. Real luxury doesnt lie
in foie gras or caviar [although organic
Ossetra caviar sometimes graces his
signature pav of San Remo red cherry
shrimps tails], but it means going back
to an authentic diet with fresh seasonal
produce of known origin. He took the
risk of educating disconcerted patrons
of the Rock to go green rather than gold,
with his inventive, exquisite cuisine,
and the gamble paid off.
His tasting menu took fifteen months
of pure determination to devise, fully
rethinking the supply chain, without
intermediaries between the producers and the kitchens. Fresh fruit and
vegetables, picked every morning in
the Nice hinterlands kitchen gardens,
are cooked before noon, then beautifully prepared by a team of cooks who
believe wholeheartedly in organic
cuisine. Once the menus unsung heroes, vegetables have now achieved
gastronomic status. Just add a pinch of

Camargue salt, a dash of extra virgin


olive oilmade especially for the chef,
for each to express itself (almost) fully, as illustrated by the Organic Sama
(sama means respect in Japanese).
The ingredients used in this vegetarian
dish are seasonal and may vary daily,
depending on the gardens mood.
Supplied daily by twenty-four local
fishermen, fish vie with each other for
ultimate refinement: a John Dory meunire, a large fillet of sole with jacket
potatoes, versus wild sea bass marinaded in green citrus fruits. White
meat is back on the menu, too, with
such delicacies as cappelletti stuffed
with free-range guinea-fowl, slowcooked suckling pig, acacia honeyroasted lamb chops and home-cured
bacon. Delicious bread is baked on the
premises twice a day, and the chocolate
sweets are home-made, too. The dessert menu prolongs the pleasure, with a
choice of new red fruit zabaglione gratin, black cream with hazelnuts and
cocoa ice-cream, or a heavenly encounter between two great classics: tiramisu and saint-honor. A delicious
way to prove that organic food has,
once and for all, cast off its mythical
lack of refinement to offer sophisticated, eco-friendly, sustainable cuisine.

20 raw San Remo red cherry shrimps 1 lime 1 lemon - 8 mini fennel
pink grapefruit - 20g caviar borage
flowers olive oil.

Peel the shrimps and cut them


in half length-wise. Place them
between two cellophane sheets
and crush them gently with
your fingers. Place the stretched
shrimps on the plates, make
them look larger and arrange
them with your fingers to fully
cover the surface of each plate.
Season with salt, olive oil and
zests of lime and lemon. Wash
the fennel, keep the fronds and
thinly slice the bulbs, place them
in icy water so that they get
crunchy. Peel the grapefruit and
remove the pith by separating the
quarters, and place them on top
of the shrimps. Add the fennel
and the borage flowers. Garnish
with the caviar and the fennel
fronds. Tip These incredible
shrimps are caught in 400mdeep waters. They can be replaced with prawns in the North
and sea bass in Brittany.

1 pink grapefruit - 60ml agave syrup - 2g agar-agar the zest of a lime 100g raspberries 100g blackcurrants - 4 mini fennel - 4 mini carrots 4 mini courgettes - 2 Datterini tomatoes or 12 cherry tomatoes - 1 slice of Charentais
(orange-fleshed) melon - 1 white celery heart.

Squeeze the grapefruit and add the lime zests. Dissolve the agar-agar in the agave syrup over a medium heat, leave to cool then add the grapefruit juice. Rinse
all the fruit and vegetables. Dice the tomatoes, celery and melon, thinly slice
the carrots, fennel and the green part of the courgettes. Arrange the fruit and
vegetables in four dessert cups. Drizzle the grapefruit juice and place the cups
in the fridge. Serve chilled with a scoop of basil sorbet, and decorate with leaves
and flowers. Tip As with Organic Sama, this recipe requires the best-quality
fruit and vegetables in season. Ingredients may vary according to taste.

Brown the minced shallot in


2 tbsp olive oil in a pan, add
the shelled peas, and cook
gently for one minute. Add
the stock, salt and pepper,
and cook for 10 more minutes. Remove from heat,
mix and leave to cool. Rinse
and peel all the vegetables,
slice them in strips with a
mandolin. Add 2 tbsp pea
puree in the middle of each
plate, spread it in a 10cm
diameter circle. Arrange the
Organic Sama like a bouquet
of flowers. Season with a dash
of olive oil and a pinch of
salt. Garnish with the flowers
and the herbs. Tip This recipe
requires the best-quality,
freshest produce. Dont
hesitate to choose the ingredients yourself at your
local greengrocers.
