Spreadable Fats Spreads made by churning fresh cream or milk and can be softened to a
spreadable consistency. Spreads are made by mixing the cream/butter/milk with
vegetable oils. Examples include Lurpak Lightest Spreadable and Country Life
Spreadable.
Cheese Natural Cheese Cheese that is made directly from the coagulation and separation of milk. Natural
cheeses include unripened (cottage cheese), soft (Brie), semi-hard (Stilton), and
hard cheeses (cheddar). Examples of brands include Cracker Barrel.
Processed Cheese Products made by blending one or more types of natural cheese into a
homogeneous mass, often adding other ingredients such as salt and emulsifier.
Includes cheese spread; does not include cheese powders e.g. Kraft Singles. All
products must be at least 51% cheese.
Cream Clotted Clotted cream (also referred to as clouted cream) is the clotted part (lumps) of the
cream layer of milk which is formed by letting unpasteurized milk sit for 12 hours. It
usually is very high in fats and contains around 60% of the milk fat. Examples
include Tesco Finest Clotted Cream.
Crme Fraiche Crme Fraiche is also a soured cream and is less sour than a sour cream. It also
contains more butter fat than a sour cream (30%). It is soured with bacterial culture
and is a thickened product with a slightly tangy taste. Examples include Weight
Watchers Creme Fraiche and Yeo Valley Organic Healthy Creme Fraiche (UK).
Double Double cream is a french cream that contains at least 60% of the milk fat. It is fresh
and soft. Examples include Yeo Valley Organic Double Cream (UK).
Other (Cream) All other creams not covered in the other segments, such as flavored cream, table
creametc.
Single Single cream is a french cream that contains at least 18% fat. Its fresh and soft and
does not thicken while beating. Examples include Tesco Fresh Single Cream (UK)
and International Delight French Vanilla Creamer Singles (US).

Sour Sour cream contains around 18 to 20% milk fat. It differs from single cream as its
derived after deliberately fermenting the cream by adding bacteria. Its thick and is
mildly sour. Examples include Old El Paso Squeezy Sour Cream, Lucerne Sour
Cream and Simply Kraft Fat Free Sour Cream.
UHT/Longlife UHT Cream is heated on a high temperature to kill spores and to make the cream
durable. Examples include Anchor Light UHT Swirls Half Fat Real Dairy Cream.
Whipping Cream that has been beaten by a whisk or a spatula so as to make it fluffy and
light. The process of whisking doubles the cream as air bubbles are captured into it.
A whipped cream is assumes to have a 30% butter fat. It can be used over cakes,
pastries or coffee. Examples include Anchor Extra Thick Whipped Cream UHT (UK)
and Lucerne Whipping Cream Heavy Ultra Pasteurized - Pint (US).
Dairy-based & Cheesecakes A chilled dessert of creamy filling made of flour, eggs, cream, sugar and lots of
Soy Desserts cheese and topped with fruit or jelly. Examples include Sara Lee Golden Baked
New York Style Premium Classic Cheesecake (US)
Flans A simple chilled dessert that is usually round in shape with an open-topped jelly or
(Puddings/Desserts) fruit and has a sweet filling. Flans can also have a rich custard filling or fruit fillings.

Fools A cold dessert that has ingredients such as pureed fruit mixed, fruit essence with

Mousses A chilled dessert made with flavored whipped cream like fruit or chocolate, eggs

Set Yogurt Flavored or unflavored, sweetened or unsweetened coagulated milk product

3. Latest Events: Global Food Industry


3.1 Emmi partners with BKW to switch to sustainable electricity
Emmi has committed to reducing its CO2 emissions by 25 % by 2020. In an important step towards
meeting this objective, the largest Swiss milk processor is switching to sustainable electricity.

To this end, it is set to rely entirely on renewable energy and on BKW as its partner. BKW will supply
Emmi with around 110 gigawatt hours of hydroelectricity a year enough to meet the needs of all
Emmi facilities in Switzerland.

As part of its commitment to sustainability, Emmi has decided to rely entirely on hydroelectricity for all
of its 36 facilities in Switzerland, enabling the largest Swiss milk processor to reduce its annual CO2
emissions by 14000 tonnes.

BKW was already supplying several Emmi locations with electricity. Based on the positive
experiences, as well as its know-how and extensive offering, Emmi has now opted for a full supply

British yogurt brand Tims Dairy has rebranded its bio-live luxury Greek Style Yogurt range.

The stand-out kraft appeal and flavor images and colors were retained, while introducing new lighter
banners to reinforce the brand for consumers with repetition on back of pot label.

The Greek Style Natural range will come in 200g/500g pack, while Raspberry, Blackcurrants, Honey
or Vanilla variants will be available in 175g/450g pack.

3.3 Tomlinsons Dairies to invest 14m to expand Minera facility


Tomlinsons Dairies has announced that it will invest 14m to expand its milk processing plant in
Minera, Wales.

The expansion plan comes in wake of bagging a supply contract from Sainsbury for its stores in
Wales and also in some parts of England, reported the Leader.

The Welsh dairy company is looking to expand its plant in three stages.

In the first stage, it will expand its cold storage area besides creating additional office
accommodation.

Upon approval, the first and the second phases of the expansion are expected to create a total of 53
new jobs. Another seven jobs will be added in the final phase relating to the production of milk bottles
in the facility.

While the dairy has enough production capacity to create more milk, its present cold storage is not
enough to meet the increased demand following the Sainsburys supply contract.

Since 2012, Tomlinsons Dairies has been operating on a 70,000ft2 facility which has a production
capacity of more than 100 million litres of milk a year. It currently has 170 employees as reported by
the BBC.

The dairy company is expected to get a grant from Wrexham Councils planning committee to meet
financing needs for the expansion.

In May this year, British supermarket chain Sainsburys gave supplier contracts to two additional milk
processors Tomlinsons Dairies and Medina. The contracts would be in effect from July 2017 till
2020..

3.5 Mller to invest 100m to tap dairy sector potential


Germany based global dairy giant Mller has confirmed an investment of 100m targeted at tapping
the estimated growth of 700m in the dairy produce sector by 2020.

The investment will be made in improving its operational, innovation as well as marketing capabilities
over the next 18 months.

The dairy producer said that the investment will further reinforce its capabilities in liquid milk, cream,
butter, ingredients and also in yogurt and chilled desserts.

Mller Group CEO Ronald Kers said: The Mller brand is already ahead of Coca-Cola and
Cadburys Dairy Milk in the top 10 most purchased fast moving consumer goods brands in the UK,
picked from supermarket shelves 207 million times each year.

Now we want to use our leadership position in dairy to rev up the engine and work collaboratively
with our customers and of course our farmers to delight consumers and realise the untapped potential
that exists to grow this amazing category.

Mller plans to upgrade its existing capacity and capabilities of facilities related to its milk, ingredients,
yogurt and desserts businesses.

As part of the new investment, the company will also install new filling lines at the plants.

In May, the dairy producer announced an investment of 15m in its Scotland based milk diary at
Bellshill as part of its strategic review.

The dairy firm had also confirmed that it would wind down milk processing at its smaller Aberdeen
and East Kilbride dairies.
