Congratulations Jambalaya
Association, you have done it
again. This years 48th Annual
Festival was a huge success.
I have been attending the
Jambalaya Festival for 40 plus
years and this years festival
seemed to have it all. The food,
than ever.
A wide variety of entertainment from bands like Hai
Karate, Eddie Smith
and Chee Weez rocked
the stage while hometown
favorite bands such as
Van & Grace Broussard,
Kenny Fife and Na Na Sha
kept our dancing shoes moving.

vivid, flashing colors that add a

What is a
Diamonds Window?
One of the first steps in cutting a
rough diamond involves polishing a
small flat section or window so that
the cutter can microscopically examine
the gems interior. This helps the
cutter decide how to get the best
cut from the diamond.
What are
Calibrated Gems?
These are diamonds and colored
gemstones that are precision cut to
conform to standard or fixed sizes
sometimes to a fraction of a
millimeter. This results in easier
matching and faster, more accurate
setting of the gems.

The directions state to take a pill
about an hour before each meal, and
preferably before lunch and dinner.
Thats exactly what I did. I took this
supplement faithfully, and about a
week or two into the bottle, I noticed
I was fuller more quickly during
meals, and I could go longer in
between meals. A couple of weeks
into the bottle, I noticed I was
sleeping much more soundly. I
eventually increased to one to two
pills before meals and that seems to
work even better. I didnt notice any

The Voice
Recently I watched a Sheriff's
Department patrol vessel cruising
slowly alongside the riverbank near
my home as they searched for the
body of a missing boater. An hour
or two later they were followed by
an older boat, its ancient,
smoking Evinrude puttering
along. Its somber crew spoke
little as they scanned both right
and left, peering beneath decks
and piers. Undoubtedly they were
friends or relatives of the missing,
having joined the search.
The boater reportedly went down
in a 12 foot bateau powered by a
6 HP outboard on Bayou
Manchac. He and his passenger
wore no life jackets. The sun had
set on a day in which we
experienced some of the worst
storms ever to sweep cross our
river. His passenger bailed out
and was able to swim ashore as the
boat was swamped. It was
recovered a couple of days later
and miles downstream. The search
for the body continues.
Social media postings now allow
us a glimpse into the lives of the
names we read in the news and a
brief search of the internet
produced a photo of the missing
young man straddling a Harley
Davidson. He held a beer in one
hand and the slightest of smiles on
his face. His Facebook profile
picture had been posted one day

Livingston, La. who lost her second round battle with cancer within a year
on May 13, 2015. The Benefit Garage Sale

While many have delayed retirement because of the recent recession, for those close to retirement
age or contemplating retirement,
a basic understanding of Social
Security is imperative. There are
many different things that you
need to understand about Social
Security to help you make an

scope of this article, you should
be familiar with the following
broad concepts before you make a
decision to start receiving your
Social Security benefits are available for those who have contributed to the Social Security system for at least 10 years or 40
quarters. This is most Americans
except those who have never
worked or who worked for a government entity that does not participate in Social Security. As
such, Social Security benefits make
up at least a part of most peoples
retirement income; for some,
these benefits may make up a
large part of their retirement
income or even all of their retirement income. Therefore, timing
your decision as to when you will
start receiving the benefits to
maximize your monthly amount is
critical.
If you wait until your full retirement age (FRA) to receive benefits, you will receive 100% of your
benefits. Full retirement age
varies depending on when you
were born. If you were born
between 1943 and 1954, your
FRA is 66. If you were born
between 1955 and 1960, your full
retirement age is between the ages
of 66 and 67. The FRA depends
on the year you were born. For
example, if you were born in
1958, your FRA is 66 years and 8

Participate in
Day on the Hill
GONZALES, LA (May 4,
2015) Tammy OConnor,
BSN, CEN, President-Elect of
the Louisiana Emergency
Nurses Association (LENA),
and Jennifer Sing, BSN, both
team members of St. Elizabeth
Hospitals Emergency
Department recently visited
Washington D.C. as representatives of LENA. The National
Emergency Nurses Association
(ENA) Day on the Hill was
held on April 28 and 29, 2015.
Over 100 ED nurses from
across the nation were present
with a unified voice for a
common change. The
individual state delegates were
advised to meet with their State
Senators and/or House
Representatives to lobby for
support with the Mental Health
Reform Legislation and Trauma
Care Systems. Delegates
received a day of training in
preparation on how to present
various bills, and instruction on
optimizing time with state
representatives.
According to OConnor, the
comprehensive Mental Health
Reform Legislation will help to
ensure resources are available
for the mentally ill. The bill
specifically focuses on programs
and resources for psychiatric
care of patients and families
most in need of services. It
provides additional funding for

Six Local
Students
with Laptop
Computers
Six outstanding scholars from our local high
schools were honored on April 22, 2015 at
EATELs annual Technology Awards Ceremony,
now in its 29th year. Focusing on the
importance of both technology and academic
success, EATEL presented one outstanding
graduating senior from each high school in its
serving area, Donaldsonville, Dutchtown, East
Ascension, French Settlement, Maurepas and
St. Amant, with a touch-screen, ultra-portable
laptop computer. The ceremony was held in
the lobby of EATELs Administration Building
(406 E. Worthey Road, Gonzales, LA).
EATEL Technology Award applicants must have
an overall grade point average of 3.0 or
higher, actively participate in school and
community activities, and plan to pursue their
studies at a Louisiana-accredited college or
university. These students must also plan to
pursue a major in one of the STEM categories:
science, technology, engineering, or math. The
2015 recipients were chosen from a pool of
applicants by a counselor from each school.
My hope for these students is that theyll
continue to persevere in their academic success
as they seek their undergraduate degrees,
said Ashley Phillips, EATEL Executive Vice
President, Infrastructure. I hope that when
they graduate, our Louisiana economy will
provide them with great jobs, so that they can
raise their families here and continue to be an
integral part of our thriving community.
Its such an affirmation of our community, of
the work that we do in our school system,
when we see these top-notch students who
have profited so much from their opportunities
and have accomplished so many things, at
such a young age, and who are so well-poised
and launched for the next phase of their lives,
said Dr. Patrice Pujol, Ed.D., Superintendent of
Ascension Parish Public Schools. I have no
doubt that these will be amazing leaders in our
community one day. Id like to say a heartfelt
thank you to EATEL for recognizing these
students and giving them these laptops so
that they can further prosper in our
ever-changing world.
The following students are the 2015
EATEL Technology Award recipients:
Dominique Thomas of
Donaldsonville High School
Dominique is quite active in her school career.
Shes plays in the band and shes a member of
the Senior Beta Club, Navy J.R.O.T.C., River
Road African American Museum Sign Language
Ensemble, and National Society of Black
Engineers Jr. Pre-College Initiative.
Christian Logarbo of
Dutchtown High School
Christian is an Eagle Scout with perfect attendance for all his years of schooling. In addition
to that, he has taken all honors and AP classes
throughout high school. Hes a member of the
National Honor Society, Mu Alpha Theta, Allied
Health Program, and Interact. He is a tutor for
athletes at Dutchtown and he has won the
Gallant Griffin Award and Super Senior Award.
Christian is also active in athletics having been
a 4-year member of the football and track and
field teams. Moreover, he is a proud member
of the 2011 5A State Championship Track
Team. Christian is also an active member of St.
John the Evangelist Catholic Church where he is
an usher. He also volunteers for the church fair,
food bank, and other projects for the youth
group. Christian plans to attend Tulane
University where he will pursue a doctorate
degree in Biomedical Engineering. He hopes to
work in the medical industry one day.
Joseph Baker of
St. Amant High School
Joseph has earned 11 top 10 placements at
Mu Alpha Theta Competitions, 11 top 3
placements at Science Club competitions and
various other outstanding placements. Hes
been a member of the Science Club, where he
served as reporter twice and Vice President
twice. Hes also been a committee member for
Mu Alpha Theta and has been a part of the
French Club and National Academic Quiz
Tournament Team. Joseph is also an active
member of the community as a boy scout and
now a venturing scout. He also serves at his
churchs childrens and high school ministries.
Joseph plans to attend Northwestern State
University where he will major in Physical
Sciences/Pre-Engineering. He hopes to
become a chemical engineer.

Sarah Hess of
Maurepas High School
Sarah was named a Student of the Year nominee, Outstanding Sophomore, Outstanding
Freshman, and where she was recognized for
Outstanding Personal Character. She is a member of the Beta Club in which she has won
membership and National Beta Participation
awards. Shes President this year for the FFA
Club in which she previously served as
Parliamentarian, Reporter, and Secretary. Shes
also the President for the 4-H Club in which she
previously has served as Vice President and
Secretary. She was even a camp counselor for
the Louisiana State 4-H Camp. She is the
Library Club Vice President and was a member
of the Louisiana Teen Librarians Association.
Sarah is a member of the St. Stephens
Catholic Church in Maurepas and in her spare
time, is passionate about the Krewe of Erin, a
philanthropic group in Ponchatoula whose goal
is to promote the Irish Celtic Heritage and
encourage the self-motivated empowerment of
young ladies. In fact, after 13 years on the
royal court, Sarah has been named the 2015
Queen of the Krewe of Erin and has been promoting the organization throughout the state.
Sarah plans to attend Southeastern Louisiana
University where she will major in Multi-Media
Management. She hopes to establish a career
in web and graphic design and
communications.

Landrys Park playing ball and
climbing greasy poles.
Well, a couple of visionaries
named James Casey and Vince
Matthews tried to capture that
Polaroid snapshot of an
America gone by in an album
called The Kingston Springs
Suite over four decades ago.

Consist of leaving out at 6 am and fishing for specks and reds, occasionally drum and sheephead as well, arriving back at
the dock for 3pm. Trips consist of live bait and artificial techniques Live bait, ice, tackle, included. If you have a favorite
rod by all means bring it. Food and drinks available upon request.
Colder months we usually fish Leeville and Golden Meadow marshes.
Warmer months we typically fish Barataria and Timbalier bays, beaches, and the western barrier islands.
Offshore Trips
Consist of leaving out at 6 am and arriving back at the dock between 4-6pm. These trips are the most commonly booked
trips, we generally target bottom species, live bait mangrove fish , and troll the rip when in season. Fish you can expect
to catch on these trips include snapper, grouper, amberjack, wahoo, blackfin tuna, lemon fish, dolphin.

Responsibility
There have been many trends
or shifts throughout our lives
that have changed our way of
doing things.
Fifty or more years ago the
majority of families raised their
own meat animals, vegetable
gardens, canned their own jellies,
and collected their own eggs. The
word organic didnt exist, natural,
either. Growing was basic, it was
natural and didnt need an extra
title to tell us so.
Breakfast consisted of farm fresh
eggs gathered from the coop in
the early morning, bacon from a
pig that lived in the yard, jelly
from the berries gathered from
the field, and butter that was
churned while sitting on the
porch. If you wanted a loaf of
bread, you made that too.
In the late 80s and early 90s
there was a major shift that
changed this way of life. Women
were no longer interested in
performing the demeaning duties
of domestic chores and instead
became enthusiastic about entering
the workplace and earning a
monetary living like their male
counterparts. The prized
possession of the day shifted from
an award winning pie to a
day-planner. Anyone who was anyone carried one and the fuller it
was with appointments the
more successful a person was
thought to be.
With such a busy lifestyle no one
had time left in the day to prepare
meals from scratch or to raise their
own meat or vegetables and
truthfully, no one really wanted
to, so the task of providing food
for our families fell into the
hands of strangers.

1 Tbsp Fresh Garlic (minced)

Cup Red Onion (minced)
Cup Green Onion (thinly sliced)

Method:
Season the chicken breast using salt and pepper. Grill or bake
the chicken for about 15 minutes or until done. Allow to cool
for 10 minutes then cut the chicken into cubes. Toss all the
ingredients into the food processor and pulse until the desired
texture is achieved.
For extra spice add 1 Tbsp of your favorite Creole seasoning or
a tsp of red pepper.
