Last month my girlfriend and I went to a great festival in a small town near the city of
Puebla, in Mexico. It was the Nopalfestival. What's a nopal? It's a variety of cactus that is
very common in Mexico. Each plant has many large, flat, spiny leaves that are used in

many dishes. There are thousands of stands at the festival, each one serving creations made
from nopales. You can find soups, salads, nopales stuffed with meat or other vegetables,
candy, and even nopal ice cream. We ate nopales for hours. It was amazing.
I also learned how to prepare nopales. You can't just eat them from the plant. You first need
to remove the spines carefully with a knife. Then you chop the nopal and put it in water.
You have to wash it well because the leaves have a mushy juice called baba that isn't very
appetizing, but it disappears by washing it. Then you can boil it and use it in many different
dishes. It's wonderful.
