Chardonnay is back, and I am glad about that. The stigma of the 90s of those big buttery over toasted
wines has finally gone, as winemakers again make great wines that express true chardonnay fruit and
balancing it with oak.
Chardonnay is thought to have originated in Frances Burgundy region where it became known as

before winemakers in Champagne began to grow the grape as well, using it as the dominant ingredient

Chardonnay is Australias most widely planted grape variety, almost every region in Australia would
produce Chardonnay. Chardonnay is a variety that has the ability to truly reflect a regions terroir, you
can see this with the main Australian Chardonnay regions:
Warm inland regions like the Murray Darling, Riverland and Riverina regions produce the majority of
good quality, well priced Australian Chardonnay that show ripe, tropical and stone fruit characters.
These may often be multi regional blends labelled with the origin as South Eastern Australia.
Adelaide Hills
This cool region is highly suited to Chardonnay. The wines are elegant, finely structured, typically with
white peach and nectarine flavours.
Margaret River
Margaret River is Western Australias most well known Chardonnay region. The wines are full-flavoured,
rich and powerful, with the best examples having the ability to age for over a decade.

The Hunter, Tumbarumba, Orange, Mudgee and New England regions all produce great Chardonnay.
VARIETIES The Hunter styles tend to be a little fuller, while Tumbarumba produces tight, elegant stone fruit styles. The
cool, elevated climates of New England, and Orange produce lean wines with soft peach and melon
profiles, while Mudgee tend to be rich and full.
Chardonnay also allow winemakers to express their craftsmanship, the range of styles now being

Ingredients Methods
1 tablespoon olive oil 1. Heat oil in a large pan over medium-high heat.
