Mass Transfer Studies on osmotic dehydration of

green apple
This experiment will be carried out in a batch reactor
providing with a agitator of variable speed. The various
parameters involved in this technique are concentration
of sugar solution, dehydration time, and agitator speed.
Calculations were done to estimate the mass transfer
coefficient. Analysis shows that with an increase in the
time of dehydration, the overall mass transfer
coefficient decreases. Sugar gain was calculated as total
solid gain and it was observed that it is not much
affected by variation in agitation speed.
