Menchi Katsu Burgers

For a Western favourite with a distinct Japanese flare, you


need to give these menchi katsu burgers a try. A
quintessential fusion dish, menchi katsu are beef burger
patties covered in breadcrumbs and deep fried to crispy,
crunchy perfection. While normally served in a traditional
burger bun, as a sandwich filling, or with a side of rice,
menchi are also ideal for bento lunch boxes or for enjoying as
a party food.

Ingredients
burger patties
200g minced beef (not a lean cut)
100g minced pork (or chicken)
4 tbsp panko breadcrumbs
1/2 tbsp worcestershire sauce
1/2 tbsp soy sauce
1/2 medium onion
2 3 tbsp milk
1 egg
pinch of salt and pepper
oil for cooking

plain flour for dusting
1 egg, beaten
4 tbsp panko breadcrumbs
serving styles
2 tbsp tonkatsu sauce
white cabbage, shredded
4 small brioche buns
(alternatively use 8 thick slices of white bread or 300g of cooked japanese rice).

How To Prepare
1. Finely chop the onion and saut in a pan with a little oil until
soft. Remove from the heat and allow to cool.
2. Next, in a large bowl soak the panko in the milk, add the
minced meat and mix together by hand. Then add the
cooled cooked onions, egg, worcestershire sauce and soy
sauce, as well as salt and pepper to taste. Mix well once
more.
3. Separate the mixture into 4 equally sized portions and mould
into rounded patties, indenting the centre a little with your
finger to ensure it cooks through evenly. Dust each patty
with plain flour and dip into the beaten egg.
4. Spread the panko breadcrumbs on a plate and cover the
patties on both sides with the breadcrumbs. Fill a wok with
oil for deep frying. Heat the oil until a small sprinkle of panko
sizzles when added.
5. Deep fry the burger patties in cooking oil on a medium-high
temperature (about 150C/300F) turning several times until
golden brown on the outside. Remove from the oil and drain
on a wire rack.

6. To serve, make a Menchi Katsu Burger by slicing and


buttering a brioche bun, adding a handful of shredded white
cabbage, a menchikatsu burger and drizzling with tonkatsu
sauce. Alternatively make a Menchi Katsu Sandwich with
white bread and cabbage, or simply serve on a plate with
rice, shredded cabbage and tonkatsu dipping sauce.

Tips and Information


Menchi Katsu are very versatile and are fantastic the next day in
a bento lunchbox.
If you prefer a less oily cooking method, drizzle with oil and
oven cook for 30-40 minutes at 450F/230C/Gas Mark 8.

Menchi Katsu () is a deep fried breaded patties


made from a mixture of ground meat, typically beef, pork, or a
mixture of both, covered with flour, egg, and panko (or
Japanese style bread crumb). I like to this of it as a deep fried
hamburger
And it can be quite literal too, I mean, if you

want to short cut this, you can simply buy burger patties, then
coat them in flour, egg, and panko, and deep fried them to
make menchi katsu.

Just as other katsu, like tonkatsu or torikatsu, menchi katsu
goes really well with tonkatsu sauce. I usually serve my katsu
with both tonkatsu sauce and a simple aurora sauce, not
exactly the traditional one with bechamel sauce, but my
approximate version mixing an equal part of tomato ketchup
and Japanese mayonnaise (think Kewpie).

Ingredients

6 tablespoon panko (Japanese bread crumb)


3 tablespoon milk
400 gram ground beef
1 onion, minced
1 egg
1 teaspoon salt
teaspoon ground pepper
teaspoon nutmeg
all purpose flour, about -/14 cup
egg, about 1-2
panko, about 1 cup
enough oil for deep frying
Accompaniment

tonkatsu sauce

equal part of tomato ketchup and Japanese mayonnaise

Instructions

1. In a mixing bowl, soak panko and milk. Then add ground


beef, minced onion, egg, salt, ground pepper, and
nutmeg. Mix well.
2. Divide into 8 patties. Cover each with flour, followed by
egg, and panko.
3. Heat oil for deep frying, about 170 Celcius, deep fry the
patties until golden brown and fully cooked.
4. Serve hot with your favorite sauce.
