h4\ " <) eu 7 Celebrating. 10 yertly New Year's Eve 2006/07 we shared in our last private moment. The room was nov set, the bar w drinks rested on it, and we were ready. On that evening we took a breath, raised a gh and smiled, not knowing what the next few days, weeks and months held for us. We weren't thinking of any of it. New Year's Eve was, for us, the last point in time together, without public or press or conc Ten years have since passed. Ten years of brilliant talent to grace our staff. Ten years of wait lists and patient guests, Ten years with the obligatory amount of flooding and fires, renovations and reupholstering. In these ten years our love for spirits has only grown. Spirits are made everywhere, from just about everything. They are perfected through hundreds of years of slow tinkering, manipulated in near endless ways, and they tell the stories of people, countries, commerce, climate and more. Viewing the world through the bottom of, Jass allows for a very different lens. It isa pri a beautiful liquids and create something totally new and different, to create cocktails for our guests. This new menu takes you through from fermentation, distillation, and beyond. Each section takes inspiration from one aspect ofa spirit’ life eycle and expresses it in various ways, a journey from the origins of a spirit through the many ways it can be manipulated.
