Two-Tone Coleslaw
1/4 the calories and 1/2 the fat of traditional slaw

2/3 cup light mayonnaise 4 cups shredded green cabbage


3 Tbsp. cider vinegar 4 cups shredded red cabbage
1 Tbsp. snipped fresh dill or 1 2 large apples, cored and thinly
tsp. dried dill weed sliced
1/2 tsp. salt 1 cup chopped sweet onion
1/2 tsp. coarsely ground black
pepper
For dressing, in an extra large bowl stir together
mayonnaise, vinegar, dill, salt and pepper. Stir in
cabbage, apples and onion. Cover; chill at least 2
hours. Makes 12 side dish servings.

Blueberry Crisp
1 cup fresh or frozen blueberries 4 tsp. brown sugar
1 tsp. vanilla extract 1 Tbsp. soft margarine melted
2 Tbsp. plus 2 Tbsp brown 1 Tbsp. water
sugar replacement 1/8 tsp. ground cinnamon
1/2 cup quick –cooking rolled 1/8 tsp. ground nutmeg
oats
Preheat oven 350 degrees. Lightly coat 4 cup casserole with
nonstick spray. Place blueberries in casserole. Sprinkle with vanilla
extract and 2 Tbsp. brown sugar. In bowl, combine
remaining 2 tablespoons brown sugar replacement,
rolled oats, brown sugar, margarine, water, cinnamon
and nutmeg. Stir, blend, sprinkle over blueberries. Bake
for 35 minutes and topping is crisp. Makes 2 servings.

Puff Corn Carmel Corn

8 oz. bag of puff corn 1 cup brown sugar
1 cup pecans 3/4 cup light Karo Syrup
1/2 lb. butter (not margarine) 1 tsp. baking soda
Place puff corn in large pan or dish (butter pan or dish). In two quart
saucepan mix butter, brown sugar and Karo Syrup. Heat mixture
until it boils. Remove from heat. Add baking soda. Stir well.
Mixture should be light and foamy. Pour mixture over puffcorn and
stir until well coated. Put on cookie sheet. Bake at 250 degrees for
45 minutes. Stir every 15 minutes. Place on wax paper to cool.

Watermelon & Strawberry Lemonade


8 cups cubed seeded 1/2 cup fresh lemon
watermelon juice
1 cup fresh strawberries, halved 1/2 cup white sugar
Combine the watermelon, strawberries, lemon juice, sugar
and water in a blender until smooth. Makes 2 quarts.

Memorial Day Best BBQ Chicken


1/2 cup Worcestershire sauce 1 1/2 Tbsp. ketchup
1 tsp. Cajun seasoning 6 skinless, boneless chicken
1 tsp garlic powder breast halves
2 1/2 Tbsp. brown sugar
Blend the Worcestershire sauce, Cajun seasoning, garlic powder,
brown sugar and ketchup. Place chicken in bowl and coat with
sauce mixture. Cover & refrigerate 8 hours. Heat on outdoor grill for
medium heat and lightly oil grate. Grill 6-8 minutes per side or until
no longer pink. Makes 6 servings.
