MEH-LAWN: Melon de Bourgogne, the triumphant grape of Muscadet in the Loires western
reaches, has often been called the quintessential oyster wine. Normally minerally, racy, even briny,
Melon can be difficult to make naturally as it often requires a heavy hand of sulfur to stop
malolactic fermentation (which softens a wines acidity). But not these guys. Theyre working with
low sulfur additions or allowing their wines to go through malolactic fermentation, pushing
Muscadet into a new territory of richness, texture, and fringe popularity.

GERMANYS BEST MUSTACHE: Look no further than the quiet legend who is Hans-Josef Becker
(aka HaJo). The family estate, founded in 1893, is organic, and thats no small feat in Germany.
HaJo discovered the magic of dry rieslings while apprenticing in the 70s and quickly adopted
dryness against the popular movement of varying levels of sweetness in German wines. How do
the wines age? Youll be well-rewarded with any of the older bottles listed above.

BOTTLES
ORANGE WINE? The bottles below might be the closest representation of how wine was made
over 5,000 years ago in the Republic of Georgiawhat some may consider the first wine ever
produced. White grapes are left to ferment on their skins in barrels, steel vessels, or clay
amphorae, lending all shades of color from golden yellow to burnt amber, as well as tannin,
texture, and loads of complexity. Aromatics and flavors run the spectrum of toasted nuts, beeswax,
mottled fruits, and farmhouse cider. They are a little wink at history and tremendous food wines.

CABERNET FRANC-O-PHILE: The above vertical of Bernard Baudrys standout Chinon La Croix
Boisse tells the story of four years in one tiny plot of vines in a small village just north of the
Vienne River in the heart of Cab Franc country. Bernards son, Mathieu, has been working at the
domaine since 2000, and together they make some of the greatest wines in France. Vintages
2008-2011 were all very good in Chinon, though 2009 may be our favorite. While one bottle
may be enough, we suggest choosing two and drinking them side by side.
