1 tbs olive oil
1 clove garlic, minced
1 cup diced celery
5 leeks, thinly sliced, white and light green parts only (about 2 cups)
2 large Russet potatoes, peeled and cubed (about 2 cups)
4 cups low-sodium fat-free chicken broth
1 bay leaf
½ tsp fresh thyme
½ tsp salt
½ tsp fresh-ground black pepper
Pinch of cayenne pepper
½ tbsp butter
Heat olive oil over medium heat in a soup pot. Add celery and garlic and sauté
about two minutes. Add leeks (save a few green slices for garnish) and cook about
five minutes until softened. Add potatoes, thyme and bay leaf, stir and cook about one
minute. Add chicken broth, bring to a boil and reduce heat to low.
Simmer about 20 minutes or until potatoes are soft, adding salt and pepper halfway
through. Transfer two cups of soup to a food processor and blend until pureed. Return
puree mixture to the pot, and adjust seasonings. Add cayenne pepper and butter, stir
to melt, and serve. Garnish with reserved leeks, or chopped green onions or fresh
thyme, if desired.

As you start writing your shopping list this holiday season, I’d like to share
my story of one of the best Christmas presents I’ve ever received.

As a fundraiser for a non-profit, I am often the one in my circle of friends


or family encouraging them to give, or get passionate about a cause. I was
happily surprised when last Christmas, my sister-in-law stepped into the
role. She gathered us around the tree, and gave each of us an envelope and
a small package. One by one, we opened each of our small gifts and
accompanying envelope. I received a felt dog ornament and inside my
envelope was a card saying that a donation had been made in my name to
the local SPCA—the envelope also included a print out of a puppy and
information about the local shelter. She knew I was just as passionate
about animal welfare as I was about human welfare. My husband, the
cook in the family, opened his present to find an apron, and that a donation
was made to the Kid’s Café at the Food Bank—a program in which hot
meals and tutoring are provided to at-risk children.

Kelly’s gift pairings were thoughtful—she had done her research in finding local charities that reflected our passions.
The small material gift we received were tangible items that could remind us year after year what the holidays are
really about.

Of course, I’m going to encourage you to give to Samaritan House this year—each night we shelter over 100 families
