assume were slags, but for one,

its not very appealing and two,

different things for me. Im a true

You will need

100g butter
275g caster sugar
50g golden syrup
75g flaked almonds, finely chopped
Pinch of sea salt
200g dark chocolate, chopped

Line a 20 x 35cm tin with

baking parchment.
Mix butter, sugar and golden syrup
in a large saucepan and stir in 50ml
water. Bring to the boil and allow mixture
to bubble until it turns a deep golden brown
(150C on a sugar thermometer, if you
have one). It takes about 10 minutes to
reach this point on a fairly high heat.
Take the saucepan off the heat and
add the almonds and sea salt. Stir well,
then pour into the tin. After five minutes,
this mixture will begin to harden. Use
a sharp knife to divide into 24 squares.
Dont cut all the way through just mark
it to make it easier to break into neat
pieces when its completely cool.
Temper the chocolate (see right
for how to do this). When ready,
dip each square into the chocolate,
then leave to harden completely on
a piece of baking parchment. These
will keep well in an airtight container
for up to three weeks.

1.8kg free-range chicken, cut
into 8-10 pieces, rinsed and
patted dry, skin on or off
2 x 284ml cartons buttermilk
100g dried breadcrumbs
1tsp smoked paprika
tsp garlic salt and
celery salt
tsp cayenne pepper
(optional)
tsp dried thyme
50g Parmesan, finely grated

Place the chicken in a

large bowl, pour over the
buttermilk and toss the chicken
until it is fully coated. Cover with
cling film and leave in the fridge
for 4 hours or overnight.
Heat the oven to 200C, 180C
fan, 400F, gas 6. Meanwhile,
place the breadcrumbs in a bowl
and mix together with the
paprika, garlic salt, celery salt,
cayenne pepper (if using),
thyme and Parmesan, plus
a good pinch of salt and black
pepper to season.
Working with one piece of
chicken at a time, remove
it from the buttermilk, letting
the excess drip back into the
bowl, and roll in the breadcrumb
mixture, turning to coat evenly.
Place the coated chicken on
a baking sheet lined with baking
parchment. Repeat with the
remaining pieces, then bake
for 35 minutes, until golden
brown and crunchy.

Steps reunited
in 2011 despite
their sticky end

Starry-eyed beginnings
Singer Lisa Scott-Lee was
thoroughly guilty of flooding
the charts with cheese in the 90s
as one fifth of pop band Steps.
But she wasnt the only famehungry Scott-Lee out there the
Welsh singers brothers Andy,
Anthony and Steve hit the charts
in 2000 as boy band 3SL. Lisa
was the pop victor in her family,
however, storming to success
with guilty pleasure Steps
becoming a household name.

couldnt miss Lisas sugar-coated
band with their choreographed
dance moves taking the UK by
storm between 1997 and 2001.
Steps shifted 20 million albums

worldwide before splitting in a

stand-off that bandmate Claire
Richards described as a bit sticky.

Pops young dream

Lisa married HearSay singer
Johnny Shentall in 2004 after
three years together. They have a
son Jaden, eight, and daughter
Star, six. And Lisa says shed love
her kids to go into showbiz. I
wouldnt be worried because Ive
thoroughly enjoyed it and would
do it all over again, shes said.
But Johnnys a bit more sensible
because he was a backing dancer
for years, so he saw the other side
of it before he went into HearSay.

Stage school
Lisa and Johnny relocated to
Dubai shortly after Steps shock
split in 2001. She said: [The split]

happy to carry on. Id be in Steps
until Im 100. I love it. The couple
opened their very own fame
school, Dubai Performing Arts
Academy, teaching drama,
singing and dancing.

The next step

Being an expat hasnt put Lisa
off reuniting with Steps which
the band did in 2011 after Sky
Livings juicy four-part series
Steps: Reunion. The band toured
in 2012 and released fourth album
Light Up The World. Although
theyre now on hiatus, Lisas
keeping busy as a well-known
face on the Dubai party circuit.
