Staying cool in Roseville just got a whole lot tastier with Annies
Sno Biz.
Owner Annie Renee said that she needed to do something
new when her youngest went off to college. Plus she found her
self with a new tuition bill that needed paying, so she opened
Annies Sno Biz.
Annies shaved ice is not a snow cone, its much better. The
ice is uffy, kind of like snow, that holds the avoring longer,
unlike a standard snow cone that where the avor sinks to the
bottom. Annies shaved ice is soft, uffy and infused with avor
throughout the icy goodness.
Annies offers three sizes to tempt you pallet, small for $4.,
medium for $5. and $6 for large.
Annies SnoBiz caters to private events, starting with a minimum charge of $200. That gives the customer 50 small shave
ice with any of the 45 avors for one-hour.
Popular avors are cherry and blue raspberry. Annie has created several tasty combinations like, Cali Surf is coconut, pineapple and strawberry, or the Shark Attack with sour green apple
and blue raspberry. Splattered Frog is cherry and lime.

Summer is here and its time to open up the backyard for barbecue parties, but rst you need to get the right equipment and
meats to create that experience guests will talk about for days.

Get the right gear

According to Diablo Grills owner, Henry Laredo, the Fire Magic

optimum for putting a seared crust on any steak that will hold in

Baker said his favorite barbecue recipe is beer can chicken. He

TASTY BARBECUE
RECIPES

whiskey sauce, turn over, and move to


indirect heat. Cook until peach is semisoft.
Scoop ice cream into bowl and lay peach
along side. Drizzle with extra whiskey
sauce.

1/4 cup olive oil


1/2 cups soaked sunower seeds
1/4 cup fresh grated Parmesan cheese
1/2 tsp kosher salt
1/2 tsp fresh cracked pepper
Sprouted sunower seeds.
Place sunower seeds in glass jar of water
for minimum of 3 hours, up to 12 hours
then drain.
Place tenderloins on a plate. Pat dry and
apply kosher salt and fresh cracked pepper
on all sides.

Peaches and Whiskey

In a food processor, rst process the garlic,


then add in the basil and parsley, then
the sprouted sunower seeds, fresh grated
parmesan cheese, kosher salt, fresh cracked
pepper and olive oil. Grind slow, and do
not over process.The pesto should be light
green in color.

Whiskey sauce
3/4 cup whiskey of your choice
1/2 cup sugar
1/2 cup vanilla ice cream
In a sauce pan, on medium heat, slowly
render whiskey and sugar down until it
thickens into a glaze.
Cut peaches along the seam, all the way
around and twist halves o the pit. Remove pit from the peach.
Brush all sides with the whiskey sauce,
then place cut side down onto a hot grill
until fruit has grill marks, approximately 3
to 4 minutes.

Barbecued Pork Tenderloin


with Sunflower Seed Pesto
Ingredients:
2 pork Tenderloins

Pesto:
3 garlic cloves
2 cups fresh basil gently packed
1 bunch fresh parsley, gently packed
1/4 cup fresh oregano

Rub the pesto all over the pork, cover with


plastic wrap and refrigerate over night.
Save some pesto for basting during barbecuing process.
Grill the tenderloin on medium heat until
internal temperature reads 145 degrees.
Baste tenderloin with remaining pesto
sauce and turn heat to high for approximately 1 minutes.
Slice to desired thickness and enjoy!

hour and a half. After the smoking has taken place, Baker slow
cranks fun the heat and sears the trip tip for the nish. He said
that the meat absorbs the smoke during the process, giving it a
unique wood avored barbecued tri tip.

choose components like a pizza oven, griddle top, infrared
burners, refrigerated or heated drawers and gas range cooktops.

Get the right cut of meat

Henry said that his market is a convenient solution for consumers to store their processed meats in their individual freezer
locker storage. Its an ideal situation for farmers or hunters, even
restaurants who dont have the storage space to keep their frozen
meats.
Roseville Meat Company decided to break into the sh smoking
market mostly for sherman, because there werent options in
the region to have your sh smoked. Typically people would have
to travel to the coast to have their sh smoked by a commercial
market or do it themselves.
Henry said that they are test marketing two in-house smoking
avors to offer customers, a sweet maple and brown sugar crust
and a savory soy white wine, tabasco, kosher salt garlic and onion.
We have the facilities here to smoke sh, and if a customer
brings in their sh to have it smoked, we can have it done in two
to three days, Henry said.

For vegetarian option, leave out Panchetta.


Ingredients:
1/4 cup Pancetta from Roseville Meats Company
2 Heads of Romain Lettuce
1 Red Bell Pepper
6 Asparagus Sprigs
4 Compari Tomatoes
Fresh Grated thin wedges of Romano Cheese
Olive Oil, Kosher Salt, Cracked fresh pepper
to taste
Dress with Balsamic glaze
Fresh Parsley Garnish
Prep: 10 minutes
Cut tomatoes in half
Cut red bell pepper into 1/2 inch rounds
Trim ends of asparagus
Cut Romain in half, longways.
Place bell peppers and asparagus on grill at
medium heat for 4 minutes. Brush with olive
oil during cooking.
Brush Romain halves with olive oil and place
on grill. Cook each side for about 2 minutes,
until lettuce softens and gets small char marks.
Place tomatoes on grill, bottom side down for
4 minutes.
Unroll and cook pancetta medium heat on
barbecue until almost done. At the last 2
minutes, turn up the heat on burner to give
pancetta a crispy layer.
Plating:
Place lettuce on plate and add bell peppers,
asparagus and tomatoes. Add pancetta and
Romano cheese on top of vegetables. Drizzle
with Balsamic Glaze, and season with kosher
salt and cracked pepper. Garnish with nely
chopped Italian parsley.

BBQ Elk and Swiss Chard Open


Faced Sandwich

Garnished with caramelized onion and sauted

1/2 pound Elk Saddle Chops from Roseville
Meats Company ($18.99 per pound)
1/2 bunch of Rainbow Swiss Chard
1/2 white onion
6 baby Portebella mushrooms
1 loaf of freshly baked rustic seeded rye or
wheat bread available at a grocery bakery
Rinse and wash Swiss Chard then chop nely,
steam chard for 5 minutes and drain.
Heat a frying pan and place 1 nally chopped
clove of garlic into pan with olive oil, and slowly
cook garlic till brown. Carefully place Swiss
Chard into pan, folding over and over to distribute garlic. Cook on medium heat for 1 minute,
and set aside.
Cut 1/2 onion and put into same pan with a
small amount of olive oil. Stir continuously and
cook slowly until onions caramelize. Onions
should not be burned, and are caramel brown
to color. Put in a bowl and set aside.
Slice mushrooms and place in same pan, and
add more olive oil. Cook on medium heat to
soften, then turn up heat at end to add crisp
sear.
Cut bread into 1/2 inch slices and bring to barbecue. Brush each side with olive oil and place
on medium heat on grill. Flip every minute until
you get a crispy layer with grill marks.
Season Elk Saddle Chops with Kosher Salt and
cracked pepper. Add your favorite meat rub to
enhance avor. Place chops on grill, and ip it
every two minutes until done. Elk is a naturally
lean meat, and it would be welcomed serving
it rare or medium rare. Turn bbq up to high
at the end to create a sear that adds avor to
your dish. Let the chops rest for six minutes to
ensure tenderness. Then slice into strips o the
bone approximately 1/2 inches.
Once all the ingredients are cooked, place a
piece of bread down on a plate. You can add
avor by gently rubbing raw rosemary or raw

Grilled Brie Cheese with


Raspberry Compote

Grilled brie
1 small cedar plank soaked in zinfandel wine for
2 hours
1 round of brie cheese
1 sprig of fresh rosemary
Raspberry compote
1 package or raspberries
1 cup red wine
1cup sugar
Soak cedar plank in Zinfandel wine for two
hours.
Put 1 1/2 cups of Zinfandel in a sauce pan with
medium to warm heat. When the wine starts
to heat up add the raspberries, and keep three
raspberries aside for garnish.
Smash and break up raspberries with wooden
spatula while cooking. Then add the sugar and
mix well until combined. Fold and turn, keeping
close watch on compote until thickened to a jam
like consistency it is done.
Place the wine soaked cedar plank on the grill,
and add the brie on top. The Brie round should
not hang over the the side of the plank.
Slowly spread the compote on top of the brie
and garnish with the sprig of rosemary.
Let it cook for 20 minutes at 400 covered or
until the brie is slightly golden brown, remove
rosemary sprig. Garnish with fresh raspberries
and new sprig of rosemary.
After cooking is completed, remove Brie round
onto a plate. When cutting, the cheese will ooze
out like owing lava.
Serve with sourdough bread and Zinfandel
wine.

CHRISTINE GRAU FINDS NEW LIFE AMONG HOT PIZZAS AND FRIENDLY FACES

Christine Grau is constantly moving, from Rosatis dining room
to its kitchen to its bar, making sure her customers, and food,
are happy.
We only serve happy food, Grau says. You taste your food
with your eyes rst.
If the food doesnt look like it meets Graus denition of
happy, she doesnt serve it. Grau never dreamed she would
own a restaurant. Nearly three years ago, she was anything but
happy: After the death of her 21-year-old son, her life spiraled
into sorrow. By January 2015 she realized she needed a purpose and decided to search for businesses that were for sale.
That was how she found an empty pizza parlor on Foothills
Boulevard. Little did she know the vacant door was about to
offer an array of communities connections to lift her spirit.

With an already-established menu, Grau saw Rosatis as a safe


opportunity to try out owning a restaurant. She ofcially reopened the restaurant 9 months ago, and customers immediately noticed a change. Rebecca Price, a longtime customer,
came to the new and improved Rosatis and was impressed.
Shes not afraid to be innovative, Price says of Grau.
A major remodeling has given Rosatis an East Coast feel similar
to its home base in Chicago. It now offers full service dining, in

Rosatis, a Chicago-based restaurant chain, opened in 1964


and soon spread to multiple states, though it still is most prevalent in the Midwest. The restaurant was started by an Italian
family and continues to specialize in authentic Chicago pizza
and sandwiches, as well as pasta.

addition to its takeout counter. Grau also added TVs, as well as


a sleek, glowing bar that serves beer and wine. Sports posters
and pictures, especially of Chicago teams, cover the walls;
there is even a Cubs poster in the front window. Grau handled
all of the art and design work herself.
While the improved dcor has drawn new clients, the food
retains familiar ones. Rosatis is known for its Chicago-style
thin-crust pizza cut in squares. Also popular is its Italian beef
sandwich, melted cheese and beef over a sausage on a soft
white roll or garlic bread. Other offerings from the restaurant
include double-dough and deep-dish pizza, pasta and salads.

Grau stresses that fresh ingredients are key. Hotdogs, sausage


and meatballs all come from Chicago. Cheese is from Wisconsin, and the tomatoes used for the sauce are from Stanislaus County.
Also vital to the new Rosatis is customer satisfaction.
Youre always treated with respect, Price notes.
And if happy customers start with happy workers, then Graus
philosophy that her crew is like her family makes sense.
I love it here, says Rosatis manager Amanda Horsman.
Grau and Horsman rst met at American River College, and
when Grau bought Rosatis, she asked her friend to join her.
Horsman had already worked at several restaurants and was
initially skeptical of how good the food would be.

He helped me get through Mothers Day, Grau says. If


youre having a bad day, come in and tell us youre having a
bad day, so we can make it better.

I never eat anywhere else now, Horsman laughs.


Graus main mission is to make Rosatis part of the community.
During football season, Rosatis opens at 10 a.m. ion Sundays
to show games. Grau presents hockey games during hockey
season and orders MLB Extra Innings during baseball season.
She also sponsors Woodcreek High School football and local
little league. Rosatis is also donating to programs at Cooley
Middle School and initiatives from Graus church, St. Johns
Episcopal.
Faith is a big part of Graus life, and she hopes that viewpoint
extends to the service for her customers.
I want people to feel good sitting in here, Grau explains,
adding that in a world full of chaos and instability, she wants
Rosatis to be a place where people can walk in and easily
relax.

Ill come here and just work, says Price, who feels Grau and
her staff have a family-style way of treating customers. Some
regulars even call Grau Mama Rosati.
While she may have lost one family member, she has gained
many more through the restaurant.
Its almost like it was planned, Grau observes, recalling a
particularly touching moment when a man came in the day
before Mothers Day. Instead of sitting down, he kept telling
Grau that everything was going to be okay. He later came back
and gave her owers.

s we enjoy summer in Placer Countys beautiful parks, hiking trails, waterways, even our
own backyards, its important to keep safety
in mind. Here are some tips to avoid the most
common accidents and illnesses that we tend to
see during summertime.

PROTECT YOURSELF FROM THE SUN

If you plan to be outdoors, cover up! Its best to


avoid direct exposure of the skin to the rays of the
sun altogether when they are strongest, from 10
a.m. to 4 p.m. Use your shadow as a measure: If its
shorter than your height, its time to take precautions from extended exposure.
For those who are going to be in direct sunlight,
wear hats and protective clothing. The hat should
have ventilation and a full brim three inches is
ideal to protect your head, face, ears and neck.
Wear sunglasses that block UV rays, which will help
protect your eyes and surrounding skin.
Always nd trees or other cool, shady spots whenever you are outdoors. This way your skin isnt directly exposed to sun.
Never leave home without sunscreen. It takes
about a golf ball-sized amount of sunscreen to
adequately cover your face, arms and legs. Do this
20 minutes before sun exposure, and reapply after
every 80 minutes of being in direct sun, and after
swimming, toweling dry or perspiring heavily. The
best sunscreens are rated between 30 and 50 SPF,
and include ingredients such as avobenzone, zinc,
or titanium dioxide.
Remember, staying safe in the sun protects not only
against sunburns but helps prevent skin cancer.

STAY HYDRATED

Drink plenty of water throughout the day. Avoid


sodas, sugary drinks, juices, caffeine and excessive
alcohol. Adults should drink at least eight glasses
of water a day, and children ages 4 to 10 should
drink at least six glasses of water to stay hydrated,
especially when its hot. Dehydration can occur at
any age, but its most dangerous for babies, small
children, and the elderly.
BE CAREFUL WITH FIRES

Use caution when dealing with open ames such


as campres or barbecues. Pay close attention when
dealing with propane, charcoal or starter uid to prevent burns and injuries.
AVOID OUTDOOR INJURIES

Wear appropriate attire and safety gear during activities such as bike riding and hiking. If you go for
a boat ride, or jump into a lake or river, remember
to wear a life jacket.
PAY CLOSE ATTENTION TO THE FOOD TABLE

Picnics and barbecues are a great way to socialize


with our friends and family, but dont let the good
conversation distract you from noticing how long
the meal has been sitting on the table. Avoid eating
food left out of a refrigerator for more than one
hour when the temperature is above 90 degrees. If
youre taking your own food to a picnic, keep it cold
(40 degrees or below) in a cooler with ice or frozen
gel packs. Freeze meat, poultry and seafood beforehand, then pack them into a cooler still frozen.
GRAB THAT FIRST AID KIT

Wherever you plan to enjoy your outdoor activities,


remember to take a rst aid kit in your vehicle,
backpack or purse.

pays the bills is hard,
Hernandez has done it
through audacity and
mastering dierent
instruments.

If theres such a thing as typical for a singer-songwriter in todays local music circuit, Ryan Hernandez isnt. The 31-year-old
Roseville musician has incorporated the strum of bright acoustic
guitar notes, the groovy walking rhythms of an upright bass, the
clack of drums, plink of the banjo, sonorous strains of the violin,
and, his latest favorite, the warm slide of the pedal steel guitar
into his regular repertoire.
Musically inclined for most of his life, Hernandez has managed
to craft a career by involving himself with multiple cover acts,
collaboration with other local musicians, writing original music
and performing regular gigs throughout the Roseville and Sacramento area. Hernandez rst fell in love with music as an elementary school student.
It happened in eighth grade when I went to a performing arts
school, Hernandez said. It was a dream come true for someone
my age because it was really not a lot of academics. It was mainly
music, art, dance, stuff like that.
Hernandez acknowledged that making it as a musician is an
inherently difcult career choice, though he found a way to successfully navigate the local venues and recording studios infusing all with his own sound.
A member of the band Hans and the Hot Mess, (appearing at
Sacramento Concerts in the Park this year), as well as performing
in what he described as maybe the only Dave Matthews cover
band in Northern California, Hernandezs favorite thing to do
is play live music; and his ultimate satisfaction comes through

experimenting with a wide range of sound.


It keeps it really interesting and fresh, Hernandez said. It just
kind of gets stale after awhile being just an acoustic guitar player-singing guy. The challenge is really, how do you make money
doing what you love, but also if what you love is playing original music? Its really hard. Its good to still play a lot, but its not
going to pay bills.
Nevertheless, through trial and error Hernandez now nds himself self-employed as a full-time musician, a place hes been since
2008. As he put it, a lot of the hard work involved early failures.
You have to fail a lot to gure out whats going to work, Hernandez stressed. Luckily, Ive kind of done that in my early 20s.
I gured out how much business goes into it, not just being
good at your craft. Its just being professional.
Having a wide range of collaborators is a bonus too, Hernandez
said. Being able to share the stage and play many venues is a
great boon to the musical craft.
My favorite venues to play are wineries and stuff like that, its
always really mellow, he explained. I really like those because
theyre outside patio gigs. Boxing Donkey in Old Roseville is one
of my favorite spots in the area.

County, and a classic barbeque favorite is grilled summer squash.
For a healthy, colorful addition to any
summer get-together, try Courtney McDonalds Grilled Summer Squash Salad
with Herb Pesto Vinaigrette. Tossed with
tomatoes and homemade pesto, this
recipe is a delicious way to showcase
the bounty of summer squash available at PlacerGROWN farmers markets
throughout the season.
The summer squash category includes
a variety of vegetables, including the
zucchini, pattypan and crookneck
squash. Each squash is available during
the summer season; therefore, they
fall under the term summer squash.
In fact, summer squash are not technically vegetables despite common
belief. They are pepos, which are a type
of hard-walled berries, like cucumbers
and watermelons.
Zucchini are among the most popular summer squash types and can
be found in many sweet and savory
dishes. Pattypan squash, though
tougher in texture, are ideal for longer
cooking and higher temperatures
(such as in stews and chili). Crookneck
squash are the most distinguished, as

they have curved-stem ends and sweet


yellow esh.
Whatever the type, every part of the
summer squash are edible, including
the esh, seed and skin. Zucchini also
produce an edible ower that serves as
a great garnish for salads. Altogether,
summer squash are a great source of
ber, vitamin C and B6, without any fat,
cholesterol or sodium.
SELECTION AND STORAGE

Although every type of summer squash


will vary in size, shape, color and texture,
the selection process is the same. Look for
summer squash that are glossy, unblemished, brightly colored and feel heavy
for their size. When selecting a squash,
choose one that is not too big or too
small; extra-large squash can be brous
and extra-small squash can lack avor.

2 lbs summer squash (zucchini,


zephyr, yellow crookneck, etc.)
1 basket cherry tomatoes, washed
and cut in half
1 cup fresh basil leaves, washed,
dried and nely chopped
1 cup fresh mint leaves, washed,
dried and nely chopped
2 bunches chives, thinly sliced
2 cloves garlic, nely minced
cup nely chopped pine nuts or
walnuts
cup nely grated, good-quality
parmesan cheese
cup olive oil
2 tbsp balsamic vinegar
Salt and pepper, to taste

DIRECTIONS

1. Preheat grill to medium-high heat.


2. Wash and cut the summer squash
in halves, lengthwise.
3. Brush the squash with olive oil
and set aside.
4. In a small mixing bowl, combine
the chopped herbs, nuts, garlic and
parmesan.
5. Slowly stir in the olive oil and
mix until combined.
6. Season to taste with salt and
pepper. Season the squash with salt
and pepper.
7. Grill over medium-high heat for
1 to 2 minutes on each side, or until
well caramelized.
8. Remove from heat and
immediately cut into 1-inch lengths.
9. Place the warm squash and
cherry tomatoes in a large mixing
bowl.
10. Toss with the pesto to coat.
11. Drizzle in the balsamic vinegar
and serve immediately.

While they may not appear to be delicate, summer squash should be handled with care as the skin can be easily
punctured. Store unwashed summer
squash in the refrigerator so theyll remain fresh for up to seven days.

SOUTH FORK AMERICAN RIVER

Thousands flock to the South Fork of the American River daily in the summer time
to catch the thrill of running the river. The South Fork is one of the most popular rivers in California for many reasons. The river has consistent water releases throughout
the summer even in times of drought. The South Fork has an amazing blend of fun
rapids with a limited risk of injury. The American Rivers South Fork is Californias
standard beginner to intermediate whitewater run that many rafters run repeatedly
and never outgrow. The whitewater is mostly class II+ with ten class IIIs, two class III+
rapids, and one class IV. There are lots of fun but not life-threatening rapids on this
river, which can be run almost any day of the April thru September Season.
Season: April September
Stretch: Chili Bar to Lotus Park
Difficulty: Class III+ with one IV
Distance: 8 miles, 2-4 hours
Flows: 800 1800 CFS, measured as release from Chili Bar dam (CBR)
Put-in: Chili Bar Bridge
Take-out: Henningsen-Lotus Park
Shuttle: 20 minutes AWE to Chili Bar. 30 minutes Salmon Falls to AWE

MILE 0 - Put in under the Chili Bar bridge. Chili Bar


Hole provides fun raft surfing at levels around 1500
CFS. Large pools below in case you fall out of the raft
having too much fun. Downstream are several easy
rapids, two involving large rocks. A trail follows an old
mining road on the right bank.
A - MILE .6 - Meat Grinder Rapid (class III+). A small
diversion canal removes water on the left, and a large
rock is visible there, just left of center. This is a long
rapid (over 1/4 mile that can does require paddling to
get a raft through successfully. At some flows, the leadin rapid can be run either left or far right. Either way,
you need to maneuver back to the center, entering the
main rapid about 10 meters from the large rock, slanting left-to-right thru a slot between submerged rocks.
This is an easy move, but failing to make it can have
severe consequences, because the biggest waves and
holes are still ahead. After this, keep the raft into the
waves as the current funnels you towards Rhino rock
on the right. After Rhino rock, wave size decreases, and
you can eddy out on the left, or finish the rapid along
the right.
B - MILE 1.3 - Racehorse Bend Rapid (class III-).
The river curves left among boulders, then runs into an
up tilted slate cliff on the right, with submerged rocks
along the cliff. Paddle hard and in time as the safest
exit is towards center. Big eddy below on the left to
swim and play in.
C - MILE 1.5 - Maya Rapid (class II+). Choose either
a small hole on the right, or a ledge drop on the left.
Big but easily avoidable holes at higher water (class III
above 3500 CFS). Maya is a popular kayak surfing spot,
often with long lines and a fun wet hit in a raft.
D - MILE 1.7 - Rock Garden (class II). A maze of
small boulders that need good paddling and boat control. At lowest flows (under 900 CFS) it is best run on
the far left, but most of the time you can go anywhere
for a fun ride.
E - MILE 2.4 - African Queen (class II+). Several willow-covered islands create a multiplicity of routes. The
most common is right almost all the way, cutting left to

avoid a shallow-trap at the end of that channel. This route passes some
nice big waves near the second island. The most fun route is left
over a one-foot falls (not for rafts under 1700 CFS), then center
thru a very narrow slot between islands. The far left channel is
boring.
F- MILE 2.9 - First Threat (class III). The river enters a boulder garden, then turns right into a deep hole along a rock outcropping on the left. The hole makes for a good hit, and is
flippiest on the left, but can be mostly avoided by skirting right.
Dont fall out or youll get laughed at!
G - MILE 3.2 - Second Threat (class II+). Almost immediately,
the river drops again thru a slot along a rock outcropping on the right.
Good swimmers rapid with a large eddy below, making it easy to reach
the rock outcropping for repeated swims.
H - MILE 3.3 - Third Threat (class II-III depending). Make of this one
what you will. The center is easy and unobstructed, but there are large
holes on the far left halfway down, and on the far right near the bottom.
Running both holes is an advanced maneuver. Lots of fun paddling to
get a good line.
I - MILE 3.7 - The Narrows (class II+). The river slaloms right to left,
and enters a channel on the far left with many barely-submerged rocks.
Rafts often get stuck here when crews do not paddle well.
J - MILE 4.0 - Minigorge or Slusebox (class II+). The river enters a
miniature gorge in bedrock, with pleasant waves and rapids. Fun and
splashes.
K - MILE 4.3 - Swimmers Rapid (class II). A boulder bar rapid with
big waves, this is a good place to practice throw bag techniques from
the right bank. The Coloma quiet zone begins just below (no yelling, no
water fights).

MILE 5.0 - AWE & ARR Campground and cabins on


left bank, good for 2-day trips.

L - MILE 5.1 - Troublemaker Rapid (class IV-). The
river enters a boulder garden, followed by a falls, with an
S channel on the far left. The rapids name describes your route
well. At lower flows, the true path is narrow indeed. If you shade
M
right, a large diagonal wave tends to flip rafts. If you go
too far left, you end up in an eddy that is hard to exit.
N
Precise placement of the raft into the gut of the hole surfs
you next to a big rock on the left below, then through a
steep channel along Gunsight rock, where rafts often end up
wrapped. In any case, the swim isnt too bad, but keep your feet up.
MILE 5.6 - Private campground on right, then a steel bridge.
River access should be legal, but is prohibited and enforced by the
County. Put in at this campground or American Whitewater for the
longest possible class II run.
MILE 5.8 - Coloma Lake, a long stretch with slow-moving current. Take-out is prohibited; put-in access for non-commercial
groups only, when doing the Coloma to Lotus run (class II).
M - MILE 7.2 - Old Scary (class II-). This was formerly a class III
rapid on the right shortly above the Highway 49 bridge, until high
water detoured the river leftward during the winter of 1982.
MILE 7.4 - Concrete bridge for Highway 49. Float under the
bridge and relax in the sun. This is a popular put in site for most
rafting companies lower gorge trips.
N - MILE 8.0 - Henningsen-Lotus Park. This is the best stopping
and starting point for breaking up this run into two sections.

WHAT DO I NEED?
SUGGESTED CLOTHING
In hot weather: Swimsuit and/or shorts (for women, its
recommended to wear shorts over the swimsuit, as the rubber of the rafts can chafe or be especially slippery on bare
skin making it more difficult to stay in the boat!). A longsleeved shirt can help prevent sunburn, and on super-hot
days, an all-cotton short will stay wet longer and keep you
cooler. Some companies require you to wear closed toe
shoes, such as river-specific shoes or old tennis or running
shoes. All companies require that your footwear has a heel
strap no flip flops, clogs or mules allowed.
In cooler weather: No cotton! An insulating shirt (polypropylene) or fleece jacket is essential. A raincoat or splash
jacket provides more insulation and warmth. Wetsuits are
available for rental by most companies, or at one of two local
river stores. Wool or polypro socks, booties, or sandals, river
shoes or running shoes.
OTHER NECESSITIES
Always bring: Sunscreen, hat, sunglasses (with a strap),
water bottles. If you are on prescription medication, have a
bee sting or food allergy and carry an epi-pen. If you are
asthmatic and require an inhaler, please notify your guide so
proper stowing of these medications can take place prior to
leaving the shore. Waterproof cameras are always welcome,
and most companies wont say no to a water gun or two as
well.
What NOT to bring: Towels youll get wet again and
again, but in the mid summer sun, youll dry off too quickly for a towel to make a difference. Wallets even the tip
money can be left back at camp. The rule of thumb is If
it cant wind up on the river floor, dont bring it. Car keys
countless sets have made the river floor their final resting place. AAA loves Coloma/Lotus in the summertime for
just this reason. Boom boxes or Walkman/iPods. Alcohol and
drugs many companies provide beer or wine back at camp
after the trip, but while whitewater rafting, youll need to
be prepared for falls, flips, and other unexpected excitement.
Alcohol tends to make people dehydrated, lethargic and slow.

The hot season is ramping up and most Roseville


residents like to get out and enjoy waterparks,
pools, lakes, hikes and even exercise outdoors. I
encourage all of these lifestyle enhancing activities and personally enjoy all the outdoor options
the summer sun provides. However, it is important
to keep safety in mind when it comes to hot
weather and any type of exertion or long periods
of exposure.
1. ADEQUATELY HYDRATE.

Hydration is always the rst priority when exercising in warmer environments or when exposed
to heat for extended periods of time. Higher rates
of perspiration mean your body is eliminating
valuable uids and they must be replaced to ensure comfort and safety. The human body consists of about 55 to 60% water and maintaining
hydration is vital to organ and electrical function.
When active, we tend to lose internal body water
to perspire at a surprisingly high rate. Sweating is
the natural cooling system of the human body and
evaporation can make it hard to judge your uid
loss so pay attention to your body and replenish
as needed. When it comes to uid replenishment,
avoid sugary sodas or calorie packed sports drinks

as they can accelerate dehydration and overload


your calorie intake. If your reasoning is electrolyte
replacement then consider electrolyte consist of sodium, potassium, calcium and bicarbonate and several other micronutrients which have the capacity
to conduct electricity. The brain, heart, muscles and
nervous system are all bioelectrical systems and
our cells use electrolytes to maintain voltage across
their membranes and carry electrical impulses to
other cells. Electrolytes are super important but you
can replace them through vegetables, fruits or mix
some pink sea salt into lemon juice for a low calorie
option.
2. KNOW THE SIGNS OF DEHYDRATION.

As pointed out above, over two thirds of the human


body is composed of water. Thirst kicks in when
there is a one or two percent uid loss and dehydration is the result of losing too much body water
without replenishment. These uids play a vital role
in your continued existence because water assists
in tissue lubrication, temperature regulation, digestion, kidney support and bio-chemical processes.
Other factors besides heat can affect your hydration
levels such as diarrhea, vomiting, excessive urination, sweating and even diabetes. Typically children,

elderly folks and athletes are at a higher risk of dehydration but


all mammalian life is susceptible so even healthy adults should
take precautions. Some of the signs of mild dehydration include a sticky mouth, fatigue, itchy skin, headaches, dizziness,
cramps and constipation. Severe dehydration is accompanied
by unpleasantries such as extreme thirst, irritability, sickly eyes,
pliable skin, low blood pressure, accelerated heartbeat, fever
and even delirium. So be smart and drink plenty of water and
know when to go inside or cool off.
3. DRESS THE PART.

While it may seem kind of obvious, its best to dress in materials and garments suited for your activity. I suggest wicking
garments from head to toe to be sure fabrics do not absorb
perspiration and cause chang and minimize unpleasant odor
or embarrassing patches of decolored clothing around your
sensitive bits and pieces. Light weight clothing with a loose t
is optimal for ventilation and helps protect as much skin form
the sun appropriate to your activity. Head and eye protection
are important as well but remember, heat escapes from the top
of our heads so be sure headwear is well ventilated to allow the
excess heat to escape and keep your noggin cool. While broad
billed hats with sun skirts may cause some to question your
sense of fashion, they are important to those individuals who
are have a predisposition to sun burn, skin cancers and heat
sensitivity. Also, lighter colors tend to reect while dark colors
tend to absorb and retain heat.
4. TIME YOUR ACTIVITIES AND EXERCISE.

As I mentioned in a previous article, sun, humidity and pollution levels are most intense during the midday, so to minimize the effects of the heat, work out either rst thing in the
morning, or in the late evening. If your activities are centered
in the heat of the day, allow your body to acclimate to the heat
or outside conditions before you go all out on your physical
activity. Signs of increased tolerance include breaking into a
sweat more rapidly, and the perspiration being more diluted

or watery. Usually, its time to get inside and cool off when you
feel weakness, light-headedness, dizziness, paling of the skin,
headache, muscle cramps or nausea. Of course, water sports or
aquatic activities are ideal for those real hot Roseville days. In
the end, be smart about the way you are feeling and consider
the dynamics of each activity.
5. MANAGE ALCOHOL AND HIGH TEMPERATURES.

Warmer weather always brings the barbecues, pool parties


and trips to the beach to the weekend agenda. Many people
choose to deal with the heat by reaching for a cold drink containing alcohol, but extreme heat and alcohol can be a recipe
for injuries, illness and even death. Alcohol is often viewed
as a fun social beverage and may seem harmless enough in
moderation but a sweltering day can increase the risks inherent with drinking. Alcohol will reduce the bodys tolerance
for heat and acts as a diuretic which often affects the bodys
ability to regulate temperature. Alcohol also raises the bodys
blood pressure thus increasing the risk of heat-related illness
like hyperthermia, overheating and heat stroke. These risks are
elevated for individuals with high blood pressure. Of course,
alcohol notoriously affects the central nervous system and can
seriously impair judgment, reduce balance and coordination
along with increasing the risk of injury. The Centers for Disease
Control and Prevention state judgment impaired by alcohol is
a leading factor in deaths associated with water recreation. Responsible alcohol consumption is always a necessity but even
more so in extreme temperatures.
Cleary, dehydration is a serious issue and can escalate quickly.
No matter what activities or new adventures you experience
this summer, always be prepared. A little planning for camping,
hikes, runs, sports or even a day at the lake will go a long way
to maximize the fun of the warmer weather and reduce risk to
you and your family.

Zucchini Eggs Benedict


Eggs Benedict is always a favorite of mine when I go out to breakfast, but as someone who follows a strict gluten free diet, enjoying the
perfectly pouched eggs are not usually an option. Taking away the English muffin wouldnt be as delicious either because there would be
nothing to soak up the luscious hollandaise sauce. Long story short I usually only get to enjoy this dish if I make it myself. Instead of an
English muffin on the bottom of the stacked breakfast tower, I made zucchini fritters. You can also make a similar fritter with a sweet potato
for a stronger carbohydrate. Add some homemade hollandaise with a few strips of bacon and a poached egg and you have a brunch worth
bragging about. It is always a good idea to add a mimosa to wash it down.

Zucchini Fritters

INGREDIENTS:
1 pound (450 g) zucchini (or Summer
squash or both)
1 teaspoon (5 g) salt
2 large eggs
1 ounce onion (40 grams) or two
medium scallions, minced
teaspoon (2.5 ml) baking powder
cup (45 grams) Almond Flour
cup GF Baking Mix or more almond
flour or coconut flour)
cup (30 grams) grated Parmesan
cheese
DIRECTIONS:
1. Grate the zucchini with a cheese
grater.
2. Put the zucchini on a paper towel and sprinkle with the teaspoon of
salt to remove excess water.
3. Mix the zucchini gently to distribute the salt and let it sit for about 5
minutes.
4. Squeeze the zucchini out in a paper towel with your hands

5. Once the zucchini is dry, place into


a medium sized mixing bowl.
6. Add the eggs and scallion to the
zucchini and mix together.
7. In a small bowl, add the rest of the
dry ingredients and stir together.
8. Heat a medium to large pan over
medium heat. (Be sure to watch the
fritters to they dont burn.)
Note: Be sure to drain the zucchini
fritters on a paper towel before serving.

Easy Poached Eggs

1. Fill half a mug or less with water.


2. Add salt, pepper, and any additional seasonings including a dash of vinegar if desired.
3. Add a whole egg into the water.
4. Gently pierce the skin of the yoke
but do not break it.
5. Cover and microwave for 1 minute.
6. Check to make sure the white of
the egg is cooked thoroughly.
7. Drain on a paper towel and enjoy.

Hollandaise Sauce

INGREDIENTS:
4 egg yolks
1 tablespoon freshly squeezed lemon
juice
1/2 cup unsalted butter, melted (1
stick)
Pinch cayenne and pepper
DIRECTIONS:
1. Place enough water in a double
boiler so that it can simmer without
touching the bottom of the pot.
2. In top pot place the 4 egg yolks and
lemon juice
3. Whisk until thickened
4. Place over the simmering water
5. Make sure it is not too hot. This is
crucial unless you want scrambled
eggs
6. Whisk constantly
7. Slowly add the melted butter
8. Once thick remove from heat and
serve
Assemble with bacon or ham, tomato, greens, or whatever you wish and
enjoy!
