efore 1928 drew to a close, three new Mickey Mouse cartoons,
Plane Crazy and Gallopin Gaucho, both with sound added, plus
The Barn Dance, had been completed, though none of the first
Mickeys, Steamboat Willie included, were in circulation nationally as yet.
Eleven more would be made and released in 1929, nine in 1930, twelve
in 1931at a rate of roughly one short per month during the first three
years of Mickeys existence.
Music fired their popularity. As Time magazine noted in 1954,
what was novel about the typical early Disney cartoon, aside from its
frenetic ingenuity, and what struck the public most, was the music. It
hopped, it jangled, it twitched, it plankety-planked, and from that day
forward was known as Mickey Mouse Musican exquisite melding
of bad honky-tonk and good rattletrap. Leonard Maltin put it this
way: Some people will tell you that music was a key ingredient of
Walt Disneys success. Dont you believe it. Music was the foundation
of Walt Disneys success.1
Disneys merging of music and screen action was remarked on almost
instantly. In December 1929 in the Parisian monthly Jazz, journalist
Pierre Scize (aka Pierre-Joseph Piot) raved about the grand piano with
a mind all its own in one of Mickeys most fun-filled productions, The
Opry House [139]. For Scize, the cartoon was a kind of symphonie
parodique full of surprising sounds that never get tiresome because
theyre measured and strike just the right tone, with humor that is
genuine and profondment expressif.2
Sergei Eisensteins friend, the English film aficionado, Ivor Montagu,
let it be known that the renowned Soviet director had already declared
in Europe, prior to his arrival in America in 1930, that Disney was
the only man working in the United States who used sound properly.
In an August 1930 article in Close-Up (the fascinating international
magazine of cinema-aesthetes, as Gilbert Seldes called it), Eisenstein

Djerba, a small Tunisian, Mediterranean island, has been an oasis since the first Jews arrived
here 2,600 years ago during the Babylonian Exile. Some say that the high priests (Cohanim)
of the Second Temple in Jerusalem fled to Djerba when the holy city was destroyed in 70
C.E. One of Djerbas synagogues, called La Ghriba, was reputedly built upon a foundation
laid around a door the Cohanim salvaged from the Temple. Legend has it that the worlds
oldest Torah is hidden deep within La Ghribas shadowy recesses. No one disputes the fact
that La Ghriba stands on a site that has housed Jewish worship continuously for almost
2,000 years. More than 500 years ago, Spanish Jews pursued by the Inquisition joined the
earlier refugees. Though persecution has flourished closer to Djerbas shores since 1948,
with the Arab worlds reaction to the State of Israels creation, and more recent terrorist
attacks by al-Qaeda and others against the community, Shabbat and Jewish holidays remain
cherished times on Djerba, reminiscent of the islands heritage as a place where Jews found
peace. Though international tourists still flock to La Ghriba, the oldest synagogue in
Africa and one of the oldest in the worldand hundreds or thousands come annually
during the pilgrimage of Lag BaOmerit is far from the only Jewish site on the island.
At the turn of the millennium, Djerba still had more than ten active synagoguesmany
of them small prayer halls in Hara Kebira and Hara Sghira, the Jewish villagescrowded
with over 1,000 practicing Djerba Jews every week.

For all their mechanics, Arthurs wire machines are


ultimately exercises in sketching: This way of working
is as close to oil painting or free drawing as I can get,
he says. To mold such a hardcore engineering material
into the articulated, graceful pieces for which hes
known, Arthur created his own toolkit and work flow.
But each project introduces something new to the mix.
There are always known processes, he says. But I
also always want to explore something new.

I really love working with soft, black


annealed wire. It spot-welds okay, it
silver-solders fine, and I coat it with blackening
agent to make it look really nice. I made a tool
to standardize the gear-bending processa plate
with holes in the center and 180 holes around
its perimeter, and a hand tool with a pin on
the end. I put the hand tools pin in one of the
center holes and pins in two of the holes on
the outer ring, and bend wire around the central
pin until it hits one of the outer ones, which acts
as a stop. Then I reorient it and bend the other
way until it hits the other stop. Its been helpful
to track the gear specifications in a notebook.

Every sculpture starts with a feeling, and theres an infinite number


of ways that it can be expressed physicallysometimes its just wire in
space, like Untitled Fragile Machine, in which all it really has to do is move. But
sometimes I find an object and it triggers an idea. In Child Watching Ball, you
turn a crank to make a dolls head follow the motion of a small blue ball. It took
more analysis and invention, because Im using the found part as
a sort of puppet to make the wires gestures more expressive.
Initially, its like Im the puppeteer, the doll head is my
puppet, and I supplant myself with the machine.

My life completely changed


when I came across a spot
welder, a tool with copper pincers
that lets you focus welding current
onto a small space. I have a large,
bench-mounted one, but a friend
found one that was small enough
to hold in your hand and use like
tweezers, allowing you access
in all planes. I was so entranced
that I made my own version of
it by hand. The spot-welder itself
is so old that it has vacuum tubes
inside, but it works like a charm.

TINKERER DETAILS
First tinkering moment The first
complicated thing I built was a
mechanical wine stopper. It had two
figurines on topa boy and a girland
when you pressed a lever, they would
turn and kiss each other.
Next big thing Theres a part of me
thats really in love with the idea of
learning to program for the iPhone.
Getting unstuck I sometimes go through
a slow, torturous process of narrowing
down an infinite number of possibilities
to one physical manifestation. You just
have to stick with it.
Tinkering tale My first machines arent
working anymore because I made them
with tin-lead solder, which over time
will break. With Untitled Fragile Machine,
I learned that silver solder lasts. These
days, I often sketch them out before
building thembelow is the sketch for
Machine with Cat Whiskers.

Heres a list of the supplies


for building a log cabin:

FOUNDATION Some early cabins were built right on


the bare ground (not a great idea in wet or termiteinfested areas). More sophisticated techniques came
later, such as stone walls for perimeter foundations
and stone blocks for piers under the structure. Today,
we could use any number of foundation methods
on a modern cabin, including concrete slabs with
integrated hot water heating.

covered in mud as a partial fire-proofing. This is
incredibly dangerous and should be avoided at all
cost. Mortar and local stone are a more durable and
far safer set of building materials.

SURVIVAL

Heroes of the colonial American frontier, such as Daniel Boone, Simon Kenton, and
pretty much every other settler of European descent, built their own cabins from logs
in the eastern woodlands. All you needed was a strong back, an axe, a few other hand
tools, and a pocket full of nails to build a small home for very little money (FYI, most
settlers were flat broke). If logs are an abundant resource in your area, you can follow
in this great American building tradition by creating a small shed or even a small home
from locally harvested logs. Here are a few key factors.

day, or are you running a bunch of power
tools every day?). Next, what kind of
assist does Mother Nature offer? Is your
property extra sunny? Solar looks good!
High wind areas? Good news for windmills
or wind turbines. Running water at a high
enough volume can get you power from a
waterwheel, perhaps upgraded to a mini
hydroelectric project if you need a lot of
power. If that water includes hot springs
bingo! Youve got geothermal potential. And
finally, are you going to be burning wood?
Yes, you almost certainly are. That means
heat, but also with the right tech, you can
also generate small amounts of electricity
through thermoelectric generation.

not the end of all comfort if you cant
provide electrical power for your
self-reliant home. Although 1800s

PERIMETER DEFENSE During social unrest and mayhem,


you probably wont have the time or resources that you
would need to build a set of barbed-wire-topped walls,
high powered searchlights, or manned guard towers.
However, there are still some things you can do almost
anywhere to create a more defensible position.
STEP 1 Decide what you are willing to defend. Basically,
here is where you are marking out the boundaries of the
area that you intend to protect. Consider the roles that any
existing walls, waterways, buildings, and fences can play in
your defense.
STEP 2 Establish a controlled entry/exit point for the
homestead, or even the neighborhood. This may mean
blocking off a street with derelict vehicles (if things are
really that bad). If vehicles are operational, several could be
parked to create a gate to keep out other vehicles.

STEP 3Enhance existing defensive structures. This can be


anything from locking fence gates to boarding up windows
and doors around the perimeter. Look at your perimeter
from the outside, try to figure out ways in, and do your best
to seal them off.
STEP 4 Set up a fallback position. This would be a place
of refuge if you had to retreat within your perimeter,
like the strongest and most defensible home within the
neighborhood. Keep it well supplied with water and food,
in case you have to spend a few days waiting out rioters.
SET OUT SOME WARNING SIGNS If you can dissuade
trespassers, looters, burglars, and other neer-do-wells
at your propertys perimeter, then you wont have to
deal with them yourself later on! An imposing fence,
threatening signage, bright exterior lights, and packs of
roaming dogs should do the trick.

When the bees have become so numerous that they almost fill
up the brood chamber, its time to give the queen more room for
her eggs. If you have a trough hive, place a few expanded frames
(frames where the bees have built wax cells on the partition wall)
in front of the brood cluster and a few frames directly behind.
As a beginner, you may not have a lot of expanded frames, but
it works just as well with frames that you added wax foundations
to. If you have a stacking hive, youll expand the colony by
placing a box with nicely expanded frames on top of the box
where the bees lived during winter.

Equalize the colonies

Collect all DVDs in the house. Make


sure you gather them from kids
rooms as well as the entertainment
center or media room. Sort
through, donating whatever no
longer interests your family. As with
your books, categorize the movies
in whatever way you pleaseI
suggest sorting by genre (family/
kids, drama, comedy, romantic,
holiday, horror)and then create a
catalog system as follows.

In early summer, colonies develop rapidly and the number


of bees increases drastically. If you have several colonies and
notice that one of them is not growing like the others, it may be
worthwhile to equalize the number of bees. This will probably
also yield more honey. If the colony isnt expanding, it might
be because it is diseased, so to avoid cross-contamination, make
sure to check it carefully before changing anything. You can mix
bees freely between different colonies without conflict, so move
a couple of frames with covered brood from the strongest colony
and place it in the weakest, next to the other brood frames.
Choose frames with lots of bees where you can see young bees
about to crawl out. Replace the frames you moved with expanded
frames that have only wax foundations. If you should notice that
one of your colonies have an explosive development, equalization
can also reduce the risk of the bees swarming.

STEP ONE Using paper or plastic

DVD sleeves, transfer the movies


from their original plastic case, then
number each sleeve.
STEP TWO Index your movies on a

catalog sheet in alphabetical order,


including the number on the sleeve.
(If youre a film buff, you can also
include the year of release or the
director.)
STEP THREE Toss the cases and

store the covers in a small basket or


box. This saves valuable space, and
by the time you are ready to donate
the movies, they wont be of much
valueso theres really no need to
keep the cases.

If you notice bees crawling on all visible frames when you open the hive, its time to add a box
of empty frames to give the colony more space to grow. If a colony develops very quickly or lags
behind you may need to move frames with bees and covered brood between the hives. But first,
make sure the colonies are healthy.

On average, a ten-pound (5-kg) cat needs about a cup


of fresh water daily, and more in hot weather. Be sure to
supply a clean bowl containing at least this much fresh
water per-cat per-day, in addition to food.

dont panic. If she has wet food, some of her liquid intake
will come from this. If she only eats dry food (which

Cats come in all sorts of colors. And cat hairs can have
three or more colors along a single shaft. It is interesting
how colors affect a cats appearance. Spots and stripes,

for example, are good for camouflage, while points or


shades, terms often used in describing pedigree cat
colors, make their owner stand out in a crowd!

OFFER CHOICE Do you give your cat spring water


blessed by monks, but she prefers to drink from a dripping
faucet? This is because the faucet mimics the motion of
water in nature (which, she instinctively knows, keeps
it fresh). Its fine for your cat to drink it, as long as your
tap water meets health standards. Another option is to
purchase a cat water-fountain, where continually filters
and recycles the water. Keep the fountain clean, and
replace the water as recommended by the manufacturer.
AVOID MILK While many a cat has been depicted lapping
up a bowl of milk in quaint folk art paintings and cartoons,
in fact, cats cant digest cows milk very well (see also item
070) so dont give it, even as a treat.

A cat is never just a tabby. His
stripes are usually darker than the
rest of his fur and can be mackerel,
swirled, spotted, or ticked.

Pointed cats are those with pale
body fur and darker legs, tails, and

then loosely curl five or
six sections with your
curling iron held vertically.

STEP 1 ABC (apply basecoat). Once the basecoat has set, do a basic
manicure with black polish. Let your nails dry.

MATERIALS

1 Starting with perfectly dirty texture,


part your hair on one side using a tail
comb. Then create a small triangular
section by bringing the tail comb from
the end of the part to just above your
ear. Secure this triangular section with
a silver duckbill clip. Repeat on the other
side with a larger section.

BASECOAT

2 Using a 34-inch (19-mm) curling iron,


curl the larger section back and away
from your face. (Curl as close to the roots
as possible to avoid creasing your hair
along your hairline.) Once the curl is hot,
release the clamp and gently pull the iron
out, holding onto the roll with your other
hand. You can insert a finger into the roll
to keep the shape as you remove the iron.

COSMETIC SPONGE

STEP 2 Pour white polish onto a piece of aluminum foil. Dip in the
cosmetic sponge and dab white splotches across each nail. This will
serve as a backdrop for brighter space dust particles, making them
really visible against the blackeven without a telescope. Let this dry.

STEP 3 Place a dollop of green polish on the foil, pick some up with
the sponge, and dab it lightly over half of the white areas. For a

the second half of the white areas, blending the blue into the green.

3 Insert small hairpins along the back


of the roll and perpendicular to your
hairline. If the roll doesnt feel secure,
slide a few bobby pins through its
centerjust make sure to hide them!
Spritz it with hairspray.
4 Wrap the small section around the
iron, then release the clamp and remove
the iron from the roll, holding the roll with
your fingers. Pin the back with vertically
placed hairpins again, securing it at the
center if needed. Mist with hairspray.

PRE- AND POST-SWIM Rinse

in a simple detangling conditioner

hair shaft and lock out chemicals.
My go-to is 2 tablespoons allnatural conditioner, 2 tablespoons

conditioner, and 5 drops rosemary
essential oil. Post-swim, rinse and

GREEN HAIR MASK If you do
end up with the dreaded green
locks, mix cup (60 mL) lemon
juice, 2 to 4 tablespoons baking

castile soap. Apply the mixture
to wet, clean hair, massaging it
in from roots to ends. Let it sit
for 20 minutes, then rinse, wash,
and condition.

hair! Dilute your favorite natural
sunscreen with 2 tablespoons water

In a wok or deep, wide saucepan, pour 3 inches of oil and heat to 350F

on a deep-frying thermometer or until a bit of panko dropped into the hot


oil rises immediately to the surface.

Meanwhile, spread the flour in a small, shallow bowl. Break the egg into

a second bowl and beat with chopsticks or a fork until well blended. Spread
3 cups of the panko in a third shallow bowl. Sprinkle a little panko on a flat plate.

Lightly salt both sides of 1 cutlet, dust with flour, shaking off any excess,

and coat with the egg and then with the panko. Using your fingertips, lightly
press the panko in place and set the cutlet on the prepared plate. Repeat
with the remaining cutlets, adding more panko to the bowl as needed.

When the oil is ready, add 1 or 2 cutlets to avoid crowding and fry, turning

often, until very crispy and medium brown, about 6 minutes. Using tongs,
transfer to a wire rack or paper towels to drain. Repeat with remaining cutlets.

Cut the cutlets crosswise into narrow strips, reassemble on individual

plates, and drizzle with tonkatsu sauce. Add a dab of karashi (if using)
on the side. Serve the cabbage with tonkatsu sauce and a little mayonnaise,
if desired, and tomatoes alongside.

variation Katsudon (Pork Cutlet and Egg over Rice): Fry 2 cutlets as
directed and cut into bite-sized strips. In a frying pan, simmer 1 tablespoon sake,
3 tablespoons soy sauce, 2 tablespoons mirin, 1 tablespoons sugar, and 1 cup
chicken broth. Add cup thinly sliced yellow onion and cook until soft, about
5 minutes. Add 2 beaten eggs, cover, and cook until just set. Add pork and 2 more
beaten eggs, cover, and cook about 1 minute. Divide between 2 bowls of rice.

Step-by-step Onigiri assembly

variation Yaki Onigiri (Grilled Rice Balls): These rice balls have no filling
or nori. Instead, once compactly formed, they are brushed with soy or miso
and broiled until they are crispy and chewy on the outside and soft on the
inside. As they are broiling (or grilling) evenly drizzle both sides of each triangle
with 1 teaspoon soy sauce or brush with 1 teaspoon white miso. Broil, turning
once, until both sides are very browned. Do not allow them to burn; especially
watch the miso, which can burn quickly. These onigiri are delicious hot.
note: Experiment with fillings. Try tempura shrimp, chicken salad, codfish
roe, Japanese pickles, tunafish with mayo, or cooked tsukune (page 134).

Freeze the beef for 1 hour before very thinly slicing it (almost shaving it).

Place several layers of paper towels on a cutting board and place the tofu

on it. Top with several paper towels, then top with a plate and a weight, such
as a can of tomatoes. Let drain for 15 minutes, then very carefully replace all
of the paper towels and let drain for another 15 minutes. Remove the weight
and the paper towels and pat the tofu dry.

Heat a ridged stove-top grill pan over high heat. When the pan is hot,

add tablespoon of the oil. When the oil is hot, add the tofu and cook, turning
only once, until both sides have dark brown grill marks, 45 minutes per side.
Remove from the heat, let cool, and cut into 1-inch cubes.

To make the sauce, in a bowl, stir together the soy sauce, mirin, sake,

and sugar, starting with 3 tablespoons and adding more to taste, until the
sugar is dissolved. Set aside.

Heat a large nonstick frying pan over medium-high heat. When the pan is

hot, add 1 tablespoon of the oil. When the oil is hot, working in 4 batches, add
one-fourth of the meat, then one-fourth each of the tofu, leeks, yellow onion,

68 small, round shallots, peeled

30g of fresh root ginger, peeled

30g galangal (if you cant find any,
add 20g more ginger), peeled

3 lemongrass stalks (tender base
only), roughly chopped

Mixed Rice with Vegetables & Beef

This is a typical Malaysian favourite. A dry curry, its traditionally


served with lemang, a sticky rice cooked on charcoal in bamboo.
I find it too rich paired with the already rich rendang, however,
so I serve it with plain boiled rice or Turmeric Rice (page 96).
Bring some water to the boil in a small saucepan. Add the dried
chillies and boil for 5 minutes, then remove them from the
heat. Leave the chillies to sit in the hot water for at least 15
minutes
to soften. Once the dried chillies have softened, drain and split
them lengthways. Remove the seeds with the blade of your knife
and discard. Cut the deseeded chillies in half.
Place all the ingredients for the spice paste, including the
chillies, in a blender and blitz until smooth, adding some oil
to loosen it if necessary.
Heat the vegetable oil in a wok or a heavy-based casserole
dish over a medium heat. Add the spice paste and fry for about
5 minutes, stirring, until fragrant. Add the beef and the bashed
lemongrass stalk. Mix well and, once the beef starts to lose its
pinkness, add the coconut milk, tamarind paste and water. Stir,
bring to the boil, then lower the heat to a simmer uncovered for
1 hours. Check on it occasionally to make sure the beef isnt
sticking to the base of the pan.
Meanwhile, toast the desiccated coconut in a dry frying pan
for 57 minutes, until golden brown. Remove from the heat and
set aside to cool. Once cool, transfer to a blender or the bowl of
a food processor and blitz until coarsely ground (you dont want
it too fine).
After the beef has been cooking for 1 hours, add the Kaffir
lime leaves, the chicken stock powder, sugar, salt and toasted
coconut. Stir and simmer uncovered for a further 1520
minutes. You should start to notice the oil separating from the
mix. Your rendang is ready when the beef is tender and the
sauce has thickened.

It is hard not to fall in love with bibimbap. The bed of pearly white
rice adorned with a ring of colourful vegetables and beef, and a bright
yellow egg, the shining star in the centre. It is almost hypnotic. Like a
lot of Korean dishes, individual ingredients are plated up beautifully
so you can fully appreciate each one, and then, with gleeful abandon,
you madly mix everything together. The possibilities for toppings are
endless, so feel free to use your favourite ingredients spinach and
onion also work very well.

In a bowl, combine together all the sauce ingredients and set aside.
In another bowl, mix together the ingredients for the beef marinade,
add the sliced beef, cover and set aside for 3060 minutes.
Cook the rice according to the packet instructions or as per the recipe
on page 26. Keep warm. Meanwhile, fill a large pan with water and bring
it to a rolling boil. One by one, blanch the carrots, courgette, cucumber
and radish for 1 minute and the bean sprouts for 2 minutes. Use a
slotted spoon or sieve to remove them from the water and drain fully.
Season each vegetable with a teaspoon of roasted sesame seed oil and
soy sauce, keeping the vegetables separate at all times.
Heat 1 tablespoon of sunflower oil in a pan. Add in the mushrooms and
stir-fry over a high heat for 45 minutes until softened. Remove from the
pan and season with a teaspoon of roasted sesame seed oil and soy sauce.
In the same pan, add in the spinach and sprinkle over 2 teaspoons
of water. Fry over a high heat for a few minutes, stirring all the time, until
the spinach has wilted. Remove the spinach, squeeze out any excess water
and season as before with the teaspoon of roasted sesame seed oil and soy
sauce. In Korea, these vegetables are served at room temperature so dont
worry about keeping them warm.
In the same pan, add the marinated beef. Stir-fry over a high heat for
35 minutes, until the sauce has reduced and the meat is cooked through.
In a clean frying pan, fry the eggs to your liking.
Serve the hot rice in 4 individual bowls. Place 1 egg onto the centre of
the rice, then arrange the vegetables and meat around it. Sprinkle over
some sesame seeds and salad cress and serve with the gochujang sauce.
Start with a couple of spoonfuls of the sauce and mix everything together
well. Add more gochujang sauce to taste.

Green banana and saltfish


I love the simplicity of this dish. In Guadeloupe the people youll see ordering this for
their lunch are often the big guys: truck drivers, builders, people with tough jobs working
under the very hot Caribbean sun. Ti punch (p. 54) is de rigueur with this dish. Its a rustic
everyday meal, served in large portions one of my favorites.

Cold beet soup

Put the salted cod in a saucepan, add cold water to cover, bring to a boil,
and boil for 5 minutes. Drain off the water and repeat the process. Drain.

Serves 4

1 Place the beets in a bowl or jar, cover with the water,


and add the sea salt flakes and the sugar or honey.
Leave it in your kitchen at room temperature for
2 days to let it brine lightly.

4 thick salted cod cutlets


8 green bananas
6 tablespoons sunflower oil
23 garlic cloves, crushed
1 bay leaf
4 sprigs thyme
2 sprigs parsley, chopped
juice of 11 2 limes
1 habanero chile, deseeded
and finely chopped

2 Drain the beets, reserving the brine. Cut into thin


slices and then into -inch (6-mm) dice.
3 Combine the beets, stock, and 1 cups (10 fl oz/
310 ml) of the reserved brine in a saucepan, season
to taste with salt and pepper, then bring to a boil.

radishes, cucumber, green onions, and dill.

heat. Add the cod and cook for about 2 minutes on each side. Add the
garlic, bay leaf, thyme sprigs, parsley, juice of 1 lime, and half of the chile
and cook for 5 minutes. Reduce the heat to low and add the water. Cook
for 5 minutes, then set aside.
In a frying pan, heat 4 tablespoons oil over medium heat, add the onions,
and cook for about 10 minutes, until they become translucent. Add a little
salt to taste, a pinch of pepper, and the remaining chile. Tip the onions over
the cod.
Squeeze the juice of half a lime over the cucumbers. Peel the avocado and
cut into small cubes.
Drain the green bananas and serve on a plate with the cod, cucumber,
and avocado.

This is incredibly refreshing in the summer. I guess its a hybrid


of something that Russians call okroshka (which comes from
kroshit, meaning to chop into small pieces) and the Ukrainian
kholodnyk (the cold one). I like the idea of brining the beet
first. And I like the idea of fresh radishes and cucumber in it, too.
Add a small splash of sherry vinegar, and a tiny bit of Tabasco
if you cant find fresh horseradish, to funk it up a little.

The South of France Cookbook

This is fundamentally a peasant dish from southwestern France, where it is made in
dozens of versions, some loaded with different preserved and fresh meats and others
with only one or two. My friend Kate Hill, who has lived in Gascony in the heart
of cassoulet country for many years and has written a book on the dish, taught me
that sometimes less is more when it comes to packing meats into the final dish.
Dried beans are always used, and they must hold their shape during the long
cooking. Tarbais beans, which are cultivated and processed near the commune of
Tarbes, in the Hautes-Pyrnes, are favored. In the United States, Rancho Gordo,
a company based in Northern California, sells Tarbais-type beans labeled
cassoulet beans. In the absence of both types, white kidney beans can be
substituted. Preparing the beans is perhaps the most important step in making
cassoulet, as a rich, flavorful broth develops as they cook that infuses the entire dish.

To prepare the beans, tie the thyme, parsley, and bay leaves
together with kitchen string to make a bouquet garni.
Cut the pork belly crosswise into 1-inch (2.5-cm) slices. Roll
up each slice and tie it with kitchen string.
In a Dutch oven with a lid, place the bouquet garni, pork
belly, beans, leeks, celery, onion with the cloves, carrot, garlic,
peppercorns, pancetta, and the pigs foot, if using. Add water to
cover by 2 inches (5 cm) and bring to a boil over medium-high
heat. Reduce the heat to low and simmer, partially covered,
until the beans are barely tender and the broth is slightly opaque
and flavorful, about 1 hour. At this point, you can add about
2 teaspoons salt and a little pepper. Remember, the beans will
ultimately finish cooking in the oven as part of the cassoulet,
so do not overcook them at this point.
While the beans are cooking, scrape off and reserve the fat in
which the confit duck legs are packed. Cut each duck leg at
the joint where it meets the thigh. Working in batches, add

4 Bake the cookies, 1 sheet at a time, until they spread to about 3 inches
(7.5 cm), are bubbling vigorously, and have light brown edges, 810 minutes.
Transfer the baking sheets to wire racks and let the cookies cool on the
sheets for 10 minutes. Using a wide spatula, transfer them to the racks
and let cool completely.

5 To make the chocolate glaze, place the chocolate, butter, and corn syrup
in a large heatproof bowl set over (but not touching) barely simmering
water in a saucepan and heat, stirring often, until the chocolate and butter
are melted, about 4 minutes. Remove from the heat and pour the glaze
through a fine-mesh sieve into a bowl. Let cool to 92F (33C) before using.

FOR DEEPER COLOR AND FLAVOR, POACH THE PEARS THE DAY BEFORE AND REFRIGERATE OVERNIGHT

and refrigerate.
PANCAKE. Preheat the oven to 400F and
position a rack in the center of the oven. Break
the eggs into a high-speed blender or food
processor and add the flours, oat milk, honey,
banana, psyllium husk powder, baking powder,
vanilla extract, and salt. Blend until smooth.
Pour the mixture onto a rimmed baking sheet
and bake for about 30 minutes. When the
pancake is golden with brown spots, remove
it from the oven.

Cut the pancake to 9 evenly sized pieces. Pile


the pieces on a serving platter or plate, layering
honey, banana slices, and berries between
the pieces. Sprinkle berries on top and spoon
plenty of whipped coconut cream over them.
(Best to add the whipped coconut cream on
top of the berries and not directly on the warm
pancake, or else it will melt away.) Sprinkle
more berries on top and serve.

SWEET POTATO & RAISIN PANCAKES


This is a sweet, fun spin on traditional potato pancakes. Sweet potatoes are rich in
beta-carotene, which promotes good eye health. Cinnamon and raisins add a natural
sweetness. These nutritious pancakes provide delicious fuel for growing kids!

INGREDIENTS
1 lb sweet potatoes, peeled and shredded
(about 4 cups)
/4 cup raisins

/3 cup whole-wheat flour

DIRECTIONS
Preheat the oven to 400F. Lightly grease
a baking sheet.

FAMILY COOKING

2 large eggs, lightly beaten

Wrap the shredded sweet potatoes in a clean


kitchen towel and squeeze out the excess water.

In a large bowl, combine the sweet potatoes,


raisins, flour, eggs, cinnamon, salt, and sugar
and stir until well mixed.

Form the sweet potato mixture into 8 pancakes,


each about 3 1/2 inches in diameter. Place the
pancakes on the prepared baking sheet
and bake, turning once halfway through
baking, until golden and crisp, about
20 minutes total. Serve warm with
applesauce on the side for dipping,
if using. Store in an airtight container
in the refrigerator for up to 3 days,
or freeze for up to 2 months.

1 cup baby spinach leaves

In a food processor or blender, combine the

SANDWICHES WITH CHIA
These tasty grilled sandwiches include the nutrients that can benefit gut, heart,
and immune health. Fresh berries and chia seeds include more fiber, magnesium, and
protein than the classic peanut butter and jelly sandwich. Chia seeds have fiber,
protein, and omega-3 (ALA) fatty acids, as well as iron, calcium, magnesium, and zinc.

1 cup blueberries, fresh or frozen

INGREDIENTS
/2 cup hulled and diced strawberries

DIRECTIONS

In a bowl, combine the strawberries, blueberries,


raspberries, and chia seeds. Using the back of a
wooden spoon or a potato masher, mash the
berries until they are juicy and well combined.

Lay out the bread slices on a clean, flat surface.


Divide the berry mixture between 2 of the slices
and spread to cover the entire surface. Spread
half of the nut butter onto each of the remaining
2 bread slices. Invert the slices onto the berrycovered slices to form 2 sandwiches.

Lightly spray a large frying pan with nonstick


cooking spray and place over medium heat. Toast
the sandwiches, turning once, until golden brown
on both sides, about 6 minutes total. Transfer the
sandwiches to a cutting board and let cool slightly.

Cut each sandwich into quarters and serve with
