MCPD and Glycidyl Esters

Edited by Shaun MacMahon

2014. Hardback. 230 pages. ISBN 978-0-9888565-0-9. Product code 272
List: $155 AOCS Member: $110
This book discusses the current research on monochloropropanediol (MCPD) and
glycidyl esters in edible oils. These potentially harmful contaminants are formed
during the industrial processing of food oils during deodorization. The mechanisms
of formation for these contaminants, as well as research identifying possible precursor molecules are reviewed. Strategies which have been used successfully to decrease
the concentrations of these contaminants in edible oils are discussed, including the removal of precursor molecules before processing, modifications of deodorization protocol, and approaches for the removal of these contaminants after the completion of processing. Analytical strategies for accurate detection and quantitation of
MCPD and glycidyl esters are covered, along with current information on their toxicological properties. This
book serves as a single point of reference for the significant research related to these contaminants.
Also available as an eBook on iTunes and Kindle.

Challenges in Food Systems

Edited by Amy Logan, Uwe Nienaber, and Xiangqing (Shawn) Pan
2013. Hardback. 548 pages. ISBN 978-0-9830791-6-3. Product code 269
List: $250 AOCS Member: $190
Lipid oxidation in food systems is one of the most important factors affecting food
quality, nutrition, safety, color, and consumers acceptance. The control of lipid
oxidation remains an ongoing challenge as most foods constitute very complex
matrices. Lipids are mostly incorporated as emulsions, and chemical reactions
occur at various interfaces throughout the food matrix. Recently, incorporation of
healthy lipids into food systems to deliver the desired nutrients is becoming more popular in the food industry. Food ingredients contain a vast array of components, many of them unknown or constituting diverse or
undefined molecular structures, requiring the food industry to develop effective approaches to mitigate lipid
oxidation in food systems. This book provides recent perspectives aimed at a better understanding of lipid
oxidation mechanisms and strategies to improve the oxidative stability of food systems.

In an effort to provide alternatives to trans and saturated fats, scientists have been
busy modifying the physical properties of oils to resemble those of fats. In this
fashion, many food products requiring a specific texture and rheology can be
made with these novel oil-based materials without causing significant changes to
final product quality. The major approach to form these materials is to incorporate
specific molecules (polymers, amphiphiles, and waxes) into the oil components that will alter the physical
properties of the oil so that its fluidity will decrease and the rheological properties will be similar to those
of fats. These new oil-based materials are referred to as oil gels, or oleogels, and this emerging technology
is the focus of many scientific investigations geared toward helping decrease the incidence of obesity and
cardiovascular disease.

This book summarizes current modern approaches in the quantification of the
physical structure of fats and its relationship to macroscopic functionality. The
approach taken here is a general one, and the principles and techniques presented
can be applied to any lipidic material. With increased maturity of a field such as the
physics of fats and oils, comes an increased need for more quantitative approaches
to common problems encountered by industry. This book outlines modern methods used for this purpose by some of the leading authorities in the field today.

List: $165 AOCS Member: $125
This book serves as a reference for those interested in state-of-the-art
research on the science and technology of ionic liquids (ILs), particularly in relation to lipids processing and analysis. Topics include a review of the
chemistry and physics of ILs as well as a quantitative understanding of structure-activity relationships at the molecular level. Further, chapter authors examine
the molecular basis of the toxicity of ILs, the prediction of the properties of ILs, and the rationale and steps
toward a priori design of ionic liquids for task-defined applications.
Emerging research in developing lipid-inspired ILs and their prospective use in drug formulation is
described. Among the highlights are the latest advances in IL-mediated biocatalysis and biotransformation,
along with lipase production, purification, and activation.

Epidemiological studies have continued to increase awareness of how trans fats
impact human nutrition and health. Because of the adverse effects, the trans fats
labeling regulations came into effect in 2006. Since then, the fats and oils industry
and food product manufacturers researched and implemented a number of novel,
practical, and cost-effective solutions to replace trans fats with alternate products.
This book provides a comprehensive understanding of the trans fats chemistry,
labeling regulations, and trans fat replacement technologies. It also deals with world-wide trends and scenarios in terms of regulations and trans fat replacement solutions.

Tocotrienols

Vitamin E Beyond Tocopherols, 2nd Edition

Edited by Barrie Tan, Ronald Ross Watson, and Victor R. Preedy
2013. Hardback. 400 pages. ISBN 978-1-4398844-1-6. Product code 266
List: $170 AOCS Member: $140
The first 90 years of vitamin E research has produced prolific and notable discoveries. Until the last few decades, attention has been given mostly to the biological
activities and underlying mechanisms of -tocopherol, which we now know is one
of more than eight vitamin E isomers. Tocotrienol discovery came much later, in
1965, but existed for almost 20 years as an obscure vitamin E. Currently, tocotrienols have reached a new measure of research height; more than one-third of all vitamin E research of the last
30 years has been published since 2009. The thriving field of tocotrienol research gives ground for publication of the second edition, a compilation of the latest tocotrienol research in all new chapters.

Today, the bar soap industry is thriving in much of the world. In developing
countries especially, toilet and laundry bar soaps are produced in large quantities by companies other than the well-known, multinational firms. In other
parts of the world boutique soap manufacturers are producing elite bar
soaps for a select group of healthy green consumers. These soap producers, as well as anyone with an interest in soap technology will benefit from
Soap Manufacturing Technology. This collection features soap-related information from the AOCS-SODEOPEC Conferences of 2006 and 2008 (SODEOPEC=Soaps and Detergents,
Oleochemicals and Personal Care Products).
Also available as an eBook on iTunes and Kindle.

Interest in biobased surfactants and detergents is growing due to their ability to
outperform synthetic, petroleum-derived surfactants when it comes to biodegradability, biocompatibility, and measures of sustainability. Consumers want ecofriendly and biobased products, leading to increased use of biobased surfactants.
This must-have book covers biosurfactant synthesis and applications, as well as
how to reduce manufacturing and purification costs, impurities, and by-products.

With a focus on current health issues, this book presents information on the chemistry of minor constituents of canola and rapeseed. It includes research on bioactive compounds and identifies new areas of interest for industrial application
of functional foods and nutraceuticals. Chapters present historical perspectives,
modifying composition of oil, ways to increase crop yield, value-added processing, canola protein, and biodiesel quality. The text also covers several health aspects including heart health,
obesity and insulin resistance, antioxidant behavior, and the effects of canola on the oxidation of edible oils.

Green Vegetable Oil Processing,

Revised First Edition

The revised first edition includes much of the content of the first edition, but incorporates updated data, details, images, figures, and captions. This book addresses
alternative green technologies at various stages of oilseed and vegetable oil processing, including: oil extraction technologies such as expeller, aqueous, and supercritical
methods; and green modifications of conventional unit operations such as degumming, refining, bleaching, hydrogenation, winterizing/dewaxing, fractionation, and deodorization. While most
chapters describe soy oil processing, the techniques described are equally applicable to oils and fats in general.
Also available as an eBook on iTunes and Kindle.
