Saravana Bhavan Sambar powder

Corriander Seeds/ Dhaniya - 1/2 Kg
Channa Dhal/ Kadalai paruppu/ senaga pappu - 1/4 kg
Thoor Dhal/ Thuvaram paruppu/ Kandhi pappu - 1/4 kg
Fenugreek seeds/ Vendhiyam/ Menthalu - 50 gm
Asafoetida/ Perungayam/ Hinguva - 50 gm (preferably asafoetida bars and not powder)
Dried Red Chilli/ Sigappu Milaga/ Endi mirapakayalu - 200 gm
Turmeric Powder/ Manjal Podi/ Pasuppu - 50 gm

Tamil Style Sambar Masala Powder Recipe


1 3/4 cups Coriander Seeds

30 Dried Red Chillies (adjust according to your spice level)

1 tbsp Chana Dal

1 tbsp Urad Dal

1 tbsp Toor Dal

2 tsp Black Peppercorns

1 tbsp Cumin Seeds

1 tbsp Fenugreek Seeds

2 tsp Turmeric Powder

2 tsp Mustard Seeds

1/2 tsp Hing

3 - 4 Sprigs Curry Leaves

In a heavy bottomed pan, dry roast the coriander seeds on a low flame until fragrant
or light brown color. Add the hing to the coriander seeds and continue roasting for a few
seconds or until fragrant.
Transfer it to a plate. Add the turmeric powder to the roasted coriander seeds and let
it cool.

Dry roast the curry leaves until crisp. Keep them aside.


Then roast the red chillies for a few seconds and keep them aside.

Dry roast all the ingredients one by one until they are light golden brown color and

Let them cool completely.


Grind the roasted ingredients into a fine powder.


Let the ground powder cool completely and store in an air tight container.


You can refrigerate it for longer use.

Iyengar's Sambar Powder - Other method for Larger usage or

longer storage.
Tur Dal - 1/2 Kg.
Bengal Gram - 250 gms
Red Chillies - 1/2 Kg
Dhaniya - 1/2 Kg.
Turmeric Roots - 10 pcs
You can get the above mixed and ground at any flour mill. Do not powder it too nice but a little
more crushed would suffice. Leave this for a while in the open and then put it in bottle/tin and keep
the lid tightly closed. This Sambar powder can be used for a time over 45 days to two months for a
family of 4 members, if used daily. For larger gatherings and get together preparations, this would
be handy to use. While preparing the sambar, please add salt to tase and Asafeodita (Hing known
in Tamil as perungayam).. Add cut egetables in little quantities while boiling the Sambar
proposition. This simply superb Sambar is very tasty with fine odour for your taste.

Brahmin Sambar podi

Method 1

Red Chillies -1/4 kg

Coriander Seeds - 4 cups or 350 grams
Toor Dal - 1 cup or 250 grams
Whole Black Pepper - 1/2 cup or 85 grams
Cumin Seeds - 1/2 cup 75 grams
Fenugreek - 2 tsp
Turmeric/manjal - 10-12 pieces
Method 2

Coriander seeds (malli)- 1 Kg

Red Chillies-300 grams
Whole Black Pepper -250 grams
Tur Dal- 1/4 kg/ 250 grams
Cumin seeds or Jeera -100 grams
Turmeric/Manjal-100 grams (one used for sambar powder)
Fenugreek -50 grams
Bengal gram/Channa Dal -50 grams
Urad dal -50 grams

Udupi Sambar Powder Recipe

Ingredients Needed:
Red Chillies 100gms (15 - 20 nos)
Coriander seeds 75 gms (1 & 1/2 tsp)
Urad Dal/Split black gram 25 gms (1 tsp)
Cumin seeds 25 gms (1 tsp)
Fenugreek seeds 25 gms (1/2 tsp)
Chana dal/Bengal gram 10 gms (1/2 tsp)
Oil - 50 gms (2 tbsp)
Curry leaves 3 to 4 strands

Chettinad Sambar Milagai Thool

Cup measurement, grinded in the mixi

Red chilli : 5 cups
Coriander seeds : 3 cups

Pepper corns (milagu) : 1 cup

Thoor dal : 1 cup
Fennel seeds : 50 gm
Cumin seeds : 1/2 cup
Fenugreek seeds : 1/2 cup
Turmeric : 3 tsp
To make Sambar powder

Fry all the ingredients together in big pan to make it dry and get it smooth powder
Grind it in Mill, or grind it in the mixi
This cup measurement powder will come for 3 months for 2 persons

Red chilli : 2 kg
Coriander seeds : 1 kg
Pepper corns (milagu) : 50 gm
Thoor dal : 1/4 kg
Fennel seeds : 100 gm
Cumin seeds : 100 gm
Fenugreek seeds : 50 gm
Turmeric : 3 tsp

Idly Podi - karaikudi

Red chili : 1 cup
Urud dal : 1/2 cup
Chana dal : 1/4 cup
Thoor dal : 4 tsp
Cumin Seeds : 3 tsp
Salt : 2 tsp
Asafetida : 1 small piece(powder : 4 pinch) Perungayam
Garlic Pods : 3
Curry leaves : 1 hand full
Block sesame : 1/2 tsp (optional)
Coriander leaves : 1 hand full
Sesame oil : 2 tsp
To Make Idly Podi

Heat the sesame oil in Big flat pan

Keep the flame in medium
Add the urud dal, chana dal, Thoor dal roast it
Add the coriander leaves, curry leaves, Perungayam roast it
Finally add Red chili
Add the ingredients one by one and roast it in the oil
Leave it for 5 minutes to cool down
Grind it in the mixi
Grind it coarse (Little roughly)
Store it in air tight container
