THE COFFEE MANUFACTURING PROCESS
THE CULTIVATION
Coffee cultivation occurs in a region of the Earth called the Green Belt of
Coffee. The sowing of coffee trees is by parts. First seeds or berries are
sown in controlled greenhouses. When it has been a while and the seedling
is obtained, it is transferred to the final destination of the shrub. The average
time for a coffee plant to produce quality coffee in a sustained manner is 3
years. After this, it can produce coffee for up to 50 years.
HARVEST
Once removed from the berry, the fruits must be benefited in a period of no
more than 24 hours, otherwise, the grain can undergo a fermentation
product of the transmission of starches from the pulp containing it. The fruits
of the foreign bodies are separated like stones, branches and leaves.
There are two ways to benefit coffee to extract green coffee seeds (see
Classification by its benefit process), Washing, when the fruit is harvested,
the mucilage is extracted, washed and then dried its seeds; Natural, when
the fruit dries whole.
THE TIGER
Already in green, the grain has a life of a maximum of one year. The ideal is
to toast the coffee in the early times of the grain. Toasting is one of the most
delicate processes in the coffee chain, as it is here that you will get the
aromas, flavors, and smells that will be reflected in the cup. It is at this
crucial quarter of the hour when about 800 substances are formed
responsible for the taste and aroma of coffee.
THE GRINDER
