Brakes Select
Brakes Select chips are made from the Agria variety of potato.
With its deep yellow flesh, this potato produces perfect golden fries.
Our Select chips are perfect as an addition to gastro style burgers
and look great with a combo platter or as a side.

Making your own fries?

If making your own fries then we recommend C 450066 Pauleys Maris Piper Potatoes
as the perfect potato for great homemade fries.

Brakes Evercrisp
Brakes Evercrisp fries have an invisible coating which allows them to
stay crisper for longer. Great where you need to fry off larger volumes
and hold for a period prior to serving.
Brakes essentials
Brakes essentials chips are made from the same great quality
potatoes as Brakes regular fries, but with more variation in size.

Dont forget oil hygiene.

Ensuring you have clean oil is essential to the taste and quality of
chips. Change your oil regularly and where possible fry fish and
strong flavoured items in separate oil to your fries. If your oil is dark
in colour, is emitting a strong odour or your fries are taking longer to
colour and/or coming out covered with dark flecks then it is time to
change your oil.
Cook your fries in clean oil at 180C for perfect fries every time.

Did you know?

At Brakes we have 15 varieties of Dual Store fries. This means that Brakes chips
can be stored in either the freezer, or for up to 5 days in the fridge, which can help
reduce waste and free up space.
Within our range, we also have chilled chips, which can be kept un-opened in
the fridge for up to 21 days. Perfect if your demand for chips is high. Remember,
cooking from chilled also reduces the cook time for your chips.

that between 100g and 150g is ideal.
All our frozen chips come in 2.5kg bags
meaning that if you allow 150g a portion you
will get a minimum of 16 portions from every
