Kuchchida Kadabu - Sweet and Khara

Kuchchida Kadabu is very popular dish prepared on Nagara Panchami in Karnataka. A very tasty dish
basically sweet mixture and spicy mixture filled in rice flaps and steamed.
Fried Gram Laddoo is also prepared for Nagarapanchami festival.

Ingredients:
Rice Flour - 3 cups
For the Filings:
a. Khara Kadabu
1. Toor Dal: 1 cup
2. Grated Coconut : 1 cup
3. Green Chillies: 10-12 (You can also use Red chillies instead of green chillies - 7-8)

4. Asafoetida
5. Turmeric: 1/2 tsp

6. Curry Leaves: 1 strand

7. Ghee: 1 tbsp

8. Mustard Seeds - 1 tsp

9. Salt to taste

10. Oil - 1 tbsp

b. Sweet Kadabu

1. Freshly grated coconut - 1 Big sized


2. Grated jaggery - less than 1/2 of the grated coconut measure
3. 1/2 tsp cardamom powder (elaichi)

Preparation:
1. Heat 6 cups of water, when it starts boiling add 1/2 tsp of oil and a pinch of salt.
2. Add the Rice flour and mix well to form dough without lumps. Now remove from heat and knead well.
Divide the dough into small balls.
3. Roll the balls into circular shapes (you can use papad press).

Sweet Kuchchida Kadabu


For Sweet Kadabu Filling:

Heat the pan/kadai, add coconut and jaggery.

Cook on medium heat with stirring, until the jaggery has melted and mixed well with the coconut

4. Place a spoon of the filling in the center, and fold the circle in a half-moon shape.
5. Apply a little water on the edges and seal. Repeat with the remaining dough.
6. Place it on idli plates using plantain leaves as shown in picture. Steam for 5 minutes only. please do not
steam for more time or else the kadabu will break.
7. Remove and serve hot.
