Although the menu changes often, there are a few dishes that
remain due to their popularity. Grilled octopus with fresh vegetables
marinati leads an impressive list of antipasti; homemade pappadelle
with wild boar ragu is a favorite for many regulars, as is the veal chop
with porcini mushroom sauce. For a sweet ending, there is nothing
like the panna cotta.
The intimate dining room and cozy courtyard are the perfect setting
for a special dinner or romantic evening out. Impeccable service and an
impressive wine list paired with Chef Santos creations have garnered
Il Cortile a reputation as one of the top culinary destinations in Paso
Robles. Locals and wine country visitors anxiously wait to hear the
evenings specials each visit.
Carole has shown her passion in the extensive wine list. It really is a
passion of ours to provide Paso with fine Italian cuisine paired with such SAN LUIS OBISPO
wonderful wines. Its a pleasure to see our guests enjoy the pairings. The
wine list began as a short list when the restaurant opened five years ago;
today, the list has grown to over 250 bottles with a selection of wines from
several regions of Italy, as well as outstanding wines from Paso Robles and
the Central Coast. The restaurant was honored with the prestigious Wine
Spectator Award of Excellence for 2014, 2015, and 2016, an award only
one other restaurant in the area has received.

Wine Tasting in San Luis Obispo County

Its no wonder the people here call

it SLO. No one is in any hurry in
the cafes or on the sidewalks, and
certainly no one is in any rush to leave.
Strangers are genuinely friendly, always
ready to talk about their favorite hiking
trail or barbecue joint, or to point the
way to the winery with the best Pinot
Noir. Its all part of the SLO life, that
combination of good stuff that makes
visiting here so nourishing to the soul.
San Luis Obispos unusual natural
beauty, along with its gentle climate,
first attracted the Spanish padres to the
area in the 1700s. In 1772 they built
the fifth of Californias 21 missions
here, on the banks of San Luis Creek,
and named it Mission San Luis Obispo
de Tolosa. Today, many consider this
the most beautiful of the Spanish
missions.
More than 200 wineries produce
critically acclaimed vintages in Paso
Robles, Edna Valley and Arroyo Grande
Valley. Visitors can head out along the
gorgeous country roads to sip their way
through the vineyards.

Obispo County, go to visitslo.com or

BY CHARLES NEAVE
8 8 8 8 8 8 8 8 8 For the most part, going wine
tasting is about the easiest thing in
8 8 8
the world, especially in California
8 8 8 8 8 8 8 where wineries and tasting rooms
abound. Mostly, wine tasting is a
8 8 8 8 8 8 8 matter of doing a little research and
planning your day. Here are some
8 8 8 8 8 8 8 8 8 8
tips that have proven to be helpful
8 8 8 and are designed to help make the
sensory adventure of wine tasting
8 8 8 all the more enjoyable.
Before you start off, pack a few
8 8 8 8 8 8
essentials. Water (plenty of
8 8 8 8 8 8 8 8 8 8 water) and something to snack
oncrackers or a baguette.
8 8 8 8 8 8 Many wineries have picnic areas
and there are plenty of delis and
8 8 8 8 8 8 8 8 8 8 8 8 8
bakeries that can make up a lunch
8 8 8 8 8 8 8 for you, or make your own.
Be sure to nibble during the day and
8 8 8 8 8 8 8 8 8 8 8 make time for lunch. Two tips: drink
at least twice as much water as
8 8 8 8 8 8 8 8 8 8 8 8 8
you do wine, and remember that
8 8 8 8 8 8 8 8 8 8 8 8 8 8 8 you dont have to drink everything
poured into your glass.
8 8 8 Dont be afraid to ask questions.
Time again I have heard
8 8 8 8 8 8 8 8 8 8 8 8 8 8 8
knowledgeable winery workers
8 8 8 8 8 say that there is no such thing as
a stupid question, and they mean
8 8 8 that.
You can drink what you want, in the
8 8 8 8 8 8 8 8 8
order you want. If you like reds, say
8 8 8 8 so; if you dont like sweet wines,
speak up. But the idea of starting
8 8 8 8 8 with whites, then going on to reds
and then sweet wines is a good
8 8 8 8 8 8 8 8 8 8 8
guide.
8 8 If there is a particular wine you want
to try and it is not on the list, ask. Most
8 8 8 8 8 8 tasting rooms are happy to pour a
little if you show enthusiasm.
8 8 8 8 8 8
Look for tasting rooms in towns.
8 8 8 8 8 8 8 8 8 Many of these are cooperative
tasting rooms, where in one place
8 8 8 8 8 8 you might find wines from a
dozen or more small-to-medium
8 8 8 8 8 8 8
premium producers.

Wine Tasting in Santa Barbara County

A Spirit and Passion for Winemaking

O n the southern end of the Central Coast appellation, lies Santa Barbara Countys historic
wine growing region. The first vineyard production in these rolling coastal hills dates back to
1782, when Junipero Serra planted vines on Mission land. About a hundred years later, there
was 260 acres of luscious vineyards and seventeen winemakers in Santa Barbara County. Sadly,
the Prohibition Era destroyed many of these historic vineyard sites and mostly put an end to
winemaking in the regionas was the case in many of the beautiful winegrowing regions across
the state. With that being said, the spirit and passion for winemaking never left Santa Barbara
County, and this wine growing region is alive and well today. Talented winemakers are producing
outstanding and pure terroir driven wines from the five American Viticultural Areas (AVAs), planted
mostly to Burgundian, Rhne and Bordeaux grape varieties.
Although the movie Sideways is said to have put San Barbara Countys wine growing region on
the map in 2004, especially the Santa Maria Valley AVA, it is the high quality of the wine across
the county that has continued to uphold this bountiful regions reputation. Sprawling vineyards
and gently rolling hills create a picturesque scene for visitors and locals alike, who visit the many
wineries, tasting rooms and wine bars in the area. In the five AVAs, wine tasters will find a nice
range of wine styles amongst the Burgundian, Rhone and Bordeaux varietals that are produced.
In the more northern region, cool climate Burgundian varietals reign, such as Pinot Noir and
Chardonnay, due to the maritime influence. This ensures a long temperate growing season which
the Burgundian varietals crave. With ample amount of sunlight, the grapes ripen very slowly
perfect for producing terroir driven wines with pure varietal characteristics. In the southern region,
there is more of a diurnal shift with warmer nights and cooler days. This area sees less fog and has
different soil types than what is found closer to the coast. The Bordeaux and Rhine varieties flourish
in this warmer climate and the sandy soils with limestone and chalk impart a wonderfully desirable
minerality in the wines.
The wineries in Santa Barbara County boast a concentration of incredibly passionate and talented
winemakers; join them year round at their many events, celebrations and festivals, as well as in
their tasting rooms.

requires an appointment, and
there may be a slightly higher

Casa Cassara Winery & Vineyards
Casa Cassara Winery & Vineyards, located in the heart of the
Sta. Rita Hills appellation is a true family affair. With the first vines
planted in 1986, the hilltop 35 acre estate specializing in Pinot
Noir, has just added some cool climate Syrah and Grenache. Sitting
on the eastern edge of the Sta. Rita Hills at 800-foot elevation, the
climate offers the perfect backdrop for award winning Pinot Noir.
Mikael Sigouin has been Casa Cassaras winemaker for several
months now and they are very excited about the new direction that
he is taking them. Along with their signature Pinot Noir and some
of the usual suspects like Dago Red, Sauvignon Blanc and Syrah,
Casa Cassara will be adding some Italian varietals to their menu.
For 2016 you can expect to see an Arneis, an Italian white wine, a

Sauvignon hillside vineyard is located in the Paso Robles AVA

the owner, sommelier and winemaker, what makes Lions Peaks
Cabernet Sauvignon so special? She said, The old vines are loved
and nurtured. There is an eco-system that exists at this hillside
vineyard. We are one with nature. We have a great vineyard, and
the wine tells you this story!
LP specializes in Cabernet Sauvignon, Petit Verdot, Cabernet
Franc, Merlot, Bordeaux blends and dessert wines. Jennifer is
at the tasting room most weekends to talk about her wines and
how the eclectic labels were designed and of how she entered the
world of wine.
If you are lucky, she will share her stories about the early
years at Lions Peak, and offer her Southern hospitality to you by
opening one of the library wines for you to experience the terroir
and how special the vineyard is.
The Lions Peaks tasting room is located at 1659 Copenhagen

cannot be missed with its authentic thatched roof! The interior
of the tasting room is welcoming and cozy and is an artistic
expression of Jennifers interior design background. LP offers a
collection of exquisite and unique wine glasses from Murano Italy,

Herzog Wine Cellars
A History of Excellence
The story of Herzog Wine Cellars began in the mid 1800s,
when Phillip Herzog made wine for Emperor Franz Joseph of
the Austro-Hungarian Court. The wines were so respected, that
Phillip was made a baron. Generations later, after emigrating
from Europe to New York and eventually California, the direct
descendants of Baron Phillip Herzog continue the family legacy,
producing an assortment of premium kosher wines that are
today, sold worldwide.
