Ingredients

2 beetroots, boiled with skin on, peeled and cut into chunks
2 Tbsp sugar syrup
125 ml milk, chilled
1 tsp cinnamon powder

2 scoops vanilla icecream

Method
In a blender puree the beetroot.
Add sugar syrup, milk, crushed ice and cinnamon powder. Blend.
Add vanilla ice cream and mix.
Serve chilled.

Inji kashayam, a medicinal drink made with fresh ginger,pepper,coriander seeds and
jaggery.This is mother in law's famous recipe to make us all feel better when we are down
with cold,indigestion or even nausea.Simple and easy to make and this is my entry for JFIGinger by Rosie.
Ingredients
Fresh ginger - 1 inch piece
Coriander seeds - 1tbsp
Whole Peppercorns - 1tbsp
Jaggery - 3tbsp(use it according to your taste)
Water - 2 cups
Method
Crush ginger in a mortar.Add water in a sauce pan and heat it.While its heating add
ginger,coriander seeds, pepper and jaggery.Bring this to a boil and let it boil for about 5-6
minutes.Sieve it through a tea filter.Serve hot to feel better.

Tips : While buying ginger, look for the longer ginger root 'cause, the longer the ginger root,
the fresher it is.

MASALA MILK RECIPE

Masala milk recipe has various versions. I never made on my own, but always wanted to
try it out at home. I never used to like the masala pal they give in marriages. But now
some how my taste changed and wanted to try it out. It is believed to give a good sleep,
the recipe source is here. But I liked to add panag karkandu palm sugar crystals in place
of sugar and also added a pinch of pepper powder. Also skipped nuts like
pistachios,almonds or cashews for garnishing. The milk is very flavourful and delicious!

INGREDIENTS

Milk

2 cups

Almonds

6 to 8

Saffron

A pinch

Sugar or palm sugar crystals

2 tblsp

Elachi

Cloves

Cinnamon

2 small pieces

Pepper powder(optional)

2 pinches

Method
1.

Soak safforn in luke warm milk and almonds in hot water for 15 minutes.

Peel the skin of almonds and grind it to smoothly with little water.

Boil milk with cloves,elachi, cinnamon, then add the ground almond.

Add the soaked saffron milk and simmer for 5-6 minutes. Lastly add palm sugar
crystals and pepper and give it a boil.

3. If you want you can discard the whole masalas before you add almonds by straining
the milk. Enjoy the milk warm !

Notes
Choose good quality saffron and make sure you add not more than a
pinch,adding more will spoil the taste.
You can add chopped nuts if you like it.
Some times palm sugar crystals has impurities. You can strain it by
dissolving it in hot water.
This is my own version, so there may be some differences from
authentic recipe!

Almonds / Badam
Saffron

Cardamom

Soak Kesar / Saffron in 2 tbsp of hot milk.


Soak Almond / Badam nuts in warm water for 30 mins.
Peel off the skin.
Add peeled almonds , saffron soaked in milk, cardamom and sugar in a blender.
Grind it to fine paste.
Transfer to a bowl, add remaining milk and stir well.
Pour in a glass and garnish with almond and saffron strands.
Serve hot or cold.

Chocolate Banana Smoothie:


Chocolate Banana Smoothie, as name suggest is a delicious and smooth drink, one can slurp up!
Bananas are one of my fav foods as they are loaded with health benefits & rich in vitamin B. This healthy
and refreshing smoothie, is easy to make and perfect for any time of day. This can be prepared in just
minutes and this creamy drink tastes awesome with choco combo!

Here is the delicious blended fruit drink recipe!

Ingredients:

Banana
Favorite chocolate
Yogurd
Milk
Ice cubes

- 1 chopped
- 3 bars
- cup
- 1 cup
- 1 cup

Blend until bananas are completely mixed and chocolate is swirled.
Pour in a glass and serve chilled.

Tomato Juice

Tomato Juice:
Here is the tasty healthy recipe for home made tomato juice.
Theres nothing like a glass of ice -cold, freshly made tomato juice, far better than, wed ever buy in a
bottle or can. It renders a mouthwatery taste and is able to reduce the fat below the skin.
As tomatoes contain lycopene, beta- carotene, Vit A , C and other nutrients, it plays a major role
in lowering blood pressure and to boost immune function.

Try and enjoy this delicious tomato juice now:)

Ingredients:

Tomatoes
-3
Honey
- 3 tsp
Pepper pwd
- a pinch
Mint leaves to garnish

Method:

Boil 2 cups of water.


Drop the tomatoes in hot water.
Close for 5 mins
Now drop them in chill water for a minute.
The skin peels off easily.
Smash tomato in blender and strain with a not too fine strainer.
Add 1 cup of chill water and honey.
Stir well and serve chilled.
Sprinkle pepper pwd and garnish with fresh mint leaves.

Almond Banana Kheer / Payasam

Banana Almond Payasam:


Almond Banana Payasam is one of the rich & healthy drink/dessert, which is very easy to make. It has
high nutritional value, as almonds reduce our cholesterol and boost immunity.

In this recipe the pureed almonds & bananas are cooked along with sugar and milk, where cardamom,
saffron & finely chopped pistachios adds taste and color to this delicious drink.If you like almonds you
should try this combination, it was tasty & we enjoyed it..!

Ingredients:

Almonds/ Badam
- 15 to 20
Ripe Banana
- 1 or 2
Full cream Milk
- 500 ml
Sugar
- 5 tbsp
Cardamom pwd
- tsp
Saffron strands
- a few
Almond, Cashew, Pistachios
- for garnishing

Method:

Wash and soak Almonds in warm water for 30 mins.


Peel off the skin and keep ready.

Heat one cup of water in a thick bottomed vessel.


Slice banana to thin slices and add to water.
Allow to boil, till banana is cooked well.
Meanwhile, heat the full-cream milk in simmer, until it reduces to of amount.
Add the cooked banana, sugar, cardamom pwd and stir well.
Make a paste of almonds in a blender with little milk.
Add this paste to the boiling milk with banana.
Stir it and allow to boil for a minute.
Remove from heat.
Keep it to cool in refrigerator for 1 hour.
Decorate it with saffron and finely chopped pistachios, cashew, almonds.
Serve the cold dessert in serving bowl.

Carrot Payasam ( Kheer ) / Thai Kiruthigai Festival

Carrot Payasam / Kheer:

Carrot Payasam / Kheer is a rich & creamy carrot milk pudding ...!! This is one of my favorite recipe ,
which is easy & quick to prepare. It provides health, nutrition while tasting great. The recipe requires use
of fresh carrots rich in B carotene, vitamin A, dietary fibres and anti oxidants.Today , we prepared this
nutritious dessert as an offering to God for Thai Krithigai Pooja .

All Krithigais are days of prayers to Lord Muruga, but the Krithigai of this " Thai " month is one of
the most important days. Special poojas, abishekam are performed to the Lord Muruga in temples on this
day...!!Try this delicious carrot kheer or payasam & enjoy the healthy taste...:)

Ingredients:
Carrots

- 2 or 3
Milk
- 2 cups
Cashew
- 5 to 6
Raisins
-6
Ghee
- 1 tbsp
Cardamom pwd
- a generous pinch
Sugar
- 5 tbsp
Saffron
- few strands
Almond, pistachios for garnishing

Method:
Wash & peel the skin of carrots.

Grate them to pieces.


Pressure cook with cup milk until soft.
Let cool.
Roast cashews & raisins to golden in the ghee.

Blend the carrots till smooth.


Transfer this in a thick bottomed pan, add the rest of the milk.
Mix well and cook in low medium heat.
Add the cardamom pwd, sugar and let cook further for 4 to 5 mins.
Switch off the heat, add the roasted nuts.
Powder the pistachios, almond, roughly and sprinkle on top just before serving.
Serve warm or chilled with few saffron strands garnishing.

Lipsmacking healthy carrot payasam ready to taste..:)

Beverages
ALMOND HONEY MILK RECIPE
1/4th cup blanched Almond (Badam)
2 cup Milk (Doodh)
1/4 tsp Cardamom seeds

3 tblsp Honey (Shahad)


How to make almond honey milk:
Place the nuts in a blender and process until finely chopped.
Add 2/3 cup mil and process until smooth paste.
Pour the milk into a heavy-bottomed pan and whisk the remaining
milk.
Place the milk over moderately high heat and, stirring constantly,
bring it to full boil.
Remove the pan from the heat, add cardamom seeds.Place the
pan over high heat and bring to boil.
Remove the pan from the heat and add honey.
Again place the pan over heat and bring the milk to just boiling
point, pour it the strainer resting over a pan.
Pour the milk back and forth from one pan to another for at least
a minute or until frothy.
Pour into warmed mugs and serve at once.

BANANA SHAKE RECIPE


2 cup Milk (Doodh)
1 firm ripe Banana (Kela)
2 tblsp Sugar (Cheeni)
1/4 tsp ground Nutmeg (Jaiphal)

How to make banana shake:


Place the milk in a heavy-bottomed pan over a high heat.

Bring it to boil, stirring constantly, then reduce the heat and


simmer for 2 minutes.
While the milk is simmering, place a banana, sugar and nutmeg in
a blender and process until pureed.
Pour 1 cup milk into the blender and process for another minute.
Add the remaining milk and process for 1/2 minute.
Pour the milk in warmed mugs or cups and serve immediately.

CHOCOLATE SHAKE RECIPE


4 cup Cold Milk (Thanda Doodh)
2 cup Chocolate Ice-Cream
5 tsp sweetened Cocoa Powder
Crushed Ice

How to make chocolate shake:


Blend milk and cocoa powder in a blender for few seconds.
Add ice-cream and crushed ice and blend again for few more
seconds.
Serve chilled.
Serve over a crushed ice.

APPLE MILKSHAKE RECIPE


2 apple (seb)

2 glass milk (doodh)


2 tbsp sugar
4 green cardamom (hari elaichi)
ice as required

How to make apple milkshake recipe :


Peel apple and cut in small pieces.
Now blend milk, sugar and apple in a mixer.
Grind elaichi to a powder and mix in the shake.
Now pour shake in the glasses.
Put some crushed ice and serve it chilled.

BADAM KA SHARBAT RECIPE


1/2 kg almond (badam)
2 kg sugar
1 kg water
1 tsp saffron (kesar)
1 tsp green cardamom powder (hari elaichi)
1/2 tsp potassium meta bi sulphate

How to make badam ka sharbat :


Soak badam in water for 8-10 hours.
Peel the outer covering.

Boil sugar, water, kesar and elaichi powder in it.


Boil it to one sugar syrup strand.
Let it cool, then add some syrup to badam and grind it to a fine
paste.
Add syrup and potassium meta bi sulphate to the above.
Fill it in a bottle.

mint juice a healthy & detox drink for


summers
a few health benefits of mint:

mint is good for digestion.

it cures morning sickness and nausea.

it also detoxifies the body

mint is a good source of vitamin C, B complex vitamins and minerals like calcium,
phosphorous, zinc and copper.

mint also has antiseptic and cleansing properties.

mint is good for the skin too and will give your skin a lovely glow and
radiance

mint juice healthy and refreshing drink for summers

Prep Time: 10 minutes


Yield: 3 glasses
Serving Size: 3

ingredients
1.5 cups mint leaves
9-10 tbsp powdered jaggery or sugar
1/2 cup water
1/2 tsp black salt
1 tsp cumin powder
3-4 tsp lemon juice

method
1. remove the mint leaves from the stems.

2. rinse in water for a couple of times


3. add all the ingredients in a blender and blend to a smooth
paste.
4. strain the whole mixture.
5. take 1/4 amount of the strained mint juice.
6. add 3/4 amount of water.
7. stir.
8. add ice cubes and serve chilled.
my notes
the sweetness can be adjusted as per your preferences.
you can also add sugar orhoney instead of jaggery.
sweet punjabi lassi

yet another cooling and refreshing drink to have in the summers is lassi . i make
lassi often at home..
Prep Time: 5 minutes
Yield: 2 glasses

ingredients
1.5 cups yogurt/curd
7-8 tsp sugar
1/2 cup water or cold milk
1/2 tsp cardamom powder
1 pinch saffron (optional)
6-7 almonds, chopped or sliced (optional)
1 tsp rose water (optional)
ice cubes while serving the lassi

method
1. take the yogurt, cardamom powder, water and sugar in a blender.
2. blend till the yogurt is evenly blended.

3. don't over do as then you will get butter floating on top.


4. serve in tall glasses.
5. add crushed ice cubes, garnish with so me cardamom powder and sliced
almonds.

7. you can also chill the lassi and then serve.

10.add more sugar if you want a more sweet taste or less as per your taste.

pudina chaas

1 cup curd/yogurt
7-8 fresh pudina/mint leaves or 1 tsp dry mint leaves
1.5 cups water
1 tsp roasted cumin powder
black salt as required

method
1. chop the mint leaves.
2. in a blender add all the ingredients including the mint leaves and blend till
smooth.

3. serve in glasses with some ice cubes.


4. you can also chill the chaas and then serve later.
my notes
the recipe can be easily doubled or tripled.
you can also add dry mint leaves instead of fresh mint leaves.

watermelon juice
Prep Time: 15 minutes

Yield: 3-4 tall glasses

ingredients
1 watermelon

gulkand/rose petal jam - 2-3 tbsp or sugar (optional)


black salt - optional
chaat masala - optional
ice cubes

method
1. chop the watermelon.
2. remove the seeds.
3. in a blender add the chopped watermelon and gulkand.
4. blend well.
5. serve in glasses topped with ice cubes.
6. optionally you can also add some chaat masala and black salt while serving
the juice.

Nuttella milkshake :

Nutella truffles I made for the first time was great and then I became a bit
addicted to this nutella. I told myself after I finish the bottle, I should never
buy it again to watch my waistline! Somehow the last few tablespoons of
nutella only was there in the jar but I wanted to try out the milkshake as
suggested byPavi (Special thanks to her for recipe and photo inspiration :), so
with the leftover nutella, I thought of making use of few bananas which were
about to get wasted. Made it simple with simple ingredients and had it as
breakfast. Yummy! Why not? its nutella right ?!

INGREDIENTS

Nutella 2-3 tblsp


Banana 2
Milk

1 cup

Sugar

Only if
needed

Method

1.

Place sliced bananas, nutella and chilled milk(sugar if desired) in the blender.Blend until

smooth and frothy!


Transfer to the serving glasses and enjoy immediately! Is it not simple
enough for a hurry burry

morning?

Notes
If you dont have nutella, try it with any chocolate drink
mix like bourvita or milo kind.
Always enjoy it chilled.

PAPAYA HONEY SMOOTHIE


I have never tried anything with papaya,just eat the fruit until I saw
Bharathys papaya milk shake. I tried very soon after she posted. This is a
recipe I saw in a cookbook but with lots of other ingredients,but I tried it and
made it simple. This is perfect to have it with breakfast and makes you feel
full.

INGREDIENTS:
Papaya,cubed

1&1/2 cup

Milk

1/2 cup 3/4 cup

Honey

1 tblsp

Sugar

2 tblsp(adjust according to ur
taste)

Ice cubes(optional)

4-6 nos.

Method:

1.
Blend papaya,sugar,honey and ice cubes(if desired) in a blender till
smooth.

2.
Then add the milk and blend for a 40 seconds or till mixed well. Have it
chill with honey topping.

Notes:
If you are making for kids and dont mind the calories you
can add a scoop of vanilla ice cream in this and make it more
like milk shake.
If you are calorie conscious,reduce sugar and use low fat
milk.

HONEYDEW MELON JUICE/ SMOOTHIE | SIMPLE


SUMMER DRINKS

Summer is here and we have to keep our body cool from inside too Honeydew
melon is one of my favourite and Vjs Favourite too Mostly I would prefer to
eat the fruit, but Vj loves to have in juice form. My MIL makes Kirini palam
juice just by cutting the fruit and scooping out the pulp using a ladle itself. I do
the same for this if its a super ripe fruit or if its a bit firm, then I cut into small
pieces and peel off the skin and grind with ice to make smoothie. I am not
sure if honeydew melon and the kirini pazham we get in Chennai are the same.

Its so simple but tastes and smells great and cools your body as well.

INGREDIENTS (FOR 2 GLASSES)

Method

1.
Peel the skin along with the thick part of the fruit, remove the seeds in the middle and chop
roughly. Transfer the fruit with sugar and ice cube to a blender. Blend until smooth.

The smoothie is supposed to be thick.So no need to add water. Its very


perfect for breakfast, so filling and comforting!
