Resumen
Los microorganismos psicrfilos son capaces de crecer en ambientes
permanentemente fros, para ello desarrollan estrategias bioqumicas
especiales y compuestos celulares con gran potencial biotecnolgico. En este
trabajo se evalu la produccin de enzimas lipolticas de cinco cepas
bacterianas antrticas crecidas en medio aceite de oliva durante 36 o 74 horas,
a su temperatura ptima de crecimiento. La determinacin enzimtica se
realiz usando como sustratos p-nitrofenilpalmitato y p-nitrofenilbutirato. Las
cinco cepas crecieron bien y se detect actividad lipoltica y/o estereoltica en
todas, siendo la cepa 7Ab la que present la mayor actividad lipoltica y
esteroltica en el menor tiempo de fermentacin.
Abstract
Psychrophilic microorganisms are able to grow in permanently cold habitats. In
order to survive they develop biochemical strategies and cell compounds of
interesting biotechnological potential. The aim of this work was to evaluate the
lipase activity in five bacteria strains from Antarctica, grown in olive oil medium
for 36 to 74 hours, at their optimum growth temperature. Enzyme activity was
determined using p-nitrophenylpalmitate and p-nitrophenylbutyrate as
substrates. The five strains grew well and lipolytic and / or estereolytic activity
was detected in all of them. The 7Ab showed the highest lipolytic and esterolytic
activity in the shortest time of fermentation.
