Its a time of year where you should open that special bottle you have been saving or
maybe try something new. Seeing as Christmas has so many specialty dishes, here is little
guide to help you through your festive occasion.
Whether it is baked, smoked or glazed, ham is the centrepiece of many a Christmas table.
Riesling, pinot gris and even gewurtztraminer are a great match, as these wines tend to
offer fresh, flavourful taste profiles with enough sweet fruit to balance the salt in the ham,
and enough acidity to support the combination without compromising the flavour of either.
Red wines to accompany ham tend to be lighter in body and overall style. Beaujolais,
pinot noir, and Spain's tempranillo grape often exhibit subtle tannins with an easy-going
pairing profile.

hristmas is a great time of year, not just because of the hot weather and the many
catch ups with friends and family, but because you can indulge in the annual feast
of turkey, hams, roast beef and puddings.

Turkey on its own lends itself to almost any white, but turkey is more often than not eaten
with stuffing, roasted veggies, rich sauces, and an assortment of savoury sides. It's
these sides and sauces that must be taken into account when working out the best wine
pairings. I always think chardonnay is the best match with poultry, and as there are so
many great chardonnays on the market, it is hard to go wrong, so grab your favourite and
enjoy. If red is more your wine of choice, I tend to lean towards a medium-bodied pinot
noir. Its perfect as the softer tannins dont overwhelm the taste of the meat. If Christmas
Day is a classic hot summer day, dont be afraid to try a classic gin and tonic because
they are light, complimentary to a variety of sauces and stuffing, and the botanicals in the
gin are the perfect match with any turkey dish.
Roast beef has long been a staple of the Christmas table and nothing goes better with
beef than red wine. Whether cabernet sauvignon, shiraz, blends, imported or domestic,
big and robust or elegant and smooth, it really is a match that is hard to beat, so grab your
favourite bottle, that special bottle you have been saving or something new and you will
not go wrong.
All this food is really just a lead up to what Christmas lunch is really about: Christmas
pudding, mince pies and all things chocolate. Nothing goes better with these traditional
desserts than port, muscats, tokays and dessert wines. There is no wrong choice to be
had, it all works.

Celebrating 40 years in 2017, the bakery is a
family owned and run business with a great
history with many stories to tell. With their
goods made fresh on-site every morning,

Hellenic Eatery located right next door is
a newly opened caf-restaurant, serving
modern Australian dishes with a Greek

Originally trading as Hellenic Bakery and
Cakes, they were established in 1977
by the Scoullis family. The bakery was a
favourite amongst the locals with many loyal
customers that were served almost 40 years
ago returning for their sweet treats to this
day. The establishment has since evolved to
serve caf and restaurant style food while
continuing their focus on desserts, pastries
and homemade gelato. The one thing that
hasnt changed is the welcoming family
spanning three generations still running the
store today, as well as their deep connection
to traditional food, recipes and customs tied
to their motherland, Greece. During their 30th
anniversary celebrations, Hellenic Bakery
honoured the Greek tradition of Vasilopita by
baking 2,000 brioches with ten gold coins
hidden within the sweet buns; those who
found the coins were blessed with good luck.

Although Hellenic Eatery is brand new to the


market, it has already become a favourite hot
spot, bustling with noise and excitement, for
friends, families and kids. The menu changes
every two weeks, giving customers the opportunity to experience new flavours every time they return. With a dish available to suit everyones
taste buds, this food destination is not to be ignored. However, signature favourites like the traditional Greek moussaka served in a capsicum
are always available to order. All dishes are visually appealing and taste irresistible, perfect for any foodie or diner.

summer guacamole recipe.

the authentic Mexican eaterys famous
guacamole recipe, and it comes with a
summer twist. Get your sombrero, maraca

Ingredients - Guacamole
700 gavocados (approx. 5 avocados)
300 glime juice (from about 10 limes)
150 gred onion (approx. 1 onion), finely
diced
150 g roma tomatoes (approx. 2 tomatoes,
seeds removed), finely diced
90 gcilantro (coriander), stems included
(approx. 1 large bunch), finely chopped
70 g pineapple, 1 cm diced
50 gjalapeos (approx. 3 jalapeos, adjust
to your taste), finely diced
50 g jicama (yam bean), finely diced
50 g pomegranate seeds
25 g toasted pepita seeds
25 g toasted chia seeds
25 g sunflower seeds
10 gsalt (just under 2 teaspoons)
5 ggarlic (approx. 1 clove), minced
Ingredients - corn chips




1 kg corn tortillas
1 L vegetable oil
3 limes
Pinch of Spanish paprika
Pinch of pink salt

Method
Guacamole as easy as uno, dos, tres
Peel, de-seed and mash the avocados in a
large bowl until it gets a smooth, spreadlike consistency.
Add the onion, tomatoes, jicama, garlic,

jalapenos, coriander, salt and lime juice


to the bowl. Mix together using a plastic
spatula (I usually mix using clockwise
circular movements).
Transfer to a serving bowl and top with
pineapple, pomegranate, and seeds (this
will give it a fresh presentation and adds
more texture to the guacamole).
Crispy corn chips
Cut the corn tortillas in 6 triangles to make
the chips (I usually cut them to mouthful
size, so its easier to eat one at a time).
Put the oil in a deep saucepan until it is half
full. Heat the oil until it reaches 160 C.
Carefully put a handful of chips into the
hot oil. Using heat-proof tongs. move the
tortilla chips to avoid them sticking. Move
them constantly until theres no more
bubbling.
When the bubbling stops, take the chips
out and put them on absorbent paper to
remove the excess oil.
Repeat steps 3 & 4 to cook the rest of the
chips.
Transfer to a serving plate and sprinkle with
salt, paprika and lime zest.

PAN FRIED SNAPPER


with ROAST VEG
& CITRUS DRESSING
Wild Yaks delicate citrus notes derived from the Cascade hops are
complemented by the citrus notes in the dish. Its delicate and light on the
palate so it wont overpower the snapper but at the same time balances the
citrus & herb dressing on the vegetables, providing a cleansing, crisp finish.
Simple, fresh and just plain delicious, this pan fried snapper recipe goes
down an absolute treat with great friends and a couple of ice cold Wild Yaks.

Roast Potatoes & Cauliflower


600g diced Desiree potatoes
a head of cauliflower
cut into small florets
Zest of half a lemon
4 tbsp of olive oil
1 tsp of sea salt & pepper

1.

Preheat the oven to 230C and line an oven tray with


baking paper.

2.

Combine the cauliflower, potatoes, lemon zest,


olive oil, salt & pepper together in bowl. Give them
a good toss and turn out onto the lined baking tray.
Pop them into the oven and roast until golden and
crispy (about 25 mins), turning once.

Citrus & Herb Dressing


Juice of a large lemon
Juice of an orange
2 garlic cloves crushed
1 cup of flat-leaf parsley torn
12 basil leaves torn
12 mint leaves torn
cup oregano leaves
3 tbsp olive oil

3.

Whisk all of the dressing ingredients together in a bowl


and set aside.

When the vegetables are about 10 minutes from being


ready, pat the fillets dry with some paper towel and
lightly dust each with the seasoned flour.

5.

Heat a large non-stick fry-pan to medium/high heat


and add butter & olive oil. Once the butter starts to
foam, fry the fish in batches, skin side down, until the
skin is golden and crisp (2-3 minutes). Turn quickly and
cook for another 1 minute. As each batch is finishing,
squeeze over some lemon.

6.

To serve, divide the roast veg between each plate, top with
a piece of snapper and drizzle with the dressing.

7.

Sit down, crack open an ice cold Wild Yak and get stuck in.

a pinch of sea salt & pepper
1 tbsp of salted butter
1 tbsp of olive oil
