Burt Katz would be the first to tell you he wasnt
a chef. So, when asked about his ability to make
such amazing pizza, he explained, I get along
with pizza, weve become friends.
Back in 1962, before his relationship with pizza
began, Burt and new wife Sharon made an epic
journey. They boarded a tramp freighter in San
Francisco; the only English speaking passen-
gers among an international crew of hardened
merchant sailors. They sailed to Japan where they
bought a Toyota pickup truck, then trekked west
through the Pacific Islands and across Asia and
Europe. They drove through Pakistan, Afghani-
stan, Iran, and Iraq; countries many people would
be afraid to fly over these days.
When they got back to Chicago a year later,
Burt earned his pizza pedigree at The Inferno in
Evanston. He went on to launch three legend-
ary restaurants starting with Gullivers in 1965,
followed by Pequods in 1971. He recreated the
magic with Burts Place in 1989 and, thanks to the
internet, earned international recognition.

Burts best memories were of the people he and
Sharon met. He never forgot the hospitality they
extended or the personal connections they made.
When he stopped traveling the world, he decided
to bring the world to him, and his signature cara-
melized crust Pan Pizza provided the perfect bait.
By the time Burt hung up his apron in 2015, he
had stacks of guest books filled with the names
of visitors from all 50 states, and a vast number of
countries spread across all seven continents.
Jerry Petrow met with Burt after Jerry slipped a
letter into the mail slot. Several others were nego-
tiating at the time, but Burt and Jerry reached an
agreement in December of 2015 that would allow
Burts Place to carry on. From January thru April
of 2016, Jerry and John Munao would meet with
Burt, learning the recipes and techniques neces-
sary to produce one of Burts legendary pizzas.
Burt passed away in April, 2016, but by combining
his methods and a dedication to maintaining
his legacy, we pledge to continue making the
beloved pan pizzas Burts Place has always been
known for. We hope you enjoy them!
