CHAPTER I
INTRODUCTION
A COMPANY BACKGROUND
Love, Z Bakery and Patisserie is a family owned company that
produces and sells flour-based food baked in an oven, such as bread, cookies,
cakes, pastries and pies. Freshly and made-in-house, Love, Z sets its signature
products as a pastry to have its own impact, while providing a niche in each baked
goodness. Love, Z also caters beverages that are brewed fresh and made to
order, ranging from hot coffee to espressos laced with ice and chocolatey
goodness their beverages complement each product sold from their counter.
Love, Z also serves an All-Day Breakfast menu that caters a platter of hearth-like
quality that aims to fill up ones craving and need.
Over the course of 2 years, Love, Z grew from a hobby business to a full blown
Business when the chain of management was changed from its owner to her
brother-in-law, James Rollan. The change was timely as the previous manager is
still pursuing her Masters degree in Baking. This change opened up Love, Zs
opportunities to branch out its current demographics and play in the same field as
Purple Oven and Contis as a concessioner to top brass clients. Offering
customized pastries in exchange, Love, Z endears its partners with the freshly
baked breads that are delivered from their A Plaza site to anywhere in the Metro.
B PRODUCT OFFERED
Love, Z Bakery and Patisserie offers a wide array of succulent baked products
and mouth-watering hot meals that are all niched to have a European approach.
D NUMBER OF EMPLOYEES
Love, Z Bakery and Patisserie currently has its operating hours start at 6:00
AM and closes at 11:00 PM. With the current manpower of 10 people that man
Love, Z, the operating hours is divided into three (3) shifts namely; 3:00 AM to 12
Noon, with 3 people, 6:00 AM to 3:00 PM, with 4 people, 1 PM to 11 PM with 3
people.
Each shift will contain a person in charge of the Hot Kitchen, Cashier and
Utilities. To further define, the person in-charge of the Hot Kitchen would be the
ones creating the breads and pastries sometimes the hot menu. The Cashier
would be in-charge of the Cashier itself, taking orders and supplying the change,
they can also be the servers of the food. The Utilities would be the libero of the
team where they function mainly as the server but can substitute the Cashier or in
the Hot Kitchen in case there would be a need to.
The 3:00 AM shift prepares the shop with inventory and pastry making, the 1
PM shift closes the shop with the inventory report needed for next days
preparation. Overtime would be called for, in case there would be a need for it to
be included this includes holiday seasons being considered.
